Ingredients
  

  • 1 lb fresh spinach washed and trimmed
  • 3 tbsp butter unsalted
  • 1 cup heavy cream or half and half
  • 1/2 cup Parmesan cheese grated
  • 2 cloves garlic minced
  • 1/4 tsp nutmeg freshly grated
  • To taste salt and pepper

Instructions
 

  • Melt the butter in a large pan over medium heat. Add the garlic and sauté until fragrant, about 1 minute.
  • Add the spinach in batches, cooking until wilted after each addition.
  • Pour in the heavy cream and stir in the Parmesan cheese. Cook for 3-5 minutes until the cream thickens.
  • Season with nutmeg, salt, and pepper. Stir well and remove from heat. Serve warm.

      Maybe you added too much cream or didn’t let it cook long enough? That can happen. I always make sure to cook it until it thickens up.
