Heat olive oil in a large pot over medium heat. Add turkey cubes and cook until browned on all sides, about 5-7 minutes.
Remove turkey from the pot and set aside. In the same pot, add onions, carrots, and celery. Cook until onions are translucent, about 5 minutes.
Stir in the chicken broth, potatoes, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
Add the turkey back to the pot and continue simmering for another 30 minutes, or until the potatoes are tender and the flavors have melded.
Taste and adjust seasoning if necessary. Serve hot.
