Ingredients
  

  • 1 pound turkey breast cubed
  • 2 tablespoons olive oil extra virgin
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 1 cup onions diced
  • 3 cups chicken broth low sodium
  • 2 teaspoons dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1 cup potatoes diced

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add turkey cubes and cook until browned on all sides, about 5-7 minutes.
  • Remove turkey from the pot and set aside. In the same pot, add onions, carrots, and celery. Cook until onions are translucent, about 5 minutes.
  • Stir in the chicken broth, potatoes, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Add the turkey back to the pot and continue simmering for another 30 minutes, or until the potatoes are tender and the flavors have melded.
  • Taste and adjust seasoning if necessary. Serve hot.

    Flavor is decent, but 1/2 tsp pepper felt a bit much for my family. Also, I think 2 tsp thyme might be strong if your thyme is fresh—go lighter.

      Totally hear you on the pepper—0.5 tsp can read “punchy” depending on how freshly ground it is. I usually do 1/4 tsp and then add more at the end if needed.

      Totally get you—breast can be dry in stews if it’s overcooked. I usually cube it a bit bigger and simmer closer to 20–25 minutes after adding it back, not a full 30. Also, browning helps but don’t cook it too long at step 1. And thyme + broth can taste flat if the broth is too mild—maybe add a splash of Worcestershire or a pinch more black pepper at the end?

      Maybe you overcooked it. Potatoes can get tender fast, but breast meat dries. I usually shred or dice turkey bigger and only simmer until the broth is nice and thick. Also make sure it’s not a hard boil.

      I’ve had that happen too. 30 minutes after adding turkey breast can still dry it out a bit—especially if the cubes are small. Next time I’d keep the turkey cubes a bit larger and simmer more like 20 minutes (or until the stew is hot and the turkey’s just cooked through).

      Totally agree—15 minutes simmer is barely enough for diced potatoes unless they’re really small. Next time I’m cutting mine smaller (or parboiling first) so they don’t end up firm.

      I disagree a bit—mine were fine after the full 30 minutes with the turkey back in. Maybe depends on the potato type? Also I simmered longer than the recipe says, so maybe that’s why.

      Huh, mine browned fine at medium but maybe your stove runs low. I always simmer longer too—like 45 min—because turkey breast gets tough if you don’t. And I use a lot more pepper, like at least 1 tbsp. Edible tho, so you’re good.

      That sounds like the stew’s doing what it should—soft veggies and no total disaster 😅 If the turkey didn’t brown, I bet the pot wasn’t hot enough or the turkey pieces were too crowded. Also patting them dry helps a lot. More pepper would definitely be an easy fix!

    This is probably fine… but why is it called turkey stew when it’s mostly potatoes and broth? I mean I guess it’s stew-ish. I’d add mushrooms next time.

      Wait so it’s turkey stew but only 1 pound turkey… more like potato soup lol. I would’ve used more turkey or added other stuff like mushrooms like you said. Still gonna try it though, looks easy.

      I get your point, but “stew” doesn’t mean it has to be veggie-heavy or meat-heavy—sounds like the turkey is the main flavor and the potatoes are just the thickener. That said, mushrooms would be an awesome next step!
