Spring Vegetable Gnocchi is a light, colorful, and comforting dish that celebrates the freshness of the season. Soft, pillowy gnocchi provide the perfect base for tender spring vegetables, creating a meal that feels both hearty and refreshing. With its delicate balance of textures and bright flavors, this dish is ideal for a cozy dinner that still feels vibrant and uplifting.
The beauty of spring vegetable gnocchi lies in its simplicity. Fresh asparagus, peas, zucchini, and baby spinach bring natural sweetness, crunch, and vibrant color to the plate. Cherry tomatoes add gentle acidity, while garlic and shallots create a warm, aromatic foundation. A light sauce, often made with olive oil, butter, or a touch of cream, coats the gnocchi without overpowering the vegetables, allowing every ingredient to shine.
As the gnocchi cook, they become tender and slightly crisp on the outside when lightly sautéed, offering a satisfying contrast to the soft vegetables. Fresh herbs such as basil, parsley, or thyme elevate the dish with fragrant notes that perfectly match the spring theme. A sprinkle of grated Parmesan or Pecorino adds a savory finish, while a squeeze of lemon brightens the entire plate with a subtle citrus lift.
Spring Vegetable Gnocchi is wonderfully versatile. It can be served as a vegetarian main dish, paired with grilled chicken or shrimp for extra protein, or enjoyed as a side alongside roasted meats or fish. Its gentle flavors make it suitable for both casual family meals and elegant gatherings, where its colorful presentation truly stands out.
This dish also offers comfort without heaviness. The gnocchi provide warmth and satisfaction, while the vegetables keep the meal light and nourishing. It is the kind of recipe that feels indulgent yet wholesome, perfect for welcoming the changing season.
Spring Vegetable Gnocchi is a reminder that simple ingredients, when treated with care, can create something truly special. With its tender textures, fresh flavors, and beautiful colors, it brings a taste of spring straight to the table, offering comfort, freshness, and effortless elegance in every bite.

Nice recipe but you forgot to mention what to do with the salt and pepper. I added it at the end.
This was so easy to make! The flavors were perfect. My kids loved it!
Just ok. I feel like something is missing. Maybe meat?
Delicious! Wasn’t sure about adding lemon, but it really brightened the dish. Will make again!
Didn’t have asparagus, used broccoli instead. Still tasted great! Yum!
This seems too healthy for me lol. I prefer comfort food like pizza.
I think gnocchi can be chewy. Not sure if I did something wrong, but it didn’t turn out like I hoped.
I love how fresh this recipe is! The lemon juice adds a great zing to the dish. My family devoured it.
This sounds delicious! Can’t wait to try it! I love lemon in recipes.
Um, can you substitute the spinach? I don’t like it… I have kale instead.
Gnocchi is life! I always say, if it ain’t cheesy, it ain’t gnocchi! 😆
YUM!!! Super easy and quick! Made it for lunch and it turned out great! Will make again for sure! 😊
I’m so glad you enjoyed it! It really is a quick meal, and so fresh! 🌱
Looks good but I wonder if it’s too bland? Did you add any spices?
This was just okay. The gnocchi was kinda soggy in my opinion. I think I overcooked it. 🙁
I followed the steps exactly, and it seemed too bland. Next time I’ll add more garlic or maybe some chili flakes.
Who uses fresh peas? Frozen works much better. This recipe is highly overrated!
I totally agree! Frozen peas are way more convenient and taste just fine. This recipe sounds more like a waste of time with fresh ones.
But fresh peas are way better in taste! You should give them a try at least once. This recipe is not overrated, it’s delicious!
Not a fan, the veggies were too crunchy for me. Gotta cook ’em longer next time. 🤷♂️
