I’d start with about 1/4–1/2 tsp ground ginger (since fresh is usually milder in grated form, but powder is more concentrated), and swap the rice vinegar 1:1. Regular vinegar is sharper though, so taste the sauce and add a tiny bit more honey if it feels too tangy.
