Baked stuffed artichokes with shrimp are the epitome of an elegant yet comforting dish that combines the earthiness of artichokes with the delicate sweetness of shrimp. This dish is perfect for a special occasion or as a standout appetizer that’s sure to impress your guests. The hearty artichokes are stuffed with a savory mixture of breadcrumbs, garlic, Parmesan, and fresh herbs, then topped with succulent shrimp and baked to perfection.
Preparing artichokes can seem intimidating, but with a little guidance, it’s an easy and rewarding task. Start by trimming the artichokes and removing the tough outer leaves. You’ll want to focus on the tender heart and the meaty inner leaves, where the stuffing will go. After cleaning, you can steam or boil the artichokes until they’re just tender enough to easily separate the leaves.
The stuffing is where the magic happens. A blend of garlic, breadcrumbs, Parmesan cheese, lemon zest, and fresh herbs like parsley and thyme creates a flavorful, aromatic base. The breadcrumbs soak up the natural juices from the artichoke and shrimp, giving the stuffing a savory, moist texture that contrasts beautifully with the crisp edges of the artichoke leaves. The addition of shrimp adds a pop of seafood flavor and extra richness, making each bite a satisfying combination of textures.
Once the artichokes are stuffed and topped with the shrimp, a drizzle of olive oil or melted butter ensures they bake to a golden, crispy perfection. As the artichokes bake, the shrimp cook through, soaking up the flavors of the stuffing and creating a fragrant, savory dish that’s hard to resist.
Baked stuffed artichokes with shrimp are perfect for a fancy appetizer, a special dinner, or even as part of a seafood platter. Serve them with a crisp white wine and a side salad, and you’ve got a meal that feels indulgent yet balanced. This dish brings together the best of both land and sea, making it a true crowd-pleaser with flavor that’s both elegant and comforting.

Ingredients
- 4 artichokes large,
- 1/2 pound shrimp peeled and deveined
- 1 cup breadcrumbs
- 1/2 cup parmesan cheese grated
- 2 cloves garlic minced
- 2 tbsp parsley chopped fresh
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the artichokes by cutting off the top third and the stem. Remove the tough outer leaves and trim the sharp tips from the remaining leaves. Using a spoon, scoop out the choke from the center of each artichoke. Place the prepared artichokes in a large pot of boiling water and cook for 15 minutes or until the leaves are tender. Remove the artichokes from the pot and let them cool slightly.
- In a bowl, combine the breadcrumbs, Parmesan cheese, minced garlic, chopped parsley, olive oil, salt, and pepper. Mix well to combine.
- Stuff the breadcrumb mixture into the center of each artichoke, making sure to get some between the leaves as well.
- Place the stuffed artichokes in a baking dish and drizzle with olive oil. Bake in the preheated oven for 45 minutes or until the breadcrumbs are golden brown and the artichokes are tender.
- While the artichokes are baking, cook the shrimp in a separate pan until pink and cooked through.
- Serve the baked stuffed artichokes with the cooked shrimp. Enjoy!
The ingredient list is solid, but I’m not sure 1 cup breadcrumbs is enough for 4 big artichokes. Mine usually eat more stuffing than that 😅
Good point 😄 I’ve done this and 1 cup can be a little tight for large artichokes—especially if you really pack it between the leaves. I’d probably add a few extra tablespoons (or even scale up to ~1.5 cups) if your artichokes are monsters.
I followed the recipe but my artichokes were bitter. What did I do wrong? 😕
soooo good i made it for dinner. i did not have fresh parsley so i used dried and it was fineee. next time more garlic tho lol
These are absolutely amazing! The flavors blend so well together, and the shrimp adds a nice touch. Definitely making these again!
Yummy! But my partner said it was too much work to prepare. Maybe next time I’ll buy prepped artichokes.
I tried something similar once and forgot to remove the choke properly… it was awful. This step is super important, so good on you for including it.
The recipe says to use olive oil but I used coconut oil, it was weird! But kinda good?
They looked nice but were hard to eat. Next time I’m sticking with mashed potatoes. 👎
Shrimp on top of artichokes is kinda weird to me? Like I get surf-and-turf vibes but I’d rather do lemon butter instead.
Honestly I get why you’d say that—shrimp + artichokes does feel a little “surf-and-turf” adjacent. Lemon butter sounds way brighter though.
My family loved it! Even my picky eater brother came back for seconds!
Very tasty!! Even my picky kids ate them! The breadcrumb mix is great, I’ll use it for other veggies too.
The breadcrumb filling was super tasty! I added some lemon zest too, very refreshing. 😊
Yum! Lemon zest sounds like a great addition 👍 I’ll definitely try that next time.
I dont get why artichokes are so popular, they look weird and taste strange. Not a fan of this recipe.
No offense, but artichokes are hard to eat. Is there a simpler recipe or something? Just asking!
Yum! Perfect combo of flavors. I want this for every meal. <3
I couldn’t agree more! They are absolutely delicious. This recipe is a keeper! 😍
Looks good, but I’m not a fan of artichokes. Is there a way to make this with something else? 🥴
I have no idea what an artichoke is but this seems interesting. Maybe I’ll try it if I feel brave.
Wasted a lot of time on this. The prep was hard and they just didn’t taste that great. I prefer my artichokes steamed.
I totally get what you mean! I tried this recipe too, and it was way more complicated than I thought. Steamed artichokes are the best!
Honestly, you can’t go wrong with artichokes. They taste good if you cook them right! Maybe you just need more practice?
375°F for 45 minutes seems long to me for the bread crumbs unless you like them super browned. I’d start checking at 30 minutes and rotate the dish.
Totally agree—45 minutes at 375F can go from “golden” to “too browned” real fast. I usually start checking around 25–30 and rotate. Works great.
Wow! I never thought to bake them this way. The crunchiness is awesome!
So good! I added some lemon juice to the filling and it was a hit! Will definitely make again.
Super easy to make! I love shrimp and artichokes together. Will do this again for sure!
I was skeptical about the shrimp with artichokes, but I was pleasantly surprised! Tastes amazing!
These were incredible! The shrimp really added a nice touch. Will definitely make again!
These artichokes are so delicious! My family loved them, especially with the shrimp. Will definitely make again!
I agree! These artichokes are a hit. I made them last weekend, and everyone asked for seconds!
These were so good! I made them for my family and everyone loved them. Will definitely make again!
Yum! I added some crushed red pepper for a kick. Highly recommend! 🌶️👌
Honestly, the ingredients are kinda basic—breadcrumbs, parm, garlic—so I’m not sure it’ll wow anyone. But I’ll admit artichokes and cheese always taste good.
Not bad, but the prep time took forever. I think I like them just steamed next time.
Baked for longer than the recipe said and they got a bit burnt. Maybe check them sooner?
Not convinced. For me, shrimp feels kind of unnecessary—could’ve just baked it in with the stuffing. Also, I’m not sure why boil the artichokes if you’re baking them for so long.
