Beef enchiladas are a savory, satisfying dish that brings together tender beef, warm tortillas, and a rich, flavorful enchilada sauce. This Mexican classic is loved for its bold flavors, comforting texture, and the perfect balance of savory beef and spicy sauce. Whether you’re cooking for a weeknight dinner, hosting a gathering, or craving a hearty meal, beef enchiladas are a go-to choice that never disappoints.
The key to great beef enchiladas is the beef filling. Ground beef is typically sautéed with onions, garlic, and a mix of spices like cumin, chili powder, and paprika, giving it a deliciously savory and slightly smoky flavor. You can also add some diced tomatoes, green chilies, or olives for extra depth and texture. Once cooked, the beef mixture is spooned onto tortillas and rolled up, ready to be covered in a rich enchilada sauce.
The enchilada sauce is what really brings this dish to life. Made from a base of red chilies, tomatoes, garlic, and onions, the sauce is perfectly spiced and full of flavor. It’s typically poured over the rolled tortillas before baking, soaking into them and adding a delicious, tangy, and slightly spicy kick. For an added touch of richness, you can sprinkle cheese, such as cheddar or Monterey Jack, on top of the sauce, allowing it to melt and form a golden, bubbly layer.
After baking, the beef enchiladas are ready to be served. You can top them with sour cream, chopped cilantro, shredded lettuce, or even a few slices of avocado for a fresh, creamy contrast to the spiced beef and sauce. These enchiladas are best enjoyed with a side of Mexican rice, beans, or a simple salad.
Beef enchiladas are a crowd-pleasing dish that can easily be made in large batches, making them perfect for family gatherings or meal prep. You can also customize the filling to your liking by adding vegetables or using a different protein, like chicken or pork. No matter how you make them, beef enchiladas are always a delicious and hearty meal that brings the flavors of Mexico to your table.

These were amazing! My family devoured them. Will definitely make again.
These enchiladas were a hit at my family dinner. So tasty! Definitely making again.
I tried this but my tortillas kept cracking when I rolled them. I microwaved them for a few seconds first and it fixed it. Just a heads-up if anyone else has the same issue.
These turned out sooo good. The sauce + cheese ratio was perfect, and my family went back for seconds. I added cilantro and it really made it taste fresh.
One pound beef + 8 tortillas is a little dry for my taste. I’d do 12 tortillas next time or add more sauce/cheese. My family wanted more, not less 😅
Not bad but kinda bland. I think 2 tbsp taco seasoning depends on the brand—mine was weak. Also, I didn’t drain enough fat and it felt greasy. Check that step!
My family asked for seconds. I garnished with cilantro and sour cream and it tasted like something you’d get at a restaurant. Easy weeknight win.
I don’t know if I made it wrong, but these turned out kinda bland. Maybe need more seasoning?
I think it’s definitely the seasoning! You might want to add some extra spices. I usually add cumin and garlic powder to mine.
It was okay. The flavor was a little flat until I added more enchilada sauce on top. Also I used “Mexican blend” and it tasted kinda salty to me, so watch the cheese amount.
Honestly mine came out flat at first too. I think it’s the sauce-to-cheese balance. Did you drain the beef fat well? Also maybe toast the tortillas a sec? Not sure. But adding more enchilada sauce makes sense.
Thanks for the tip! I’ve noticed some “Mexican blend” cheeses are super salty too. Next time I’ll start with a little less cheese or use a milder blend, and I’ll definitely add extra sauce if it needs it.
I followed it exactly and they were delicious, but I drained a lot of fat like the recipe says and it dried out slightly. Maybe drain less? Still gonna make again though.
Honestly, I was kinda disappointed. They taste fine but not what I expected. Maybe I used too much seasoning?
This is the best recipe ever!! I made it twice this week! Yummy!
Totally agree! These enchiladas are a game changer! Can’t wait to make them again.
Aww man, I used rice instead of beef and it just wasn’t the same. Should’ve followed the recipe!
Enchiladas 👌
Why do people drain the fat, it has flavorrr. I didn’t drain much and it was kinda greasy but still delicious. Also I used flour tortillas and thought they’d be less good, but nope.
I get you—fat = flavor! I usually just drain “some” too, not all. If you leave a little, it tastes richer. Glad the flour tortillas worked out too!
Idk… I always drain it a lot. Otherwise the enchiladas get greasy and the tortillas go soggy. Maybe your cheese helped? Also 2 cups cheese sounds low for 8 tortillas imo.
Yum! So cheesy!!! 😍
Delicious! I used turkey instead of beef and they turned out fine. Will make again!
I followed it exactly and it was good, but I felt like the seasoning needed a pinch more. The tortillas also got a little soft in the oven (maybe I’m used to crispier ones). Still tasty though.
Yum! I didn’t have enchilada sauce so I used barbecue sauce instead. Still delicious!!
These were amazing!! I added some black beans for extra protein. Will definitely make again!
I love that you added black beans! They make everything better. Can’t wait to try it myself!!
Black beans? Really? That sounds weird. I never heard of that with enchiladas.
These enchiladas were a hit at my family dinner! So cheesy and flavorful! 😊
It was okay but took longer than I thought. Next time, I’ll use less sauce.
This is not authentic enchiladas! Real ones have roti, not these flour things! 🤨
375°F is fine, but 20 minutes is a little short for me—cheese wasn’t super bubbly. I ended up baking closer to 28 minutes. Otherwise, great comfort food.
Hmm I baked mine 25 minutes and it was fine, but maybe my enchilada sauce was thinner? Also I don’t drain the fat every time and it still turns out ok 🤷♂️. Next time I’ll check for bubbly cheese earlier though.
Totally agree—20 minutes sounds a bit optimistic. I usually wait until the cheese is properly bubbling and starting to brown at the edges, like ~25-30 min depending on my oven.
Quick and easy! I added black beans to the beef mixture and it turned out great!
These came out super comforting. The taco seasoning + onion really nailed the flavor, and the sauce amount was perfect for a 9×13. I added chopped jalapeños and it was a great kick.
I think 2 tbsp taco seasoning is kinda a lot? But if it worked for you with only 1 lb beef, I’ll trust it. What jalapeños—fresh or pickled?
Seriously? I made these once and they were bland, so I’m loving hearing the taco seasoning + onion actually hits. Going to try your jalapeños too 🔥
What kind of cheese can I use?! I only have mozzarella. Can it work?
Pretty solid for a weeknight dinner. I didn’t have taco seasoning so I improvised with chili powder + cumin and it was still tasty. Next time I might add a little garlic.
I am not a good cook, but this was pretty simple. My kids loved it!
These are just taco rolls! Why even call them enchiladas? 🤔
These are definitely enchiladas. Just because they have a taco seasoning doesn’t make them less valid! They’re baked with sauce and cheese, which is how enchiladas are made. 😋
