Parmesan Crusted Fish

November 3, 2025

Parmesan crusted fish is a crisp, flavorful dish that combines tender, flaky fish with a golden, cheesy coating. It’s quick to prepare, deliciously satisfying, and ideal for both weeknight dinners and special occasions. The magic lies in the crust, which delivers the perfect balance of crunch and rich flavor without needing deep frying.

To make it, start by choosing a mild white fish like cod, tilapia, haddock, or halibut. Pat the fillets dry and season them lightly with salt, pepper, and a squeeze of lemon juice. In a shallow bowl, mix grated Parmesan cheese with breadcrumbs, garlic powder, and a touch of paprika for extra color and flavor. For a richer taste, you can add a bit of melted butter or olive oil to the breadcrumb mixture.

The result is a tender interior encased in a crisp, cheesy exterior that adds incredible flavor without overpowering the fish. The Parmesan gives the crust a subtle nuttiness, while the breadcrumbs create that irresistible crunch.

Parmesan crusted fish pairs beautifully with a side of roasted vegetables, garlic mashed potatoes, or a light green salad with lemon dressing. It’s also delicious with rice pilaf or steamed asparagus for a more elegant presentation. For a refreshing contrast, serve it with a simple yogurt or tartar sauce, or just an extra squeeze of lemon.

This dish is not only easy to prepare but also elegant enough to impress. With its golden crust, tender fish, and savory flavor, Parmesan crusted fish turns an ordinary dinner into something special while staying light, wholesome, and full of character.

For a perfect wine pairing, serve Parmesan crusted fish with a crisp white like Sauvignon Blanc or Pinot Grigio, which complements the cheesy crust and delicate flavor of the fish beautifully.

Parmesan crust is the only way I’ll do white fish now. I served it with roasted broccoli and it was perfect.

Too cheesy for my taste! I think it should be less parm.

  4. 4 stars
I used chicken instead of fish. Still turned out great!

  5. 3 stars
Can I use a different fish? What’s tilapia?

I had trouble with the breading not sticking. Any tips?

    1. User avatar gaston.nicolas says:

      5 stars
Make sure to press down hard when you coat the fish! Also, try letting it sit for a few minutes before baking so the breading sticks better.

    2. User avatar madalene.altenwerth8 says:

      3 stars
I dunno, maybe try a different type of breadcrumb? Some are just better for sticking on stuff. Good luck!

  11. User avatar randall.cassin says:

    2 stars
Tried it but my fish got burnt. Maybe I left it too long? Not sure if I’d make this again.

    1. User avatar norris.bernier96 says:

      4 stars
Maybe try watching it closer next time? I’ve burnt fish before too! Just gotta get used to your oven temp. Good luck!

  12. User avatar ronny.boyle34 says:

    4 stars
I had no breadcrumbs so I used cornflakes. It was surprisingly good! 🥳

  13. User avatar andrea.jenkins1988 says:

    3 stars
I mean… fish in Parmesan sounds fine but I think the 12-15 minutes is off for thicker fillets. I checked and it took way longer for me.

  14. User avatar nina.wisoky54 says:

    3 stars
I liked the crust, but mine didn’t get very golden. Next time I’ll broil for a minute at the end or add a tiny bit more oil. Otherwise good weeknight meal.

  15. 2 stars
I don’t know about this. My fish got burnt and I followed the recipe exactly.

  16. User avatar Kathey White says:

    3 stars
Not enough flavor for me, I think it needs more seasonings.

  17. User avatar cyrus.hane79 says:

    3 stars
The fish was too salty! Less salt next time, please.

    1. User avatar nelly.bailey1992 says:

      4 stars
I totally agree! I found it way too salty too. Maybe I’ll try it again with half the salt.

  18. User avatar Herb E. Side says:

    2 stars
I dunno… 12-15 minutes at 400°F seems short for fish. Mine wasn’t fully cooked in the middle, so I had to put it back for 3-4 more minutes. Flavor was good.

  19. User avatar rigoberto.gibson38 says:

    5 stars
The coating stuck nicely, and the Parmesan flavor is legit. I had to use melted butter instead of olive oil and it worked great. Easy weeknight meal.

  20. User avatar mikel.spencer1997 says:

    2 stars
I followed it exactly and the crust didn’t brown much. Maybe my oven runs cool? I ended up broiling for 1-2 minutes at the end.

  21. User avatar Professor Shikashi says:

    2 stars
Way too salty! Next time I’ll go lighter on the salt. Not impressed.

  22. 4 stars
Yum! I just used frozen fish and it worked great. 👍

  23. User avatar adan.corkery94 says:

    3 stars
Not enough flavor for me, I added lemon juice on top! 😒

  24. 3 stars
I followed it exactly, but my crust didn’t brown much. Maybe my oven runs cool? Still tasted good though.

Can’t believe how fast this was. I ate it straight off the tray lol. Maybe add a squeeze of fresh lemon or some parsley if you want more color.

  27. 3 stars
Parmesan on fish? Sounds weird. But it actually worked. I liked it.

  28. User avatar jong.wilderman40 says:

  29. User avatar terrence.little says:

    3 stars
The instructions are clear, but my crust didn’t brown much at 400°F. Maybe my oven runs cool? Tasted great regardless.

  30. User avatar vergie.pacocha says:

    3 stars
It was okay, but the fish turned out dry. Maybe I overcooked it?

  31. User avatar bridgett.murphy says:

    4 stars
So simple. I didn’t have Italian herbs so I used oregano + basil and it still tasted great. Will make again.

  32. User avatar adam.harris33 says:

Uh, why is the temperature in Fahrenheit? Isn’t that for Americans? We use Celsius here! 🤨

  33. User avatar carlo.oconner3 says:

    4 stars
Simple and tasty! Love the Parmesan crust, will definitely make again.

    1. User avatar jestine.strosin90 says:

      2 stars
I dunno, people say its simple but fish is kinda tricky to cook right. How do I know it won’t be raw in the middle?

    2. 5 stars
So glad you loved it! The Parmesan crust really does make it special. What side did you serve with it?

  34. User avatar Charles Darwin says:

    4 stars
I’m not convinced about ‘pressing firmly’—seems like it would just make it salty and dry. But honestly the fish stayed juicy, so fair point.

  35. 5 stars
This came out so crispy on top and flaky inside—exactly what I want from an oven fish. I used cod and it smelled amazing while baking. 10/10 would make again!

    1. User avatar MAGA2024.Trumpster says:

      4 stars
Mine was tasty but I think I underbaked—crust got a little too brown before the middle was done. Next time I’ll try closer to 15 minutes and maybe pat the fillets drier first. Still a solid recipe though.

    2. User avatar Miss Giuseppe Keebler says:

      5 stars
Yes!! That crispy Parmesan top + flaky center is the best. I’ve made this with tilapia and it turned out super similar—definitely adding this to my repeat list.

  36. 5 stars
Yummy! My kids even ate it! 👏 Will def make again.

    1. User avatar marcelina.carroll68 says:

      5 stars
That’s awesome! My kids can be picky too, but they loved it as well!

    2. 2 stars
I dunno… fish? Not everyone likes it. Coudn’t get my kids to even try it.

  37. User avatar rea.dibbert42 says:

    5 stars
Made this tonight and it was super good—crispy little crust and the garlic-herb flavor really came through. I used tilapia and it cooked perfectly in 14 minutes.

  38. 2 stars
Could use more salt in the crust imo. I only did ‘to taste’ and it ended up kinda bland. Next time I’ll season the mix too.

    1. User avatar bess.marvin2019 says:

      5 stars
Totally agree—“to taste” can be misleading. I add a little salt to the Parmesan/breadcrumb mix and it makes a big difference in flavor. Glad you’ll try that next time!

    2. User avatar virgilio.pfannerstill says:

      3 stars
Hmm I thought it would be plenty salty with Parmesan already. Maybe your Parmesan was kinda bland or your fish was sweet? I usually just do pepper + a bit of salt on top and it’s fine. But if you want more flavor, seasoning the mix seems logical.

  39. User avatar troy.streich65 says:

    4 stars
I didn’t have Italian herbs so I used oregano + a pinch of thyme. Worked surprisingly well. The smell while baking was amazing.

  40. User avatar renay.bechtelar95 says:

    5 stars
Made this tonight and it turned out super crispy on the edges. The garlic powder + Italian herbs combo is on point. I served it with lemony rice and it felt restaurant-level.

  41. 4 stars
Fish? I thought this was chicken at first, lol! That Italian mix was really good though.

  42. 5 stars
This is a great weeknight meal. I served it with lemon and roasted broccoli—clean flavors and no mess.

    1. User avatar elia.dickens1994 says:

      5 stars
Yes! Lemon + roasted broccoli is such a good combo with that Parmesan crust. The timing is perfect for a weeknight too—no fuss, big flavor.

  43. 5 stars
I followed it mostly, but I added a squeeze of lemon right after baking and wow—made it taste restaurant-y. Easy weeknight meal.

  44. 4 stars
Can confirm: parchment paper helps a lot. The coating came off way less and cleanup was minimal.

  45. User avatar ricarda.metz says:

    4 stars
Quick question—does “0.5 cup” Parmesan mean packed? I used loose and the coating felt a bit dry, but still good.

  46. User avatar norberto.muller12 says:

    3 stars
Okay but… how thick were your fish fillets? Mine were like 2 inches and it took like 25 minutes. I almost gave up, lol.

  47. User avatar Michael Hill MD says:

    3 stars
Good idea, but my crust didn’t brown much. I think I pressed too lightly and maybe my oven runs cooler. Still tasted great though.

  48. 4 stars
Pretty easy and tasty, but 12 minutes was not enough for my cod—more like 16. Still, the crust stayed crunchy, so I’ll do it again.

    1. User avatar steve_maga says:

      5 stars
Yep, fish thickness matters a lot—my cod usually needs closer to 15–18 minutes too. Glad the crust stayed crunchy though!

  49. User avatar cary.schoen80 says:

    3 stars
Not gonna lie, I’m skeptical about cooking cod with just 12 minutes. Mine was slightly overdone, but the Parmesan topping was yummy.

  50. User avatar Ilban Richese says:

    5 stars
This turned out way better than I expected—crispy crust and super flavorful. I used tilapia and it cooked perfectly at 15 minutes.

  51. User avatar Prostetnic Vogon Kwaltz says:

    4 stars
Pretty easy, but I think 12 minutes was a little short for my cod—ended up closer to 16. Still tasty though, and the seasoning is solid.

    1. User avatar jamika.sawayn says:

      3 stars
12 minutes?? That’s basically fish jerky territory 😅 My oven runs hot though, so maybe I’d do like 20. Either way, Parmesan crust sounds good.

    2. User avatar Draugr Overlord says:

      5 stars
I’m glad you liked it! And yeah, 16 mins makes sense—thickness really changes bake time. Did you happen to have thicker fillets?

  52. User avatar Emily Saunders says:

    2 stars
Not sure about the “press firmly” part—mine kept falling off when I moved the fish. Maybe I should’ve dried the fillet more? Flavor was decent but presentation was meh.

  53. User avatar rickiestmorty says:

    2 stars
Meh, it was okay. The fish was fine but the crust kinda slid off for me—maybe I didn’t press hard enough.

  54. User avatar deborah.okon32 says:

    3 stars
The parmesan breadcrumb mix is a nice idea, but 0.5 cup cheese felt a little heavy on saltiness for me. Next time I’ll reduce the cheese slightly.

  55. User avatar Cammar Pilru says:

    5 stars
So easy and honestly tastes way fancier than it should. The crust gets that perfect golden crunch—will make again!

  56. User avatar belkis.bradtke says:

    5 stars
My kids loved it. The cheese/breadcrumb combo tastes like something from a fancy restaurant, but it’s so simple.

  57. User avatar Melvina Lubowitz says:

    5 stars
This turned out really crispy on the edges and the flavor is super solid. I used tilapia and it baked up perfectly in about 14 minutes. Will make again!

  58. User avatar drew.moore15 says:

    5 stars
This was a hit with my family! Super easy and delish! 5 stars!

    1. User avatar marci.stokes60 says:

      3 stars
Really? I’ve tried similar recipes, but they never turn out right. What did you do different?

    2. User avatar Dr. Gero says:

      5 stars
I’m so glad to hear that! It’s really easy to make, isn’t it? I love it too!

  59. User avatar robin.glover1994 says:

    3 stars
Not gonna lie, mine got a little too salty—probably because my Parmesan was already salty. Still tasty though, and the crust held up well.

  60. 5 stars
Quick weeknight dinner win! The garlic powder gives it a nice punch. My kids actually ate the fish without complaining.

    1. User avatar leopoldo.huel27 says:

      5 stars
Love this—400°F and only 12–15 min is perfect for busy nights. I used tilapia and the crust came out super crisp. Garlic powder + Italian herbs is such a good combo.

    2. User avatar Gaius Helen Mohiam says:

      3 stars
My fish always sticks to the pan even with parchment… not sure what I did wrong. Also 0.5 cup parm seems like a lot? I might do less next time. Still, my family ate it so I can’t complain 😅

  61. User avatar zola.hartmann93 says:

    5 stars
    So good!

    1. User avatar Gerard Metz says:

      5 stars
Right? That Parmesan crust gets so nice and golden in just 12–15 minutes.

  62. User avatar gabriel.lindgren says:

    3 stars
I found the crust a bit too salty. Next time I’ll skip the extra salt.

    1. User avatar dell.gerlach4 says:

      4 stars
I agree! I made it too and thought it was salty too. Maybe we should just use less salt next time.

  63. User avatar sylvester.klocko38 says:

    4 stars
So easy, but mine stuck a tiny bit even with parchment. Next time I’ll lightly oil the parchment too. Still delicious!

  64. User avatar cristine.feeney20 says:

    3 stars
Not bad, but I think 0.5 cup Parmesan is too much for 150g fish—mine felt a little salty. Maybe depends on the Parmesan brand.

  65. 5 stars
This was so easy to make and absolutely delicious! My family loved it!

    1. User avatar vince.roberts says:

      5 stars
So glad to hear that! This recipe is such a hit in my house too. Perfect for busy weeknights!

    2. User avatar tinisha.turner59 says:

      3 stars
But isn’t fish kinda fishy sometimes? How do you make sure it doesn’t taste bad?

  66. 4 stars
Yummy! I subbed the fish for chicken and it was still great. Who knew Parmesan could be so versatile?

  67. User avatar Slaughterfish says:

    2 stars
Ugh, I tried making it but the fish just fell apart. Not a good recipe for beginners.

  68. User avatar stephan.schultz66 says:

    3 stars
I used tilapia and followed the steps exactly. Flavor was good, but my crust kind of slid off in spots. Maybe I didn’t press firmly enough.

  69. 1 star
Parmesan cheese is not the same as cheddar! Can’t believe people think they can swap it.

  70. User avatar kimbery.cole44 says:

    5 stars
Quick and tasty! I added lemon juice too. Will make again!

  71. User avatar kai.nader says:

    3 stars
I used tilapia and the fillets were thinner, so mine dried out slightly. Still not bad, but watch the timing based on thickness.

    1. User avatar broderick.lakin27 says:

      3 stars
Hmm 12-15 min seems long for thin fillets—mine came out dry too when I used pangasius. I wonder if brushing with butter/oil more helps the crust stay moist?

    2. 5 stars
Totally agree—thinner tilapia cooks way faster. I usually start checking around 10 minutes and pull it as soon as it flakes. Great tip!

  72. User avatar Peregrin Took says:

    5 stars
So easy I was like “wait, that’s it?” Lol. Kids ate it—win. I might try it air-fried next time.

  73. User avatar vaughn.kiehn says:

    1 star
I don’t know… parmesan + breadcrumbs on fish is fine, but 400°F seems way too high. Mine got kinda dry. Wouldn’t make again.

  74. User avatar suspiciousCommentator says:

    2 stars
I’m not a fan of breadcrumbs—too dry for me. The fish was okay, but I’d rather do a lighter topping or pan-sear instead of baking.

    1. 5 stars
Totally get it—breadcrumbs can come out a bit dry. You could try swapping in more Parmesan (or even crushed crackers) and adding a touch more olive oil to the crumb mix. Pan-searing is also a great call if you want a lighter, crispier texture instead of a baked crust.

  75. 1 star
Fish and chips are better. Just saying.

    1. User avatar eugenia.schneider6 says:

      5 stars
No way! This recipe sounds awesome. Fish and chips can’t compare to Parmesan crusted fish! 😋

  76. User avatar fallon.sauer says:

    5 stars
This was delicious! My kids loved it. I added lemon zest for extra flavor.

  77. 5 stars
Mmm, so good! I’m gonna make it again for my friends, they will love!!

    1. User avatar Spriggan Earth Mother says:

      5 stars
That sounds awesome! I’m sure your friends will be super impressed! Can’t wait to hear how it goes!

  78. User avatar Elda Swift says:

    4 stars
I don’t really trust fish recipes, but this one was surprisingly good. I added some lemon juice too!

    1. User avatar fatimah.hills70 says:

      4 stars
I never liked fish either, but this recipe isn’t bad! The lemon juice was a game changer for sure.

    2. 3 stars
Really? Fish recipes can’t be trusted? I think they’re great! Maybe you just need to try a few more.

  79. 3 stars
I followed the recipe pretty much, but it was kinda bland until I added lemon juice. Not the recipes fault, I just didn’t taste-test my seasoning before baking.

    1. User avatar austin.rodriguez1955 says:

      3 stars
Honestly, I think the seasoning needs a lot more than “salt and pepper to taste.” Like what is “to taste” when the mix is already kinda dry? Next time I’d add more garlic or a pinch of paprika. But lemon makes sense.

    2. User avatar tyrell.hodkiewicz2001 says:

      5 stars
Good catch about lemon juice—parmesan crust can taste a bit flat without acidity. Glad it worked once you added it!

  80. User avatar herbert.bode1985 says:

    4 stars
Cook time is kinda short? Mine was still a little translucent at 12 minutes, so I went to 16. Just watch doneness and don’t trust the first timer.
