Ingredients
  

  • 1 cup butter softened
  • 2 cups all-purpose flour sifted
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar packed
  • 3 eggs beaten
  • 1 1/2 cup light corn syrup
  • 2 cups pecans chopped
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  • In a bowl, mix together the softened butter, flour, and granulated sugar until well combined. Press the mixture evenly into the bottom of the prepared baking dish.
  • Bake the crust in the preheated oven for 15 minutes, until lightly golden.
  • While the crust is baking, whisk together the brown sugar, beaten eggs, corn syrup, chopped pecans, and vanilla extract in a bowl.
  • Pour the pecan filling over the pre-baked crust and spread it out evenly.
  • Bake in the oven for an additional 30 minutes, or until the filling is set and lightly browned.
  • Allow the bars to cool completely in the baking dish before slicing into squares and serving.

    Ok but 2 cups flour + butter? Seems a bit dry, i added like 1-2 tbsp water and it pressed better. Flavor is still great. Would make again.

      Good catch! The crust can feel a little dry depending on how you measure/sift the flour. I’ve found pressing easier when the butter is really soft (almost spreadable) and the flour is measured lightly. Love that the flavor still worked out—these bars are worth it.

      Maybe it’s just my oven, but mine came out really sweet too. I’ll try cutting the brown sugar like you said. Also, I accidentally used dark corn syrup once and it was way too much—so heads up if anyone’s substituting.

    Honestly, I think the baking time is off. 15 min crust then 30 min filling feels like it could use more structure. Mine stayed soft in the middle.

    Followed the recipe pretty closely, but mine took closer to 40 minutes for the center to set. Still tasty though—very sweet and nutty. Next time I’ll check earlier and rotate the pan.

      Oh I’ve had that happen with corn syrup desserts 😅 If your oven runs hot or the bars aren’t cooled long enough, they can get super sticky and a bit wobbly. I’d try baking 5 min less next time and *cool completely* (even chilling) before cutting.

      I think 1 1/2 cups corn syrup is a lot. Mine came out like candy syrup and never really “set” unless I let it bake longer—like closer to 35-40 minutes. Maybe check temp with an oven thermometer?

    I’m skeptical about the “set” part. Mine was still wiggly at 30 min. I left it longer and it firmed up, so… okay, you win this time.

      Totally fair—“set” can be super subjective with these. Mine usually jiggles a bit too, but once it’s lightly browned and still a little wobble in the center, it firms up a lot while cooling. I’d trust the color + cooling more than the 30-min mark.
