Coq au Vin

June 2, 2025

Coq au Vin is a quintessential French dish that beautifully marries the rustic flavors of tender chicken, earthy mushrooms, and aromatic herbs with the richness of red wine. This dish, whose name translates to “rooster in wine,” is a staple of traditional French cuisine, particularly in the Burgundy region, where it is believed to have originated. Coq au Vin is a slow-braised comfort food that brings together the simplicity of farm ingredients and the sophistication of French technique.

The heart of Coq au Vin lies in the braising process, where chicken—often a rooster, though modern recipes commonly use chicken thighs or legs—is simmered in red wine, typically a full-bodied Burgundy wine, along with aromatic vegetables like onions, carrots, and garlic. The wine infuses the meat with deep flavors, creating a succulent, melt-in-your-mouth texture. The dish also incorporates mushrooms, pearl onions, and sometimes bacon or lardons, which add layers of savory depth and texture.

Herbs like thyme, bay leaves, and parsley are added to the pot, infusing the sauce with fragrant aromas that elevate the dish. The long cooking time allows the flavors to meld and develop, creating a rich, flavorful sauce that perfectly coats the chicken. The final result is a comforting, hearty meal that is as satisfying as it is flavorful.

Coq au Vin is traditionally served with crusty bread or over mashed potatoes, making it the ideal meal for a leisurely dinner. It pairs wonderfully with a glass of the same red wine used in cooking, enhancing the overall experience.

This dish is a beautiful example of French country cooking at its best—simple yet refined, bold yet comforting. Whether you’re celebrating a special occasion or simply craving a taste of France, Coq au Vin is sure to deliver a rich and memorable meal. Perfect for special occasions!

Prep Time 30 minutes
Cook Time 2 hours
Total Time 2 hours 20 minutes

Ingredients

  • 3 lbs chicken cut into pieces
  • 4 oz lardons or thick bacon, diced
  • 1 bottle red wine preferably Burgundy
  • 2 cups chicken broth
  • 8 oz mushrooms sliced
  • 1 onion large, chopped
  • 2 cloves garlic minced
  • 2 tbsp flour
  • 1 tbsp tomato paste
  • 1 bunch thyme fresh
  • 2 bay leaves
  • to taste salt and pepper

Instructions

  • In a large Dutch oven, cook the lardons or bacon over medium heat until crispy. Remove with a slotted spoon and set aside.
  • Season the chicken pieces with salt and pepper, then brown them in the same pot with the bacon fat. Remove and set aside.
  • Add the onions and mushrooms to the pot, cooking until softened. Stir in the garlic and tomato paste, cooking for an additional minute.
  • Sprinkle in the flour, stirring to coat the vegetables, and cook for 2 minutes.
  • Slowly pour in the wine and chicken broth, deglazing the pot by scraping up the browned bits from the bottom.
  • Add the chicken back to the pot along with the cooked bacon, thyme, and bay leaves. Cover the pot and let it simmer on low heat for about 1.5 to 2 hours, until the chicken is tender.
  • Remove the thyme and bay leaves before serving. Adjust seasoning with salt and pepper as needed.

I don’t think it tastes like chicken soup at all! It might just be your cooking skills, maybe try again?

1.5–2 hours is a lot, but it’s worth it. Chicken came out tender and the sauce actually clung to the pieces. Great comfort food.

My chicken came out super tough. Did I cook it too long? Not sure if I’ll try this again.

    1. 4 stars
Yeah, I think you probably cooked it too long. Chicken should be juicy! Maybe try a shorter time next time.

Tough chicken? This dish is hard sometimes. You sure you followed the steps? I just go for grilled chicken instead!

I was skeptical about the flour step at first, but it thickened nicely. Only thing: I ran out of fresh thyme so I used dried and it was okay, just not as fragrant.

  11. User avatar Draugr Overlord says:

I used chicken thighs and it stayed super tender at 1.5 hours. Mushrooms held up great. Next time I’ll double the mushrooms because I want more of them.

    1. 5 stars
Nice! Chicken thighs are honestly the move for coq au vin—tender even if you go a little longer. Doubling the mushrooms next time sounds like a win. 🍄

Not gonna lie, I always mess up coq au vin… but this one sounded doable. Question though: do you use all that wine even if it tastes too strong before simmering?

  28. 2 stars
I dunno, I followed the recipe but mine didn’t taste like anything. Maybe I need better wine? 2 stars.

This was absolutely delicious! My family couldn’t get enough. Will make again for sure!

  33. 4 stars
Not bad, but 2 cups broth feels low if you want more sauce. I ended up adding another splash of stock. Also, I was nervous about flour lumps—stirring helped.

  34. User avatar latasha.keeling6 says:

    4 stars
I think the wine should be a strong red, not just any Burgundy! 🙂

  35. User avatar deja.beatty14 says:

    5 stars
Made this last night and it’s ridiculously good. The slow simmer really turns the sauce into something silky and rich. I used Burgundy like the recipe says—worth it.

  36. 4 stars
coq au vin. So fancy lol. I didn’t have thyme so I used dried and it was okay. Will try again with fresh.

  37. 4 stars
Coq au what? I thought it was supposed to be chicken with wine, not just a fancy name. Still good tho.

    1. 4 stars
Exactly! It’s all about the chicken, right? The wine just makes it fancier. Glad you enjoyed it!

  38. User avatar elias.ratke2023 says:

    2 stars
Not gonna lie, I’m skeptical about adding flour—ended up a bit pasty for me. Maybe I didn’t cook it long enough (2 min?).

  41. User avatar tereasa.emmerich66 says:

    4 stars
I’m skeptical about using tomato paste—felt kinda random with the wine. But I have to admit the flavor balance ended up good. Would recommend browning everything longer than the recipe says.

  42. User avatar tisha.spinka2004 says:

    1 star
Ya this recipe is wayyy too complicated for me. I just want to fry chicken and eat?

  43. User avatar carrie.prohaska says:

    3 stars
I didn’t have Burgundy, so I used a random red from my shelf. Still tasted good, but the flavor was more harsh and less smooth. Lesson learned.

  44. 2 stars
My husband made this and I could barely taste the wine. Are you sure it was a whole bottle?

  45. User avatar Genghis Khan says:

    5 stars
Coq au Vin? More like Coq au YUM! So rich and flavorful, I felt like a chef!

  46. User avatar Isabell McDermott says:

  47. 4 stars
Delicious! I added carrots too, just because. Adds a nice color and sweet taste!

  48. User avatar rosendo.yundt says:

    4 stars
Pretty solid recipe. I used thick-cut bacon instead of lardons and it still tasted great. Only thing: my sauce was a little thin until I simmered uncovered for 10 more minutes.

  49. User avatar Johanne Leffler says:

    3 stars
I tried this and it was pretty good, but not sure if I’d use so much wine next time. A bit overpowering for my taste.

    1 star
Did you really need that much wine? Seems like overkill lol.

  53. User avatar mitch.crona says:

    4 stars
I followed it pretty closely, but I couldn’t find Burgundy so I used a cheaper red. Still good, just a bit sharper. Next time I’ll splurge on the wine.

    1. User avatar rickiestmorty says:

      4 stars
Yeah I figured it would be sharper—Burgundy has that smoother finish. Still, coq au vin is pretty forgiving. I’d just recommend using a dry red (not sweet).

    2. User avatar enedina.hahn says:

      5 stars
Love that you still kept it close! “Cheaper red” in place of Burgundy is super common—glad it came out good. Next time, yep, splurging usually makes a noticeable difference.

Is it really supposed to take 2 hours? I didn’t have that long! I just rushed it, and it turned out mushy. Sigh.

  56. User avatar Dr. Truman Kuvalis says:

    2 stars
Took me forever to make, kinda a hassle if you ask me. Next time I’ll just order takeout.

  57. User avatar johanne.paucek says:

    3 stars
I really liked the herbs, but my husband thought it tasted weird. Guess it’s a matter of taste?

  58. 3 stars
Took way too long! 2 hours? I don’t have that kinda time. But taste was good overall.

  59. User avatar Oolon Colluphid says:

    5 stars
This recipe is dangerously good. The lardons make it. I served it with mashed potatoes and the sauce soaked in like crazy. 10/10 would cook again.

  60. 3 stars
I tried this but used chicken thighs instead. Didn’t turn out as good, kinda chewy.

    1. User avatar Feral Falmer says:

      4 stars
Using chicken thighs might change the texture a bit. Maybe try slow cooking it longer next time?

  61. 5 stars
This is comfort food. Also, my house smelled incredible for hours. The chicken was tender and the sauce thickened nicely after simmering.

  62. User avatar michal.quitzon65 says:

    5 stars
So easy and tasty! My whole family loved it! Never thought cooking with wine would be this fun.

  63. 3 stars
It was ok, but mine came out too watery 😕. What did I do wrong?

    1. User avatar bella.nitzsche says:

      2 stars
Watery? Hmm, I dunno… Did ya follow the measurements? Also, the wine should help thicken it up. 🤔

    2. 4 stars
I had the same issue before! Maybe try using less chicken broth next time, it can really make it watery. Good luck! 😊

  64. User avatar Spider Worker says:

    3 stars
I thought coq au vin was a dessert? Or is that just me? Still, good recipe.

    1. 5 stars
Haha, coq au vin is definitely not a dessert. It’s a savory chicken dish with wine! But I appreciate your sense of humor. 😊

    2. User avatar amal.heathcote25 says:

      2 stars
Are you sure? I thought it was like a fancy dessert or something. Just sounds like it, right?

  65. 4 stars
Flavor is there, but mine took forever to thicken. I ended up simmering longer and adding a touch more flour slurry. Still tasty, just not as glossy as I expected.

  66. User avatar mira.spinka1972 says:

    3 stars
Coq au Vin is just fancy chicken stew, right? Not sure it’s worth the fuss.

  67. 4 stars
Easy to follow and tasted great! Made it for my dinner party and everyone loved it.

  68. User avatar deon.moore76 says:

    4 stars
Followed the steps pretty closely, but my sauce was a little thin at the end—next time I’ll simmer uncovered for longer. Still tasted awesome though, especially the bacon flavor.

  69. 5 stars
Tried this for family night and it was wildly good. The wine reduction makes the whole thing taste rich and “fancy” without being too hard.

  70. User avatar hilario.christiansen says:

    2 stars
I tried it and my chicken ended up dry. Not sure what went wrong.

  71. 3 stars
I followed the recipe, but the chicken was too dry after cooking. Not sure what went wrong.

    1. User avatar florida.oreilly53 says:

      4 stars
Maybe you cooked it too long? Chicken can dry out if left too long on the heat. Try checking it sooner next time!

    2. User avatar kerry.jacobson says:

      3 stars
I dunno, but my chicken turned out fine. Did you follow the steps exactly? Never skip the bacon, that’s a must!

  72. User avatar anonymous_hacker says:

    5 stars
3 lbs chicken is a lot 😅 I was feeding 2 adults and we had leftovers for days. Which honestly is a win. Sauce tastes even better the next day.

    1. User avatar glynda.prosacco says:

      5 stars
Totally agree 😅 3 lbs sounds like “feed a small army,” but leftovers are the best part. That sauce really does get deeper the next day.

  73. 4 stars
My friend said you needed a fancy wine for this, but I just used what I had, and it turned out great!

  74. User avatar Lunkwill and Fook says:

    3 stars
Not gonna lie, mine turned out a bit too salty. I forgot how bacon can be salty already, so I’d dial back the salt at the end. Flavor otherwise is rich and hearty.

  75. User avatar Robin Gorczany PhD says:

    5 stars
This is an amazing comfort meal. Also, the smell while it simmers… I could eat the whole pot.

  76. User avatar zachery.labadie says:

    5 stars
Made this last weekend and it was honestly restaurant-level. The mushrooms + wine sauce got so rich. I followed the simmer time and didn’t rush it—big difference.

  77. 4 stars
I was nervous about the wine step but deglazing worked like a charm. I used what I had (not exactly Burgundy) and it still turned out great—just more “wine-y.”

    1. 5 stars
Nice! Deglazing is the make-or-break step—glad it worked for you. “More wine-y” sounds honestly perfect for coq au vin 😄

  78. 2 stars
Not sure if I did something wrong, but my sauce never really thickened. I simmered 2 hours like the recipe says—maybe my heat was too low?

  79. User avatar Sharlene Smitham Jr. says:

    3 stars
I think it needed more salt than “to taste.” My sauce tasted a little flat until I added extra pepper and salt at the end.

  80. User avatar shan.koch10 says:

    3 stars
Not sure about the tomato paste + flour combo… it tasted kinda tangy in a way I didn’t expect. Maybe I measured the tomato paste wrong? I’ll try again but go lighter.

  81. User avatar ryan.schimmel19 says:

    2 stars
One and done for me. The wine flavor was overpowering and I didn’t get the depth I expected.

  82. User avatar giselle.braun says:

    3 stars
Way too much tomato paste in my opinion? Mine tasted a bit tangy/odd, but maybe I measured wrong. Next time I’ll reduce it a touch.

    1. User avatar glennie.mclaughlin1955 says:

      5 stars
I agree—1 tbsp might be perfect, but tomato paste can absolutely swing tangy/odd if you’re heavy-handed. Next time, try 1 tsp and see if it balances the wine better.

    2. User avatar tamica.lubowitz32 says:

      4 stars
Honestly I’ve made this with the full 1 tbsp and it was fine… but I also brown the onions/mushrooms longer. Maybe the tang is from not cooking the paste long enough?

  83. User avatar Blue Dartwing says:

    3 stars
This is good, but 3 lbs of chicken felt like a lot for my Dutch oven (lol). Also I left the bay leaf in by accident—oops. Sauce was still pretty amazing though.

  84. User avatar vaughn.zieme2010 says:

    3 stars
Chicken was great, but I burned the browned bits once because I didn’t deglaze fast enough. Tastes slightly smoky now—kinda weird but not awful.

    1. 4 stars
Oof, yeah that browned-bit smoke happens if the deglazing is a hair late 😅 Next time try adding the wine the moment the fond starts to look dark and fragrant—scrape right away and it should stay “coq” not “char.” Still sounds tasty though!

  85. User avatar tonette.torphy70 says:

    5 stars
The wine amount confused me… I used the full bottle like the recipe says, and it reduced nicely, but it also made my kitchen smell like a winery for hours. My partner loved it, so I’m not complaining.

  86. 4 stars
I followed it mostly, but I used dry thyme because I was out of fresh. Still flavorful though. Simmering 2 hours was key—chicken got super tender.

  87. 3 stars
Coq au vin is nice, but do you really need tomato paste? I felt like it leaned a little too tangy for my taste. I’d cut it in half next time.

  88. User avatar edward.dubuque5 says:

    5 stars
The steps are clear, and browning the chicken really matters. I almost skipped deglazing but caught it—scraping up those bits made a huge difference.

The flavor was great, but my chicken took longer than 2 hours to get tender. I guess it depends on the cut size. I was hungry so I kept checking lol.

Totally agree—cut size makes a big difference. I usually aim for closer to 2.5 hours for larger chunks, so your result makes sense!

The bay leaves/thyme step is key. I forgot to remove them once and it was still fine but I wouldn’t recommend. Overall very solid recipe though.

    1. 5 stars
Yes! Bay leaves are sneaky—once I found one at the bottom of my bowl 😅 Thyme too. Love that you still liked it even after forgetting though.

    2. 4 stars
I always remove bay leaves, but honestly coq au vin is so forgiving. The flavor still comes through. Solid call on keeping an eye out.

Coq au vin is expensive lol. But this recipe makes it doable. I used thyme dried, worked fine. 10/10

I’m not sure about 1.5–2 hours—chicken can dry out on low if you overdo it. Also 3 lbs is a lot… but hey, if it worked for you, I’ll try it. What red wine did you use?

Totally agree—coq au vin can be pricey, but making it in a Dutch oven is such a win. Love that you kept it doable and used dried thyme too!

Burgundy is expensive where I live. I used a cheaper red and it still turned out decent, though it wasn’t as deep. Maybe that’s on me.

Coq au vin sounds fancy but this wasn’t hard. I used chicken thighs and it stayed juicy. Would make again for guests.

Not gonna lie, I was skeptical about putting flour in after the veg, but it worked. The deglazing step is key—scrape every bit!

    1. User avatar Eddie the Computer says:

      5 stars
Yes! I used to skip the deglazing and my sauce always tasted kinda “flat.” Scraping the bottom is where the flavor’s hiding.

Way too complicated 😅 but tasty.

Interesting recipe but I kinda messed up—burned the garlic for like 20 seconds. I thought it was ruined, but the wine helped. Not bad at all.

I don’t understand why people use tomato paste with wine—kinda threw me off. It was still tasty though, just not what I expected.

Not gonna lie, I was skeptical about the flour step. But cooking it for 2 minutes worked—my sauce thickened nicely instead of tasting like raw flour.

I made this for friends and it was a hit. The sauce ended up silky and rich from the wine + flour step—definitely worth the 2-hour simmer.

My chicken came out tender but the sauce was kinda thin. Maybe I didn’t simmer long enough? The flavor was still strong though, like comfort food for adults.

  101. 4 stars
I’m skeptical of flour in stews because it can taste floury, but here it worked. I cooked it for the 2 minutes and no one complained lol.

Coq au vin is super fancy sounding but this recipe is actually pretty straightfoward. I guess i did it right? Lol. Family asked for seconds.

Yes!! Coq au vin sounds fancy, but your steps are exactly the kind of “simple but impressive” dinner that always hits. Seconds from the family = you absolutely nailed it 😄

The ingredient list is a lot, but it’s doable. I used dried thyme (because I’m lazy) and it was okay, not as fragrant.

Yeah, coq au vin looks like a lot at first, but once you’re actually cooking it flows pretty easily. Your note about dried thyme makes sense—fresh really brings more “perfume” to the sauce.

Coq au vin is one of those dishes where everyone argues about authenticity, but this version tastes great. The bacon fat makes a big difference. I’d give it a higher rating if I had better luck with my mushrooms not browning too much.

“Coq au vin” sounds fancy but instructions are clear. I did it with budget chicken and it still came out good. Wow.

Totally agree—coq au vin *sounds* fancy, but the steps are pretty straightforward. Nice save using budget chicken!

I tried it once and didn’t get it to thicken right. Maybe I didn’t cook the flour long enough? Also, do you simmer with the lid on the whole time?

  106. User avatar candis.schmitt says:

Honestly… bacon + wine + mushrooms = can’t go wrong. I didn’t have thyme so I used dried and it still tasted good.

I don’t know… too much wine? It tasted kinda sour to me even after simmering. Maybe my pot wasn’t fully deglazed, but I won’t be repeating this one.

    1. User avatar napoleon.boehm says:

      2 stars
Oof, sorry it came out sour! Coq au Vin definitely shouldn’t be tangy like that—sounds like the wine reduction may not have properly cooked down or your deglaze wasn’t fully mixed. Did you simmer it covered long enough?

  108. User avatar Questular Rontok says:

    5 stars
Wow, this tasted like something I’d order in a bistro. The wine reduction is the whole vibe—rich and cozy. Mine needed a tiny extra simmer, but totally worth it.

I followed it pretty closely and it came out tender. The only thing I changed was using dry Marsala instead of Burgundy—still good, but not the same depth.

    1. User avatar Michael83 says:

      4 stars
I’m glad it still turned out tender. Honestly I never trust swapping wines—Burgundy has that whole earthy thing—so you’re probably right about the depth. Next time try a Pinot Noir instead if you can.

    2. User avatar les.berge11 says:

Nice! Dry Marsala can be a decent substitute—just sounds like it gave you a slightly different aromatic profile. Did you notice it getting sweeter or more caramel-ish than the Burgundy?
