A classic roast chicken is the epitome of home-cooked comfort food. Golden, crispy skin with juicy, tender meat beneath – it’s a dish that never fails to satisfy. Perfect for a family dinner, a special occasion, or even a simple weeknight meal, roast chicken is versatile, delicious, and incredibly easy to prepare.
The secret to a perfectly roasted chicken lies in the seasoning and cooking method. Start with a whole chicken, preferably one that’s free-range or organic for the best flavor. First, remove any giblets from the cavity and pat the chicken dry with paper towels. This is key to getting that crispy, golden skin. Next, season the bird generously inside and out with salt and pepper. You can add garlic, rosemary, thyme, or lemon to the cavity for extra flavor. For an aromatic touch, a couple of crushed garlic cloves and a halved lemon make a great combination.
The outside of the chicken is just as important. Rub the skin with olive oil or softened butter to ensure that it crisps up beautifully while roasting. You can also sprinkle the chicken with additional herbs, like thyme or rosemary, and even a bit of paprika for a subtle smokiness.
Place the chicken on a rack in a roasting pan, breast side up. The rack allows the heat to circulate around the bird, ensuring even cooking. Roast the chicken in a preheated oven at a high temperature, about 425°F (220°C), for the first 15-20 minutes to get that nice initial browning. After that, reduce the temperature to around 375°F (190°C) and roast for another 1-1.5 hours, depending on the size of the chicken. The general rule is about 20 minutes of cooking time per pound.
To check if the chicken is done, insert a meat thermometer into the thickest part of the thigh -the internal temperature should reach 165°F (75°C). If the juices run clear when pierced, it’s ready.
Once out of the oven, let the chicken rest for 10-15 minutes before carving. This allows the juices to settle, ensuring each slice is juicy and flavorful. Serve with roasted vegetables, mashed potatoes, or a fresh salad for a wholesome, satisfying meal.
A classic roast chicken is always a winner – simple to make, packed with flavor, and perfect for any occasion. Its comforting aroma and melt-in-your-mouth tenderness are the reasons why it’s a go-to favorite in kitchens around the world.

This is the best roast chicken recipe I’ve ever tried! It was so juicy and flavorful. Highly recommend!
Nice recipe. Just one thing: I let it rest 30 min and it got cold fast, lol. Next time 10-15 like it says.
Pretty solid instructions, though my oven runs hot so I had to pull it about 10 min early. Still delicious!
Easy recipe, I’ll try it later! Looks tasty and I love lemon with chicken. Yum!
Looks good, but I’m not sure if it will be that easy. Seems like a lot of steps for just roast chicken.
This sounds delicious! I love lemon chicken too. Can’t wait to make it!
Made this tonight and it came out golden and juicy. The herb + garlic + lemon combo is legit—my kitchen smelled amazing while it roasted.
Can you use butter instead of olive oil? I like butter more!
You can definitely use butter instead! It’ll give it a rich flavor. Just be careful not to burn it. 🙂
My oven runs hot, so I probably overcooked it by like 10 minutes. Still edible, but the breast was kinda dry.
This is just basic roast chicken, nothing special. I’ve had better from a rotisserie. 🙄
Yo I put the chicken in for 1 hour 30 and it came out dry 😭. Next time I’m checking with a thermometer. Maybe my bird was bigger than 3-4 lbs.
Not convinced about stuffing the cavity—feels like it could steam and not roast the herbs. But the skin was crispy so I can’t argue too much.
Easy recipe! I added some spices for kicks. Yum! 😋
I only used parsley (no thyme/rosemary). It was okay, but kinda bland compared to what I usually do. Salt might’ve been light.
Really simple and classic! I used herbs from my garden, taste made me feel like a chef! ⭐⭐⭐⭐⭐
What’s the deal with fresh herbs? You can just use dried ones right? Wanna save money!
Super easy recipe but my oven burns stuff! Had to adjust the temp. Still yummy though!
425°F seems a little high? I was worried it would burn, but it browned nicely. Next time I’ll tent with foil if it looks too dark.
Why do people obsess over roast chicken? It’s just a chicken. Still, it was okay, I guess.
The garlic + lemon in the cavity is genius. My whole house smelled like Sunday dinner.
Totally agree—stuffing the cavity with lemon + garlic makes it smell *so* good while it roasts. I’m trying this next time for sure.
Simple and good. Just… why rinse? lol
My oven runs hot, so 425° turned into borderline overdone skin. Flavor was great, timing just needs adjusting.
I followed the recipe but my chicken ended up dry. Not sure what I did wrong.
Maybe you cooked it too long? Try checking the internal temp next time.
I think the type of chicken matters. Sometimes, they sell super lean ones. Just a thought!
I used dried herbs cause that’s what I had and it turned out… meh. I think fresh makes a difference, sadly.
I totally get that—fresh herbs make a huge difference in chicken roasting. Dried can be a bit flat and sometimes taste “stale” by the time it’s done.
meh is right 😅 Next time maybe use more dried (like 2-3x) and toss it with the oil before rubbing on? Fresh is better but you can sorta fix it.
Mine came out bland until I added extra pepper on the plate. Not sure if my garlic was weak or I under-seasoned.
My garlic burned a little inside the cavity 😅 but the chicken was still tasty. Anyone got tips to prevent that?
The flavor was good, but my skin didn’t get as crispy as I hoped. I think I patted it dry enough? Might need longer drying time.
Followed the recipe but I’m not sure my juices ran clear—maybe my chicken was smaller. Still tasted great though.
Best roast chicken ever!!! Gonna make this for my mom’s birthday. Fingers crossed she likes it too!
I followed it exactly but mine still tasted a bit bland. Maybe I was light on the salt? Also my oven runs hot, so 1:30 felt like too long.
I’ve had that happen—1 tbsp salt for a 3–4 lb bird can be a little conservative. Next time try salting a bit more (even lightly under the skin). Also if your oven runs hot, check at 1:10–1:20 and go by the juices/leg-thigh temp instead of the clock.
I followed the recipe but my chicken was a bit dry. I think I overcooked it. Next time I’ll check it sooner!
It’s easy to overcook chicken! Just keep an eye on it next time, and maybe get a meat thermometer. That helps a lot! 😊
Do you really need to use all those herbs? I just put some salt and pepper and it was fine.
