Baked Greek Sardines with Herbs and Lemon

April 17, 2024

A delicious and healthy Greek-inspired recipe for baked sardines with fresh herbs and zesty lemon.

Sardines are one of those ingredients that often go overlooked, but once you embrace their bold flavor and versatility, it’s hard not to fall in love. When paired with fresh herbs, sardines transform into a dish that feels both rustic and refined. This combination brings out their natural richness while adding layers of brightness and aroma.

These tiny fish are a nutritional powerhouse, packed with omega-3 fatty acids, calcium, and protein. But beyond their health benefits, sardines offer a flavor experience that’s deeply satisfying. Their taste is rich, slightly salty, and pleasantly briny, making them a perfect match for clean, fragrant herbs like parsley, dill, and thyme.

Sardines with herbs feel like a dish pulled from a Mediterranean table. The kind of meal you’d find at a seaside café where the ingredients are simple but perfectly chosen. Whether grilled, broiled, or served straight from the tin, the addition of herbs balances their intensity and adds a fresh note to every bite.

One of the beautiful things about this pairing is how easy it is to make it your own. A splash of lemon juice or a drizzle of olive oil can elevate the whole experience. You can serve sardines with crusty bread, over a crisp salad, or on warm rice for something more filling. However you choose to enjoy them, the herbs help make the dish feel lighter, brighter, and more approachable.

For those new to sardines, starting with herb-forward combinations can be the perfect introduction. The herbs mellow out the boldness while enhancing the depth of flavor. It’s also a chance to explore different herb blends and regional combinations, whether you’re leaning toward Mediterranean simplicity or adding a hint of spice.

At their core, sardines with herbs are about honoring simple ingredients and letting each one shine. It’s a reminder that sometimes the most delicious meals are the ones made with just a few good things on hand.

Lemon on fish is good but I forgot to pat them dry and mine kinda steamed. Still tasty though. My bad!

  2. 3 stars
Mine got a little dry on top—maybe my oven runs hot. Still tasted good though, just not as juicy.

    1. 5 stars
Ugh, that sounds exactly like an oven temp issue. If the top dries out, I’d try covering the dish loosely with foil for the first 10 minutes, then uncover to brown for the last bit. Also maybe check yours at 15 min—15 seems like the sweet spot for 1 lb sardines.

  3. 4 stars
Good and healthy, but next time I’ll bump the oregano a bit and maybe add a pinch of red pepper flakes for some heat.

  4. User avatar ned.smitham says:

Do you really mean 2 cloves garlic? I used 2 tablespoons by mistake and it was way too garlicky. Still ate it, but… yikes. Lesson learned.

  5. User avatar Bowerick Wowbagger says:

    5 stars
I was skeptical about baking sardines, but wow. The lemon slices actually helped a lot. Great recipe.

What are sardines?? Do I have to scale them? Feels complicated. Might just stick to chicken.

  7. User avatar estell.schultz says:

    1 star
Ew, no. Fish is gross. Not gonna serve this at my dinner table, that’s for sure.

  8. User avatar yoshie.brown says:

    3 stars
Not for me, too fishy. But if you like sardines you might like this!

Yum!!! Simple and delicious! Healthy too! I added some extra herbs ’cause why not? 🙂

    1. 5 stars
I agree! The extra herbs really amp up the flavor. What other herbs did you use?

  18. User avatar donald.hammes59 says:

    4 stars
Super easy and honestly pretty impressive for weeknights. I cooked mine closer to 18 min and they were perfect.

    1. User avatar mathWizard says:

      3 stars
18 min? My oven runs hot so I started checking at like 12. Still came out kinda fishy though. Maybe I didn’t dry them enough or garlic burned? 😅

    2. User avatar Gag Halfrunt says:

      5 stars
Love hearing this! I always worry sardines will overcook—did 18 min make them nice and tender? Might try your timing next time.

  19. User avatar theo.powlowski2024 says:

    1 star
Sardines??? Nasty. Who would eat this? No thanks.

    1. User avatar beatris.marquardt7 says:

No way I’m eating fish like this. It smells funny and looks weird. Who thought sardines were a good idea? 😷

  20. 3 stars
Where do you even find fresh sardines? All I can get is canned stuff.

  21. User avatar Frankie and Benjy says:

    4 stars
Pretty easy to make, but I swapped sardines with salmon because I can’t find sardines anywhere. Still good!

  22. User avatar yong.dietrich35 says:

    4 stars
Honestly, I didn’t have fresh dill so I used dried—still turned out decent. But I think you should mention scaling time for beginners, lol.

  23. User avatar twanna.collier1984 says:

    2 stars
Lemon slices? Like, are you supposed to eat those? Seems weird to me.

  24. User avatar Jessica Atreides says:

    4 stars
The garlic-herb oil smelled amazing, but I think next time I’ll add a bit more salt. Fish can be sneaky like that.

  25. 4 stars
Honestly, I had my doubts about sardines, but this recipe changed my mind! The herbs really brought it all together.

  26. User avatar etta.steuber98 says:

    1 star
Sardines?? No way! Can’t believe people eat this stuff. 🤢

  27. User avatar brent.hickle72 says:

    2 stars
15–20 min seems short. I left them 25 and they were kinda burnt. Follow the time, not my patience 😅

  28. User avatar diego.gerhold1964 says:

    4 stars
I wasn’t sure about sardines at first, but this recipe changed my mind! The lemon and herbs were a great combo.

  29. 3 stars
Not bad, but I added some chili flakes for a kick. A bit more flavor, I guess.

    1. User avatar drucilla.windler64 says:

      5 stars
Chili flakes sound like a great idea! I love spicy food. Gonna try that next time!

    2. User avatar oPandariaNo says:

      2 stars
I dunno, seems like you’re just adding stuff to cover up the taste. Sardines are already flavorful!

  30. 4 stars
Made this yesterday and it was a hit! My family actually enjoyed it, and it was super easy to follow. Thanks for the recipe!

  31. User avatar christian.keeling48 says:

    5 stars
This recipe was amazing! The flavors are just perfect, especially with the lemon. Will definitely make again!

  32. User avatar curtis.hoppe1956 says:

    3 stars
I accidentally used tuna instead of sardines. Taste was different but still good!!

  33. User avatar Paula Nancy Millstone Jennings says:

    2 stars
I dont get why people love sardines like this… but I tried it. The herbs were good, yet the fish taste was strong for me.

  34. User avatar adrian.walter73 says:

    3 stars
I forgot to buy dill and used basil instead. Still turned out pretty good!

  35. User avatar hoyt.grimes4 says:

    5 stars
The smell while baking was heavenly. Will make again! 👍

  36. User avatar newton.wilkinson52 says:

Yum! I love fish and this recipe looks so fresh and healthy! I’ll try it with some baked potatoes too.

  37. User avatar gustavo.hagenes99 says:

    3 stars
Great recipe! But why use fresh sardines? Are they better than the frozen ones?

  38. User avatar darren.mckenzie1985 says:

    4 stars
Gotta be honest, I didn’t think these fish things would be good, but wow!

  39. 1 star
I dunno, sardines are kinda disgusting. Who eats this?

  40. 5 stars
Absolutely loved this recipe! The sardines were so flavorful and the lemon really made a difference.

  41. User avatar alonzo.conroy58 says:

    4 stars
I tried it without dill and used thyme instead. Still yummy! Just gotta try with dill next.

  42. User avatar rusty.corkery59 says:

    2 stars
I think you put too much oregano? It was overpowering for me. 😬

    1. User avatar Falmer Gloomlurker says:

      4 stars
I disagree! I thought the oregano gave it a nice flavor. Maybe try less next time? 🤷‍♀️

    2. User avatar justin.dickens42 says:

      5 stars
Too much oregano? Nah! That’s the secret, I love the herbs! Don’t be scared of flavor! 🍀

  43. 4 stars
Easy to follow and delicious. My kids even ate it! I’d make it again for sure.

    1. User avatar porter.mueller82 says:

      3 stars
Really? My kids wouldn’t touch sardines! But if it worked for yours, maybe I’ll give it a shot. 🤔

    2. User avatar estella.rutherford73 says:

      5 stars
I’m glad to hear your kids enjoyed it! It’s great when we can make healthy meals that they actually want to eat. 🐟💚

  44. User avatar Damion DuBuque IV says:

    2 stars
Easy to make, but I thought the taste was too strong for my liking. Not for everyone!

    1. User avatar adelia.kreiger77 says:

      4 stars
I totally get that! Sardines can be pretty intense for some people. Maybe try it with less garlic next time? 🍋

  45. User avatar lonna.franecki says:

    5 stars
Really solid recipe. I was worried 15 minutes would be too short for sardines, but they were done and nicely golden. Fresh dill made a big difference.

    1. User avatar danilo.collins98 says:

      4 stars
I tried it but my sardines were still kinda pale at 15, so I did like 25. Still good tho. Also I used dried dill bc I didn’t have fresh… not the same, obv.

    2. User avatar wellRespected says:

      5 stars
Agree! The dill + lemon combo really makes it taste “real” and not fishy. Mine also hit golden around 18 min.

  46. User avatar jeremy.gulgowski says:

    3 stars
I think I overcooked mine, but still edible. Needs more lemon maybe?

  47. User avatar jeff.murray says:

    2 stars
Recipe looks fancy but too many herbs for my taste. Can I just use dried ones?

    1. User avatar rich.landlord says:

      2 stars
Why would u even want to ruin it with dried herbs? Fresh makes a huge diff, trust me!

    2. 4 stars
I think using dried herbs would work! Just remember to use less than fresh ones, they’re stronger. Enjoy your sardines!

  48. User avatar lauren.cormier95 says:

    5 stars
These came out surprisingly flavorful—love how the garlic-herb oil soaks in. The lemon slices are a perfect touch. Will make again for sure!

  49. User avatar jolyn.corkery says:

    5 stars
This was absolutely delicious! My family loved it! 🌟

  50. User avatar luigi.mclaughlin says:

    1 star
Yuck, never again! Fish should not be baked like this.

  51. User avatar jonathan.hoeger says:

    1 star
Sardines? Ugh. Should’ve just done chicken instead. I messed up the cooking time and the fish ended up dry.

  52. User avatar cecily.jacobson54 says:

    5 stars
These came out so flavorful—love how the lemon and herbs cut through the richness. I’ll definitely make this again.

  53. 2 stars
Too fishy for me. Can’t say I enjoyed it. Maybe it’s just sardines, but it wasn’t my taste.

    1. User avatar reuben.rath says:

      4 stars
I totally get what you mean! Sardines can be super strong. Have you tried them with a different recipe, maybe something with cream or more spices? Just curious!

  54. 4 stars
I was skeptical at first but this actually turned out pretty good!

  55. User avatar halflife4 says:

    3 stars
I tried this but I think I overcooked the sardines. They were a bit dry. Any tips on timing?

  56. User avatar lee.wolff52 says:

    5 stars
These sardines are the best! So fresh and tasty. My family loved them.

  57. User avatar evangelina.gusikowski77 says:

    2 stars
Wow, 400°F for 20 minutes and “golden brown”?? Mine just looked steamed, not golden. Could be my pan or sardines were too wet. Flavor was decent though.

    1. User avatar sharen.ankunding says:

      4 stars
Totally fair—sardines can look more “steamed” than golden, especially if they were still a bit damp. I usually dry them longer and make sure the herb oil isn’t pooling too much. Did you preheat the dish or just the oven?

  58. User avatar teri.emard1970 says:

    5 stars
Delish! I’m makin this again for dinner. Might add more garlic next time.

  59. User avatar georgetta.ryan says:

    3 stars
15–20 minutes feels a little short? Mine were just barely done and not quite golden, but flavor was good. Maybe my oven runs cool.

  60. User avatar chelsea.okuneva2019 says:

    3 stars
I think I overcooked mine 😬 They dried out a bit. Maybe my oven runs hot. Still tasted good though. Next time I’ll shorten the bake time.

    1. User avatar Shay Wuckert says:

      5 stars
Totally happens—400°F can definitely run hot. I’d try checking around 12–15 minutes next time; they can go from “perfect” to “dry” fast. Great call on shortening the bake time though—glad they still tasted good!

  61. User avatar Loonquawl says:

    4 stars
Used dried parsley bc I ran out and it was still pretty good. Would recommend adding extra lemon zest though!

    1. User avatar angelita.dare49 says:

      5 stars
Nice! I’ve done that too—dried parsley works in a pinch. Extra lemon zest sounds perfect for brightening it up.

  62. User avatar raisa.mann says:

    4 stars
I followed it pretty closely and the sardines came out tender, not fishy at all. Next time I might add a pinch more pepper and maybe a touch of chili flakes.

    1. User avatar trey.pollich1963 says:

      5 stars
Glad it worked for you! Tender and not fishy is exactly what I’m aiming for. A pinch more pepper + chili flakes sounds perfect—do you think you’d add it to the herb mix or just sprinkle on top?

    2. User avatar Draugr Deathlord says:

      3 stars
Interesting—mine got a little fishy last time, and I followed the same oven temp. Maybe I didn’t rinse/pat them dry enough? Also, I’m not sure 20 minutes is enough for my oven… I might go closer to 25 next time.

  63. 2 stars
I don’t know, it was kinda fishy for my taste. Maybe I cooked them too long?

  64. User avatar bill.okeefe1973 says:

    4 stars
Not bad, but I think my sardines were a little small so mine browned faster than expected. Keep an eye on them around 12-15 minutes.

  65. 1 star
Who eats sardines? They smell so bad! Not my thing. 🤢

  66. User avatar garret.dietrich46 says:

    5 stars
This recipe is amazing! The flavors are so fresh and vibrant. Will definitely make it again.

  67. 4 stars
This is how my grandma used to make them! Brings back memories. I love the herbs in this!

  68. User avatar Falmer Gloomlurker says:

    3 stars
I followed it exactly and it was… fine? The herbs were good, but the flavor felt a little mild to me. Salt could be heavier (I know, tastes vary).

    1. User avatar Winnie Dipoo says:

      5 stars
Glad you tried it! Yeah, sardines can be pretty subtle—if you want more punch, try adding a bit more salt and also a squeeze of extra lemon after baking. I sometimes add another pinch of oregano too (just a touch).

  69. User avatar garfield.oconner1980 says:

    2 stars
I don’t know… sardines are already intense, and with all the garlic it might be too much. Still, the lemon slices helped a lot.

  70. User avatar billy.lesch says:

    3 stars
I tried this and wasn’t sure about sardines. They tasted kinda fishy. My husband liked it, tho.

    1. User avatar domenic.borer says:

      4 stars
I think sardines can be an acquired taste! Maybe try adding more lemon or spices next time?

  71. User avatar chinchilla says:

    4 stars
Sardines are not usually my thing, but this recipe convinced me. The lemon cuts the fishiness and the garlic is not overpowering. Easy too.

    1. User avatar melody.kub63 says:

      5 stars
Yes! I was skeptical too—lemon + herbs makes sardines way more tolerable. The bake time is key; 15 minutes is usually perfect for me.
