Zuppa Toscana is the ultimate comfort food, a soup that’s both rich and nourishing. Known for its satisfying blend of flavors, this Italian classic combines savory sausage, tender potatoes, fresh kale, and a creamy broth. It’s the kind of dish that invites you to curl up on the couch with a warm bowl on a chilly evening or serve it at a family gathering where everyone can enjoy its rustic, hearty goodness.
The key to this soup is its broth. It starts with a flavorful base made from chicken stock, heavy cream, and garlic. The creaminess from the heavy cream makes the soup feel indulgent, but it’s balanced with a bit of heat from crushed red pepper flakes, giving it a subtle kick that keeps things interesting. This combination of creamy and spicy is what makes Zuppa Toscana so comforting and satisfying.
The potatoes are sliced thin and simmered until they’re tender, soaking up all the savory flavors of the broth. They provide the heartiness that makes this soup feel like a meal on its own. Fresh kale is added at the end, wilting into the soup to give it a burst of color and a fresh, earthy flavor. It contrasts beautifully with the richness of the cream and sausage, adding a bit of balance to the dish.
The sausage, typically a mild Italian variety, brings savory, juicy flavors to the soup. It’s usually crumbled and browned before being added to the broth, which infuses the soup with deep, flavorful meatiness.
Zuppa Toscana is a wonderfully versatile dish. You can easily adjust it based on your dietary preferences, using turkey sausage instead of pork, or substituting the cream with coconut milk for a dairy-free version. It’s also a great make-ahead dish. The flavors only get better after a day or two in the fridge, making it perfect for meal prep.
Whether you’re cooking for a crowd or enjoying it on your own, Zuppa Toscana is a warm, satisfying dish that brings comfort and joy in every spoonful.

Not bad, but I found it a little salty because my broth wasn’t as low-sodium as I thought. Taste first before dumping salt in.
Totally agree—this is one of those recipes where you really gotta taste as you go. I always forget different broths vary so much. Good call!
Idk i used regular broth and it was fine? maybe i just added less salt. But yeah taste first, otherwise it turns into salty soup fast 😅
I tried it and my family loved it. Definitely a keeper!
This recipe looks good, but I don’t think kale belongs in a soup. Spinach is better.
My grandma used to make this with different ingredients. Not sure if this is the ‘real’ Zuppa Toscana. 🤔
Quick and easy to make. I added more garlic because I’m a garlic lover! Yum!
Garlic makes everything better! Can’t wait to try this. Thanks for sharing!
Not gonna lie, I was skeptical about adding cream at the end. Mine kinda looked a little grainy after boiling, so I think I should’ve lowered the heat before pouring it in. Tastes great even if it didn’t look perfect.
Not gonna lie, I found it a little bland. Maybe my sausage wasn’t flavorful enough. The texture was good though—creamy without being weird.
Easy steps, not too many ingredients. My potatoes took closer to 20 minutes though. Still delicious.
Absolutely delicious! My kids loved it. Will make again for sure.
Does anyone know if you can use turkey sausage instead? I’m trying to be healthy.
Yeah, turkey sausage should work just fine! It’ll be a healthier option for sure. Just adjust the seasoning since it might be milder than Italian sausage.
This tastes like Zuppa Toscana from the restaurant, honestly. I didn’t remove kale stems (oops) and it was a little chewy, but everyone ate it anyway.
Tried this but found it too rich for my taste. Maybe it’s the cream? I prefer lighter soups.
I wasn’t sure about the kale at first, but it really adds to the soup. My kids even ate it without complaining! Who knew greens could be tasty? 4 stars!
Nothing like a good soup in winter. Used turkey sausage instead – still turned out delish!
I like it but 3 cups potatoes feels a little heavy. Next time I’ll use slightly less and add more kale.
Totally agree—3 cups potatoes can make it feel kinda heavy. Next time I’d do 2 cups and stretch it with extra kale or even a bit more broth. Nice tweak!
This is just like the one from that restaurant on the corner!! I thought I would never get it right but you nailed it!
Made this tonight—so cozy. The sausage browning step really matters. I used half-and-half since that’s what I had and it still tasted great. 10/10 for a weeknight soup.
Made this tonight—so cozy. The kale stays bright and the sausage flavor really comes through. I used spicy sausage and it was perfect.
This recipe is a lifesaver! Super easy and soooo delicious. My family loved it!
Soo good!
I didn’t have kale, used spinach instead. Is that ok? Still good!
I dunno, seems kinda bland. Needs more spices or something.
I actually think it’s pretty good as is! But yeah, a little sprinkle of red pepper flakes could do wonders. Just my opinion!
This slaps. Zuppa vibes for real!
Sausage? Is that the same as hot dogs? Asking for a friend.
Made this tonight—so cozy. The sausage + garlic combo is 🔥 and the kale actually stays vibrant. I used half-and-half like the recipe suggests and it turned out creamy without being too heavy.
Yes!! I love when the kale doesn’t turn sad and olive-y. Sausage + garlic really makes it pop—glad it came out creamy without being heavy. 🙌
I made it but my potatoes took WAY longer than 10-15 min, like almost 30… might’ve been the cut size. Also I used half-and-half and it was still tasty though not super thick. Still a good comfort soup!
Yummy! Perfect for a chilly evening. Made some garlic bread to go with it!
Tastes good, but why so much cream? The kale should shine!
Okay soup! It was just alright, nothing special. I don’t know if I’ll make it again. 3 stars.
I totally get what you’re saying! I found it kinda bland too. Maybe try adding some spices next time?
Why use broth when you can just use water? I think that’s silly… But it turned out good, I guess.
Yummmm! I added some crushed red pepper for kick! Best soup ever! 😊
Crushed red pepper sounds like a great idea! I love a little heat in my soup. Can’t wait to try it your way! 👍
