Ingredients
  

  • 4 turkey cutlets
  • 2 eggplant sliced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 4 slices mozzarella cheese
  • 1 cup marinara sauce
  • Basil leaves for garnish

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Place the sliced eggplants on a baking sheet and drizzle with olive oil. Sprinkle with dried oregano, garlic powder, salt, and pepper. Toss to coat.
  • Roast the eggplant slices in the preheated oven for 15-20 minutes, or until tender and lightly browned.
  • While the eggplant is roasting, season the turkey cutlets with salt, pepper, and olive oil.
  • Heat a grill pan or skillet over medium-high heat. Cook the turkey cutlets for about 3-4 minutes per side, or until cooked through.
  • Top each turkey cutlet with a slice of mozzarella cheese and place under the broiler for a few minutes, until the cheese is melted and bubbly.
  • To assemble the stacks, place a roasted eggplant slice on a plate, top with a turkey cutlet, and spoon marinara sauce over the turkey. Repeat the layers until all the ingredients are used.

    I’m not usually an eggplant person, but this actually worked for me. The marinara + mozzarella combo hides a lot of the bitterness. Would make again.

    I dunno, turkey cutlets seem dry to me. I’d rather have chicken. This just wasn’t for me.

    Really good! I’d maybe roast the eggplant closer to 20 minutes for deeper browning. Also I added a pinch of chili flakes to the marinara—highly recommend.

    I followed it and the turkey cooked fast, but my broiler time felt longer—cheese never got really “bubbly” until I waited like 6-7 minutes. Other than that, solid recipe.

    Not sure about the order—why broil the cheese before assembling? I did it that way and it tasted fine, but the stacks were a mess. Maybe I’ll just melt cheese on top after plating.

    Solid idea but I think 3-4 minutes per side on the turkey depends on thickness—mine needed closer to 5. Still delicious though. Next time I’ll broil the cheese with a closer eye.

    Meh. It was fine, but felt a little bland without extra sauce. Also, eggplant slices are kinda hard to slice evenly and mine cooked unevenly. Would doctor it with more seasoning next time.
