Gougères

December 26, 2023

Gougères are delightful French cheese puffs made from pâte à choux – the same dough used for éclairs and cream puffs, combined with grated cheese, typically Gruyère or Comté. These light, airy bites are crisp on the outside, tender on the inside, and full of cheesy, savory flavor. Whether served as an appetizer, party snack, or paired with wine, gougères never fail to impress.

Originating from the Burgundy region of France, gougères are often enjoyed during wine tastings or festive gatherings. Their delicate structure and rich taste make them a perfect pairing with both white and red wines, especially a crisp Chablis or a light Pinot Noir. Despite their elegant appearance, gougères are surprisingly easy to make at home.

The dough begins with a simple mix of water, butter, flour, and eggs. Once smooth and glossy, it’s enriched with a generous helping of grated cheese and a touch of salt and pepper. You can also add nutmeg or cayenne for a subtle kick. The dough is piped or spooned onto a baking sheet and baked until puffed and golden.

Gougères can be served warm or at room temperature and are delicious plain or filled with savory spreads like herbed cream cheese or pâté. They also freeze beautifully, making them an excellent make-ahead option for entertaining.

Elegant yet unfussy, gougères are the perfect example of how French cuisine elevates simple ingredients into something extraordinary. They’re a wonderful way to bring a taste of France into your home, no passport required.

My first batch turned out bland—turns out I forgot the salt in the butter-water step. Oops. Second batch was way better. Lesson learned!

    1. User avatar myrtle.moore1967 says:

      5 stars
Oh no, that would definitely do it 😅 Glad your second batch saved the day though—gougères are so sensitive to seasoning. Thanks for the lesson learned!

    2. User avatar carri.ankunding20 says:

      4 stars
Honestly I’ve done the same thing with missing salt. I thought “how can it be bland?” then realized I skipped it. Yours sounds like it turned out perfect the second time! (Also 425F seems hot—do they really puff that fast?)

  2. User avatar Toby Wuckert says:

    4 stars
The eggs part intimidated me… but beating one at a time helps. I used 4 medium eggs instead of large and had to add a spoon of warm water to loosen the batter.

  3. User avatar Mayor Hagen says:

    3 stars
The instruction ‘beat eggs in one at a time’ is true but vague—how long are we talking? I guessed. Still came out okay, just not super glossy.

  4. User avatar maisha.terry says:

    3 stars
These are surprisingly easy, but you have to beat the eggs well. I rushed it and the batter looked grainy. Still tasty, just weird.

  5. User avatar tissues_with_issues says:

    5 stars
These are dangerous. One turns into the whole tray disappearing. I served them with soup and they were gone fast. 10/10.

  6. 2 stars
😐 I expected a lot more. They were just ok.

  7. User avatar cornelia.terry25 says:

    5 stars
These turned out beautifully puffed—like little cheese pillows. I used extra-sharp Gruyère and they were super flavorful. Will make again for sure.

    1. User avatar Art Simonis MD says:

      5 stars
Yes!! “Cheese pillows” is exactly it 😄 Great idea using extra-sharp Gruyère—sounds like they must’ve been so savory. Thanks for sharing!

    2. 3 stars
I tried these once and mine didn’t puff that much… think I overbaked? Also I used cheddar and it was still good but not the same. What rack/position do you bake on?

  8. User avatar Donetta Grimes says:

    3 stars
Too much butter for my taste, it left a greasy finish. 🙁

  9. User avatar lashanda.schmidt90 says:

These are delish! Perfect with a glass of wine! 🍷

    1. User avatar percy.koepp68 says:

      3 stars
They were kinda bland for me. Maybe add more cheese? 🤔

    2. User avatar mardell.ernser61 says:

      5 stars
I totally agree! These go so well with red wine! 😍

  10. User avatar sandy.schuppe says:

They looked fancy but were super simple! Made them in no time!

  11. User avatar genny.franecki48 says:

I was worried about the dough when it looked too thick, but beating the eggs in made it smooth. Mine were a little less golden, but still delicious.

    1. 5 stars
Yes!! Gougères are totally like that—thick batter at first, then the eggs smooth it out. Glad yours still puffed and tasted great even if less golden!

    2. User avatar mellie.walsh89 says:

      4 stars
Mine did the same “too thick” thing the first time, and I panicked 😅 I guess that’s normal. Do you think more water would help, or is it better to just trust the baking time?

  12. User avatar wellRespected says:

    5 stars
5 stars? maybe. Parchment helped tho. Would eat again. 😅

  13. User avatar ezequiel.kuphal27 says:

    3 stars
I don’t know what Gruyere is. Can I use cheddar? I don’t want to go to fancy store.

  14. 4 stars
Yummy! But I used cheddar instead of Gruyere, and they still rocked!

  15. User avatar clinton.cruickshank29 says:

    5 stars
These were a huge hit at the party! Fluffy and cheesy, just like I love them. Will make again!

  16. User avatar melita.lind1961 says:

    2 stars
Mine went flat 😭. I think my oven runs cold and I didn’t bake long enough. Also I didn’t beat the eggs enough, probably. Flavor is still nice though.

    1. User avatar tana.kling97 says:

      3 stars
Flat ones happen 😅 maybe u needed more time. My cousin says “beat till like foam” but i always forget. Also if oven runs cold, 425 might really be like 390… so yeah, add like 5 min? Flavor still good is a win tho.

    2. User avatar Bethann Kuvalis says:

      4 stars
Ugh, I’m sorry! Gougères can totally deflate if the oven isn’t really at temp. I’ve learned to preheat longer (even 15 extra min) and don’t open the door until they’re set. Also, make sure the batter is hot when you start mixing in eggs—adds puff.

  17. User avatar alita.reichel84 says:

    1 star
Quick question: is it supposed to be 4 eggs or 4 cups? (I know that’s silly.) The instructions are clear, I just got spooked. Still, they were tasty—could be my fault.

  18. User avatar Zarniwoop says:

    2 stars
I burnt mine kinda. Maybe my oven runs hot? 🙈

    1. User avatar tatum.williamson says:

      4 stars
Yeah, ovens can be tricky! Maybe try lowering the temp next time? Good luck!

  19. User avatar Qukah Nata says:

Yummy! Big fan of cheese puffs! 🙂 I think I’ll whip these up for my friends.

  20. User avatar mike.cummerata84 says:

    5 stars
Made these last night—so puffyyyy! The Gruyère flavor is spot on, and they disappear fast. I added a tiny pinch of cayenne and it was perfect.

    1. User avatar jeffery.bauch69 says:

      5 stars
Yesss! Mine never get that puffy unless I really beat in the eggs well—sounds like you nailed it. Also love the cayenne idea 👏

    2. User avatar Shirley West says:

      3 stars
I tried these and mine didn’t puff like yours… maybe my oven ran cool? I did use Gruyère but I think I under-baked. Still tasted good though.

  21. User avatar sterling.heathcote85 says:

    1 star
Gougères? Never head of it before this. What’s cheese puffs?

  22. User avatar antonette.lubowitz says:

    1 star
I don’t think this is a real recipe, are you sure this is how you make them? 🤔

  23. 3 stars
I wasn’t sure about this recipe but I gave it a try. They tasted great but didn’t puff up as much as I hoped.

    1. User avatar suzy.rutherford30 says:

      3 stars
I think you might’ve needed to beat the eggs more! A good mix can help with that puff. Just a thought!

    2. User avatar ALTplusF4 says:

      5 stars
I’m glad you tried it! Sometimes the puffiness can depend on the oven or the size of the batter balls. Don’t give up, they’ll be perfect next time!

  24. User avatar nova.jaskolski1980 says:

    5 stars
Wow, I cannot believe how quickly they baked! Perfect for my family dinner. Thanks!

  25. 5 stars
SO GOOD!! I added some spices and they were amazing!! 🧀

  26. 2 stars
I didn’t have Gruyere so used Cheddar… Does that count? They still puffed up but tasted weird.

    1. 3 stars
Weird taste? Maybe the cheddar was too sharp? I think it’s worth trying again with Gruyere.

    2. 4 stars
Cheddar is great, but it won’t be the same as Gruyere! I guess it still worked out for you though.

  27. User avatar malia.mayer33 says:

    4 stars
Really easy to make! The cheese makes them so flavorful. Definitely a keeper!

    1. User avatar amelia.effertz says:

      5 stars
I agree! The cheese really does take them to the next level. Great for parties too!

    2. User avatar Effrafax of Wug says:

      3 stars
I tried this and they didn’t puff like yours. Maybe I did something wrong? How can I fix it next time?

  28. 2 stars
IDK, they didn’t puff up for me. Followed the recipe exact, but it just turned into cheesy pancakes.

  29. User avatar roosevelt.dach80 says:

    5 stars
I’m not usually great at choux, but the instructions were clear. My batter was thick but I kept stirring and it came together. Next time I’ll grate the cheese a bit finer.

    1. User avatar gidget.monahan says:

      3 stars
I tried choux once and mine just turned into a sad paste. 425F is pretty hot though—maybe that’s why mine didn’t puff. Your note about grating finer makes sense. Also, do you bake with convection or just regular?

    2. User avatar cathryn.aufderhar says:

      5 stars
That’s awesome—choux can be so finicky, so “came together” is a win. Finer grated Gruyère should melt even better. Did yours spread nicely or stay more domed?

  30. User avatar vivian.ankunding says:

    5 stars
I followed the steps closely and the dough felt right after cooking the flour into a ball. Mixing the eggs took a little time, but the choux texture was worth it. Would make again.

  31. User avatar eleonore.schuppe54 says:

    5 stars
These came out perfectly puffed and cheesy! I followed the steps pretty closely and the texture was spot on. Definitely making again for parties.

  32. 4 stars
425°F seems too high? I tried 400 and they were paler. When I followed 425 they browned like the picture. Lesson learned.

  33. 1 star
Gougères? More like gooey messes! I couldn’t even get them off the sheet. What a bummer.

  34. User avatar florencio.walter76 says:

    5 stars
So easy to make! I didn’t think I could do it, but they came out perfect.

  35. User avatar antonia.botsford9 says:

    2 stars
Way too much cheese! It overpowers everything. I prefer just a sprinkle.

  36. User avatar andrea.hartmann36 says:

    5 stars
These are the best! I made them for a party and they were gone in seconds. So yummy!

  37. User avatar Lorilee Kihn DVM says:

    4 stars
I had to add more cheese than listed, but these still turned out great. Will definitely make again!

    1. User avatar cecile.upton72 says:

      5 stars
More cheese? Sounds awesome! I love a cheesy snack. Can’t wait to try it your way!

  38. User avatar caryl.mosciski says:

These turned out AMAZING! So cheesy and fluffy!

    1. User avatar leta.macgyver34 says:

      5 stars
Wow, that sounds delicious! I’m definitely gonna try making them this weekend. Thanks for sharing!

  39. 5 stars
These came out super puffy and golden—exactly like the little bakery ones. The Gruyère smell while baking is unreal. I served them with soup and everyone went back for seconds.

  40. 2 stars
Kinda mid. Too much fuss for cheese puffs. My kids liked them anyway, but I probably won’t make again soon.

  41. User avatar kenton.rippin says:

    3 stars
Easy to make but took forever to rise. Idk about these.

    1. User avatar bianca.gulgowski41 says:

      3 stars
I had the same issue with rising! Maybe the eggs weren’t quite at room temp?

  42. 4 stars
Mine didn’t puff as much as I hoped, but they still tasted great. I think I underbaked them a bit and maybe my cheese was too dry. Still a solid recipe.

  43. User avatar huong.graham97 says:

    2 stars
I dunno, mine turned out flat. Maybe I didn’t beat the eggs long enough?

  44. User avatar Noel Flatley says:

    4 stars
Not gonna lie, the “beat in eggs one at a time” part is a workout 😅. My batter looked a little grainy at first but smoothed out. End result: flavorful, though slightly salty for my taste.

    1. User avatar ronald.pfannerstill31 says:

      5 stars
Totally feel you—those eggs take commitment 😅. I’ve had it turn grainy on me too, but like you said it usually comes back together once you keep beating. Next time I’d just reduce the salt a touch (or use a slightly less salty cheese). Still, warm gougères are always worth it!

  45. User avatar luetta.von4 says:

    3 stars
Gruyere is expensive… used some cheddar instead and they were okay, but not the same vibe. Would try Gruyere next time.

    1. User avatar Margot Fenring says:

      5 stars
Totally get it—Gruyère can be pricey. Cheddar will still taste great, but you’re right, it won’t give the same nutty, slightly sweet “vibe” gougères have. If you try Gruyère next time, these should be extra flavorful. 😊

  46. User avatar barbar.damore says:

    3 stars
I tried this once and my batter was super thick, like paste. I probably beat the eggs wrong? Also, 425°F feels too high—maybe my oven runs hot. Would make again though.

  47. User avatar hee.schuppe26 says:

    2 stars
I tried making these but they just flattened out… I don’t know what went wrong. Maybe my eggs were too small?

    1. User avatar venice.ullrich1952 says:

      4 stars
I had the same issue once! Make sure you mix the batter well before adding the eggs. Also, the size of the eggs shouldn’t really matter that much. Maybe try larger eggs next time just to be safe!

  48. 5 stars
I followed it and the dough was weirdly thick at first, but after beating the eggs in, it came together fine. Texture was spot on. Great recipe.

  49. 3 stars
I think I did somethin wrong, mine burnt on the bottom. Ugh, how do you avoid that??

    1. User avatar susanne.crist59 says:

      4 stars
I had the same problem! Make sure your oven is at the right temperature. Sometimes the oven can be off, which makes things burn.

    2. User avatar Emily Saunders says:

      3 stars
Maybe you left them in too long? These things can go from perfect to burnt real quick! Just keep an eye on them next time.

  50. 5 stars
These gougères are to die for! So cheesy and fluffy! Would definitely make again.

  51. User avatar wellRespected says:

    4 stars
I love gougères, but I used cheddar because that’s all I had and they were still good.

  52. User avatar Michael83 says:

    1 star
Gougères? More like gooey mess. My kids wouldn’t eat it, they said it looked funny. Next time, maybe just stick to pizza.

  53. User avatar Fenchurch says:

    2 stars
I don’t get the hype. Mine didn’t puff at all – they just flattened out. What did I do wrong? 🙁

  54. User avatar brady.balistreri52 says:

    3 stars
I had a hard time getting them to puff up properly. Maybe I did something wrong?

  55. User avatar jesica.becker10 says:

    3 stars
I used cheddar instead of Gruyère and… honestly they still tasted great, but the classic nutty flavor is missing. If you can, stick with Gruyère.

  56. User avatar Galaxia Woonbeam says:

    4 stars
Yummy! Took some to a party and they were gone in minutes. Everyone loved them!

    1. User avatar Prostetnic Vogon Jeltz says:

      5 stars
That’s awesome to hear! They’re always a hit at gatherings. What kind of cheese did you use?

  57. User avatar gail.schulist31 says:

    5 stars
These are delicious! Perfect for a party. They puffed up so nicely!

  58. User avatar man.klein86 says:

    2 stars
I tried once and they turned out flat. I’m guessing my pan wasn’t hot enough or I didn’t cook the flour long enough to make the ball. The flavor is still nice, but the texture was off.

  59. User avatar wellRespected says:

    2 stars
I tried this and they were more like cheese biscuits than gougères. Maybe my oven runs hot? 220C felt too high.

  60. User avatar mindy.hyatt says:

    3 stars
They don’t look like the pictures I saw online. Mine came out kinda flat and sad. What did I do wrong?

    1. 4 stars
Maybe you didn’t bake them long enough or the oven wasn’t hot enough? That happened to me once. Keep trying!

  61. User avatar flora.adams22 says:

Puff pastry à la France! So good! I’ll make them again for dinner.

    1. User avatar smartestRedditor says:

    2. User avatar jeannette.okon5 says:

Gougères? Isn’t that French? I thought they were just cheese puffs? Anyway, I’m gonna try this, maybe it’ll impress my guests. 😄

  62. User avatar ArabianNights says:

    3 stars
Didn’t rise at all! I must’ve messed something up… but they tasted okay.

    1. 4 stars
Don’t worry, it happens! Maybe try beating the eggs longer next time? They can help with the rise!

  63. User avatar anonymous_hacker says:

    5 stars
These were a hit at my party! So cheesy and puffy, everyone loved them.

  64. User avatar mario.monahan says:

    I don’t know, man. This seems complicated. I ain’t a chef lol.

  65. User avatar clayton.jast says:

    4 stars
425°F seems hot! I was scared they’d burn, but they browned evenly. The inside was chewy and steamy. Surprisingly easy.

    1. 5 stars
425°F really does sound spicy, but gougères need that kick to puff. I’m glad yours browned evenly—chewy and steamy is exactly the vibe. Also, yeah, the dough part feels intimidating until you stir it and it turns into that smooth ball.

  66. 5 stars
These turned out amazing! Fluffy and just cheesy enough. Will definitely make again!

  67. User avatar carol.quigley says:

    3 stars
These are good, but 20–25 minutes seems short for my oven. I ended up adding ~8 more minutes to get a deep golden color. Next time I’ll start checking earlier.

    1. User avatar gary.glover98 says:

      4 stars
Mine took like 30 mins once 😅 I think my oven runs cool. I’d rather underbake than overbake, but gougères should be really golden and dry inside. 20–25 is just “best case”.

    2. User avatar mireille.frami31 says:

      5 stars
Totally agree—ovens vary a lot. I usually start checking around 18 min and look for a truly deep golden color. If they’re pale, that extra 5–10 minutes makes a big difference.

  68. User avatar edwin.bechtelar says:

    3 stars
umm i forgot to line the pan and they stuck a little 😭 but lesson learned. taste was ok.

  69. 4 stars
Not gonna lie, I almost panicked in step 2. It looked like a mess before the flour fully cooked. Once it formed a ball, I was good. Worth it.

  70. User avatar Falmer Spellsword says:

    2 stars
Not gonna lie, I followed it exactly and the puffs came out kind of flat. The flavor is good, but texture was disappointing. I’m giving it another chance with a different cheese blend.

  71. User avatar merrill.runolfsson40 says:

    4 stars
Easy to make but my oven sucks, took longer for them to get brown. Still yummy tho!

  72. 4 stars
Really tasty, but mine weren’t as tall as the picture. I think I underbaked slightly (pulled them at ~18 min). Next time I’ll wait for deeper golden color.

  73. User avatar harland.lockman says:

    3 stars
Not sure I trust the 425F timing. Mine deflated a bit after cooling. Taste was good though, just not as tall as I wanted.

    1. 4 stars
Ugh I feel you—gougères are so finicky. If they deflated after cooling, that’s usually a moisture/structure issue: make sure you really bake them fully (golden all over) and don’t open the oven early. Also, try letting them cool on the sheet only briefly—warm serving helps a lot. Your temperature timing sounds close though; 425°F is standard.

  74. 3 stars
Mine turned out kinda flat… I think I underbeat the eggs. Also my oven runs hot, so I pulled them closer to 18 minutes instead of 25.

    1. User avatar margaret.howe says:

      3 stars
Mine also went flat once. I swear it was because my cheese was “not really Gruyère” 😅 and I didn’t beat the eggs long enough. But 18 min at 425 sounds early—those should brown more. Maybe lower temp instead of shorter time?

    2. 4 stars
That makes sense—gougères are super sensitive to egg incorporation. If you didn’t get the batter nice and elastic/smooth, they can end up a bit flat. Also, if your oven runs hot, pulling at ~18 min could definitely cut the puff time. Next time try 20-22 min and look for deep golden + hollow/steaminess inside.

  75. 5 stars
These turned out *perfectly* puffed and cheesy. I was nervous about the dough, but stirring until it forms a ball made total sense. Served them warm and they disappeared fast!

    1. User avatar patrice.fay19 says:

      5 stars
Yes! Gougères are so satisfying when they puff like that. Mine always get a little nervous at the dough step too, but the “forms a ball” part is the key. What cheese did you use—straight Gruyère or a mix?

  76. 5 stars
Perfect snack for a party! Everyone loved them.

    1. User avatar phil.russel says:

      2 stars
I don’t know, they look a bit hard to make for me. Can they be made easier?

    2. User avatar Colin the Security Robot says:

    1. User avatar hyman.welch1956 says:

      4 stars

It happens! Did you let the eggs mix in properly? Sometimes if they aren’t mixed in enough, they don’t puff right.

I’m skeptical about 1 cup flour + 1 cup water, but it actually works. The dough ball step is key—if it’s not a ball, cook it a minute longer.

These are like edible cheese puffs. 10/10 snack for parties. They’re honestly better warm—cold ones got chewy for me.

Pretty good, but mine didn’t puff as much as expected. I think I underbaked by a couple minutes and maybe my eggs were a bit small. Still tasty and cheesy though.

What’s the point of adding cheese? Makes them too rich for my liking.

Had to bake them 28 minutes because they weren’t golden at 25. Still worth it—crispy outside, tender inside.

Interesting—mine are golden by like 22 min. Maybe 28 is too long? Or did you use a different cheese / smaller puffs? Either way they still sound good, but I’d check the oven temp too.

Totally feel you—gougères can be sneaky. I’ve also had to push past the time when my oven runs cooler. Crispy outside + tender inside is exactly the goal!

I used Gruyère like it said, but I think I shredded it too thick? They still tasted good, just not as melty. Also 425°F is intense—watch them like a hawk.

Very easy recipe, could be made even without parchment?? Mine stuck a little anyway. Might be the baking sheet I used. Still tasted amazing though.

They were good but salty enough to make me drink a whole glass of water lol. I’d cut the salt next time or use less cheese.
