Sugar Cookie Sandwiches

April 18, 2025

Sugar cookie sandwiches are a delightful treat that brings together the simplicity of a classic sugar cookie with the indulgence of a sweet filling. These cookies are soft, buttery, and chewy, sandwiched together with a luscious frosting or buttercream that makes them the ultimate sweet indulgence. Whether you’re hosting a party, celebrating a special occasion, or just craving something sweet, sugar cookie sandwiches are sure to please everyone.

To begin, start by preparing the sugar cookie dough. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy. This will create a smooth and airy dough. Add in one large egg and a teaspoon of vanilla extract, mixing until fully combined. In a separate bowl, whisk together all-purpose flour, baking soda, and a pinch of salt. Gradually add the dry ingredients to the butter mixture, mixing until the dough comes together.

Once the dough is ready, chill it in the refrigerator for at least 30 minutes to make it easier to roll out and cut into cookie shapes. After chilling, preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Roll out the dough on a lightly floured surface to about ¼-inch thickness. Using a cookie cutter (or just a round glass), cut the dough into evenly sized rounds. Place them on the prepared baking sheet and bake for about 8-10 minutes, or until the edges are lightly golden. Be careful not to overbake; the cookies should stay soft and chewy. Once they’re done, allow them to cool on a wire rack.

While the cookies are cooling, prepare the filling. You can use buttercream frosting, cream cheese frosting, or even whipped ganache depending on your preference. To make a simple buttercream, beat together softened butter, powdered sugar, a bit of vanilla extract, and a splash of milk until smooth and creamy. You can also add a few drops of food coloring to make the filling extra fun and festive.

Once the cookies have cooled completely, spread a generous amount of filling onto the flat side of one cookie. Top it with another cookie, pressing gently to sandwich them together. If desired, roll the edges of the sandwich in sprinkles or colorful sugar for a festive touch.

These sugar cookie sandwiches are a perfect treat for any occasion. Their soft texture, sweet filling, and vibrant appearance make them ideal for parties, holidays, or as a special treat for friends and family. They’re also a great way to get creative, experimenting with different fillings and decorations to suit your personal taste.

I followed the recipe but the dough was super sticky. I added more flour but it didn’t help much. Not a fan.

Sugar cookies r my jam! But why th heck do we need salt in sweet cookies? Seems weird but I’ll try it!

The instructions say bake 8-10 minutes, but my oven runs hot. I checked at 7 and they were already too dark at the edges. Just a heads-up: watch like a hawk near the end.

  5. User avatar cortez.runte97 says:

    3 stars
I followed the recipe exactly, but the cookies came out too dry. Maybe less flour next time?

  6. User avatar lonny.rempel1976 says:

I don’t think this needs baking powder, does it? I just use flour and sugar for cookies. 🤷‍♂️

    1. User avatar Storm Atronach says:

      4 stars
Actually, baking powder helps the cookies rise a bit! It makes them softer. 😊

  7. User avatar terminatorXYZ says:

    4 stars
Baking powder amount seems tiny (1/2 tsp). I used less by accident and they were still okay, but definitely not as fluffy. Lesson: measure, lol.

Sugar cookies are just too sweet for my taste. I prefer something more savory.

I get that! Sugar cookies can be super sweet. Have you tried savory cookies instead? They can be interesting!

I’m giving 5 because my kids ate the first tray in like 10 minutes. Vanilla flavor is on point and they stayed soft even the next day.

A good one but maybe add less sugar next time, it’s kinda overwhelming.

I totally agree with you on the sugar! I made them once and felt like I was eating candy instead of cookies. Great recipe otherwise!

    2. 2 stars
Less sugar? But that’s what makes em sweet!! 🤷‍♂️ Just add more frosting, that’s what I do!

    Best cookie ever!

  15. User avatar miles.dietrich1953 says:

    3 stars
Good idea, but I think 2 cups flour might be too much with 1 cup butter. Mine came out a bit dry. Next time I’ll try 1 3/4 cups and see.

  16. User avatar Loonquawl says:

I think this is wrong, aren’t sugar cookies just sugar? How is butter in it? Confused!

  17. User avatar oPandariaNo says:

    1. User avatar tracy.ledner31 says:

I actually love these cookies! The fluffiness makes them super soft and yummy! Maybe try adding some chocolate chips next time?

    2. User avatar tonisha.hickle says:

Sounds good but how can you say your mom’s were better? Everyone’s cookie recipe is a bit different. Might be just nostalgia talking.

  20. User avatar Demon King Piccolo says:

I followed the recipe pretty much exactly, but my cookies spread more than expected. Maybe my butter was too soft? Still tasted great though and the sandwich idea is genius.

  21. User avatar leann.crist52 says:

  23. User avatar wendy.abshire2005 says:

Chocolate chips in frosting? That’s genius! Can’t wait to try this! 🍫💕

  25. User avatar cary.hand36 says:

I got confused with the steps and ended up not frosting them. Still yummy tho.

  26. User avatar johnnie.streich says:

    2 stars
Eh, they were kinda dry. Maybe I baked them too long? Not sure if I’ll try again.

    1. User avatar Miss Deloris Hane says:

      4 stars
I think if they were dry, maybe try reducing the baking time or checking your oven temperature? It’s easy to overbake cookies!

    2. User avatar Dr. Felisa Hilpert says:

      3 stars
Dry cookies? Never happened to me! Maybe you added too much flour or somethin’? Just a thought.

  27. 4 stars
Pretty easy and not too sweet (which I appreciate). I used salted butter by accident and just reduced the added salt next time—still tasted good though. Will make again for sure.

  28. 4 stars
So good! I added chocolate chips to the dough instead of the frosting. A hit at the bake sale!

  29. User avatar jamal.collins says:

I think I put too much flour… it came out kinda dry. Any tips?

  31. User avatar Feral Falmer says:

  33. User avatar liliana.hintz2008 says:

    4 stars
Super easy to make but mine spread too much. What did I do wrong? 🤔

  34. 3 stars
The flavor is nice, but mine were a bit dry after 10 minutes. Next time I’ll pull them a little earlier. Also, the dough was kind of crumbly until I mixed a bit longer.

    1. User avatar Grandpa Gohan says:

      5 stars
Thanks for sharing! I’ve had the same “dry by 10 min” thing—mine usually need closer to 8 minutes since ovens run hot. And yeah, a crumbly dough often means it just needs a touch more mixing (or a tiny bit more moisture). Great adjustment pulling them earlier!

  35. User avatar jodie.king1956 says:

    2 stars
Not really a fan of cookies sandwiched with frosting. I prefer them plain. But whatever floats your boat, I guess.

  36. User avatar macy.grady says:

    3 stars
I tried this recipe but my cookies came out flat. Not sure what I did wrong… Maybe too much butter?

    1. 4 stars
It might be the butter! Sometimes if it’s too soft or melted, they spread out too much. Try chilling the dough for a bit next time.

    2. User avatar dario.durgan0 says:

      3 stars
Flat cookies? I always thought cookies are supposed to be flat! 🤷‍♂️ But maybe reduce the butter a bit next time?

  37. User avatar gary.collier37 says:

    3 stars
Idk why people love sandwich cookies… it’s just two cookies with frosting, but I will admit these look adorable. Mine stuck to the parchment a little, so I need better technique.

  38. User avatar Eddie the Computer says:

    5 stars
These are the best cookies I’ve ever made! So soft and sweet. My kids loved them!

    1. 5 stars
So glad to hear that! These cookies really are a hit with kids! 😍

  39. User avatar mitch.hettinger says:

    5 stars
These are amazing! Just like my grandma used to make. Thank you!

  40. 5 stars
350°F for 8-10 minutes was perfect for me—edges lightly golden like the recipe said. I did add extra sprinkles because… why not.

    1. User avatar Maryann Corwin says:

      5 stars
Love this! The edge-golden cue is so helpful—mine always look “done” way before they actually are 😅. Extra sprinkles are definitely the correct decision.

  41. User avatar liberal.hero says:

    4 stars
Super fast and cute for a party. I piped the frosting instead of spreading and it looked way more “bakery.”

    1. User avatar carey.veum3 says:

      5 stars
I love that! Piping frosting totally makes it look more pro—way “bakery” than just spreading. 😄

  42. 5 stars
These are dangerously good. Soft, sweet, and the frosting makes them taste like store-bought but way better. I added extra sprinkles and nobody complained 😄

  43. 4 stars
I made them for my kids and they were gone in like 20 minutes. The only complaint: I wish the frosting was thicker so it doesn’t squeeze out as much. Still, so good!

    1. 5 stars
Awww that’s the best compliment—gone in 20 minutes is basically perfect! 😄 For thicker frosting, I’d try chilling it first or adding a spoon or two of powdered sugar to stiffen it up (or even using less frosting per cookie so it doesn’t squeeze).

  44. User avatar Miss Yoshiko Koch says:

    5 stars
Yum! I doubled the recipe and it turned out great. Everyone loved them!

  45. User avatar russ.collins says:

    3 stars
The texture was good, but my cookies spread more than I expected. I think my butter was too warm. Still delicious as a sandwich, just not as pretty.

    1. User avatar Restless Draugr says:

      4 stars
That makes total sense—if the butter was warmer than the “softened” stage, the dough can spread a lot. Next time, try chilling the dough 20–30 minutes before baking (and make sure the dough isn’t greasy). So glad they still tasted great though!

  46. User avatar azalee.walker68 says:

    3 stars
I don’t know, mine spread more than I expected and they turned out flatter than the pictures in my head. Still tasty though—just not super sandwich-worthy.

    1. User avatar helena.kreiger says:

      4 stars
Oof, I’ve had that happen too. Usually flatter cookies = the butter may be a bit too warm or the dough not chilled—if you chill it 20–30 min before baking, they tend to hold shape better. Also, try not to overmix once you add the flour, and make sure you’re baking closer to 8 minutes (edges barely golden). Still glad they were tasty though—sandwiches can be forgiving 😄

  47. User avatar maxwell.jast says:

    5 stars
Delicious and perfect for a party, everyone loved them!

    1. User avatar noemi.hauck1997 says:

I’m glad you liked them! These cookies are super easy to make, perfect for parties! 🎉

  48. User avatar quintin.ratke says:

    2 stars
The frosting part was a disaster, it just slid off the cookies. Help!?

  49. User avatar easter.champlin2022 says:

    4 stars
I don’t know about using frosting as the filling—seems kind of weird? But my kids begged me to try. Surprisingly it worked and tasted like the store-bought version, just better.

  50. 5 stars
These came out super soft, like classic bakery-style. The frosting layer is perfect and the sprinkles make it fun. I might chill the dough next time for cleaner shapes, but wow—great recipe!

  51. User avatar tristan.green2023 says:

    3 stars
I had some trouble with the dough. It was too sticky and hard to work with.

    1. User avatar antwan.mante says:

      2 stars
I dunno what you did, but my dough was perfect! Maybe follow the recipe better? Just saying…

    2. User avatar smartestRedditor says:

      4 stars
I had the same issue! Maybe you added too much butter or not enough flour? Try chilling the dough next time before shaping it. It helps!

  52. User avatar lashonda.hodkiewicz59 says:

    5 stars
These are delish! Made a batch for my kids and they loved em!

  53. User avatar cristy.crona1961 says:

    3 stars
The instructions are fine but the frosting part—half the cookies with frosting, then top—didn’t say how thick. I made it too much and it slid off. Next time, less!

    1. User avatar lisa.russel says:

      5 stars
Totally get that—this is one of those “spread until it looks right” steps, but it would’ve been better to say an exact thickness. Next time maybe try a thin, even layer (like just enough to lightly coat the surface) and let the frosting sit 1–2 minutes so it firms up before assembling. Sorry it slid off!

  54. User avatar marcel.renner52 says:

    4 stars
Dis derek? sorry. I mean—these are good but my oven runs hot. Had to pull them closer to 7 minutes. Would 10/10 if timed right.

    1. User avatar rich.landlord says:

      5 stars
Oh totally—ovens vary a lot. If yours runs hot, starting checks around 6–7 minutes is perfect. I’m glad you still got great flavor! 😊 Next time you could also lower to ~340°F and bake a hair longer if you want more even color.

  55. User avatar quinton.rice says:

    2 stars
Uhh… I don’t get the ‘scoop tablespoons’ part. I ended up with huge cookies and the bake time didn’t match. Also I used vanilla frosting and it slid off lol. Maybe my fault but yeah.

  56. User avatar antione.hagenes says:

    5 stars
These turned out super soft and sweet—exactly what I wanted for a cookie sandwich. I did 9 minutes and they were perfectly golden at the edges. Loved the vanilla frosting middle too!

  57. User avatar freeda.turner2001 says:

    4 stars
Great recipe but my frosting was too thick to spread. Any tips?

  58. User avatar lamar.hane82 says:

    3 stars
I accidentally used salted butter and it tasted a bit off (like, salty-sweet). Not awful, just not what I wanted. Vanilla frosting helped.

  59. User avatar pearline.abbott31 says:

    3 stars
1 egg and 2 cups flour… sounds right, but my dough came out dry. I had to add like 1-2 tbsp milk. Maybe my butter wasn’t actually “softened”? Anyway, the final sandwich tasted good.

    1. User avatar son.mcclure6 says:

      4 stars
I don’t buy the “2 cups flour” being dryproof 😂. If your egg was small or your flour is packed, yeah it’ll be stiff. Next time try weighing the flour and creaming the butter longer.

    2. User avatar Alethea Bode says:

      5 stars
Totally could be the butter—if it’s not really softened (like still cool/cold), the dough can turn out dry. Also flour can be different depending on how it’s scooped. A splash of milk is exactly the right fix.

  60. User avatar Magrathean sperm whale says:

    2 stars
Honestly, mine came out dry and not very sandwichy. Maybe I overbaked or my butter wasn’t soft enough. Also I added sprinkles and they kind of melted into the frosting. Still edible.

  61. User avatar stasia.corkery says:

    1 star
I can’t cook bak cookies like these, must be a fluke. Not for me. 1 star.

    1. User avatar Dalton Monahan says:

      3 stars
Maybe it’s just not your thing. Baking can be tricky, but never say never!

    2. User avatar halflife4 says:

Don’t give up! Try again, you might surprise yourself! 😊

  62. User avatar lashonda.blanda says:

    4 stars
Pretty easy recipe! The dough was a little sticky for me at first, but it chilled for 20 minutes fixed it. Sandwiching was fun.

  63. User avatar crysta.murphy says:

    3 stars
Flavor is okay, but the frosting squeezes out and makes a mess unless you’re gentle. Also my cookie bottoms stuck a little even with parchment.

  64. User avatar suspiciousCommentator says:

    4 stars
Omg sooo easy. I accidentally used self-rising flour once and they puffed up like muffins lol—still ate them but yeah, don’t do that. With regular flour they’ll be legit.

    1. User avatar gracia.gutmann19 says:

      5 stars
Lol I’m glad you still ate them 😄 And yep—self-rising flour has extra leavening so they’ll puff up way more than intended. Regular flour + the 1/2 tsp baking powder is the move for that flat sandwich cookie!

  65. User avatar Wellington Yueh says:

    5 stars
Yessss! Love cookie sandwiches! I added chocolate chips to the dough!!!

  66. User avatar jarred.abernathy1964 says:

  67. User avatar jacquelyne.hartmann2011 says:

1 cup butter + 1 cup sugar?? Seems like a sugar bomb. I made them anyway and they were just okay. Not worth the calories for me.

    1. User avatar Jamel Gottlieb says:

      4 stars
Totally get that “sugar bomb” feeling 😅—1 cup sugar is definitely a lot. I will say the sandwich + frosting is what makes it feel even sweeter, so if you’re watching calories, cutting the sugar a bit or using less frosting could help without changing everything too much.

  68. 3 stars
350°F is fine, but 8-10 minutes felt a little short for my oven. I pulled them early and the centers were softer than expected. Flavor is still great—just bake a bit longer.

  69. User avatar Cammar Pilru says:

    2 stars
Honestly, I don’t get the hype. Sugar cookies are sugar cookies. Still ate them all tho.

  70. User avatar terminatorXYZ says:

    4 stars
Pretty good base recipe. My dough seemed a little thick so I pressed the scoops down slightly to get even cookies. Still tasted great—next time I might add a pinch more salt because it felt a bit sugary.

  71. User avatar Blue Dartwing says:

    2 stars
350°F is good, but I think 8-10 min is misleading—mine needed closer to 12. Also, “Ad sprinkles” lol, I guess it’s “add”? Either way, turned out alright.

  72. User avatar darin.mccullough says:

    3 stars
Honestly, they turned out too sweet for my taste. Maybe less sugar next time?

  73. 5 stars
Honestly these were easy and the texture is spot on. I used salted butter by mistake and cut back on the salt like half a tsp and it worked. Family devoured them.

    1. User avatar Super Saiyan Goku says:

      5 stars
So glad they worked for you! “Texture spot on” is the best compliment—also nice save with the salted butter. My family would definitely devour these too 😂

  74. User avatar mathWizard says:

    4 stars
I followed the steps pretty closely, but my dough was a little sticky. I chilled it for 30 min and it baked fine. Sandwich effect was cute too 😄

  75. User avatar robbie.trantow says:

    5 stars
These turned out way better than I expected! The cookies are soft and the frosting actually tastes like vanilla instead of straight-up sugar. Definitely making again.

  76. 5 stars
The texture is spot on—soft center, lightly golden edges. I’m not usually a “baking” person but this was easy to pull off.

  77. User avatar Spider Soldier says:

    5 stars
These turned out super cute—soft centers and not too sweet. The vanilla frosting step really makes them feel like “real” bakery cookies. I added extra sprinkles and zero regrets. ⭐

  78. User avatar katerine.moore says:

    3 stars
I followed it pretty much and they spread more than I expected. Not bad, but they came out flatter and less “cookie-ish” like I thought. Flavor is fine though, especially with the vanilla frosting.

    1. User avatar franklin.langosh6 says:

      4 stars
Hmm, I’ve had that happen when the dough gets a bit too warm—might be worth chilling it 20–30 min before scooping. Also, did you measure the flour with a spoon-and-level or just scoop? Too much flour can help texture, but too little (or overmixing after adding flour) can make them spread and go flatter. I’m glad the flavor still came out good though—vanilla frosting saves everything 😄

  79. User avatar Clarice Feest says:

    4 stars
Followed the steps exactly and got a pretty classic sugar cookie. Mine browned a bit too much at 10 minutes, so I’ll pull them closer to 8 next time.

Good call on the bake time—those cookies can go from “lightly golden” to browned fast at 350°F. I usually start checking around 8 minutes too. Did you keep them on the middle rack?

Not gonna lie, these are just sugar cookies with frosting. If that’s what you want, great. If you want something more interesting, you’ll be bored.

Maybe— but sugar cookies are yummy tho. I made these for my kids and they disappeared fast. I did add a little extra vanilla to the dough and it helped. Could be more fun with different frosting flavors, but not boring at all to me.

Honestly I get what you’re saying, but I still love these. Sugar cookies are classic, and the sandwich format makes them feel a bit more “special” than plain cookies. The frosting + sprinkles combo is hard to beat.
