Ingredients
  

  • 4 slices bacon cut into small pieces
  • 4 cups baby spinach washed and dried
  • 1 small red onion thinly sliced
  • 2 tablespoons red wine vinegar or to taste
  • 1 tablespoon olive oil extra virgin
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt or to taste
  • 1/4 teaspoon black pepper freshly ground, or to taste

Instructions
 

  • In a large skillet over medium heat, cook the bacon until crispy. Remove bacon with a slotted spoon, and drain on paper towels.
  • Pour out most of the bacon fat from the skillet, leaving about 1 tablespoon.
  • Add the red onion to the skillet and sauté until translucent, about 3 minutes.
  • Whisk together the red wine vinegar, olive oil, Dijon mustard, salt, and pepper in a small bowl.
  • Place the spinach in a large bowl. Immediately pour the warm onion mixture over the spinach and toss gently to slightly wilt the leaves.
  • Drizzle the dressing over the spinach and toss gently to combine. Top with the cooked bacon pieces.
  • Serve immediately while warm.

    Not bad, but mine was a little too salty. Next time I’ll start with 1/8 tsp salt and adjust. Also I kept forgetting to whisk the dressing fully so the mustard clumps.

      Totally agree—bacon can already be salty. I usually start with less salt too, like you said (1/8 tsp), and then tweak after tossing. The mustard clumps are real if you don’t whisk long enough 😅

      Maybe you should use less vinegar? I always just dump everything in the bowl and stir, never have clumps… unless the mustard is old. Also, I think 4 cups spinach is too much for 1 tbsp oil—needs more liquid.

    Confession: I used balsamic instead of red wine vinegar because that’s what I had. It still tasted good, just different. Could be more sour if you use the recommended vinegar, but overall would make again.
