Grilled Beef and Zucchini Fritters

August 9, 2023

Delicious grilled beef and zucchini fritters that make for a perfect appetizer or main course.

Grilled Beef and Zucchini Fritters bring together hearty and fresh flavors in a dish that’s perfect for a satisfying lunch, light dinner, or even as a protein-packed snack. These fritters are a clever way to use ground beef and zucchini in a balanced recipe that highlights texture, spice, and grilled goodness.

The key to making great fritters is achieving the right consistency. Start with grated zucchini, which should be salted and left to sit for a few minutes to draw out excess moisture. Once drained and squeezed, the zucchini is mixed with ground beef, finely chopped onion or scallion, minced garlic, and a mix of spices like cumin, paprika, black pepper, and a little chili powder for kick. A touch of flour and egg binds everything together into a batter-like mixture that holds its shape well on the grill.

Instead of frying, these fritters are grilled, which adds a smoky depth and keeps them lighter. Grilling also helps them form a crispy exterior while keeping the inside juicy and tender. They can be shaped into patties or smaller rounds depending on how you plan to serve them. Grilled beef and zucchini fritters are done when they have strong grill marks, are firm to the touch, and cooked through in the center.

For serving, you can go in a few directions. They pair beautifully with a dollop of Greek yogurt or a lemon-garlic dipping sauce. A fresh herb salad or tangy slaw on the side cuts through the richness of the beef. For a heartier meal, tuck them into pita with lettuce and tomato, or serve them over couscous or rice.

This dish is not only flavorful but also versatile. It’s a great way to use up summer zucchini and sneak some extra vegetables into your meal without compromising on taste. Whether you’re cooking outdoors or on a stovetop grill pan, these fritters are quick to prepare, easy to customize, and sure to be a hit at your table.

For people saying they fell apart, maybe you need to use more egg? Or are my cooking skills just better? 🤷‍♂️

    1. User avatar freddie.ferry36 says:

      2 stars
Nah, it’s gotta be the recipe. I think you just got lucky! 😉

    2. User avatar King Vegeta says:

I doubt it’s just about eggs. I followed the recipe and they still crumbled. Maybe a secret ingredient you didn’t mention? 🤔

  2. User avatar Random Dent says:

    2 stars
I don’t get why people put zucchini in everything. It’s all soggy. I’m sticking to classic beef patties.

  3. User avatar jarod.sanford62 says:

    3 stars
Breadcrumbs + eggs… okay. I followed the recipe but it didn’t brown much on my grill pan. Maybe my heat was too low? Still tasted fine though.

  4. User avatar josiah.morar60 says:

    5 stars
These turned out way better than I expected—juicy inside and nicely browned. I added a squeeze of lemon on top and it really lifted the flavor.

    1. User avatar ginny.kovacek1953 says:

      5 stars
Good to hear! Lemon sounds like the perfect finishing touch—gives it that fresh pop. I’m going to try that next time.

  5. User avatar luisa.grant57 says:

    2 stars
I dont know… they turned out kinda mushy, not like the pic. Maybe I added too much zucchini?

  6. User avatar marisa.beer40 says:

    2 stars
The garlic flavor was way too strong for me—like overpowering. Maybe reduce to 1 clove? Would also help if the onion was minced finer.

  7. User avatar inger.harber68 says:

    Sounds simple enough! 👍

  8. User avatar wilford.labadie says:

Grilled? More like burned. I think I left them on too long. 🤦‍♂️ Gonna try again with less time. 2 stars.

These fritters were a hit! So easy to make and everyone loved them.

    1. User avatar williams.metz says:

I’m glad to hear that! These fritters do sound scrumptious. I might have to try making them myself!

    2. User avatar Frost Giant says:

      3 stars
They were okay, but I think mine turned out a bit soggy. What am I doing wrong?

  10. User avatar quinn.schroeder says:

    2 stars
I tried this recipe but they fell apart on the grill. Maybe I needed to add more breadcrumbs? Not sure if I’ll try again…

  11. User avatar smartestRedditor says:

    3 stars
Not bad, but too salty for my taste even after ‘salt and pepper to taste.’ Next time I’ll go lighter on salt.

  12. 5 stars
These came out juicy and flavorful! The zucchini really keeps the patties tender. I used regular pepper and added a squeeze of lemon—wow.

  13. User avatar Mr. Barten says:

    1 star
This recipe is too complicated for me. Just stick with burgers, right?

  14. User avatar MAGA2024.Trumpster says:

    3 stars
Followed the recipe exactly, but mine kind of fell apart on the grill. Maybe I needed more breadcrumbs? Still tasted great though.

  15. 1 star
Yuk! Didn’t like it at all. Too much zucchini. Why not just have beef burgers?

  16. 3 stars
Followed it pretty much exactly, but mine fell apart a little. Maybe my zucchini was too watery—next time I’ll squeeze it with a paper towel before mixing.

  17. User avatar devin.ratke49 says:

    3 stars
Hmmm, not what I expected. The zucchini made it mushy. Gonna try to freeze leftovers.

  18. User avatar dennis.dooley says:

    1 star
These things are not for me. Gave them a shot but just not what I expected. Too mushy.

    1. User avatar nicki.mueller says:

      4 stars
I understand how you feel! I also thought they would be different. Maybe next time give them a shot with some spices? They can be better!

  19. User avatar leanna.hartmann says:

Can I make these in the oven instead? My grill broke last week.

  20. User avatar glenn.mclaughlin21 says:

I don’t know, the texture was weird… too mushy maybe?

  21. User avatar reagan.carter25 says:

Really good! The zucchinis were watery though, next time I’ll squeeze them first.

  22. User avatar gaylord.orn38 says:

    2 stars
I don’t think zucchini belongs in beef fritters. It was kinda weird texture for me.

  23. 3 stars
Not bad but kinda bland. I might add more spices next time. Just a 3 for me.

  24. 4 stars
Not bad at all, but mine were a little crumbly. I think I should’ve squeezed more water out of the zucchini next time. Still tasty with a garlic yogurt sauce.

    1. User avatar marivel.marquardt says:

      5 stars
Thanks! Crumbly fritters makes sense—zucchini can hold on to a lot of moisture. I’m with you on squeezing it well (even a paper towel squeeze helps). Garlic yogurt sauce sounds like a perfect fix too.

  25. User avatar brandi.hahn says:

    5 stars
These fritters were amazing! The flavor was out of this world. My family loved them.

  26. User avatar chang.schimmel40 says:

    1 word: Delicious. 😅

    1. 3 stars
I’m not sure about grilling them—mine would probably fall apart. Might need more breadcrumbs or to cook slower.

    2. User avatar guillermo.bernier61 says:

      5 stars
Honestly sounds so good—grilled fritters are a great idea. 😄

  27. User avatar Michael83 says:

    5 stars
5 stars! Who would’ve thought zucchini could taste good with beef? Wow 😮

    1. 5 stars
Totally agree! The combination surprised me too. It’s like a hidden gem in cooking. 🌟

  28. 3 stars
Not bad, but I think they needed more seasoning. Maybe a bit of chili flakes next time?

    1. 4 stars
I agree! A little heat would definitely kick these up a notch. Chili flakes are a great idea!

  29. 2 stars
I burnt them on the grill!!! Gonna try again with lower heat next time. 😭

  30. User avatar rudy.stehr1998 says:

    4 stars
Simple and delish! I made them vegetarian by swapping beef for black beans. I’ll definitely make again.

    1. 5 stars
Great idea with the black beans! I never thought of making it vegetarian. Will try it!

  31. 5 stars
These fritters were amazing! The flavors just burst in my mouth. Will definitely make again!

  32. User avatar tissues_with_issues says:

    3 stars
Why is garlic in everything? Just too much garlic! Next time I’ll skip it.

  33. 4 stars
Pretty solid recipe. I did need a little more salt than “to taste” because my zucchini was watery. Other than that, browning was great on the grill pan.

  34. 5 stars
My kids loved it! Finally, something healthy that they eat without complaining! 😂

  35. User avatar marcel.baumbach says:

    2 stars
I don’t know, they didnt turn out right for me. The mixture was too wet and fell apart on the grill. Maybe I did something wrong?

  36. User avatar Old Woman says:

    2 stars
Didn’t like the texture much, too mushy. Think I’ll stick with regular burgers instead. 👎

    1. 3 stars
Mushy? Nah, I thought they were perfect! You just gotta adjust your expectations, I guess. Not everything needs to be like a regular burger. 🙄

    2. User avatar vernon.mueller3 says:

      4 stars
I actually loved the texture! They’re supposed to be a bit soft because of the zucchini. You might just be used to the classic burgers. Give them another try! 😊

  37. User avatar kelley.bayer says:

    5 stars
Pretty easy, and my picky eater actually went back for seconds. I used panko instead of breadcrumbs and they still held together fine.

  38. User avatar marshall.bernhard64 says:

    4 stars
I was skeptical about how well patties would form with that much zucchini, but it worked. Next time I’ll try squeezing the zucchini a bit drier.

  39. User avatar Lumberjack says:

    3 stars
My first batch was kinda bland… but that might be because I used low-salt breadcrumbs. Once I salted more and used fresh garlic, it tasted much better.

    1. User avatar cris.swift27 says:

      5 stars
Totally believable—breadcrumbs and garlic make a huge difference in these. Low-salt can definitely flatten the flavor. Glad upping the seasoning + using fresh garlic helped!

  40. User avatar jeffery.gleichner says:

    5 stars
Y’all, my kids actually ate their veggies! This is a miracle. I wouldn’t call them fritters tho, more like patties.

  41. User avatar harrison.medhurst78 says:

    4 stars
Easy to make and tasty! I even added cheese to the mix. Yum!

  42. User avatar debora.frami2007 says:

    3 stars
How do you grill these? I just pan fried them, it worked!

  43. 5 stars
    One word: delicious.

  44. User avatar earl.kautzer2012 says:

    5 stars
So easy and honestly tastes like something from a diner. My kids liked it which is rare. I’ll make again, maybe add chopped parsley.

  45. User avatar mathWizard says:

    4 stars
Super easy recipe! I added some chili flakes for extra kick! Yummy!

    1. User avatar lindsay.senger46 says:

      5 stars
Sounds delicious! I love adding chili flakes too. It really enhances the flavor. Can’t wait to try this!

  46. User avatar MAGA2024.Trumpster says:

    5 stars
I swapped beef for chicken and it still turned out great! 💖

    1. 5 stars
That’s awesome! I love that you made it your own with chicken. Gonna try it like that next time! 😍

  47. User avatar stevie.macgyver92 says:

    5 stars
These came out juicy and flavorful. The zucchini really helps the texture. I added a squeeze of lemon at the end—game changer!

  48. User avatar Yooden Vranx says:

    1 star
My kids won’t eat it! Tried giving them but they just looked at me. 😂

  49. User avatar Elease Renner says:

    5 stars
So good I can’t even!! Wish I could give it 10 stars instead of just 5! 🥳

    1. 5 stars
I totally get you! These fritters are the best! Made them twice already! 🤩

    2. 2 stars
10 stars?? Really?? They were just okay for me. A bit too greasy.

  50. 5 stars
These fritters are a game changer! So tasty and easy to make. My kids loved them!

    1. User avatar gayle.franecki19 says:

      5 stars
Absolutely! I tried them last week and my family couldn’t get enough! Definitely making them again!

  51. User avatar Hotblack Desiato's bodyguard says:

    3 stars
Hmm 1/2 cup breadcrumbs feels like too much? I used less and it was more like meatballs than fritters. But my family ate them fast so I guess it’s okay 😅

    1. User avatar jerrell.kutch53 says:

      5 stars
I totally get that—breadcrumbs can go from “binds nicely” to “drys it out” real quick. If you felt they turned more meatball-ish, I’d try reducing next time or even squeeze the zucchini a bit more for extra moisture control.

  52. User avatar pandora.ankunding78 says:

    1 star
Why is everyone raving about this? I followed the recipe but they fell apart on the grill. 😡

  53. User avatar Leto Atreides says:

    5 stars
Super yummy. I ate two right off the grill lol. Will make again!

  54. User avatar selina.hettinger59 says:

These fritters were a hit at my BBQ! So juicy and flavorful.

  55. User avatar Super Saiyan 2 Gohan says:

    4 stars
Pretty good, but mine were a bit crumbly—next time I’ll use slightly less breadcrumbs or squeeze more water out of the zucchini. Flavor was solid though and the browning on the grill was great.

    1. User avatar monte.waters21 says:

      5 stars
Thanks! Crumbly makes sense—zucchini can be super watery (or not). Squeezing it really well and adjusting breadcrumbs by feel should help a lot. Glad the flavor and grill browning turned out great!

  56. User avatar ArabianNights says:

    5 stars
YUM! Perfect for a summer BBQ. Just make sure to use fresh ingredients. Can’t wait to impress my friends! 😍

  57. User avatar anonymous_hacker says:

    3 stars
My fritters were bland until I added more paprika. Also my onion was kinda big chunks… still edible tho.

  58. 3 stars
Good flavor, but mine were a little dry. I think I cooked them too long on the second side. Still tasty though.

    1. User avatar mara.hoeger91 says:

      4 stars
Good catch—overcooking on that second side can definitely dry them out. I usually flip once and pull them as soon as they’re browned and set. Might help to squeeze extra moisture out of the grated zucchini too.

  59. 4 stars
I was skeptical about mixing beef and zucchini, but these fritters were surprisingly good.

    1. 2 stars
Beef and zucchini? Sounds weird to me. Never thought they’d go together.

    2. User avatar Ford Prefect says:

      5 stars
I was also surprised! The zucchini keeps it moist and adds a nice flavor.

  60. 3 stars
My wife made this and accidently used pork. Still nice, but not the same! Lol.

  61. User avatar elizabet.okeefe says:

    4 stars
I think I messed up—my mixture was too wet, so I added extra breadcrumbs and they turned out decent. If you’re using very watery zucchini, maybe plan for that.

    1. User avatar leopoldo.bahringer46 says:

      5 stars
That’s actually smart—breadcrumbs are basically the emergency “fix it” button for wet veg. I’ve had watery zucchini ruin patties before. Next time maybe squeeze the grated zucchini in a paper towel too.

    2. User avatar jessica.hauck4 says:

      3 stars
I think watery zucchini shouldn’t be a surprise… but still, adding more breadcrumbs changes the whole texture. Also 3-4 min per side on a grill sounds too short for beef—mine usually needs longer or the middle stays mushy. Maybe chill the patties first?

  62. User avatar lesley.rogahn60 says:

    4 stars
Good idea, but 3-4 minutes per side feels a little short for thicker patties. I had to grill longer to make sure the beef was cooked.

  63. User avatar lucie.willms71 says:

    5 stars
These fritters are amazing! So juicy and flavorful, and the zucchini keeps them moist. Definitely a 5-star recipe!

    1. User avatar shonna.beatty10 says:

      2 stars
Really? I didn’t like mine at all, they were too salty. Maybe I messed up? Not sure if I’ll try again.

    2. User avatar christeen.ernser says:

      5 stars
I totally agree! These turned out so yummy. My family devoured them in minutes! Definitely a keeper.

  64. 3 stars
I followed it exactly and they still felt a little dry? Maybe my grill was too hot or I overcooked them. Tasted good, but texture wasn’t perfect.

  65. 4 stars
Wth? Zucchini in fritters? Sounds weird, but actually tasted fine. Who knew?

    1. User avatar Ms. Amee Mohr says:

      5 stars
I always thought zucchini was just for salads. This is a game changer! Thanks for sharing!

    2. 2 stars
Zucchini? Really? Sounds gross. I stick to the classic fritters.

  66. User avatar Arthur Dent says:

    2 stars
I don’t know, but this seems like a weird combo. Zucchini and beef? Really?

  67. User avatar jesus.brown says:

    5 stars
Super easy and flavorful. The oregano + paprika combo is doing the heavy lifting. I served with yogurt sauce and it tasted restaurant-level.

  68. User avatar isa.monahan84 says:

    4 stars
Honestly, who thought beef and zucchini fit together? But wow, I was wrong! My new go-to recipe.

    1. User avatar waldo.marquardt1995 says:

      5 stars
I never woulda thought this combo would work, but now I wanna try it! Thanks for sharing! 👍

  69. User avatar inger.von37 says:

    5 stars
My kid ate them without complaining, which is basically a miracle 😂. I used gluten-free breadcrumbs and it worked fine.

    1. User avatar charleen.daniel98 says:

      5 stars
Haha love that! Congrats on the “miracle kid” 😂 Also good to know GF breadcrumbs worked—I’ll try that next time.

    2. 4 stars
Wait… do you squeeze the zucchini dry or just grate and dump it in? I feel like mine gets soggy unless I squeeze it. But hey if gluten-free breadcrumbs work, maybe I’ll give it another go.

  70. User avatar jared.wiegand72 says:

    3 stars
Not bad, but next time I’ll leave out the onion. Too strong!
