Okay so I accidentally minced the garlic too early and it burned for like… 20 seconds. I still added cream and it recovered. Flavor was still good, just not as sweet.

Grainy means u used too much garlic or u didnt wash the spinch lol. Also 1 min garlic is not long enuff—burn it a bit for flavor. But yea parm can clump if it’s not fine. I would blend the parmesan first. taste is everything right.
