I don’t get why it says to let it cool slightly—mine cooled too much and the syrup started to harden while I was shaping. Lesson learned: move fast!
Maybe don’t let it cool at all? I’d just pour it right away and start forming like immediately. I tried that once and it worked better—though mine was kinda sticky, lol. Also 2 minutes boil feels a bit long? Not sure.

Mine didn’t really “ball” because the mixture cooled too fast. I was rushing while forming them. If you work quickly and keep syrup warm, it should be way better. Flavor is still nice.
