Ingredients

  • 1 cucumber diced
  • 1 tomato diced
  • 1/2 red onion thinly sliced
  • 1/4 cup Kalamata olives

  • 2 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

      Totally makes sense—cucumber can dump a lot of water. If you ever make it again, try salting the diced cucumber for 10 minutes and patting it dry before mixing. Also serving right away helps keep that “crisp” feel.
