Cranberry Brie Bites

November 18, 2024

Cranberry brie bites are the perfect combination of sweet, savory, and creamy, wrapped up in a bite-sized appetizer that’s as elegant as it is effortless. Made with buttery puff pastry, creamy brie cheese, and tangy cranberry sauce, these little bites are always a hit at holiday gatherings, parties, or as a festive snack.

The magic begins with flaky puff pastry, cut into small squares and pressed into mini muffin tins to form golden, crispy cups. Inside each cup, a cube of brie melts into a luscious, creamy center as it bakes. A spoonful of cranberry sauce adds a sweet-tart contrast that perfectly balances the richness of the cheese. Some versions elevate the flavor even more with a sprinkle of chopped rosemary, thyme, or toasted pecans for a touch of earthiness and crunch.

As they bake, the pastry puffs up beautifully, turning golden and crisp, while the brie becomes gooey and melty, mingling with the cranberry sauce to create an irresistible bite. The result is a perfect harmony of textures, crisp, creamy, and jammy, with flavors that feel festive and indulgent.

Cranberry brie bites are incredibly versatile. They make a beautiful addition to a charcuterie board, can be served as a starter for Thanksgiving or Christmas dinner, or offered as an elegant party appetizer. They come together quickly and look impressive without requiring much effort.

Pair them with a glass of sparkling wine, Prosecco, rosé, or a crisp cider. The bubbles and acidity complement the richness of the brie and the tartness of the cranberry perfectly.

Simple yet sophisticated, cranberry brie bites are a crowd-pleasing appetizer that captures the cozy, festive spirit of the season in just one delicious bite.

I don’t know, they just didn’t taste as good as I thought they would. Maybe I did something wrong?

    1. 4 stars
I totally get that! These bites can be tricky if the phyllo doesn’t bake right. Did you make sure to watch the baking time closely? Sometimes little things can make a big difference.

    2. User avatar ned.mcclure says:

      3 stars
Maybe your brie was too aged or something? Just a thought, my friend. Brie can vary a lot in flavor. But don’t worry too much about it; they are still fancy! 🤷‍♂️

  2. User avatar jan.gusikowski says:

    5 stars
These bites are AMAZING! I made them for a dinner party and everyone loved them. Will definitely make again! 🍴

  3. User avatar Eccentrica Gallumbits says:

    2 stars
These are cute but honestly… a lot of work for mini bites. I feel like store-bought puff pastry would be easier. Taste is fine, just not worth the effort for me.

    1. User avatar travis.upton59 says:

      4 stars
Totally get that—phyllo is fiddly. Store-bought puff would probably save a ton of time, and I bet the crunch would still be great.

  4. User avatar edra.bergnaum2 says:

    2 stars
They didn’t turn out right for me. The phyllo was soggy. Maybe I did something wrong?

  5. User avatar randy.schinner says:

    3 stars
Cranberry and cheese? Yummy! But I don’t trust phyllo pastry. Too many layers.

  6. User avatar annamae.green says:

    5 stars
These are dangerously good. The phyllo gets so crisp and the brie turns all melty—perfect sweet/savory combo with the cranberry. I used store-bought cranberry sauce and it still tasted fancy.

    1. User avatar emil.monahan2002 says:

      5 stars
Right?! I made these for a party and they disappeared way too fast. The crisp phyllo + melty brie is such a good contrast, and the cranberry keeps it from feeling too rich.

  7. User avatar willy.schowalter1974 says:

    4 stars
I think 10–12 minutes is a little short for my oven. Mine were pale at 10, so I added like 4 extra minutes. Still tasty though, just darker/crispier.

  8. User avatar britt.rutherford50 says:

    4 stars
Phyllo pastry is that stuff you use in baklava, right? Curious how this would taste.

  9. 2 stars
Cranberry sauce tasted kind of weird with the brie for me, like too tart. Walnuts were good though. Might try a sweeter cranberry next time.

  10. 5 stars
5 stars! I added some diced apples and they were a hit!! Highly recommend.

  11. User avatar ShanksOnePiece says:

    5 stars
These are amazing! So easy to make and a hit at my party! Definitely making them again.

  12. User avatar Kristal Hill says:

    4 stars
I was skeptical about using phyllo pastry but wow, it worked out great! Just be careful, it can burn fast.

    1. User avatar deadra.rogahn says:

      4 stars
I tried this recipe too! The phyllo was super crispy, but I burnt a few of mine. Gotta watch it closely!

  13. 4 stars
I forgot to buy walnuts, so I just left them out. Still yum! Maybe next time I’ll try adding them.

  14. User avatar waylon.daugherty says:

    2 stars
Hmm, not sure about cranberries and cheese. Sounds weird..

  15. 3 stars
Can you make these ahead of time? I’m planning a big gathering and could use the prep!

  16. User avatar trinh.leannon52 says:

    2 stars
Not a fan. The cheese got too gooey and the flavors didn’t mix well for me.

    1. User avatar lurline.conroy98 says:

      4 stars
I think the gooeyness is just part of the charm! Maybe you didn’t bake them long enough? Love these bites!

    2. User avatar Will Wisoky says:

      3 stars
Not sure what you did wrong, but mine turned out awesome! Cheese shouldn’t be gooey like that! You may want to try a different recipe.

  17. 5 stars
These are sooo good! I brought them to a party, and everyone loved them. Total hit!

I think these sound amazing! The combo of cranberry and brie is to die for. 👌

    2. User avatar emerson.schoen says:

      2 stars
Not sure what’s so great about this. Sounds kinda basic to me. Can anyone explain?

  19. User avatar christian.blanda says:

    5 stars
Yum yum! Perfect for Thanksgiving! I added some nutmeg to the cranberry sauce, and it was amazing!

  20. User avatar anonymous_hacker says:

    4 stars
Pretty straightforward, but I messed up the phyllo a little—mine tore when I tried to fit them. Still tasted great though. Next time I’ll grease the tin a bit more and go gentler with the pastry.

  21. User avatar foster.orn70 says:

    4 stars
Very easy to make! I used store-bought crust and it still turned out fine!

    1. User avatar rocco.kuhn35 says:

      5 stars
I agree! Store-bought crust made it so much easier! Definitely making these again!

    2. 2 stars
I think using store-bought makes it less special. You should at least try making the crust yourself next time!

  22. User avatar tanika.kub1967 says:

    5 stars
So easy and looks fancy—served these at a party and everyone asked for the recipe. I skipped walnuts and it was still great.

  23. User avatar tora.crooks says:

    3 stars
No honey for me. I felt like it made it too sweet with the cranberry. Otherwise, good texture and flavor. Phyllo is a little fiddly but worth it.

    1. User avatar monty.littel says:

      5 stars
Totally get it—cranberry can already be pretty sweet/tart depending on the brand. Cutting the honey is probably the move. Glad the texture and flavor still came through though!

    2. User avatar carletta.altenwerth25 says:

      4 stars
I used honey and it was sweet for me too 😅 but maybe my cranberry sauce was extra sugary. Phyllo is always a pain… mine kept ripping. Still, these were gone fast.

  24. User avatar cathleen.stark39 says:

    3 stars
Yea, I made these but it wasn’t that great, Brie is a lil fancy for me. Just stick to cheddar.

  25. 3 stars
Can I use cream cheese instead of Brie? I don’t like Brie.

  26. User avatar karma.schaden says:

    5 stars
This recipe is amazing! I replaced the walnuts with pecans and it was still great. Will make again!

  27. 3 stars
This is just too fancy for my taste. I like simple snacks.

  28. 5 stars
These came out dangerously good—crispy phyllo with melty brie is such a winning combo. I used store-bought cranberry sauce and it was still amazing.

    1. 4 stars
Dangerously good?? Lol 😂 Mine kinda burst out of the phyllo after baking—maybe my brie was too big. Also I used 400°F and they were more brown than golden… still yummy though.

    2. User avatar Draugr Thrall says:

      5 stars
Yes!! I love that sweet-tart cranberry + melty brie situation. I did the same with store-bought sauce and it still tasted fancy. Definitely adding walnuts next time.

  29. 5 stars
YAS! Perfect snack for the holidays! I drizzled brown sugar instead of honey. So good!

  30. User avatar maritza.robel81 says:

    5 stars
Made them for a party and everyone asked for the recipe. I did add the honey drizzle and walnuts—great sweet/salty balance. Only thing: my muffin tin stuck a bit, so grease well.

  31. User avatar Meriadoc Brandybuck says:

    1 star
brie + cranberry = nope for me 😅 but I see why people would like it. The idea is cute though.

    1. 3 stars
I tried something like this and it was ok? but brie gets kinda runny fast—mine leaked out the muffin tin lol. Next time I’ll use less cranberry sauce or pat it dry. Still sounds good though.

    2. User avatar hana.ledner2021 says:

      5 stars
That’s fair 😄 brie + cranberry is definitely a “love it or hate it” combo, but I’m obsessed with the sweet-tart vs creamy thing. The phyllo makes it so crispy too!

  32. 4 stars
I wasn’t sure about the combo of cranberry and brie, but it actually works! Great recipe.

  33. User avatar marvis.simonis says:

    4 stars
Delish! I added some cinnamon to the cranberry sauce, and it was a game changer!

  34. User avatar salvador.weber1968 says:

    4 stars
Brie leaked out of the shells a bit—probably because my brie cubes were too big. Still, the edges got crunchy and it tasted restaurant-y. Would make again with smaller cubes.

    1. User avatar dario.kuhlman17 says:

      5 stars
Yesss—this is exactly how mine went too. Cutting the brie smaller helped a lot with the oozing staying in place. Crunchy edges are the best part!

    2. User avatar keith.champlin75 says:

      4 stars
I think you’re right about the cube size. Next time I’d try pressing a tiny bit of phyllo down around the cheese so it doesn’t leak. Also 10-12 min might need adjusting depending on your oven.

  35. User avatar peter.johnson1970 says:

    5 stars
Yum! I’ll be making these again for Thanksgiving! 😍

    1. User avatar danial.fahey65 says:

      5 stars
These sound amazing! Perfect for the holidays! 🤤

  36. User avatar Prostetnic Vogon Kwaltz says:

    4 stars
Not gonna lie, I was skeptical about phyllo + brie, but it actually works. Mine got a little soggy on the bottom though—maybe I didn’t grease enough.

    1. 5 stars
Totally felt the same way before I tried it 😅 Good call on greasing—my bottoms only got soggy when I was lazy with the butter/oil. I also bake on the lower rack sometimes to get more browning.

    2. User avatar darron.hauck says:

      4 stars
Maybe your oven runs a bit cool? I’ve found 375°F is fine but if it’s not hot enough the phyllo steams. Also did you press the phyllo squares down firmly? If there’s gaps, it’ll get soggy fast.

  37. User avatar adah.mohr15 says:

    3 stars
I didnt have phyllo dough, so I used puff pastry. They still turned out ok, but not the same.

  38. User avatar herb.pfeffer64 says:

    1 star
Too complicated for me! I prefer recipes that are more straightforward. Didn’t work out for me.

  39. User avatar frida.rau62 says:

    4 stars
Mine came out a little too salty because my cranberry sauce was already sweet/salty. Still, the combo with honey was nice.

  40. User avatar georgeanna.denesik31 says:

    2 stars
Not bad, but I subbed out the cranberry sauce for apple jelly and it was kinda weird. Lesson learned!

    1. User avatar louis.balistreri10 says:

      2 stars
Weird? Sounds kinda gross tbh… apple jelly instead of cranberry? Yikes. 😬

    2. User avatar olympia.rolfson79 says:

      4 stars
I totally get that! Cranberry is so much better than apple jelly for this. Stick to the recipe next time!

  41. User avatar tamie.rohan1972 says:

    3 stars
Easy to make but kinda bland. I added some spices next time.

  42. User avatar bill.schumm says:

    2 stars
Too much work for such a simple snack. Just buy them ready-made!

  43. User avatar earl.bashirian51 says:

    5 stars
Yum, perfect for Thanksgiving! Thanks for sharing! 😍

  44. User avatar genevie.white says:

    3 stars
Not sure about the phyllo. Mine tore when I tried to fit it into the tin, and half the bites looked messy. Flavor was still good, but presentation was sad.

  45. User avatar Saruman the White says:

    5 stars
These are dangerously good. The brie turns all melty and the cranberry/honey combo is perfect for holiday vibes. I used store-bought cranberry and it still tasted homemade.

  46. User avatar obdulia.trantow says:

    4 stars
Is it possible to use cheddar instead of Brie? Not a fan of Brie.

    1. 4 stars
Cheddar should work! It’ll have a different flavor but it’s cheese so I say go for it!

  47. User avatar Ford Prefect says:

    4 stars
Came out golden and gooey, exactly as promised. I used store-bought cranberry sauce and it worked fine. Next time I’ll add more walnuts for crunch.

    1. User avatar gabriel.koepp67 says:

      5 stars
So glad it came out perfect! Golden + gooey is exactly what I’m aiming for. I like your idea to add more walnuts—extra crunch makes these way more addictive.

  48. 4 stars
Pretty solid idea, but my phyllo dried out a bit and some squares cracked. Next time I’ll brush with melted butter before baking. Still tasty though—would make again for parties.

  49. User avatar shayne.steuber1964 says:

    5 stars
These are absolutely delicious! Perfect for my holiday party. Everyone loved them!

    1. User avatar rima.metz says:

      5 stars
I’m so glad you enjoyed them! They’re a hit at every gathering I take them to. 😊

    2. User avatar Glorfindel says:

      3 stars
They look good, but I don’t know if everyone likes brie. Isn’t it kinda fancy for a party?

  50. User avatar natalie.koch1954 says:

    3 stars
Not sure about the honey drizzle… it made them a bit too sweet for me. The cranberry + brie already has plenty going on. I’d keep honey optional or use less.

  51. 5 stars
These were dangerously addictive. The brie gets all melty and the cranberry makes it taste fancy without much effort. I drizzled honey and it was perfect.

    1. User avatar Desiree Boehm says:

      5 stars
Yes!! The honey drizzle is the move—makes them sweet-salty and way more “fancy” than the effort suggests. I made these for a party and they vanished immediately 😂

  52. 4 stars
Followed the steps exactly but mine got a little over-browned on the edges at 12 minutes. Next time I’ll pull them closer to 10. Still tasty though—sweet, salty, crunchy. Yum.

  53. 4 stars
I’m skeptical of the honey drizzle—sounds like it’ll be too sweet. Surprisingly, it doesn’t ruin anything. I only used a little and it rounded out the cranberry nicely.

    1. User avatar Death Hound says:

      5 stars
I was the same way—my brain said “honey + cranberry = dessert.” But yeah, a tiny drizzle really helps it taste more balanced. Next time I’ll go even lighter so it stays savory.

  54. User avatar Lindsey Schmidt says:

    1 star
What is phyllo pastry?? Can I just use bread? Sounds easier…

  55. User avatar Diego Trantow says:

    5 stars
The walnuts were an awesome touch! I did not use honey. Perfect appetizer!

  56. 5 stars
    Yummy!!! 😍

    1. User avatar tristan.schiller87 says:

      3 stars
Looks good, but isn’t brie kinda overrated? 🤔

    2. User avatar Gustavo Crist II says:

      5 stars
Totally agree! These are the best! 🍽️

  57. 5 stars
I made these for my book club and shared the leftovers with my kids. They gobbled them up! 🧀❤️

  58. User avatar Hasimir Fenring says:

    4 stars
I’m not usually a brie person, but this worked. The cranberry sauce cuts the richness nicely. Next time I might add a pinch of black pepper on top for more bite.

  59. User avatar Snow Bear says:

    5 stars
These are perfect for Christmas gatherings! So easy to make and super tasty. Definitely a crowd-pleaser.

  60. User avatar dante.gulgowski says:

    5 stars
Simple idea, but the phyllo went perfectly golden. Next time I’ll chop the walnuts smaller because the bigger pieces snagged a bit.

  61. User avatar tabetha.hand says:

    2 stars
Cranberry and cheese is a weird combo! Not sure who thought of this. I wouldn’t make it again.

    1. 4 stars
I think cranberry and cheese is actually a classic combo! You should give it another try with some modifications. Maybe add some spices or a different cheese? 😊

  62. User avatar francisco.gleichner99 says:

    5 stars
Wow. I brought these to a party and they disappeared first. Honey drizzle is a must—don’t skip it.

    1. 5 stars
Yes!! I did the honey drizzle too and they were gone so fast I barely got one. The sweet/savory combo is unreal.

    2. User avatar clyde.ledner20 says:

      4 stars
I tried them without the honey once… they were still good, but kinda flat, so I believe you 😅 Next time I’ll drizzle for sure.

  63. User avatar geoWizard says:

    3 stars
I’m skeptical about baking brie in phyllo—felt like it might leak and make a mess. It didn’t totally fail, but a couple bites were greasy. Flavor was great, so I’ll try again with less cheese.

  64. User avatar Frost Atronach says:

    2 stars
Not sure why everyone likes these. Too sweet with honey + cranberry for me, and the brie kind of oozed out. I’d reduce honey next time or skip it entirely.

  65. User avatar aaron.walker says:

    4 stars
Pretty solid recipe! I used store-bought cranberry sauce and it still worked great. Next time I might add a tiny pinch of black pepper for extra flavor.

    1. User avatar Genghis Khan says:

      5 stars
Glad it still worked with store-bought—honestly I’m team lazy on cranberry sauce 😄. Black pepper is a great idea too; I bet it’ll cut the sweetness nicely. I usually go light so it doesn’t overpower the brie.

  66. User avatar melvin.cummerata30 says:

    4 stars
I was skeptical at first, but I have to admit, they turned out great! Just beware of the phyllo – it’s easy to mess up.

  67. User avatar thomas.moore says:

    3 stars
Is it really worth making these? They kinda look complicated.

  68. User avatar carmelo.breitenberg1981 says:

    3 stars
Too salty for me. I think I used too much Brie. Next time less cheese or experiment with cheddar maybe?

  69. 3 stars
Not bad, but I think the Brie is too strong. Would be better with a milder cheese.

    1. User avatar corinna.trantow1 says:

      3 stars
Maybe if you tried a different kind of cheese, you would enjoy it more. But Brie is classic, ya know!

    2. User avatar karleen.zemlak says:

      5 stars
I totally disagree! The Brie is what makes these bites special! Without it, they’re just boring.

  70. User avatar jared.kozey56 says:

    2 stars
Meh, they tasted like…nothing much. I guess I should’ve added more sauce?

  71. User avatar troy.flatley1994 says:

    4 stars
Pretty tasty appetizer, but I think the 10-12 minutes might depend on your oven. Mine took closer to 15 to get truly golden. Also, I let them cool a little longer so they didn’t crumble when I pulled them out.

  72. User avatar Effrafax of Wug says:

    3 stars
The flavors are great, but I think 1/2 cup cranberry sauce is a lot depending on how thick it is. I ended up using less so they wouldn’t get soggy.

  73. User avatar tissues_with_issues says:

    5 stars
These are so tasty! Made them for a party, and they disappeared fast! Everyone loved them.

  74. 5 stars
These were dangerously good—crispy phyllo with melty brie and that sweet-tart cranberry. I skipped the honey and still loved them. Definitely making again for parties.

  75. User avatar donald.barrows37 says:

    4 stars
Phyllo pastry intimidates me but this was pretty forgiving. I burned one batch (oops), but the rest turned out great.

  76. User avatar aretha.paucek says:

    5 stars
These bites are fab! My kids gobbled them up in minutes!

    1. User avatar hilaria.lakin27 says:

      5 stars
Wow, this sounds delicious! I can’t wait to make these for my kids too!

  77. User avatar wanita.schimmel says:

    5 stars
These were dangerously good. The brie gets all melty and the cranberry/honey combo is perfect—sweet-tart balance without being cloying. I used store-bought cranberry sauce and it still felt fancy.

  78. User avatar Mr. Satan says:

    2 stars
The recipe is too complex for me. I’m not a good cook, maybe simpler ingredients next time?

  79. User avatar Brenton Gerlach says:

    5 stars
    Yum!

  80. User avatar nancee.brekke93 says:

    5 stars
Just wow! Warm, crispy, and delicious! Will be making these again for sure!

  81. User avatar hank.gerhold52 says:

    3 stars
Mine came out a little messy—my phyllo squares ripped when I put them in the tin. Still tasted good though. Maybe I should have thawed the pastry longer?

  82. User avatar jordon.mcdermott1965 says:

    2 stars
Not sure about the honey drizzle. It’s sweet sweet and I’m not a sweets person. I’d rather just do cranberry + brie.

    1. User avatar Alphonso Johnson DDS says:

      5 stars
Totally get it—honey on top can turn these into a dessert-y vibe. Cranberry + brie is already plenty sweet/savory, so you can skip the drizzle and still have great flavor.

    2. User avatar sina.stamm1989 says:

      4 stars
I did the honey once and it was like, way too much. Next time I’m doing just the cranberry + brie + walnuts. Honey is optional for a reason, lol.

    meh. they were ok.

  84. User avatar liberal.hero says:

    5 stars
I made these for a holiday party and they disappeared fast. Guests kept asking for the recipe. Walnuts on top are a must in my opinion—gives crunch against the gooey cheese.

  85. User avatar rasheeda.kirlin89 says:

    2 stars
Honestly I expected them to be more flavorful. The cranberry sauce kind of disappears, and I felt the brie was too mild. Would increase cranberry or add a little seasoning.

  86. User avatar kattie.larkin13 says:

    2 stars
I doubt phyllo pastry will work, it seems too hard to make. Maybe just use regular pie crust?

  87. 4 stars
I’m skeptical about phyllo holding brie without it oozing. Mine leaked a bit, but honestly it just became extra tasty and messy in a good way.

  88. User avatar errol.paucek says:

    5 stars
Omg so easy. I used frozen phyllo sheets (thawed) and it was still good. This is going into my “bring to parties” rotation. 10/10 would make again

  89. User avatar MAGA2024.Trumpster says:

    4 stars
Phyllo pastry is honestly stressful. Mine dried out a little while I was cutting squares, but once they baked they came together. I’d call this more of a ‘weekend effort’ snack, not quick.

  90. 5 stars
Yum!! I made them for a BBQ and everyone loved them! Thanks!

  91. User avatar eldridge.rice says:

    5 stars
Made these for a friends gathering, they vanished in minutes!!

    1. 5 stars
Sounds delicious! I love how quick they are to make, definitely trying this recipe next time!

  92. User avatar todd.durgan40 says:

    4 stars
Easy peasy! Made these in no time. My kids devoured them! Will definitely make it again.

  93. User avatar Yooden Vranx says:

    3 stars
I followed the instructions and they looked pretty—mini golden cups. But the centers were more melty than I expected, like not fully warmed through. Maybe my oven runs cold?

  94. 1 star
    Ok.

  95. 5 stars
I made them for a party and they vanished fast. I used store-bought cranberry sauce and it was totally fine. Next time I’ll chop the walnuts a bit finer though.

  96. User avatar velma.roberts63 says:

    2 stars
Okay… I followed the directions and mine came out kinda salty? Also the honey drizzle made it sweet sweet. Like, not bad but I don’t think I get the hype. Maybe my cranberry sauce was way too tart.

  97. 1 star
Worst thing ever. Didnt melt. Burnt. never again. 🙁

  98. User avatar alexia.hoeger39 says:

    4 stars
I’m skeptical about phyllo holding up, but wow—crispy cups. The instructions were straightforward, just make sure you don’t overfill the shells.

  99. User avatar Draugr Wight says:

    5 stars
These cranberry brie bites are amazing! I served them at a party and everyone loved them.

  100. User avatar monique.ledner says:

    3 stars
Not bad, but mine leaked brie a bit and got messy in the muffin tin. I’m probably greasing too lightly. Flavor is still great though—sweet, salty, rich.

  101. 5 stars
These were absolutely delicious! Perfect for our holiday party!

  102. User avatar chelsey.rolfson43 says:

    4 stars
The concept is awesome but phyllo is a pain. Half my squares dried out while I was working. Once I got the hang of it though, they were really good.

  103. 4 stars
I love brie and cranberry, but my honey was a little too much. Next time I’ll drizzle lighter. The walnuts are a great touch though—adds texture.

  104. 3 stars
Not bad, but I found it a little too sweet for my taste. I’ll use less honey next time or skip it altogether.

  105. User avatar breanna.oconner10 says:

    5 stars
Made them for a party and they disappeared fast. I used store-bought cranberry sauce and still loved the sweet-tang combo with the buttery pastry.

  106. User avatar verla.gutkowski27 says:

    5 stars
These are a hit at parties! Everyone loves the combo of brie and cranberry. Easy to make too!

  107. User avatar gertude.hintz2024 says:

    2 stars
I don’t get it—too many steps for a tiny bite. Still, it tastes fancy. I’d rather just eat brie on crackers, lol.

  108. 1 star
This recipe is too complicated for me. I’ll stick with store-bought appetizers, lol.

  109. User avatar marcelina.mcclure30 says:

    1 star
I don’t get why people rave about this. It’s brie on a biscuit, I guess? Just bake an actual pie instead! 🙄

    1. 5 stars
Brie on a biscuit is actually really tasty! The sweetness of the cranberry and the honey balances it out perfectly. You should give it a try! 😋

  110. 3 stars
I followed it exactly but my phyllo came out a bit dry. Not bad, just not as flaky. Maybe my oven runs hot? I might reduce the bake time.

    1. User avatar hung.waters75 says:

      5 stars
That sounds like an oven-temp issue (or the phyllo got slightly uncovered). If your oven runs hot, try 360°F and pull them closer to 10 minutes—phyllo dries fast. Also make sure the squares are covered with a damp towel while you’re working so they don’t dehydrate.

  111. 5 stars
Brie + cranberry is classic, but I didn’t expect it to work this well in phyllo cups. The walnuts add a nice crunch—will make again.

  112. User avatar lamar.tillman82 says:

    5 stars
These are dangerously good. The phyllo gets so crisp and the brie turns melty—perfect little party bite.

    1. User avatar isidro.price51 says:

      3 stars
Sounds good but 12 sheets phyllo for 12 mini bites? Seems like a typo? Also I burned mine at 375 once, so maybe I should lower to like 350. Still gonna try tho.

    2. 5 stars
Totally agree—crispy phyllo + melty brie is such a perfect combo. I made these for friends and they disappeared fast 😄

  113. User avatar eugene.reynolds1978 says:

    3 stars
Not bad, but $6 ounces of brie into 12 mini bites feels like it might be too cheesy or too little depending how big your cubes are. I think I had extra filling and some bites were more loaded than others.

  114. User avatar pamelia.thompson1965 says:

    5 stars
These are so delicious! Perfect for my holiday party. Everyone loved them!

  115. User avatar oPandariaNo says:

    2 stars
I followed the recipe, but mine turned out soggy. What did I do wrong??

  116. User avatar jonnie.shanahan1980 says:

    4 stars
I think 10-12 minutes is too short. Mine stayed pale and the cheese wasn’t fully melted until closer to 15.

  117. User avatar carleen.feeney75 says:

    3 stars
Mine puffed up weirdly and some squares tore when I put them in the tin. Tastes great regardless, but the presentation was messy—probably user error.

  118. User avatar sally.schulist94 says:

    5 stars
These are dangerously easy and look fancy. The brie melts perfectly and the cranberry/honey combo is spot on. Would make again for parties!

  119. User avatar luke.kulas32 says:

    4 stars
The honey drizzle is a must (in my opinion). Also, walnuts add a nice crunch, but I skipped them because of allergies—still tasty.

  120. 3 stars
Okay but why is it so hard to get the phyllo to behave? Mine dried out and turned brittle before I finished filling. Taste is great, presentation was… rustic.

    1. User avatar rachelle.durgan says:

      5 stars
Totally relate—phyllo is super unforgiving. If it dried out, it’s usually because the sheets sat out too long. I keep the rest covered with a damp (not wet) towel and only peel what I need, and I work pretty quickly.

  121. 3 stars
Wait… 10-12 minutes at 375°F? My cheese started boiling out of the cups around minute 9. Taste was still great though, I just need to bake carefully or use smaller cubes.

    1. User avatar tyron.schinner8 says:

      5 stars
Oh wow—same thing happened to me once. I think 375°F is fine, but I do like 8–10 minutes tops and check at 7. Also smaller cubes = less drama 😂

    2. User avatar debi.kerluke9 says:

      4 stars
Dang, mine were fine at 10-12, so maybe your oven runs hot or your brie cubes were bigger. Next time I’ll bake less time or put the tin on the middle rack.

  122. User avatar aurelio.halvorson51 says:

    4 stars
Simple enough, but I had to bake them closer to 14 minutes because my muffin tin runs hot. Still came out golden and melty—would make again for parties.

  123. User avatar philip.stiedemann13 says:

    5 stars
I’m not usually into brie, but these bites changed my mind. The sweetness from the honey rounds it out and the walnuts add a nice crunch.

  124. User avatar bernardo.abernathy2004 says:

    3 stars
Mine leaked brie a bit and the bottoms got stuck to the tin. Greasing helped a little, but I should’ve used a nonstick tin.

  125. User avatar zane.gerhold95 says:

    4 stars
Had to sub cream cheese for brie and it worked well! Still yummyy.

  126. User avatar francesco.metz says:

    5 stars
OMG this is my new favorite snack! Can’t believe I waited so long to try this! ❤️🍴

    1. User avatar suspiciousCommentator says:

      5 stars
I totally agree! These bites are so delicious! I made them for a party and everyone loved them! 🎉

    2. User avatar merlin.williamson48 says:

      2 stars
Really? I thought they were kinda bland. Did you add seasoning or something?

  127. User avatar marvin.kirlin27 says:

    5 stars
Made them for a party and they disappeared fast. I definitely recommend chopping the walnuts a little finer—otherwise some bites were mostly nuts. Great texture contrast.

  128. User avatar delaine.gusikowski92 says:

    4 stars
I thought 12 squares would be too few for 6 oz brie, but it was fine—just enough cubes per cup. Very tasty, but I’d add more cranberry next time.

  129. User avatar nathan.lemke81 says:

    4 stars
Not gonna lie, I was skeptical about phyllo being so delicate, but it came out golden and crisp. My brie leaked a tiny bit, but everyone still loved them.

  130. User avatar gino.prohaska says:

    5 stars
These are dangerously good. The flaky phyllo + melty brie is such a perfect combo, and the cranberry gives it that little tangy punch. I skipped the walnuts and it still worked great.

  131. User avatar calvin.thiel1 says:

    4 stars
Quick and easy! My kids ate them all! 😋

  132. User avatar rich.landlord says:

    4 stars
375°F for 10-12 minutes worked for me, but I’d watch closely—my first batch browned faster than expected. Also, let them cool just a minute or two or the cheese will burn your fingers (learned the hard way).

  133. User avatar nam.dibbert61 says:

    3 stars
Mine didn’t really melt—maybe I packed the brie too tight in the squares? They tasted okay though, just not gooey enough.

  134. User avatar daria.blanda59 says:

    3 stars
I followed it and mine came out kinda bland. Maybe I used a tart cranberry sauce instead of a sweet one? Also my brie wasn’t fully melted at 375F—could be oven differences.

  135. User avatar raymundo.daugherty says:

    4 stars
These look fancy but they’re actually super easy to make. Love it!

    1. User avatar will.waelchi87 says:

      5 stars
I tried making these last week and they were a hit at my party! Sooo yummy! Thanks for sharing!

  136. 4 stars
My honey drizzle turned into a sticky mess 😅 but everyone ate them anyway. Probably just me rushing at the end. Flavor was legit.

    1. User avatar jaime.grimes14 says:

      3 stars
Nah that’s supposed to happen? Sticky means it’s working 😂 Next time just drizzle less honey or wait till they’re not baking anymore. Also I always forget the muffin tin grease and then everything fuses… ruins my life lol.

    2. User avatar markita.dare62 says:

      4 stars
Ugh I feel this 😅 I think the honey does get super sticky if it hits too early or you drizzle while they’re still too hot. But hey—if everyone ate them, that’s the real test!

  137. 4 stars
Can I make these without nuts? Allergic, you know. Still looks good.

  138. User avatar mohammed.cassin95 says:

    4 stars
The brie measurement is confusing—like it says 6 ounces ounces. I almost bought the wrong amount. Just saying, proofread and it’ll be perfect.

  139. User avatar lorean.moore72 says:

    4 stars
So easy and looks gourmet. My guests devoured them fast lol.

  140. User avatar isidra.jaskolski says:

    3 stars
Quick question, how can I make this gluten-free? Is there a substitute for the phyllo?

    1. User avatar jewell.bernhard29 says:

      3 stars
I think you could use corn tortillas instead? Might not be the same but worth a try! Good luck!

    2. 5 stars
You can use gluten-free phyllo pastry! It’s available at some stores or online. Just double-check the ingredients to make sure it’s truly gluten-free!

  141. User avatar halina.hand6 says:

    3 stars
Brie is stinky but I tried it anyway. Overall, I’d say it’s ok, not my favorite.

    1. User avatar serafina.jacobs46 says:

      4 stars
I totally agree! Brie can be a bit strong for some. But with the cranberry and honey, it really balances out! Maybe give it another shot?

    2. User avatar alexis.morissette says:

      2 stars
Stinky? Nah, you’re doing it wrong! Brie is delicious! You probably didn’t bake it long enough. Try again!

  142. User avatar Floretta Rice says:

    3 stars
I followed it but my phyllo got kinda dry and flaky in a bad way. Not sure if my mini muffin tin wasn’t greased enough or if the bake time was off.

  143. User avatar alexander.murray1960 says:

    2 stars
Not sure about combining cranberry and brie. Kinda weird flavor for me.

  144. 3 stars
I dunno, they looked fancy but tasted just okay. The phyllo was too crispy for me.

  145. User avatar Mr. Regina Baumbach says:

    5 stars
These are dangerously good. The brie gets all melty and the cranberry/honey combo tastes fancy but is still easy. I used store-bought cranberry sauce and it worked great.

    1. User avatar mathWizard says:

      5 stars
Yes!! Totally agree—those melty brie pockets are dangerously addictive. I love that it feels “fancy” but doesn’t require a ton of effort. Great call on using store-bought cranberry sauce too.

    2. User avatar xenia.volkman2 says:

      4 stars
I tried these and the brie kinda leaked a bit and made the phyllo soggy at the bottom 😅 Still tasted amazing though. Next time I’ll pat the cranberry sauce a little drier before putting it in. Also 375F is right, yeah?

  146. User avatar marcene.quitzon says:

    5 stars
These are absolutely delicious! Made them for a party, and they were a hit!

  147. 3 stars
I’m not sure the honey drizzle is necessary. It made mine kinda sticky and overpowered the cranberry for me.

    1. 4 stars
Totally get that—honey can drown out the cranberry. I usually skip the drizzle unless I’m using a tart cranberry sauce (or I do a tiny zig-zag). Maybe your honey was a bit too much for the brie-to-cranberry ratio?

  148. User avatar harvey.mcglynn1995 says:

    2 stars
Brie in phyllo bites sounds good but I worry the cheese leaks and makes them soggy. Any tips? I might try parchment liners next time.

  149. User avatar leonarda.adams says:

    5 stars
Not gonna lie, I was skeptical about phyllo + brie + cranberry. But wow. Super crunchy outside, gooey inside. Would make again for sure.

    1. User avatar Sabre Cat says:

      3 stars
I tried something like this once and my phyllo went soggy… maybe I needed to bake longer. How do you keep it crunchy? Also, is 375°F right, or should it be higher?

    2. User avatar cleta.kshlerin61 says:

      5 stars
Same here—I expected it to be weird, but the sweet-tart cranberry totally balances the brie. Mine came out super crisp too. Definitely adding to my snack rotation!

  150. 5 stars
So good. Like, just pop one and keep eating 😅

  151. User avatar josiah.schmidt says:

    2 stars
Ok but… 375°F for 12 min feels short. I don’t know why my phyllo turned out chewy instead of crispy. Might be my oven.

    1. 4 stars
I get what you mean—12 minutes *can* be a little short depending on your oven and how thick/stacked the phyllo squares are. If it turned out chewy, I’d bet it needed a longer bake (or a bit more heat) until the edges are truly deep golden. Also, make sure the tin is well-greased and the phyllo isn’t drying out—chewy usually means it cooked but didn’t crisp.

  152. User avatar mel.oconnell55 says:

    3 stars
I followed the times exactly and the pastry was golden, but the cheese didn’t fully melt (or maybe it thickened too much). Still edible, just not gooey enough for my liking.

  153. User avatar Jude Quigley says:

    4 stars
I followed the steps and they came out golden and gooey. I used store-bought cranberry sauce and it still tasted homemade.

    1. User avatar vivan.halvorson62 says:

      5 stars
That’s awesome! Golden + gooey is exactly what these should be. 👌 Using store-bought cranberry sauce is totally fine too—sounds like the flavor balanced out nicely.

  154. User avatar brett.turcotte says:

    5 stars
I made these and my family devoured them before I even plated. The walnut topping is a nice crunch. Also, the mini muffin tin trick really helps keep them shaped.

    1. User avatar garnett.schuppe says:

      5 stars
Yesss—sounds exactly like something my family would demolish too 😂 The mini muffin tin trick is such a lifesaver for keeping the phyllo cups crisp.

  155. User avatar gilberto.gaylord90 says:

    5 stars
Wow. So easy and fancy. 10/10 snack for guests.

    1. 4 stars
I tried these and they were good, but mine got a little soggy after sitting. Maybe my cranberry sauce was too runny? Next time I’ll drain it a bit or use thicker sauce. Still a decent crowd-pleaser though.

    2. User avatar charise.steuber says:

      5 stars
Right?? These came out super pretty and the brie + cranberry combo is such a win. I baked mine closer to 12 min and they were perfectly golden. Definitely making again for the holidays.

  156. 3 stars
Way too much brie for the amount of pastry? Mine overflowed a lot lol. Still tasted good, but next time I’ll use smaller cubes.

  157. 3 stars
Way too sweet for my taste. The honey + cranberry sauce together felt like dessert. I think I’d reduce the honey next time or use a less-sweet cranberry.

  158. User avatar saundra.fadel94 says:

    5 stars
375°F for 10 minutes worked great! They were golden and the cheese wasn’t runny. I skipped walnuts and added a tiny bit of orange zest—wow.

  159. User avatar felton.hudson98 says:

    5 stars
The honey drizzle made them sweet-salty in a good way. I added a pinch of black pepper on top and it really bumped the flavor. Next time I’ll definitely do that again.

  160. 2 stars
Phyllo is not my friend. Half my squares cracked and I didn’t grease enough, so they stuck to the tin. Flavor was good though.

  161. User avatar smartestRedditor says:

    2 stars
Phyllo pastries always dry out on me, so I ended up with crunchy shells but not that much cheese pull. I might try brushing with butter next time (unless that’s cheating).

  162. User avatar Feral Falmer says:

    4 stars
Pretty straightforward and the ingredients make sense together. I’m not usually a brie person, but the cranberry cuts the richness and it worked. Would make again for holidays.

  163. User avatar emmy.kirlin79 says:

    2 stars
Could you just use puff pastry? Phyllo seems like a pain to handle, and I’m not sure it’s worth the fuss for bite-sized apps.

  164. User avatar Stanford Towne says:

    3 stars
Mine came out a little greasy—maybe I didn’t grease the tin right or my phyllo sheets were older. Flavor was good though, just not as crisp as I wanted.

  165. User avatar Torchbugs says:

    4 stars
Worst part: the prep was kinda fiddly with the phyllo. Best part: when they finally came out, they were pretty good. Would try again, but with extra butter or brushing phyllo next time.

  166. User avatar Orange Dartwing says:

    2 stars
Are you sure about the cheese? Brie is smelly, wouldn’t gouda be better?

  167. 5 stars
Super easy and looks fancy. I love anything bite-sized for gatherings. The only issue is phyllo dries out quickly, so keep the rest covered!

  168. User avatar elmer.mertz61 says:

    4 stars
I tried with homemade cranberry sauce—super tart—and it felt like the honey was required. Otherwise it was too intense for my taste.

  169. 5 stars
These were dangerously good—crispy little cups with that melty Brie. I used store-bought cranberry sauce and it still tasted fancy.

  170. User avatar Vroomfondel says:

    5 stars
These were dangerously good. The brie gets all melty and the cranberry/honey combo tastes fancy without being hard. I made them for a party and they disappeared fast.

  171. 3 stars
I followed the steps but the phyllo turned out a bit dry for me. Maybe I overbaked? Also, I couldn’t taste the honey much even though I drizzled it.

  172. User avatar bethel.effertz says:

    4 stars
Cranberry sauce is too sweet for me, so I skipped it! Was still kinda good. 😋

  173. User avatar siu.ritchie24 says:

    4 stars
Not bad, but mine got a little too browned on the edges after 12 minutes. Next time I’ll pull them closer to 10 and maybe lightly tent with foil.

  174. User avatar leslee.kling86 says:

    3 stars
Looks good on paper, but how do the nuts even fit? Made a big mess!

  175. User avatar Christoper Kuphal says:

    4 stars
Pretty tasty, but I think 10 minutes was a little short for my oven—pastry was more golden at 12. Also, make sure the muffin tin is well greased or they stick.

    1. User avatar gregorio.kunze1996 says:

      5 stars
I agree on the greasing part—mine stuck a bit when I didn’t grease enough. I’d add extra spray or brush some melted butter in the cups next time.

    2. 4 stars
10 min felt short for me too. Mine were pale at 10, and only really worked out after like 12. Also watch the oven—375 runs hot/cold depending on brand.

  176. User avatar willie.zboncak51 says:

    4 stars
I’m not usually a fan of brie, but the flavor balance here surprised me. The cranberry does a lot. The only issue was mine got a little too brown at 12 minutes, so I’d start checking at 9.

    1. User avatar Spriggan Matron says:

      3 stars
Interesting about brie being “surprising.” I’m not sure my brie would melt right with that much cranberry sauce though—maybe it’s the honey? I’ll try it, but I’ll probably pull mine closer to 8 minutes so it doesn’t burn.

    2. User avatar Hotblack Desiato says:

      5 stars
Totally agree on checking early—my oven runs hot too. I usually start at 9 minutes like you said and they come out perfectly melty without over-browning.

  177. User avatar rudolf.breitenberg says:

    3 stars
Okay but where’s the garlic or something? 😅 I know it’s supposed to be sweet, just feels missing. Still ate them all though.

  178. User avatar rickiestmorty says:

    3 stars
Uhhh this look easy but my muffin tin sticking was a nightmare. Still tasted good, like party food!

  179. User avatar louvenia.collier says:

    2 stars
I followed it exactly and they came out soggy 😕. Maybe my cranberry sauce was runny? I’ll try thick/less sauce next time. Honey helped, but not enough to fix the texture.

  180. User avatar jacques.kuhn10 says:

    4 stars
The instructions are simple, but the phyllo sheets are kinda fragile. Mine tore a little while cutting squares. Still delicious, so I guess that’s fine.
