Ingredients
  

  • 1 cup granulated sugar for caramel
  • 1 can sweetened condensed milk 14-ounce can
  • 1 can coconut milk 13.5-ounce can
  • 5 large eggs room temperature
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Melt the granulated sugar in a saucepan over medium heat to create caramel, stirring constantly until it becomes an even amber color.
  • Quickly pour the caramel into a round cake pan, evenly coating the bottom.
  • In a large bowl, combine sweetened condensed milk, coconut milk, eggs, and vanilla extract. Whisk until smooth.
  • Pour the custard mixture over the caramel in the cake pan.
  • Place the cake pan in a larger baking dish, then add hot water to the baking dish until it reaches halfway up the sides of the cake pan.
  • Bake in the preheated oven for 1 hour or until the flan is set and a knife inserted comes out clean.
  • Allow the flan to cool at room temperature, then refrigerate for at least 4 hours before serving.
  • To serve, run a knife around the edges of the flan, and invert onto a serving plate.

      I dunno… “knife comes out clean” is kinda vague. I’ve had it overbake when I follow that. Also 350°F for 1 hour seems long with a water bath—maybe my pan runs hot. Either way, glad it worked for you!

    I might be doing something wrong—mine didn’t set after 1 hour. I followed temp and everything, but knife wasn’t clean.

      It usually still looks “not set” after an hour if the oven runs cool or your water bath temp isn’t quite hot enough. I’d try baking 10–20 min longer—flan should jiggle slightly but a knife should come out mostly clean. Also make sure the knife-test is in the center, not just the edges where caramel can trick you.
