Rhubarb Chia Pudding

June 17, 2025

If you’re looking for a refreshing, wholesome treat that feels like dessert but is actually packed with nutrients, Rhubarb Chia Pudding might become your new favorite. It’s a beautiful balance of tart and sweet, creamy and light, and it comes together with just a few simple ingredients.

This pudding starts with the magic of chia seeds, tiny superfoods that swell up in liquid to create a tapioca-like texture. When soaked in plant-based milk (like almond, coconut, or oat), they transform into a rich, spoonable base that’s high in fiber, omega-3s, and protein.

What sets this version apart is the rhubarb compote, a tangy, vibrant topping that adds a burst of seasonal flavor. Rhubarb is simmered with just enough sweetener (like maple syrup or honey) and a splash of vanilla or citrus until it breaks down into a silky, jam-like texture. Its natural tartness plays beautifully against the subtle sweetness of the chia pudding, offering a layered taste in every bite.

The beauty of Rhubarb Chia Pudding lies not just in its taste, but in its versatility. You can layer it in jars for a make-ahead breakfast, serve it in small glasses for a dinner party dessert, or top it with yogurt and granola for a nutrient-packed midday snack. It’s naturally vegan, gluten-free, and endlessly customizable, add a swirl of coconut cream, a sprinkle of toasted nuts, or fresh berries for extra flair.

Plus, it’s a great way to use up an abundance of rhubarb during spring and summer, preserving the taste of the season in a healthy and portable way.

Whether you’re craving something light and nourishing or just want a new way to enjoy this tart pink vegetable, Rhubarb Chia Pudding delivers on taste, texture, and health benefits—with zero guilt.

  26. User avatar loreta.graham96 says:

I used cow milk once and it turned out fine, so I think “any milk of choice” is legit. Also, waiting overnight made the texture perfect.

    1. User avatar mica.ledner93 says:

      5 stars
Yes! I also used regular dairy milk once and it set up great—so “any milk of choice” checks out.

  27. User avatar nickolas.krajcik2013 says:

This was a unique recipe! I never thought I’d like rhubarb. The pudding is tangy and refreshing. Perfect for summer!

How come you didn’t suggest a link to where to buy rhubarb? It’s hard to find in some stores!

  32. User avatar Heimerdinger says:

    2 stars
Too complicated for me! Can I just eat the rhubarb raw?

  33. 4 stars
Yummy! I had some left over rhubarb and was looking for ideas. Thx for sharing! 😋

  34. 1 star
Sounds fancy but I don’t got patience for cooking. Whatever, I’ll just eat cereal.

  35. 5 stars
Don’t forget to add nuts! It gives a nice crunch to it. Yum! 😊

  36. User avatar The Allitnils says:

    3 stars
I think there was too much honey in it for my taste. Maybe less next time?

  37. 3 stars
How much rhubarb do I need? I just bought a can, can I use that? Confused…

    1. User avatar dino.terry60 says:

      5 stars
You can definitely use canned rhubarb! Just make sure to drain it well. For the recipe, you still want about a cup of the canned stuff. Good luck!

  38. User avatar vina.roberts89 says:

    3 stars
Wait… do you cook the chia seeds too or just mix them raw? I went with raw and it was fine, but the instructions are a lil unclear.

  39. User avatar reuben.cassin55 says:

    5 stars
OMG I just made this and my kids loved it! Finally a healthy dessert. Thank you!

  40. User avatar hal.feil9 says:

    4 stars
First time cooking with rhubarb! It was a hit but I think next time I’ll cut down on honey a bit.

    1. 3 stars
Honey? Too much sweet, but rhubarb is sour. I wouldn’t cut honey, just add more rhubard!

    2. User avatar simonne.pagac97 says:

      5 stars
Glad it was a hit! Rhubarb can be tricky but delicious! Maybe try maple syrup next time?

  41. User avatar joline.vonrueden2014 says:

    1 star
Ew! Who wants mushy rhubarb in pudding? No thanks! I won’t be making this again.

  42. 2 stars
I don’t get the hype. It was too sweet for my taste with all that honey. Won’t be making it again.

  43. User avatar hortensia.morissette32 says:

    3 stars
Wait, is rhubarb healthy? I always thought it was just for pies… I’m confused. But looks easy, I might try it.

  44. User avatar liberal.hero says:

    4 stars
IM NOT A FAN OF CHIA, BUT THIS IS GOOD.

  45. User avatar Augustus Thompson says:

    3 stars
I’m not a fan of rhubarb… it’s kinda sour, don’t you think? The recipe seems easy tho.

    1. User avatar Saruman the White says:

      4 stars
Yeah, rhubarb is definitely on the tart side, but that’s what makes it special! The honey should help balance it out. Give it a try!

  46. User avatar bruno.goldner2018 says:

    5 stars
Wow, this is amazing! My kids even liked it, and they usually avoid healthy stuff.

  47. User avatar raeann.lind43 says:

    1 star
I dunno guys, rhubarb is overrated. Why not just use strawberries or something? 1 star.

  48. User avatar lane.morar1961 says:

    5 stars
This pudding was surprisingly good! I never thought I’d enjoy rhubarb, but it’s delish.

  49. User avatar rigoberto.denesik says:

    2 stars
Isn’t chia pudding just a trend? I’m skeptical. It was okay, not great. Not a fan of the texture.

  50. 5 stars
This pudding is amazing! So easy and delicious. I used agave instead of honey and it worked great. My kids loved it!

  51. User avatar glinda.erdman92 says:

    3 stars
I tried it and it was kinda bland. Needs more flavor. Maybe add some cinnamon or something!

  52. User avatar brendon.schmitt says:

    3 stars
I made this for breakfast but it was way too sweet for me. Maybe less honey next time? 3 stars.

    1. 3 stars
I didn’t find it too sweet at all! Maybe your rhubarb was just really sweet? 🤔

    2. User avatar jada.kunde says:

      4 stars
I agree, it was a bit sweet for my taste too. I think less honey would help! Thanks for the tip!

  53. User avatar So Kerluke says:

    3 stars
Rhubarb can be so sour though—2 tablespoons honey might not be enough for my taste. Maybe add a little more honey or extra vanilla? Just a thought.

    1. 5 stars
Totally agree—rhubarb’s hit or miss depending on how tart it is. I usually add a bit more honey (or even a touch of maple) and it turns out way smoother.

  54. User avatar donnell.schaefer1988 says:

    4 stars
Very simple recipe, loved how it turned out! Perfect for breakfast.

Rhubarb and chia? Sounds weird but actually works. Great texture!

  59. 5 stars
Loved it! Just tried with coconut milk instead, YUM!

  60. 1 star
Just made this and it was a disaster. What’s with the chia seeds? They just float around! No one likes pudding with bits floating! Ugh.

  61. User avatar max.erdman says:

    3 stars
Too sweet for my taste. I’d rather use less honey next time. But it’s easy to make!

    1. User avatar neely.conn36 says:

      4 stars
I think adding less honey is a good idea! I never thought rhubarb would be that sweet, but it makes sense. Love how simple it is though!

  62. User avatar mark.shanahan says:

    2 stars
Took me ages to get the rhubarb soft. Shouldn’t it be boiled instead of cooked? 🤔

    1. User avatar emilio.oconner says:

      5 stars
I think boiling it could make it mushy? Cooking it on medium heat is just right for that syrupy sweetness! 😊

    2. User avatar tobie.simonis1 says:

      3 stars
I dunno, but boiling sounds like overkill to me. Maybe just cook it longer next time? 🤷‍♂️

  63. User avatar ebonie.daugherty3 says:

    5 stars
This sounds so refreshing—rhubarb + honey is a great combo. I like that it only needs a short cook and then the chia does the heavy lifting.

  64. 3 stars
I’m not a fan of rhubarb. Can I use strawberries instead?

    1. User avatar robin.muller74 says:

      5 stars
Strawberries would be a great substitute! They have a sweet flavor that might work better for you. Enjoy your pudding!

  65. 3 stars
Eh, it was okay. Not worth the hassle of cooking rhubarb. I prefer instant stuff.

  66. User avatar shery.bechtelar says:

    5 stars
Yummy! I added some coconut flakes on top, and it was a hit in my house!

  67. 4 stars
Yummy! Rhubarb is so underappreciated. This is a keeper for sure! Just need to work on my cooling time

    1. User avatar willy.schinner97 says:

      4 stars
I agree! Rhubarb does get a bad rap. This sounds delicious! But I don’t know if I can wait 2 hours to eat it, lol.

  68. User avatar Ms. Tiera Tremblay says:

    2 stars
I tried this and it turned out really runny. I think I added too much almond milk. Not great.

  69. 1 star
Didn’t set properly. Like, is it supposed to be like pudding or soup?

    1. User avatar rosemary.haag says:

      4 stars
It should be more like pudding once it’s set! Maybe it just needs more time in the fridge?

    2. 3 stars
I thought it was supposed to be soup too! But I guess pudding is the goal? 🤷‍♂️

  70. 3 stars
I didn’t have almond milk so I used regular milk, it turned out fine but not sure if it was supposed to be healthier? Oh well.

  71. User avatar Effrafax of Wug says:

I tried it but the rhubarb was too tart for my taste. Maybe add more honey next time?

    1. User avatar georgia.parker65 says:

  77. User avatar nola.cartwright81 says:

I made this for a picnic, and everyone loved it! Perfect for hot summer days.

  82. 2 stars
I tried it but it came out weird… the texture was off. I think I need to learn more about chia seeds?

    1. 3 stars
Weird texture? It’s just chia pudding! Maybe it’s not for everyone, but I love the crunchiness they add. 😊

    2. User avatar Coralee Kunde says:

      4 stars
Chia seeds can be tricky! They need time to absorb the liquid, so maybe you didn’t let it sit long enough? Try leaving it overnight next time!

  83. 4 stars
OMG! I forgot to refrigerate mine and ate it warm. It was still good!

    1. User avatar Chris Cross says:

      2 stars

It’s a perfect dessert for summer. I used maple syrup instead of honey and it was still yummy!

  87. 1 star
Um, chia seeds don’t even taste like anything. This is a weird combination.

  88. 1 star
I tried this and it was a disaster! Chia seeds don’t mix well. Yuck!

  89. User avatar winston.walter1963 says:

    3 stars
Not a fan of the texture. Chia seeds are too slimy for me, but the flavor was alright!

  91. User avatar doretta.franecki says:

    3 stars

OMG, this is sooo good! How did I not know about this before? I’m making it again tomorrow!

  93. User avatar theodore.johns says:

    3 stars
Not bad. Would be better if it was more sweet, maybe add more honey?

    1. User avatar pam.emard says:

      5 stars
I totally agree! A bit more honey would make it super tasty! Rhubarb can be tart, so sweetness is key.

  94. 3 stars
I tried something similar and my chia stayed kinda gummy. Maybe I needed to let the mixture sit longer before chilling. The vanilla sounds nice though.

    1. User avatar duncan.shanahan2020 says:

      5 stars
Yeah, letting it sit longer can really help! With chia, I usually find 2 hours is the bare minimum—overnight gets it more “set” and less gummy.

This pudding is soooo good! I didn’t have almond milk, so used regular milk, and it was still great. Thank you!

This is a weird combination. Chia seeds shouldn’t be with rhubarb. Yuck! 😖

This is hard to make, I got rhubarb everywhere!!!

I had a similar issue the first time, but it’s actually pretty easy once you get the hang of it! Just take your time, and it’ll turn out great! 🍰

Not the best. The rhubarb was super sour! I guess that’s how it’s supposed to be tho.

  99. 5 stars
This is the best chia pudding I’ve tried! Easy to make and delicious. Will make again for sure!

The flavors sound great but 2 hours felt a little optimistic for me. Mine was more like pudding after overnight. Still tasty though.

Very good! My kids loved it. I used oat milk and it turned out just fine!

  102. User avatar elois.kris58 says:

SO GOOD!!! I couldn’t stop eating it! Honey really makes it sweet and delish.

Nice recipe, but too much vanilla. Less is more people! -_-.

    1. 4 stars
I actually loved the vanilla! It balanced the tartness of the rhubarb. Give it another try, maybe? 🙂

I dont like rhubarb. Can I use strawberries instead?

I made it with regular milk (didn’t have almond) and it still set fine. Took a little longer than 2 hours for me, but overnight was perfect. Will do again.

    1. User avatar Dan Streetmentioner says:

Hmm I always thought chia had to be with almond milk or it won’t thicken… but yours set fine anyway. Did you use whole milk or skim? Gonna try with what I have.

Love hearing that! Regular milk working is awesome—so it’s flexible. 😊 And yeah, chilling time can vary a bit depending on chia and fridge temp. Thanks for reporting back!

Rhubarb pudding? Sounds weird… but this actually tasted good! Shocked.

I know right? I was skeptical too but it’s surprisingly refreshing! 🌟

I tried this pudding, and honestly it was a bit too sweet for my taste. Next time, I might skip the honey or use less.

I’m not sure about using honey + almond milk together—mine came out kinda thick and sweet. Next time I’d use less honey.

    1. User avatar candida.weber14 says:

      3 stars
Mine did get thick too, but I think it was more the chia amount + chilling time than the honey/almond milk combo? I used 1 tbsp honey and whole milk and it was still sweet. Maybe try less honey AND give it the full overnight.

    2. User avatar Falmer Warmonger says:

      5 stars
Good point—honey can make it cloying, especially once the rhubarb cooks down. I usually cut it to 1–1.5 tbsp and it sets fine. Sweet-tart balance matters with chia.

This sounds delicious! Can’t wait to try it!

I’m not usually into chia pudding, but the rhubarb syrupy step makes this feel more “dessert-y” than plain pudding. Will try!

This is amazing! I’ve never thought rhubarb could taste so good. The honey really brings out the flavor.

Yuck! Didn’t like it at all. Chia seeds are weird.

Do you have to refrigerate it at least 2 hours? Mine always takes overnight for me to set right, but maybe I just stir too little lol.

    1. User avatar duane.windler says:

      5 stars
Yep—at least 2 hours in the fridge is the minimum. Overnight will just make it thicker and more set (and honestly, that’s usually easiest). I’d say your stirring is probably fine; chia just needs time to gel.

  118. 4 stars
So easy to make! I’m not a great cook but this was simple and delicious!

    1. User avatar domingo.towne says:

So glad you found it easy! Rhubarb is such a unique ingredient, love it!

    2. 2 stars
Really? It sounds too simple for someone like me. I usually mess up pudding. 🤷‍♂️

Rhubarb is so underrated. This is the first chia pudding that didn’t taste boring. The syrupy rhubarb on top is the best part.

    1. User avatar suzie.kozey41 says:

      5 stars
Yes!! I agree—rhubarb makes chia pudding actually exciting. The syrupy part is everything.

  120. User avatar joline.hermiston10 says:

I’m not sure about this. Rhubarb is kind of sour, right? How does that mix with honey? Not buying it.

  121. User avatar mana.prohaska38 says:

What’s rhubarb? Is that a fruit? I feel like I’m missing something here…

  122. User avatar roland.little says:

    3 stars
Rhubarb can be *so* tart. I’d probably do 3 tbsp honey next time—2 tbsp sounds a little low to me, but I’ll taste and adjust.

  123. User avatar teofila.smitham2008 says:

This looks so refreshing—tart rhubarb with sweet honey is my kind of combo. Chia pudding is already great, but the rhubarb syrupy part probably makes it extra flavorful.

  124. User avatar Rick O'Shea says:

    4 stars
Not gonna lie, chia pudding always feels a little… weird at first. But rhubarb syrupy like that might make it actually taste “dessert-y.”

2 hours is enough? I always need at least overnight or it’s not right. Still, I like the recipe concept. Yum!

  126. User avatar kerrie.trantow83 says:

I tried something similar last summer and this looks way more put-together. The rhubarb + honey combo sounds perfect—tart but sweet. Definitely making this.

  128. User avatar palmer.bernier2012 says:

Was too runny for me, I added more chia seeds and it helped!

1 cup rhubarb is a lot… I used half and it was still strong. Also, I let it sit in the fridge like 6 hours and it became perfect. Easy.

I don’t trust rhubarb in a cold pudding… it just feels wrong. Hot cooked fruit I get, but cold fruit with seeds? Idk.
