Cheesy Corn

December 19, 2024

Cheesy corn is a delicious and indulgent side dish that brings together the sweetness of corn with a rich, creamy cheese sauce. It’s the kind of comfort food that complements nearly any main course, making it a perfect addition to holiday feasts, family dinners, or casual weeknight meals. This dish is incredibly easy to make, and its creamy, cheesy goodness will leave everyone asking for seconds.

The base of cheesy corn is simple: frozen or canned corn kernels, which are cooked until tender and then combined with a creamy cheese sauce. The sauce is made by melting butter in a skillet, followed by adding heavy cream or milk to create a rich, velvety base. Shredded cheese, usually cheddar or a blend of cheeses, is melted into the sauce, creating a gooey, flavorful mixture that coats the corn beautifully.

Garlic, onion powder, salt, and pepper can be added to the sauce for extra flavor, while a sprinkle of cayenne pepper or paprika can introduce a subtle hint of heat. The combination of savory cheese, buttery cream, and sweet corn makes for a perfect harmony of flavors. Some versions even add a touch of cream cheese for added richness and smoothness.

Once the corn is mixed with the sauce, it’s gently simmered until everything is heated through and the cheese sauce thickens, creating a luxurious, creamy consistency. To finish, a sprinkle of chopped parsley, green onions, or extra cheese on top can add a touch of color and freshness.

Cheesy corn can be served as a side dish to just about any main course. Whether it’s accompanying roast chicken, steak, or a BBQ spread, this dish is sure to be a hit. It’s comforting, rich, and full of flavor, making it the kind of dish that brings people together at the table. Easy to prepare and always crowd-pleasing, cheesy corn is the ultimate side dish to elevate any meal.

I like corn but not with all that other stuff. Just corn please!

  4. 3 stars
Not bad but I found it a little bland. Maybe try adding some garlic next time!

Yummy! This is going in my recipe book! 😍

  6. 2 stars
Easy to make, but I used frozen corn and it came out watery. Not sure I did it right.

  7. User avatar many.rolfson1965 says:

    4 stars
Easy and tasty! But seriously, how is this a side dish? I ate it all by itself.

  8. 4 stars
“Melt butter in a skillet” and suddenly dinner? Idk sounds too simple but I tried it anyway. Honestly I’m surprised it worked.

  9. User avatar williams.oberbrunner35 says:

    3 stars
How long can I keep this? Do I have to eat it all in one go? Asking for a friend 🤔

  10. User avatar liberal.hero says:

    2 stars
Too cheesy for me! I couldn’t finish it. If u like cheese, go for it, but if not, skip.

  11. User avatar elissa.monahan1985 says:

Just corn and cheese? That’s too simple. Where’s the flavor? I thought there’d be more to it.

  12. 3 stars
Why heavy cream and butter? It’s just corn and cheese… I think you could do it with milk and a little cheese. Still, it tasted fine.

  13. User avatar ronnie.carroll73 says:

    1 star
Gotta say, this was a major flop for me. It was bland. I won’t be making this again.

  14. User avatar leroy.mueller67 says:

Made this with frozen corn and it came out so creamy—my toddler went back for seconds. Super easy weeknight side!

This is basically my childhood side dish. Comfort food in a skillet. Pepper goes well with it!

    1. 5 stars
Aww that’s the best kind of side dish—cheesy corn in a skillet feels like a hug. And yes, pepper really makes the cheddar pop. 🍽️

  16. User avatar cockroach says:

This was delish! My kids loved it, and I couldn’t believe how easy it was to make. Thanks!

Is this even healthy? All that cheese and cream, can’t be good. 🍕

  18. User avatar stephany.wisozk says:

    4 stars
Really easy to make! But isn’t corn too sweet for a savory dish? 🤷‍♂️

    1. User avatar lon.dicki84 says:

      2 stars
Corn in savory? Nah, I don’t think so. Might ruin the whole dish. Shouldn’t it be in desserts? 🥴

    2. User avatar dominica.fahey says:

      5 stars
I get what you’re saying, but the sweetness of corn really balances out the cheesy richness. Trust me, it works! 😋

  19. User avatar Flame Atronach says:

This is sooo good! I added some jalapenos for a kick. Yummy!

    1. 5 stars
Jalapenos? That’s a cool twist! I’ll have to try that next time. Love this recipe!

  20. User avatar Draugr Scourge says:

    4 stars
I skipped the butter and added some garlic, still delicious. Can’t go wrong!

  21. User avatar vanesa.shields says:

2 cups corn felt like not enough cheese ratio. I doubled the cheddar and now it’s perfect. Just my opinion.

    1. User avatar Miss Derek Pollich says:

      4 stars
Smart fix. I usually measure with my heart though 😅 What kind of cheddar did you use—sharp or mild?

    2. User avatar harlan.batz74 says:

      5 stars
Totally agree—2 cups corn to 1 cup cheddar sounds a bit light. I’ve started doing closer to 1.5 cups cheese and it’s way better.

  22. User avatar clair.mclaughlin56 says:

    5 stars
This is the best cheesy corn recipe I’ve tried! So easy and delicious. My kids loved it!

  23. User avatar percy.feeney39 says:

    3 stars
I dunno, I think it was a little too cheesy for my taste. Might try less cheese next time.

  24. User avatar muriel.kertzmann81 says:

yum!!! Can’t believe how simple it was to make! Definitely a keeper!

So I made this for a potluck and people couldn’t stop eating it! Thank you!

  26. User avatar earl.adams2005 says:

    4 stars
I followed it pretty much exactly, except I used half-and-half instead of heavy cream. Still turned out tasty, but not as rich. Would do heavy cream next time.

  27. 3 stars
Kinda bland for me with just salt/pepper. Maybe my cheddar wasn’t flavorful enough. I’ll try smoked paprika next time.

  28. User avatar zetta.little50 says:

    4 stars
Great for parties! Made it last week and cleaned the dish in minutes. So yum!

    1. 5 stars
Totally agree! This dish is a crowd-pleaser for sure. Can’t wait to make it again!

  29. User avatar Gandalf the Grey says:

    5 stars
Super easy and actually tastes like something you’d get at a restaurant. I used frozen corn and it still came out sweet and creamy. Definitely making again.

    1. User avatar Dremora Lord says:

      5 stars
Totally agree—this has that “restaurant side dish” vibe. I made it with frozen corn too and it stayed creamy without being watery.

    2. User avatar Emily Saunders says:

      3 stars
I tried it once and it was good, but mine wasn’t sweet at all—more like salty and cheesy. Maybe I used the wrong corn? Still… I’d make it again, just with less salt next time.

  30. User avatar Arthur Philip Deodat says:

    5 stars
This is so easy and yummy! I love cheese with my corn. My kids ate it all in one sitting!

  31. User avatar johnny.brown50 says:

    4 stars
Pretty solid, but I think 5 minutes after adding the cream wasn’t enough for me. I had to keep cooking until it thickened.

  32. User avatar dana.marvin2002 says:

    4 stars
Corn cheese is the best! I always use blue cheese instead of cheddar, gives it a kick!

  33. User avatar carmel.johnson79 says:

    2 stars
Why heavy cream? Isn’t there a lighter option? 😬

  34. User avatar sanford.zulauf says:

    3 stars
Tasted good, but mine turned a little too salty even with “to taste.” Next time I’ll start with 1/4 tsp salt max.

  35. User avatar vern.hintz says:

    5 stars
This was soooo good! I added some jalapeños for a kick, yum! 😋

    1. User avatar flor.swift says:

      5 stars
Jalapeños sound like a great addition! I might have to try that. 😄

    2. User avatar joan.lakin76 says:

      2 stars
I dunno, seems like too many ingredients. Can’t you just make corn and cheese? 🤷‍♂️

  36. User avatar suspiciousCommentator says:

    3 stars
Why use heavy cream? I just used milk and it still turned out fine. Seems like a waste of cream.

    1. User avatar hugh.schulist1974 says:

      3 stars
I dunno, heavy cream makes it super creamy! Just milk feels kinda bland. But if it worked for you, that’s cool I guess.

    2. User avatar rich.landlord says:

      4 stars
Using heavy cream really adds a richness to the dish. Milk might work, but it’s not the same! Trust me, I’ve tried both.

  37. 5 stars
5 stars for sure! Perfect side for BBQs! Everyone loved this cheesy goodness.

  38. User avatar Fenchurch says:

    2 stars
I dunno.. it looks kinda basic. Ain’t there a secret ingredient or something? Just corn and cheese?

    1. User avatar carl.douglas2023 says:

      5 stars
Sometimes simple is best! This recipe lets the flavors of the corn and cheese shine through. Trust me, it’s delicious!

    2. User avatar alfred.doyle92 says:

      3 stars
I mean, there’s only so much you can do with corn and cheese, right? What do you expect? Truffles? 😂

  39. 3 stars
I think I did something wrong… it turned out too runny. Maybe less cream next time?

    1. 4 stars
Yeah, sounds like too much cream. I usually just use a 1/4 cup and it’s perfect! Don’t worry, you’ll get it right next time!

  40. User avatar mariah.orn says:

    5 stars
To be honest, I thought this was gonna be a disaster, but my kids gobbled it up!

  41. User avatar willis.collier71 says:

    3 stars
Can I use frozen corn? 🤔 I only have that. Hoping it turns out good.

  42. User avatar tim.hartmann37 says:

    5 stars
Cheese + corn = happiness! Will definitely make again! 🧀❤️

    1. User avatar felipe.hagenes54 says:

      2 stars
Is it really that great? I thought it sounded kinda basic…

    2. 5 stars
I totally agree! This dish made me so happy too! 😊

  43. 2 stars
Way too much cheese for my taste, but everyone else liked it. I’d do 3/4 cup cheddar instead. Easy recipe though.

    1. User avatar Hortensia Bradtke says:

      4 stars
We actually LOVE the extra cheese in this one 😄 but I can see how it’s too much for some people. I’ll try your suggestion next time!

    2. 5 stars
Totally agree—cheddar can be overpowering. 3/4 cup sounds like a much better balance. Glad it still came out easy though!

  44. User avatar corrie.beier says:

    2 stars
Eh, it’s just corn and cheese. Didn’t really wow me. 😕

    1. User avatar danna.little says:

      4 stars
I thought it was amazing! The creaminess with the cheese really makes it pop. Maybe you just didn’t season it enough?

  45. User avatar Rufus Hessel says:

    5 stars
Cheese + corn = best combo! Gonna make this again for sure!

  46. User avatar jenise.beatty6 says:

    1 star
Why would you ruin corn like this? Corn should be sweet and not masked by cheese.

  47. User avatar aleta.cummerata67 says:

    4 stars
I overcooked it the first time (oops) and the corn got a little chewy. But when I kept it to the timing, it was perfect and creamy.

  48. User avatar art.kling57 says:

    4 stars
Quick and easy! I liked it. I used frozen corn and it worked fine.

    1. User avatar esmeralda.klocko says:

      3 stars
I dunno, frozen corn just ain’t the same as fresh. But if it tasted good to you, who am I to judge?

    2. User avatar donnie.abbott1985 says:

      5 stars
I’m glad it worked out for you! Frozen corn is a great time saver. Did you add anything extra to it?

  49. User avatar raymond.fahey says:

    3 stars
What if I use mozzarella instead of cheddar? Would that ruin it?

    1. 2 stars
Nah, I wouldn’t do it. Mozzarella ain’t got that kick like cheddar. Just stick with the recipe!

    2. 4 stars
I think mozzarella would work, but it might be a bit stringy. Cheddar adds more flavor though!

  50. 5 stars
Cheese + corn = best side ever! 🍽️👌

  51. User avatar Mr. Prosser says:

    5 stars
Made this tonight and it was a total comfort side. The cheddar melts into the cream so nicely—wish I had doubled it for leftovers!

    1. User avatar dion.prohaska says:

      5 stars
Yes!! “Comfort side” is exactly right. The cheddar + cream combo is seriously the best part—so good when it gets all glossy and melty.

  52. User avatar evette.schaden75 says:

    4 stars
Simple and delicious! Made it for dinner last night and it was a hit with the kiddos!

    1. User avatar joe_banana says:

I’m glad to hear it was a hit with the kiddos! This dish is a favorite in my family too. 😊

  53. User avatar gerald.gottlieb25 says:

This recipe is basically just melted cheese on corn. Not impressed. Also, what about spices?

  54. User avatar augustus.purdy1961 says:

    3 stars
The recipe looks easy but I dunno, might be too cheesy for my taste.

  55. User avatar Broderick Reynolds says:

    4 stars
I didn’t have heavy cream, so I subbed it with milk. Still turned out tasty!

    1. User avatar Random Dent says:

      5 stars
Wow, that’s creative! I never thought to use milk instead of heavy cream. Gonna try this next time!

  56. User avatar jared.mraz68 says:

    5 stars
This was absolutely delicious! My kids couldn’t get enough.

    1. 5 stars
I’m so glad to hear that! It’s a hit in my house too, my kids love it! 😍

    2. User avatar parker.hane2011 says:

      2 stars
I dunno, sounds too cheesy for me. What if I just left out the cheese? Would it still work?

  57. 3 stars
Idk, mine got kinda thick and gloopy after adding the cheese. Still edible, just not the smooth vibe I expected. Maybe I overheated it? Next time I’ll watch the heat more.

  58. 5 stars
Cheesy corn!!! 🧀😍 Love it, super comfort food!

  59. User avatar son.kling41 says:

    4 stars
Cheesy corn… yes please. I added a pinch of garlic powder and it took it over the top. Would recommend.

    1. User avatar Magrathean sperm whale says:

      5 stars
Cheesy corn is my weakness 😅 I made it with fresh corn and it was super creamy—totally agree about adding garlic powder. Next time I’ll probably do a little extra pepper too.

    2. User avatar myriam.paucek80 says:

      3 stars
I tried this but mine didn’t get “thick” like I expected. I think my cheese was a little too low-fat. Still tasted good though. Maybe I should cook it longer?

  60. User avatar mario.labadie says:

    3 stars
Not bad, but it tasted a little bland until I went heavier on the pepper and salt. Also, I think fresh corn would make a bigger difference.

    1. User avatar mathWizard says:

      4 stars
Totally agree—this one can use a little extra seasoning. I usually start with the salt/pepper amount, taste, then go from there (freshly ground pepper helps a lot). Fresh corn probably would’ve made it pop even more too.

  61. User avatar violet.kovacek says:

    4 stars
Used frozen corn and it turned out great! Thanks for sharing the recipe.

  62. User avatar margret.bernhard7 says:

    3 stars
I found this recipe kinda bland. I think it needs more spices or something. Maybe garlic?

  63. User avatar goldie.beatty45 says:

    4 stars
    Easy and tasty!

  64. User avatar Restless Draugr says:

    5 stars
So simple! I made it for dinner and everyone loved it. Will repeat!

    1. 5 stars
Glad to hear you loved it! It’s super easy and perfect for kids too!

  65. User avatar ezequiel.ratke36 says:

    4 stars
5-7 minutes then another 5? that’s long for corn lol. But I tried it and it actually came out soft, not mushy. Solid.

  66. User avatar trisha.powlowski13 says:

    4 stars
Pretty good! I followed the steps, but I think I needed a little more salt—felt slightly underseasoned to me. Texture was nice though, not watery.

    1. 3 stars
Mine was kinda the same—like it needed more salt but I’m not sure if it was the cheddar or the corn. I used frozen corn and it still felt underseasoned. Also I think I cooked it too long cuz it got thick.

    2. User avatar liberal.hero says:

      5 stars
Thanks! I’m glad the texture turned out good. I agree—corn can be a little bland depending on how sweet/fresh it is, so “to taste” salt really helps. Next time, try adding a pinch, stir, and taste again.

  67. User avatar yuriko.jacobi says:

    4 stars
Not bad, but it’s kinda bland without more seasoning. I’ll add paprika or chili flakes next time.

  68. User avatar Shaddam Corrino IV says:

    2 stars
Too cheesy for my taste. I think I prefer my corn plain.

  69. User avatar darcie.fadel says:

    4 stars
Simple and really tasty. I used frozen corn and it still came out sweet and creamy. Pepper could be a little more for my taste, but overall great.

    1. User avatar Cave Bear says:

      3 stars
Hmm I made it once but it didn’t get as creamy for me—maybe I didn’t stir enough or the heat was too high. Do you use block cheddar or pre-shredded? Also I’m with you on the pepper, it’s kinda mild.

    2. 5 stars
Totally agree—cheesy corn like this is dangerous (in a good way). I also used frozen corn and it turned out sweet and creamy. Next time I’ll go heavier on the pepper though.

  70. User avatar maryln.christiansen says:

    4 stars
Good comfort food, but mine got a bit thick. Next time I’ll add a splash more cream and maybe slightly lower the heat when melting the cheese.

  71. 4 stars
Quick and easy! I’m impressed. Can I substitute the corn with peas?

  72. 2 stars
Cheesy corn sounds nice but 1 cup cheddar feels like a lot. I’m not sure I’d serve this to everyone—some might find it too rich. Still, the flavor is pretty strong.

  73. User avatar suellen.bechtelar says:

    5 stars
1/4 tsp pepper seems low? I doubled it and it was way better. Also I love that it’s ready in like 15 min.

  74. User avatar william.langosh94 says:

    3 stars
I added garlic and it was better. The recipe is okay but not amazing.

  75. 4 stars
Pretty tasty, but I think 1/2 cup heavy cream is a little much if you don’t want it too rich. Next time I’ll use a bit less and add more pepper.

  76. User avatar Vroomfondel says:

    3 stars
Not sure about using 1/2 cup cream for only 2 cups corn, feels like it might be too wet—mine was more sauce-y than I expected. Still tasty though.

    1. User avatar bob.hettinger says:

      4 stars
Totally get that—1/2 cup cream is a lot for just 2 cups corn. I usually end up cooking it a bit longer so it thickens into more of a sauce instead of staying watery. Glad it was still tasty though!

    2. 4 stars
Hmm mine came out perfect with 1/2 cup cream, but I used frozen corn that was a little drier after simmering. Maybe fresh corn releases more water? Next time I’d try reducing cream to 1/3 cup.

  77. User avatar rodger.hayes says:

    3 stars
Not gonna lie, it’s good, but I’m missing that “corn flavor” pop. Also the measurements are kinda vague with the salt “to taste,” so I ended up guessing.

    1. User avatar shakia.veum24 says:

      4 stars
Totally get you—fresh corn can have that stronger “pop.” I usually add a pinch more salt and a tiny splash of cream if it tastes flat. Could also try a bit of smoked paprika or even a squeeze of lemon to wake it up.

    2. User avatar misti.hills64 says:

      3 stars
Yeah “to taste” is annoying lol. I’m with you. Next time I’ll measure like 1/2 tsp salt first, then adjust. Also—are you using frozen or canned? Frozen has less sweetness to me, so it needs more seasoning.

  78. User avatar karyl.skiles39 says:

    4 stars
Could you use mozzarella? I tried once and it kinda turned stringy. I think cheddar is way better for melting evenly like this recipe says.

  79. User avatar Grìma Wormtongue says:

    5 stars
Cheesy Corn? I mean… yeah. Pretty dang good. 😅

  80. 3 stars
Not bad, but I expected more “cheesy” flavor. I used mild cheddar and it was kind of bland—would try sharp cheddar next time.

  81. User avatar clyde.douglas96 says:

    2 stars
Hmm… I followed the steps but it turned out weird. Did I miss something?

    1. User avatar Mrs. Benedict Bogisich says:

      3 stars
I don’t think you missed anything, it’s just cheesy corn. Mine came out fine, maybe your ingredients were off?

    2. User avatar harlan.mclaughlin10 says:

      4 stars
Maybe you cooked it too long? It can get weird if overcooked. Just a thought!

  82. User avatar Yooden Vranx says:

    5 stars
Super creamy and cheesy! I used frozen corn and it still turned out great—only needed a couple extra minutes to get it tender.

Yes! I love when it gets that creamy-cheesy texture. I’m glad frozen corn works too—good to know about the extra minutes.

Made this with frozen corn—so easy. The sauce got super creamy and the cheddar totally clings to everything. 10/10 side for weeknights.

I followed the steps pretty closely, but mine got a bit too thick when the cheese melted. Next time I’ll add a splash more cream.

I followed the steps and somehow the cheese clumped. I’m sure it was my fault, but I’d love tips like shredding finer or keeping it off high heat.

Not bad, but I think it needed more cheese. Next time I’ll add extra!

I dunno, do we really need more cheese? That might make it too greasy.

I’m not sure why my cheese clumped—maybe I used pre-shredded? Still ate it though. Flavor was there.

The cheddar really makes it rich. I added a pinch of garlic powder and it was even better. Would make again.
