Cranberry Brie Bites

November 18, 2024

Cranberry brie bites are the perfect combination of sweet, savory, and creamy, wrapped up in a bite-sized appetizer that’s as elegant as it is effortless. Made with buttery puff pastry, creamy brie cheese, and tangy cranberry sauce, these little bites are always a hit at holiday gatherings, parties, or as a festive snack.

The magic begins with flaky puff pastry, cut into small squares and pressed into mini muffin tins to form golden, crispy cups. Inside each cup, a cube of brie melts into a luscious, creamy center as it bakes. A spoonful of cranberry sauce adds a sweet-tart contrast that perfectly balances the richness of the cheese. Some versions elevate the flavor even more with a sprinkle of chopped rosemary, thyme, or toasted pecans for a touch of earthiness and crunch.

As they bake, the pastry puffs up beautifully, turning golden and crisp, while the brie becomes gooey and melty, mingling with the cranberry sauce to create an irresistible bite. The result is a perfect harmony of textures, crisp, creamy, and jammy, with flavors that feel festive and indulgent.

Cranberry brie bites are incredibly versatile. They make a beautiful addition to a charcuterie board, can be served as a starter for Thanksgiving or Christmas dinner, or offered as an elegant party appetizer. They come together quickly and look impressive without requiring much effort.

Pair them with a glass of sparkling wine, Prosecco, rosé, or a crisp cider. The bubbles and acidity complement the richness of the brie and the tartness of the cranberry perfectly.

Simple yet sophisticated, cranberry brie bites are a crowd-pleasing appetizer that captures the cozy, festive spirit of the season in just one delicious bite.

I don’t know, they just didn’t taste as good as I thought they would. Maybe I did something wrong?

    1. 4 stars
I totally get that! These bites can be tricky if the phyllo doesn’t bake right. Did you make sure to watch the baking time closely? Sometimes little things can make a big difference.

Maybe your brie was too aged or something? Just a thought, my friend. Brie can vary a lot in flavor. But don’t worry too much about it; they are still fancy! 🤷‍♂️

  2. User avatar jan.gusikowski says:

These bites are AMAZING! I made them for a dinner party and everyone loved them. Will definitely make again! 🍴

These are cute but honestly… a lot of work for mini bites. I feel like store-bought puff pastry would be easier. Taste is fine, just not worth the effort for me.

    1. User avatar travis.upton59 says:

      4 stars
Totally get that—phyllo is fiddly. Store-bought puff would probably save a ton of time, and I bet the crunch would still be great.

They didn’t turn out right for me. The phyllo was soggy. Maybe I did something wrong?

  5. User avatar randy.schinner says:

Cranberry and cheese? Yummy! But I don’t trust phyllo pastry. Too many layers.

  6. User avatar annamae.green says:

These are dangerously good. The phyllo gets so crisp and the brie turns all melty—perfect sweet/savory combo with the cranberry. I used store-bought cranberry sauce and it still tasted fancy.

      5 stars
Right?! I made these for a party and they disappeared way too fast. The crisp phyllo + melty brie is such a good contrast, and the cranberry keeps it from feeling too rich.

  7. User avatar britt.rutherford50 says:

Phyllo pastry is that stuff you use in baklava, right? Curious how this would taste.

  8. 2 stars
Cranberry sauce tasted kind of weird with the brie for me, like too tart. Walnuts were good though. Might try a sweeter cranberry next time.

  9. 5 stars
5 stars! I added some diced apples and they were a hit!! Highly recommend.

  10. User avatar ShanksOnePiece says:

    5 stars
These are amazing! So easy to make and a hit at my party! Definitely making them again.

  11. User avatar Kristal Hill says:

    4 stars
I was skeptical about using phyllo pastry but wow, it worked out great! Just be careful, it can burn fast.

    1. User avatar deadra.rogahn says:

      4 stars
I tried this recipe too! The phyllo was super crispy, but I burnt a few of mine. Gotta watch it closely!

  12. 4 stars
I forgot to buy walnuts, so I just left them out. Still yum! Maybe next time I’ll try adding them.

  13. User avatar waylon.daugherty says:

    2 stars
Hmm, not sure about cranberries and cheese. Sounds weird..

  14. 3 stars
Can you make these ahead of time? I’m planning a big gathering and could use the prep!

  15. User avatar trinh.leannon52 says:

Not a fan. The cheese got too gooey and the flavors didn’t mix well for me.

    1. User avatar lurline.conroy98 says:

      4 stars
I think the gooeyness is just part of the charm! Maybe you didn’t bake them long enough? Love these bites!

    2. User avatar Will Wisoky says:

      3 stars
Not sure what you did wrong, but mine turned out awesome! Cheese shouldn’t be gooey like that! You may want to try a different recipe.

  16. 5 stars
These are sooo good! I brought them to a party, and everyone loved them. Total hit!

Yum yum! Perfect for Thanksgiving! I added some nutmeg to the cranberry sauce, and it was amazing!

  19. User avatar foster.orn70 says:

Very easy to make! I used store-bought crust and it still turned out fine!

    1. User avatar rocco.kuhn35 says:

      5 stars
I agree! Store-bought crust made it so much easier! Definitely making these again!

    2. 2 stars
I think using store-bought makes it less special. You should at least try making the crust yourself next time!

  20. User avatar tora.crooks says:

No honey for me. I felt like it made it too sweet with the cranberry. Otherwise, good texture and flavor. Phyllo is a little fiddly but worth it.

    1. User avatar monty.littel says:

      5 stars
Totally get it—cranberry can already be pretty sweet/tart depending on the brand. Cutting the honey is probably the move. Glad the texture and flavor still came through though!

    2. User avatar carletta.altenwerth25 says:

      4 stars
I used honey and it was sweet for me too 😅 but maybe my cranberry sauce was extra sugary. Phyllo is always a pain… mine kept ripping. Still, these were gone fast.

  21. User avatar cathleen.stark39 says:

    3 stars
Yea, I made these but it wasn’t that great, Brie is a lil fancy for me. Just stick to cheddar.

  22. 3 stars
Can I use cream cheese instead of Brie? I don’t like Brie.

  23. User avatar karma.schaden says:

    5 stars
This recipe is amazing! I replaced the walnuts with pecans and it was still great. Will make again!

  24. 3 stars
This is just too fancy for my taste. I like simple snacks.

  25. 5 stars
These came out dangerously good—crispy phyllo with melty brie is such a winning combo. I used store-bought cranberry sauce and it was still amazing.

    1. 4 stars
Dangerously good?? Lol 😂 Mine kinda burst out of the phyllo after baking—maybe my brie was too big. Also I used 400°F and they were more brown than golden… still yummy though.

    2. User avatar Draugr Thrall says:

      5 stars
Yes!! I love that sweet-tart cranberry + melty brie situation. I did the same with store-bought sauce and it still tasted fancy. Definitely adding walnuts next time.

  26. 5 stars
YAS! Perfect snack for the holidays! I drizzled brown sugar instead of honey. So good!

  27. User avatar maritza.robel81 says:

    5 stars
Made them for a party and everyone asked for the recipe. I did add the honey drizzle and walnuts—great sweet/salty balance. Only thing: my muffin tin stuck a bit, so grease well.

  28. 4 stars
I wasn’t sure about the combo of cranberry and brie, but it actually works! Great recipe.

  29. User avatar marvis.simonis says:

    4 stars
Delish! I added some cinnamon to the cranberry sauce, and it was a game changer!

  30. User avatar peter.johnson1970 says:

Yum! I’ll be making these again for Thanksgiving! 😍

    1. User avatar danial.fahey65 says:

These sound amazing! Perfect for the holidays! 🤤

  31. User avatar Prostetnic Vogon Kwaltz says:

Not gonna lie, I was skeptical about phyllo + brie, but it actually works. Mine got a little soggy on the bottom though—maybe I didn’t grease enough.

    1. 5 stars
Totally felt the same way before I tried it 😅 Good call on greasing—my bottoms only got soggy when I was lazy with the butter/oil. I also bake on the lower rack sometimes to get more browning.

    2. User avatar darron.hauck says:

      4 stars
Maybe your oven runs a bit cool? I’ve found 375°F is fine but if it’s not hot enough the phyllo steams. Also did you press the phyllo squares down firmly? If there’s gaps, it’ll get soggy fast.

  32. User avatar adah.mohr15 says:

    3 stars
I didnt have phyllo dough, so I used puff pastry. They still turned out ok, but not the same.

  33. User avatar herb.pfeffer64 says:

Too complicated for me! I prefer recipes that are more straightforward. Didn’t work out for me.

  34. User avatar georgeanna.denesik31 says:

    2 stars
Not bad, but I subbed out the cranberry sauce for apple jelly and it was kinda weird. Lesson learned!

    1. User avatar louis.balistreri10 says:

      2 stars
Weird? Sounds kinda gross tbh… apple jelly instead of cranberry? Yikes. 😬

    2. User avatar olympia.rolfson79 says:

      4 stars
I totally get that! Cranberry is so much better than apple jelly for this. Stick to the recipe next time!

  35. User avatar tamie.rohan1972 says:

    3 stars
Easy to make but kinda bland. I added some spices next time.

  36. User avatar bill.schumm says:

    2 stars
Too much work for such a simple snack. Just buy them ready-made!

  37. User avatar earl.bashirian51 says:

    5 stars
Yum, perfect for Thanksgiving! Thanks for sharing! 😍

  38. User avatar Saruman the White says:

    5 stars
These are dangerously good. The brie turns all melty and the cranberry/honey combo is perfect for holiday vibes. I used store-bought cranberry and it still tasted homemade.

  39. User avatar obdulia.trantow says:

    4 stars
Is it possible to use cheddar instead of Brie? Not a fan of Brie.

    1. 4 stars
Cheddar should work! It’ll have a different flavor but it’s cheese so I say go for it!

  40. 4 stars
Pretty solid idea, but my phyllo dried out a bit and some squares cracked. Next time I’ll brush with melted butter before baking. Still tasty though—would make again for parties.
