Greek Lemon Chicken and Potatoes
A delicious and flavorful Greek dish made with tender chicken and roasted potatoes.
Ingredients
- 4 chicken leg quarters
- 4 large potatoes, peeled and cut into wedges
- 1/4 cup olive oil
- Juice of 2 lemons
- 4 cloves garlic minced
- 1 tbsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp cayenne pepper
Instructions
- Preheat the oven to 400°F (200°C).
- Place the chicken leg quarters and potato wedges in a large baking dish.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, black pepper, paprika, and cayenne pepper.
- Pour the marinade over the chicken and potatoes, making sure they are evenly coated.
- Bake in the preheated oven for 1 hour, or until the chicken is cooked through and the potatoes are golden brown and crispy.
- Serve hot and enjoy!
