      I mean… rice vinegar is kind of the point here. Regular vinegar will make it taste more like a basic marinade instead of that light, clean tang. If that’s all you’ve got, use it, but maybe reduce it a bit and don’t overdo the ginger—ground can get peppery/harsh fast.

      Not a crime 😄 You can absolutely use ground ginger and regular vinegar. I’d start with about 1/4–1/2 tsp ground ginger (since fresh is usually milder in grated form, but powder is more concentrated), and swap the rice vinegar 1:1. Regular vinegar is sharper though, so taste the sauce and add a tiny bit more honey if it feels too tangy.
