Ingredients
  

For the Pancake Batter:

  • 3 cups self-rising flour
  • 1 cup water or milk

For the Strawberry Mixture:

  • 2 cups frozen strawberries
  • 1 cup sugar
  • 1 pinch salt
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon strawberry flavoring
  • 1 tablespoon lemon juice

For Cooking:

  • oil

Instructions
 

Prepare the Pancake Batter:

  • In a large bowl, mix 3 cups of self-rising flour with 1 cup of water or milk.
  • Mix well until the batter is smooth and free of lumps.

Prepare the Strawberry Mixture:

  • Heat a pan over medium heat and add the frozen strawberries.
  • Add 1 cup of sugar, a pinch of salt, 1/2 teaspoon of vanilla extract, 1 teaspoon of strawberry flavoring, and 1 tablespoon of lemon juice.
  • Cook and stir until the strawberries are soft and all the ingredients are well combined.

Combine Mixtures:

  • Add the cooked strawberry mixture to the flour batter.
  • Mix well using a mixer or blender until the batter is smooth and evenly mixed.

Cook the Pancakes:

  • Heat a lightly oiled pan or griddle over medium heat.
  • Using a cup, pour the batter into the pan to form pancakes of the desired size.
  • Cook until bubbles form on the surface and the edges are set, then flip and cook until the other side is golden brown.

Serve:

  • Remove the pancakes from the pan and serve warm.
  • Optionally, top with extra strawberries, syrup, or whipped cream.

      I think these pancakes are supposed to be something different! Sometimes simple is the way to go. You could always add eggs or sugar if you want, but that could change the whole thing! Just my opinion.

      Totally get why it feels too easy, but self-rising flour already has the leavening mixed in—so it’s basically doing the work for you. If yours came out just “edible,” try letting the batter rest 5–10 min and don’t overmix!
