Pork and Spinach Breakfast Burrito

March 13, 2024

A breakfast burrito is the perfect way to kickstart your morning, filling, flavorful, and completely customizable. This pork and spinach breakfast burrito takes it to the next level, combining savory pork, fresh spinach, scrambled eggs, and a handful of tasty seasonings, all wrapped up in a warm tortilla. It’s hearty, satisfying, and packed with protein to fuel your day.

To make the filling, start by cooking the ground pork in a skillet. Season it with your favorite spices, a pinch of cumin, chili powder, and a bit of garlic powder adds a nice depth of flavor without overwhelming the other ingredients. Once the pork is cooked through and crispy on the edges, set it aside and use the same pan to cook the spinach. You can use fresh spinach, which wilts down quickly, or frozen spinach that’s been drained of excess moisture.

Next, scramble a few eggs in a separate pan, seasoning them with a little salt and pepper. Once they’re cooked, it’s time to assemble your burrito. Lay the tortilla flat, then add a generous portion of the cooked pork, sautéed spinach, and scrambled eggs. For extra flavor, sprinkle on some shredded cheese (cheddar or Monterey Jack works well) and a dollop of salsa or hot sauce for a bit of zing. If you like, add a spoonful of guacamole or a drizzle of sour cream for a creamy finish.

Wrap everything up tightly in the tortilla, folding in the sides and rolling it into a compact burrito. You can even give it a quick toast in the pan to make the outside slightly crispy, which adds a great texture to the burrito.

This pork and spinach breakfast burrito is not only filling but also a great way to sneak in some greens early in the day. It’s versatile, easy to make ahead for meal prep, and perfect for busy mornings. Whether you enjoy it at home or take it on the go, it’s a delicious and energizing way to start your day.

  4. 4 stars
Solid recipe, simple enough, and the timing worked pretty well for me. I did add a pinch of cumin and chili powder just because I can’t help myself, but it was still great.

Could you use just that cheap cheese? Idk, I’m just here for the food?

    1. User avatar demetrius.mcdermott93 says:

      4 stars
Yeah, you could use cheap cheese, but it might not melt well. Just sayin’!

    2. User avatar farah.kuhlman4 says:

      3 stars
I dunno, I think good cheese makes the difference! Why not splurge a little?

  7. User avatar haydee.muller12 says:

I don’t usually put spinach in breakfast burritos, but wow. It wilts down perfectly. Also, heating tortillas in a dry pan instead of microwave gave them better texture.

  8. User avatar tiffany.oberbrunner says:

Way too much cheese…. almost sickening. What’s ur idea of a good burrito??

  9. User avatar harry.dooley says:

    2 stars
Um… cilantro AND cheddar AND tomatoes all together? That’s a lot of vibes. I liked it, but my family said it tasted like “green salad burrito” lol.

    1. User avatar randell.crist says:

      3 stars
I tried it once and it was… just kinda weird? Like the cilantro overpowered everything, and I didn’t even chop it that fine. Maybe less cilantro or swap to parsley next time?

    2. User avatar Arthur Philip Deodat says:

      5 stars
Lol “green salad burrito” is actually hilarious 😄 I love cilantro so I’m totally into that combo—cheddar + tomatoes make it feel less “salad-y.”

  10. User avatar deloras.pfannerstill1978 says:

    3 stars
It was okay, but I think it needed more flavor. Maybe add some hot sauce or spices?

    1. User avatar Leto II Atreides says:

      3 stars
Honestly, it was fine for me. Not everything needs to be spicy. Some of us like it simple.

    2. User avatar wesley.grant38 says:

      5 stars
I agree! A little hot sauce can really boost the flavor. I add sriracha to mine!

    1. User avatar elmer.rath1963 says:

  12. User avatar Bowerick Wowbagger says:

    3 stars
This is good, but the ingredient list feels slightly off—like is it 1 tbsp olive oil total or per step? I used about that and it was fine, just clarifying.

    1. User avatar adam.bogan1956 says:

      5 stars
Great question—good catch. The “1 tbsp olive oil” is total for the whole recipe (used at the start in step 1). So it’s just that amount to brown the pork, not per step.

  13. User avatar lynwood.murazik says:

    1 star
Are you kidding me? Who puts spinach in a burrito? Gross.

  14. User avatar Ha Dahamar says:

    5 stars
These burritos are a total morning win. The pork browning + spinach combo is so flavorful, and the scrambled eggs make it feel hearty without being heavy. I’ll definitely make these again.

    1. User avatar pam.fay38 says:

      3 stars
Sounds tasty, but I’m not sure about 4 eggs with only 1 lb pork—mine might turn out more like egg burritos than pork 😅 Still gonna try though!

    2. User avatar Mr. Wiley Kuphal says:

      5 stars
Yes! The pork gets that savory browning and the spinach actually tastes fresh—super good breakfast burrito energy.

  15. User avatar Bertha D. Blues says:

    5 stars
    Burrito good! Make again!

    1. 5 stars
Yasss! These burritos are a game changer! 🙌

  16. User avatar nickie.legros24 says:

    1 star
Way too many ingredients for a breakfast! Who has time for all this? Never gonna try this.

  17. User avatar Louise E. Anna says:

    2 stars
How long do these stay good? I made a big batch and not sure if I can eat them all in time.

  18. User avatar buddy.sawayn97 says:

    3 stars
The ingredient list looks good, but 4 large tortillas for only 1 pound of pork? I felt like it was tight per burrito. Flavor was decent, just portioning made it less satisfying.

  19. 4 stars
I added a bit of hot sauce and they were 🔥🔥!!

    1. User avatar Vroomfondel says:

      2 stars
Really? I think it sounds a bit much. I just like plain food.

    2. User avatar adah.schoen39 says:

      5 stars
Sounds awesome! Hot sauce makes everything better! Gonna try that next time!

  20. User avatar alton.mosciski says:

    3 stars
Not sure why the directions say “warm tortillas” after cooking everything—mine got soggy from the filling. I recommend warming tortillas right before assembling.

  21. 5 stars
Very tasty, cooking them made my kitchen smell like heaven! 😍

  22. User avatar tajuana.mohr91 says:

Why would you put spinach in a burrito? You gotta be kidding. Not really my thing. 🤷‍♂️

I tried this recipe last weekend, and it was a hit! I added some hot sauce for an extra kick, and it turned out delicious. Thanks for sharing!

    2. 2 stars
I dunno, sounds a bit too healthy for me. Can’t burritos just be cheesy and meaty? What’s with the spinach?

  26. User avatar janella.roberts2013 says:

    3 stars
I tried making this, but how do you cook the pork like, exactly? Mine came out a bit dry. Maybe I did it wrong?

  27. User avatar chang.predovic says:

    5 stars
So good and filling, my husband was so happy! Thank you!

  28. User avatar agustin.morar says:

  29. User avatar alvin.predovic28 says:

    5 stars
I followed this recipe and my kids devoured it! Will definitely make again.

  30. 2 stars
Nah, too much work for breakfast. Eggs and bacon are easier.

    1. User avatar torri.fahey46 says:

      5 stars
I get it, breakfast can be a rush. But these burritos are worth the extra effort! They fill you up and taste great, plus you can make them in bulk for the week!

  31. 4 stars
I used turkey instead of pork and it still worked. Not exactly the same richness, but still really tasty with the cheddar and tomatoes.

  32. 2 stars
Kinda boring… Just tastes like eggs and some meat… I wanted more!

  33. User avatar lurlene.greenfelder60 says:

    2 stars
Tortillas were hard to roll. Should I warm them longer? No idea…

  34. User avatar Super Saiyan 2 Vegeta says:

    4 stars
I was skeptical about cooking spinach with the eggs, but it actually melds nicely. Next time I’ll use a little less onion because mine felt a bit strong, but overall really tasty.

  35. 5 stars
Super easy to make and my kids loved it! Will be my go-to breakfast from now on.

    1. 5 stars
Sounds fantastic! I’m glad your kids enjoyed it. It really is a great recipe for busy mornings.

  36. User avatar julian.kovacek says:

    3 stars
Why do you put spinach? Can’t you just use lettuce? Seems unnecessary.

  37. User avatar marlo.powlowski11 says:

    4 stars
These was good, but I opted for turkey instead of pork. Healthier choice! 😊

  38. User avatar hoyt.rippin says:

    3 stars
Meh. I don’t really like spinach in my eggs, but my husband loved them. Guess it depends on your taste!

  39. 3 stars
I found this to be bland. Needs more flavor. Maybe add some spices or something.

  40. User avatar gerard.gerhold says:

    4 stars
Can you do this with leftover pulled pork? I think that would taste great or nah?

  41. User avatar Deloise Huel says:

  43. User avatar Captain Ginyu says:

    5 stars
I made this for my family and they loved it! Easy to follow and delicious! Will make again for sure.

  44. User avatar corene.leffler2006 says:

    3 stars
Good recipe but too much spinach. I don’t like spinach much. Next time will use more eggs instead.

  45. User avatar lester.bradtke14 says:

    3 stars
I tried it and the spinach never really wilted for me—maybe my pan wasn’t hot enough? Ended up adding a lid and that fixed it.

    1. User avatar Carletta Mohr says:

      5 stars
Oh yeah, that makes sense—spinach can be stubborn if the pan isn’t hot enough. Adding a lid traps steam and speeds up the wilt. I’m stealing that tip.

  46. User avatar Yooden Vranx says:

    4 stars
I made these for breakfast and my kids loved them! Easy to make and yummy too.

    1. User avatar shondra.kertzmann14 says:

      5 stars
That’s awesome! Kids eating spinach is a win! My daughter loves it too, thanks to this recipe!

  51. 4 stars
Good flavor, but my eggs kind of went dry when I scrambled them too long. Next time I’ll pull them a bit earlier and maybe add a splash of milk.

I don’t get it. Why pork? Can’t we use chicken instead? I’m not so sure about this

  54. 5 stars
I like to add a little hot sauce to mine for an added kick. Yum!

  55. 1 star
Too complicated. I just wanted to make eggs and toast. I don’t even like cilantro!

  56. User avatar dirk.hoeger1964 says:

I mean, it was ok, but it really needed more spices. A tad bland for my taste.

Not enough sauce. Needs more flavor, maybe try salsa? 🤔

I tried this recipe but I think I put too much spinach. It was just too green for me.

I don’t know… pork for breakfast? Sounds odd to me. I prefer ham.

  68. User avatar antonio.goldner29 says:

    4 stars
This is super easy, but I was lazy and didn’t chop the onions/cilantro small. It tasted fine though. Also, 4 tortillas for 4 eggs seems a little off math-wise? Still good.

  69. 4 stars
So little time, so much food to eat! Just wrap and munch. Yum!

  70. User avatar Majikthise says:

    2 stars
I dunno, I tried it but it just didn’t taste right. Maybe I overcooked the pork? 🤷‍♂️

    1. User avatar kristina.veum says:

      4 stars
Sometimes it happens! Make sure you cook the pork properly and don’t let it get dry. Did you try adding more seasoning?
