Instant Pot Chuck Roast is the ultimate answer when you’re craving a hearty, slow-cooked meal without the long wait. Thanks to the power of pressure cooking, this comforting classic transforms tough cuts of beef into fork-tender bites in a fraction of the time. Whether you’re cooking for a weeknight dinner or hosting Sunday supper, this dish delivers big, satisfying flavors with minimal effort.
Chuck roast is known for its rich marbling and deep flavor, but it needs time, or pressure to break down and get juicy. In the Instant Pot, it cooks beautifully in about an hour, compared to the usual three or four in the oven or slow cooker. Start by searing the beef directly in the pot to lock in flavor and build a base for the sauce. Add aromatics like onions, garlic, and fresh herbs, then pour in your cooking liquid like beef broth, red wine, or even a splash of balsamic vinegar for a bit of tang.
Vegetables like carrots and potatoes can be added either at the beginning for a stew-like texture or halfway through to keep them firm. The result is a deeply savory dish with tender chunks of beef and vegetables bathed in a rich, flavorful gravy.
This meal is endlessly adaptable. Want a more elevated flavor? Toss in some rosemary, thyme, or a few mushrooms. Prefer something simple? Keep it classic with just salt, pepper, and garlic. The Instant Pot makes it easy to adjust to your tastes and schedule.
Best of all, the cleanup is minimal, one pot does it all. And if you happen to have leftovers, they reheat beautifully or can be turned into sandwiches, tacos, or even shepherd’s pie the next day.

Ingredients
- 3 lbs chuck roast
- 1 tbsp olive oil
- 1 onion chopped
- 3 cloves garlic minced
- 1 cup beef broth
- 1/2 cup red wine
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 2 tsp thyme dried
- 2 tsp rosemary dried
- Salt and pepper to taste
- 2 tbsp cornstarch optional
- 2 tbsp water optional
Instructions
- Set the Instant Pot to sauté mode and heat the olive oil.
- Add the chopped onion and minced garlic to the pot and sauté until fragrant.
- Season the chuck roast with salt, pepper, dried thyme, and dried rosemary.
- Push the onions and garlic to the side and place the chuck roast in the pot. Sear on each side until browned.
- In a separate bowl, whisk together the beef broth, red wine, tomato paste, and Worcestershire sauce.
- Pour the mixture over the chuck roast in the Instant Pot.
- Close the lid and set the Instant Pot to manual mode for 60 minutes.
- After the cooking time is up, let the pressure release naturally for 10 minutes before manually releasing any remaining pressure.
- Remove the chuck roast from the Instant Pot and let it rest for a few minutes before slicing.
- Optional: If you prefer a thicker gravy, mix together cornstarch and water in a small bowl. Set the Instant Pot to sauté mode and whisk the cornstarch mixture into the cooking liquid. Let it simmer until thickened.
- Serve the sliced chuck roast with the gravy and enjoy!
Wow, I didn’t expect it to be this good. So easy in the Instant Pot. Thanks!
I’m glad you liked it! The Instant Pot really makes everything easier, doesn’t it? I can never go back to regular cooking now!
Gravy is optional? WHAT?!? That’s the best part! 😍
OMG, right?! Gravy makes everything better! I can’t eat roast without it! 😋
beef + olive = yum! 10/10 would make again. 😋
I’m so glad you enjoyed it! The combo of beef and olive oil really does make everything better. 😄
Didnt work for me. The meat came out tough instead of tender. What did I do wrong?
My family loved it! Even my picky eater had seconds! 😈
That’s awesome to hear! Can’t wait to try it myself for my picky kids!
Just a tip – the beef broth MAKE THIS! It was the secret ingredient I think!
Is 60 mins really enough? I thought roasts usually take longer than that? But it did taste good!
I’ve made this before, and 60 mins is perfect in the Instant Pot! It really saves time. Glad you liked it! 🙂
I don’t know what I did wrong, but my roast was tough. I followed the instructions exactly! 🤨
I thought it was too salty. Maybe cut down on Worcestershire sauce next time?
Instant pot is the best! This roast was so succulent, I couldn’t stop eating it! 😋
Absolutely delicious! The flavors blended perfectly. Will make again!
Yummm! I added carrots and potatoes too, works great!🥔🥕
This was AMAZING! The roast was tender and full of flavor. Definitely a repeat dish for my family!
I don’t know, I feel like it’s missing something. Maybe more spices next time?
This looked so good but I accidentally burned the garlic. Now my kitchen smells terrible! 😩
Yummy! I’m not too good at cooking, but this was simple enough for me. Family loved it!
Skipped the wine, used water instead. Still came out yum!
Water? Really? That’s bold! But hey, if it worked for you, more power to ya! 😄
Good but I don’t like cornstarch in gravy. I just used flour instead and it was better.
What’s the deal with red wine? Can I just use more broth? Seems like a waste. Just my opinion.
This turned out amazing! The beef was so tender and flavorful. Definitely making it again!
Easy recipe but I forgot the wine. Still turned out ok. Would recommend for newbies! 👍
I made this last night, but I think I overcooked it. It came out dry 😢. 60 minutes seemed too long for chuck roast!
I totally get it! The cooking time can vary based on your Instant Pot. Maybe try 50 minutes next time?
Why do you put wine in it? I thought roast is just meat… 🤔
I tried this recipe and it was okay, but my roast came out a bit dry. I think I cooked it too long?
Not bad, but I think it needed more seasoning. I added a bit of garlic powder and it improved a bit.
I followed the recipe exactly and it looked like a mess. Not sure what went wrong. Maybe my Instant Pot is broken?
Sometimes it just doesn’t come out right. Did you check if the sealing ring is in place? That can cause issues with pressure cooking.
Simple and delicious. I added some carrots and potatoes for a one-pot meal. So good! 🍲
I dunno, I think it was a bit too salty for my taste. Maybe less Worcestershire sauce next time?
Salt?? I thought the recipe was good. Maybe you just have a sensitive tongue? 😂 Just try lessing other ingredients too.
I totally get what you mean! I think the Worcestershire sauce can pack a punch sometimes. Maybe just 1/2 tablespoon next time? It’s all about tweaking things to fit your taste!
This is just boiled meat, right? Not impressed. 🙁
Yum! The gravy is sooooo good. I might just drink it straight!
Drink the gravy? That sounds kinda gross. But to each their own, I guess. 🤔
Right? I could totally see myself just pouring it in a cup! 😂 This recipe is a game changer!
I substituted white wine because that’s what I had. It turned out great! Maybe not traditional, but whatever works!
I love that you made it work with what you had! Cooking is all about improvisation, right? Cheers to good food!
Not sure if white wine would really taste that great. Maybe next time try to stick to red?
Honestly, I don’t see what the fuss is about. Just a chunk of meat in broth. No wow factor for me. 🤷♂️
Instant Pot cooking is the way to go! I’m a newbie but this was super easy and I had no issues!
I’m not a fan of red wine, can I skip that part? I want to try this but not sure about the taste.
This recipe is amazing! The roast turned out super tender, and the gravy was perfect. My family loved it!
Chuck roasts are best slow-cooked, am I right? Instant Pot doesn’t do it justice! Kind of a waste of red wine if you ask me.
But wait, it actually cooks pretty good in the Instant Pot! Who needs 8 hours when you can do it in 1? Red wine is fine too!
I hear ya! Slow-cooking gives it that melt-in-your-mouth goodness. Instant Pot just can’t compete!
This was amazing! The meat was so tender, and the flavors were perfect. Definitely a keeper!
Total disaster! The instant pot exploded. I’m not even kidding. Never again! 🚫
Sooo good! I add carrots and potatoes too. Gotta have da veggies!
Idk about adding all those veggies. Ain’t chuck roast supposed to be just meat? Sounds kinda weird to me.
Yesss, veggies make everything better! Carrots and potatoes are a great addition. I always throw in some celery too!
I don’t know, this seemed too simple. Did I really need the wine?
This looks good but like, why do we need the cornstarch? Can’t we just use regular flour? Just a thought.
This recipe is a game changer! The roast turned out so tender and flavorful. I’ll definitely make this again!
Wow! Can’t believe how easy this was. I didn’t have rosemary, so I used basil instead. Still delicious!
This was OK, but too many steps. Why not just let it cook longer in a regular pot? Instant Pot is fancy but too much work.
Tasted good but took me forever to clean the pot. Kinda worth it tho.
Honestly the best roast ever. My family devoured it within minutes! Thanks for sharing!
I don’t trust these Instant Pot recipes. They never taste like real cooking! 😤
Nah, I don’t know about that. Instant Pots are just fancy pressure cookers. My grandma still makes it better on the stove! 🤷♂️
I get where you’re coming from! But I tried this recipe and it was so good! Way better than cooking all day! 😋
Meh… was kinda bland even with all those spices. I was expecting something more flavorful.
I totally get what you’re saying! I think it really depends on how much seasoning you use. More spices might do the trick!
Easy peasy, just like my grandma used to make but with a twist! Love this recipe! ✨
