Strawberry Sorbet

September 2, 2024

Strawberry Sorbet is a light, refreshing frozen dessert that captures the vibrant, sweet flavor of fresh strawberries in every spoonful. With just a few simple ingredients, ripe strawberries, sugar, and lemon juice, this sorbet is a perfect treat for warm weather, after a meal, or whenever you crave a cool, fruity indulgence. Unlike ice cream, sorbet is dairy-free, making it a great option for those who are lactose intolerant or following a vegan diet.

The magic of strawberry sorbet lies in the simplicity of its ingredients. Fresh strawberries are pureed into a smooth mixture, allowing their natural sweetness to shine through. The addition of sugar enhances the fruit’s flavor, while a little bit of lemon juice adds brightness and balances the sweetness with a touch of tartness. The combination of these flavors creates a sorbet that is both sweet and tangy, with a vibrant strawberry taste that’s impossible to resist.

The preparation is incredibly easy. Once the ingredients are mixed together, the sorbet mixture is chilled and then processed in an ice cream maker, which helps achieve that smooth, scoopable texture. If you don’t have an ice cream maker, you can also freeze the mixture and stir it every 30 minutes to break up any ice crystals, ensuring a creamy consistency.

Strawberry sorbet can be enjoyed on its own, but it also pairs wonderfully with other desserts. Serve it as a refreshing side to a rich chocolate cake, a creamy panna cotta, or a tangy fruit tart. It also makes a great palate cleanser between courses at a dinner party. For a bit of extra flair, garnish with fresh mint leaves, a few whole strawberries, or a drizzle of chocolate sauce.

This strawberry sorbet is a simple yet indulgent dessert that’s sure to please. With its fresh, fruity flavor and smooth texture, it’s the perfect treat for any occasion, especially when you need something light, cool, and delicious.

Honestly, sounds too basic. Sorbet with just strawberries, sugar, lemon, water? I feel like it needs eggs or dairy or something… but maybe I’m old-school.

    1. 3 stars
Wait—no eggs? But sorbet is like… ice cream’s cousin 😅 I tried something similar once and it came out icy, not creamy. Might be the sugar ratio? Or you gotta blend really smooth.

    2. User avatar winona.macgyver says:

      5 stars
I get the “old-school” vibe, but sorbet doesn’t need dairy or eggs. The whole point is fruit + sugar + a little acid. The lemon helps a lot with flavor and keeping it from tasting flat.

  2. 3 stars
Not sure if I’m doin’ it right but my mix was all chunky. did I overblend or not enough? help!

    1. User avatar jessi.roberts85 says:

      3 stars
Chunky? I dunno, maybe it ain’t ruined! Just give it a longer blend. Sorbet can be tricky!

    2. User avatar Yule B. Sari says:

      4 stars
Sounds like you might not have blended it long enough! Make sure the strawberries are fully broken down. Good luck!

  3. 5 stars
Did it all in one go, and it wasn’t too hard at all! Good for a hot day.

    1. 5 stars
That sounds so refreshing! Perfect for summer. I might try it this weekend!

  4. User avatar Kareem Reinger says:

    2 stars
I don’t know, it was kinda bland. Maybe I needed to add more sugar? Not impressed.

  5. 2 stars
I think maybe it should have more sugar… too tangy for me.

  6. User avatar tonya.lang56 says:

    2 stars
I tried this recipe, but my sorbet turned out icy and not smooth at all. What did I do wrong?

    1. 4 stars
I think you might’ve not blended it enough or maybe the mixture wasn’t cold enough before going into the ice cream maker. That can make it icy. Try it again, it takes practice!

  7. 4 stars
So easy to make! I didn’t have an ice cream maker, so I just froze it in a bowl and mixed it every 30 minutes. Turned out great!

  8. 4 stars
I accidentally doubled the lemon juice and it turned out kinda tangy, but I liked it.

    1. User avatar Jarrett Franecki says:

      4 stars
Sounds like a happy accident! I might try that too.

  9. 4 stars
So good! I used some mint leaves for an extra twist and it was great! 🌿

    1. User avatar Emery Zboncak says:

      5 stars
Mint sounds like a great idea! I never thought of that. I’ll have to try it! 🍓

  10. User avatar antone.kilback6 says:

This looks delicious! Can I use frozen strawberries instead? Don’t wanna buy fresh ones.

  11. User avatar corine.marquardt33 says:

I don’t own an ice cream maker—so I froze it and stirred every 30 minutes like a hack. Worked surprisingly well, though it took longer.

    1. User avatar jan.bruen2023 says:

      5 stars
I’ve done the freeze-and-stir thing before—didn’t know it counted as a “hack” 😅 but yeah, it works. Glad it turned out well for you!

  12. User avatar belen.mann76 says:

    4 stars
I mixed in some mint leaves too, and it was really refreshing. Gonna try with other fruits next time. Pineapple sorbet?!

    1. User avatar doyle.denesik says:

      5 stars
Mint sounds like a great addition! I never thought of that for sorbet. Pineapple would be delish too! Can’t wait to see what you come up with!

  13. User avatar Corrupted Shade says:

    3 stars
It was ok, but the texture was not what I expected. Kinda icy. 🤷‍♂️

  16. 1 star
Ugh, I hate strawberries! Why would you even make this?? @-@

  17. 3 stars
Strawberries are too sweet, need more lemon juice!

  18. User avatar long.bins75 says:

    2 stars
Question: do you really need an ice cream maker? Mine doesn’t freeze right unless I whip it every 30 minutes lol.

  19. User avatar alec.thiel42 says:

  23. User avatar aimee.lebsack1981 says:

    4 stars
I tried it with frozen strawberries (because, you know, life). It was thinner at first but after blending and freezing it thickened nicely. Tastes legit.

  24. User avatar tiesha.torphy21 says:

    4 stars
Tastes like summer in a bowl. I followed it mostly, but I let the syrup cool a bit longer and it blended smoother. Texture was creamy for sorbet.

  25. User avatar Falmer Gloomlurker says:

    4 stars
The blender step says blend until smooth… I don’t have a high-power blender and I still had some tiny bits. Not terrible, just not “silky.”

    1. User avatar Loonquawl and Phouchg says:

      3 stars
Hmm… tiny bits could be the strawberries not being fully pureed. But honestly sorbet doesn’t need to be silky like ice cream—still tastes good. Next time maybe use frozen berries? I think they blend smoother? 🤷‍♂️

    2. User avatar Frostbite Spider says:

      5 stars
Totally get that—“until smooth” can be a little misleading. If you don’t have a high-power blender, I usually pulse then let it sit a minute and blend again. Even straining after blending can help a lot with the tiny bits.

  26. User avatar arvilla.gerhold says:

    3 stars
Ingredients seem simple enough, but like is fresh strawberries really a must?

  27. User avatar Zaphod Beeblebrox says:

    5 stars
Looks easy! I’m definitely going to try this with blueberries instead. 😊

  28. User avatar darrin.zieme77 says:

    2 stars
This is way too much work for sorbet. I feel like store-bought is easier and cheaper, and it’s not that different.

  29. User avatar dedra.anderson says:

    5 stars
I can’t believe how easy this was to make! Tastes just like ice cream! Great recipe!

  30. User avatar alycia.west says:

I’m glad you loved it! It’s such a perfect treat for hot days. Did you try it with any other fruits?

    2. User avatar christin.nader says:

      2 stars
This was too sweet for my taste. I think you should have added less sugar!

  32. 3 stars
OK recipe but you gotta blend it way longer for a smoother texture.

  33. User avatar Oolon Colluphid says:

    4 stars
I used frozen strawberries and it still worked, but the texture was softer like a granita. Maybe that’s on me, but I was hoping for more like sorbet-smooth.

  34. User avatar noelle.reichert14 says:

    3 stars
Are you supposed to use sugar or is honey ok too? Can’t decide.

  35. User avatar Dro'marash says:

    2 stars
Do I really need an ice cream maker? Can’t I just freeze it in a bowl?

  36. User avatar anonymous_hacker says:

    3 stars
Mine wasn’t as smooth as I hoped—kind of icy. I think I either didn’t blend long enough or my syrup wasn’t fully dissolved. Still tasty though.

  37. 4 stars
Pretty solid recipe. Mine turned out a little icy, but I think I didn’t dissolve the sugar fully or I overfreezed after churning. Still tasted great though.

  38. User avatar geoWizard says:

    5 stars
5 stars, I’m in love with this recipe! Just perfect for summer.

Made this last weekend—so bright and refreshing! The lemon juice really helps the flavor pop. I let it chill longer than 2 hours and it was perfect.

    1. User avatar chassidy.schmidt says:

      3 stars
Hmm I did strawberry sorbet before and it usually comes out icy if you don’t freeze it fast enough. “Fresh” strawberries matter a lot? Also I only used like half the lemon and it was still good lol. Maybe I’ll try your exact ratio.

    2. User avatar Restless Draugr says:

      5 stars
Love this—strawberries + lemon is such a good combo. I’m always nervous about the chill time, but “longer than 2 hours” sounds like a win. Did you notice it got firmer or more scoopable?

  42. User avatar Vroomfondel says:

    3 stars
Not bad, but I wish it had more instructions about sweetness vs acidity. I’m not sure if 3/4 cup sugar is always right.

  43. 5 stars
Made this last weekend—super bright and refreshing. The lemon really helps the berries taste extra “real.” Mine set perfectly after the ice cream maker cycle.

  44. User avatar Peregrin Took says:

    2 stars
Is an ice cream maker really necessary? I don’t have one!😩

    1. User avatar Dan Streetmentioner says:

      5 stars
You can still make it without an ice cream maker! Just pour the mixture into a shallow dish and freeze it, stirring every 30 minutes until it’s the right texture. 😊

  45. User avatar jacquetta.kilback says:

    4 stars
Really good, but I had to add a splash more lemon juice because my strawberries were kinda bland. Still turned out smooth though.

  46. 4 stars
Pretty good, but I think it needed more lemon juice for a zing. Gonna try adding some next time.

  47. 3 stars
I followed it mostly, but I forgot to cool the syrup and it kind of warmed up the mixture. Lesson learned—still decent, just not as smooth.

  48. 5 stars
delicious!!! 🍧 just made this, best sorbet evr

    1. User avatar lou.stehr40 says:

      5 stars
So glad you loved it! 🍓 This sorbet is amazing, I could eat it all day!

  49. User avatar laine.hilpert says:

This is the best sorbet I’ve ever made! Super easy and refreshing. 🍓

    1. User avatar sharda.okon96 says:

      3 stars
Really? I tried making sorbet once and it came out icy. What did I do wrong?

    2. User avatar Blue Dartwing says:

      5 stars
That sounds amazing! Can’t wait to try this recipe! 🍓✨

  50. User avatar granville.grady30 says:

    3 stars
I think 3/4 cup sugar is too much for me, but that’s personal. I’ll try reducing next time. Flavor is still nice.

  51. User avatar kerstin.lemke87 says:

    2 stars
meh. Mine didn’t dissolve all the sugar or maybe I cooked it too short. It came out grainy. Still edible but not sorbet vibes.

  52. User avatar van.rempel15 says:

    3 stars
Not sure I get the need for an ice cream maker… can’t I just freeze it and stir sometimes? I’m lazy like that lol. Flavor was good regardless.

    1. User avatar Hasimir Fenring says:

      3 stars
I tried the freezer-and-stir method once… it was kinda icy, not like store-bought. Your results may vary. If you want it super smooth, the maker is worth it, but I get being lazy lol. Also, make sure the syrup cools—hot syrup can mess with texture.

    2. 4 stars
Honestly, you *can* freeze and stir—people do a “no-churn” style sorbet all the time. The ice cream maker mostly helps with smoother texture by breaking up ice crystals. If you stir every 30–45 minutes for a few hours, it’ll be pretty good.

  53. User avatar peter.weissnat75 says:

    4 stars
It tasted great day 1, but by day 2 it wasn’t as smooth. Still, everyone ate it anyway, so… good job.

    1. User avatar Grunthos the Flatulent says:

      3 stars
Hmm maybe you should’ve added more water? Or like, didn’t blend long enough? My sorbet always gets grainy if I don’t let the syrup cool all the way, so that could’ve been it. Still—glad it tasted good day 1!

    2. User avatar dewayne.luettgen1991 says:

      5 stars
Thanks! Day 2 not being as smooth makes sense—sorbet can get a bit icy after the first day if it’s not churned consistently or if the freezer temp fluctuates. I’m glad everyone still dug in though 😄

  54. User avatar wade.barton says:

    5 stars
This sorbet is absolutely delicious! I made it for a summer BBQ and everyone raved about it. Will definitely make it again!

    1. User avatar Samwise Gamgee says:

      5 stars
So glad to hear that! Strawberry sorbet sounds perfect for BBQs. What other fruits do you think would work well?

  55. 4 stars
The ratio feels off to me? 1 lb strawberries to 3/4 cup sugar is either perfect or not enough depending on the berries. Mine were very sweet though, so I loved it.

    1. User avatar cordie.champlin66 says:

      5 stars
Yeah I feel like it depends a lot on the berries. If they’re super sweet already, 3/4 cup sugar might be just right (or even a tad much). Mine were tart so I was actually glad it wasn’t less.

    2. User avatar Misty Meanor says:

      3 stars
Wait I did 1 lb strawberries + 3/4 cup sugar too but mine was super tangy 😅 maybe my strawberries were more sour? Idk the ratio seems kinda random to me. Still tasted good tho.

  56. User avatar taylor.franecki says:

    5 stars
Wow, that strawberry-lemon combo is chef’s kiss. I used slightly less sugar because my berries were super sweet, and it turned out amazing!

  57. User avatar allen.leuschke15 says:

    3 stars
It was good but I think it needed more lemon juice. 😕

  58. User avatar gale.tremblay18 says:

    3 stars
I tried this but my strawberries were too sour. Maybe add more sugar next time?

  59. User avatar joseph.windler75 says:

    1 star
Instructions were easy to follow but my machine wouldn’t freeze it. Big bummer. 😩

  60. User avatar isidra.conn says:

    3 stars
I tried this but it didn’t blend as smoothly as expected—my blender seems weak. I had strawberry chunks, not sorbet vibes. Still okay, just not silky.

  61. User avatar King Vegeta says:

    3 stars
I don’t have an ice cream maker. Can I just freeze it in a bowl? Help!

  62. User avatar earle.feest94 says:

    5 stars
Five stars!!! (also my kid ate it before it even finished freezing). Followed it exactly and it came out perfect. I’m keeping this recipe for sure.

    1. 5 stars
Aww that’s the best kind of proof—if your kid ate it before it even finished freezing, it has to be good 😄 Five stars deserved!

  63. User avatar chasity.hoeger1 says:

    2 stars
Could you use frozen strawberries? Not sure if that works.

  64. User avatar hobert.green56 says:

    4 stars
Not gonna lie, I was skeptical about only 1 tbsp lemon juice. But it actually balanced everything nicely. Next time I’ll add a tiny pinch of salt just to make flavors pop (maybe).

  65. 5 stars
This sorbet was amazing! Just like the ones from the store. My kids loved it!

  66. User avatar suspiciousCommentator says:

    4 stars
LOL! I thought it was ice cream and made it with bananas instead. Still tasty, but confused now.

    1. User avatar Falmer Shadowmaster says:

      4 stars
Haha, that’s a fun mix-up! Bananas could actually be a good base for a sorbet too! 😊

    2. User avatar robbyn.cummerata61 says:

      2 stars
But ice cream and sorbet are different?? I don’t get how you confused that. 🤔

  67. 4 stars
I followed the steps exactly, but mine tasted a little too tart even after chilling. Next time I might add a bit more sugar or a pinch less lemon.

    1. 3 stars
Huh, I had the opposite problem once—mine was bland, so I added extra lemon 😅. But if yours was too tart even after chilling, I’d go for more sugar *or* swap to a sweeter batch of strawberries. Maybe your lemons were extra strong? Just saying. (Also I chill longer sometimes, like overnight.)

    2. 5 stars
That sounds frustrating—tartness is usually from the lemon or the berries. I’d try using a little less lemon juice next time (like 1–2 tsp less) before jumping straight to more sugar. Also, different strawberry sweetness makes a big difference. 😊

  68. User avatar anonymous_hacker says:

    2 stars
Sorry but mine came out tasting kinda flat. Maybe my strawberries weren’t flavorful enough. Also my blender was loud like crazy 😂

  69. User avatar latesha.weissnat2017 says:

    4 stars
Two hours is not long enough in my house—lol. I left it overnight and it was better. Recipe is solid, just plan ahead.

  70. User avatar nubia.runolfsdottir says:

    5 stars
This sorbet is amazing! So easy to make and the strawberries taste super fresh.

  71. 2 stars
Way too sour for me. I think my lemons were EXTRA lemony? Like, I could taste the pucker. Maybe I’ll cut the lemon next time and see.

  72. User avatar Gandalf the Grey says:

    3 stars
Not bad at all, but my sorbet got kind of icy in the container after a few hours. I’m thinking my freezer is too cold or I didn’t churn long enough.

    1. 4 stars
Ugh, that’s annoying 😕 I’ve had that happen when the sorbet sits too long—usually it’s either not churned long enough *or* the container isn’t quite airtight. Also, if your freezer is really cold, sorbet can firm up too fast and go icy. Next time I’d chill the base before churning and make sure it’s very cold going into the ice cream maker.

  73. User avatar laurence.jacobi12 says:

    1 star
I used frozen strawberries and it turned out weird. Wouldn’t recommend.

    1. User avatar ezekiel.murphy says:

      4 stars
I think frozen strawberries can work, but maybe they need to be blended longer! Fresh ones are the best, though. 🍓

    2. 3 stars
Weird? How can it be weird! Sorbet is easy if you follow the steps right. Maybe you skipped something?

  74. 5 stars
Made this last weekend and wow—super bright and not overly sweet. I used slightly less sugar because my strawberries were already sweet, and it still turned out great. The lemon really helps.

  75. User avatar chere.schowalter says:

    5 stars
This sorbet is so refreshing!! Perfect for hot summer days! 🍓

  76. User avatar suk.mcdermott says:

    3 stars
I don’t have an ice cream maker—can I just freeze it and stir? Kinda confused by step 4, but the ingredients look great.

  77. User avatar halflife4 says:

    5 stars
Made this last weekend and it turned out super bright and refreshing. The lemon juice really keeps it from tasting too sweet. Great with fresh berries!

  78. User avatar odis.marvin says:

    5 stars
Wow, lemon juice is doing the heavy lifting here. I was skeptical but it’s actually balanced. My kids asked for seconds lol.

  79. 4 stars
I was skeptical about the simple syrup part, but cooling it first helped a lot. Mine came out smooth in the ice cream maker—would definitely do again.

    1. User avatar romona.gleason16 says:

      3 stars
I’ll be honest, I didn’t cool the syrup much and mine got kinda icy 😅 Might be why. Your comment convinced me to try it the right way next time.

    2. User avatar Noble Becker says:

      5 stars
Yes!! I was also like “simple syrup… really?” but cooling makes a huge difference. Mine turned out way smoother after I let the syrup cool too.

  80. User avatar sam.yost says:

    2 stars
Y’all, I forgot to let the syrup cool and it ruined everything. Watch out!

  81. User avatar woodchuck says:

  82. User avatar phoebe.nienow49 says:

Wow this is basically just frozen strawberry juice. I mean it’s good, but I expected more “sorbet” magic. Also 1 lb felt a bit small.

Not gonna lie, I was skeptical about sorbet without eggs. But this is actually great—easy and tastes like summer. Would make again.

I tried something like this once and it came out icy. Did you chill the mixture first? Also, is 1/2 cup water enough or should it be more? Either way it sounds refreshing.

Totally agree—sorbet without eggs sounds sketchy, but the texture here is so good. The lemon + syrup balance it perfectly. Making it again this weekend 😄

My ice cream maker timer was acting up, so I basically guessed on step 4. It still froze, but the texture was a little icy instead of smooth. Flavor is still good though.

Made this last weekend and it turned out super bright and refreshing. The lemon really makes the strawberries pop. Will definitely make again!
