Miso Nikomi Udon

February 21, 2024

Miso Nikomi Udon is one of those dishes that instantly warms you from the inside out. Native to the Nagoya region of Japan, this dish features thick, chewy udon noodles simmered in a deeply savory miso-based broth. It’s hearty, comforting, and layered with umami flavor, making it the perfect meal for cold days or when you’re craving something cozy and satisfying.

What sets Miso Nikomi Udon apart from other noodle soups is the broth. Unlike lighter miso soups, this one uses a stronger, more intense miso, usually red miso or hatcho miso, which gives it a bold, almost smoky depth. It’s simmered with dashi, soy sauce, and mirin, creating a rich, slightly sweet base that clings beautifully to the noodles.

The udon noodles used here are typically the firm, raw type, not the soft, pre-cooked kind. As they cook directly in the broth, they absorb its deep flavor while keeping their satisfying bite. That texture is a big part of what makes this dish feel so grounding.

Miso Nikomi Udon is traditionally served with a mix of ingredients simmered right into the broth. Thinly sliced chicken or pork, green onions, shiitake mushrooms, fish cakes, and raw eggs are all common toppings. The egg is usually cracked directly into the pot while it simmers, creating a silky layer that enriches the broth even further.

One of the charming things about this dish is the way it’s served, often still bubbling in a small clay pot, straight from the stove to the table. It’s meant to be eaten hot and slow, savoring each spoonful of the hearty broth and chewy noodles.

Miso Nikomi Udon is not just a noodle soup, it’s a deeply satisfying, soul-soothing dish with a flavor profile that keeps you coming back. If you’ve never tried it, you’re missing out on one of Japan’s most comforting regional treasures.

Isn’t miso gluten free? My friend is gluten free and wants to try this. Just checking!

  2. User avatar Charise McLaughlin says:

Not bad at all. I’m not a big miso person but the soy + mirin balance helps. Could’ve used a bit more heat—maybe chili oil next time.

    1. User avatar reena.wilkinson81 says:

      3 stars
Hmm I’m not sure about the mirin amount. Could you swap it for sugar or something? I feel like miso is already sweet enough.

    2. User avatar chadwick.herman says:

      5 stars
I totally agree about the heat—this was yummy but a little mild for me too. Chili oil on top makes it perfect.

  3. User avatar clifford.homenick25 says:

Easy to make but my kids didn’t like it 2 out of 5. Maybe less mushrooms next time?

    1. User avatar micha.roberts says:

      5 stars
I dunno, my kids loved it! Sometimes kids are just picky about things. Maybe try a different veggie? Worth a shot!

    2. User avatar junior.paucek2003 says:

      4 stars
Maybe try using less mushrooms, or even leave them out altogether! My kids love it when I add more tofu instead.

  4. User avatar Margot Fenring says:

    3 stars
How many servings is this supposed to make? Looks good but I need to feed a crowd!

  5. User avatar Hasimir Fenring says:

    2 stars
2 packs udon seems like a lot—unless you’re feeding a crowd. I only made for 2 and felt like it overwhelmed the broth. Flavor was decent but proportions felt off.

  6. User avatar joi.bergstrom99 says:

Tofu taste funny, not my jam. Wish there was more noodles and less mushy stuff in it.

    1. User avatar winford.howell says:

      4 stars
Maybe try adding more spices next time? Tofu can be a bit bland without seasoning!

  7. User avatar deidra.fritsch says:

meh. too many steps for udon soup 😅

  8. User avatar terminatorXYZ says:

    3 stars
Udon noodles are just too thick for me. I prefer thinner noodles like soba. Might try with soba next time.

  9. User avatar brittani.carter says:

    4 stars
Miso and udon, the perfect combo! I added some chili flakes for a kick. Yum!

  10. User avatar Aundrea Leannon says:

    5 stars
Absolutely loved this recipe! The flavors were rich and satisfying. Can’t believe how easy it was!

    1. 5 stars
I’m glad you enjoyed it! It’s one of my favorites too. Have you tried adding anything else to it?

    2. User avatar darcie.donnelly2021 says:

      3 stars
Really? I thought it was kind of bland. I added chili flakes to spice it up, but still wasn’t wowed.

  11. User avatar Chaurus Hunter says:

    2 stars
Looks easy, but where do I find red miso? Can I substitut with something else? 🤔

    1. User avatar Catina Mayer says:

      4 stars
You can usually find red miso at Asian grocery stores. If you can’t find it, maybe try using tahini or another nut butter? Not the same but close enough!

    2. 3 stars
Just use soy sauce, it will taste different but still good. Just don’t expect real miso flavor, ya know?

  12. User avatar julio.halvorson says:

    4 stars
I made something similar but used white miso instead—still good. Whisking the miso with hot broth is the key so it doesn’t clump. Solid recipe!

  13. User avatar dalton.hintz says:

This recipe confuses me, do I cook the noodles with broth or after? Anyone? Help!

    1. 5 stars
You cook the noodles separately and then add them to the broth later. Don’t worry, it’s easy! 😊

    2. User avatar judi.grady65 says:

      2 stars
I don’t get it either. How can you put the noodles in the broth? Wouldn’t they get soggy? 🤔

  14. User avatar Michael83 says:

    5 stars
Quick and easy to make! I will def make this again. Thanks for the recipe! 😊

  15. User avatar Malisa Bailey MD says:

idk didn’t work for me…. but maybe i did something wrong

  20. User avatar gregg.schultz16 says:

    3 stars
I don’t know if I did something wrong, but my broth was super salty. I think I might skip the soy sauce next time.

  21. User avatar denna.becker says:

    2 stars
Honestly, not what I expected. The flavors felt off. Maybe I did something wrong, but I doubt I’ll try again.

  22. User avatar xochitl.hyatt25 says:

    3 stars
I didnt have all the ingredients, so I used chicken broth instead of veggie. Still tasted good but not the same. Next time will do it properly.

  23. User avatar in.weissnat says:

    5 stars
This was super comforting—like a hug in a bowl. I used a slightly lighter miso (less salty) and it still tasted amazing. Tofu soaked up the broth perfectly.

  24. User avatar roger.hirthe2000 says:

    5 stars
This is so comforting. The miso broth tastes deep even with veggie broth—didn’t think 15 minutes would be enough, but it really was.

  25. 3 stars
Lol I messed up and put the miso paste in cold broth at first… then I corrected it after reading the instructions. It still came out okay, so I guess it’s forgiving?

  26. 3 stars
Not gonna lie, 1/4 cup red miso feels like a lot? I might cut it down because red miso can be pretty strong. But the rest sounds balanced with mirin.

  27. User avatar MAGA2024.Trumpster says:

    5 stars
This was absolutely delicious! The flavors were rich and comforting. I added some chili flakes for a nice kick.

  28. User avatar elden.rosenbaum79 says:

    2 stars
Meh, I thought it was just okay. Guess I’m just not a big fan of miso. 🙁

    1. User avatar paige.grant23 says:

      4 stars
I get it, miso’s not for everyone. But it’s like, really healthy! You might like it if you try it with more spices or something. 🙂

  29. User avatar nick.bogan77 says:

    4 stars
Made it exactly as written and it turned out really comforting. My only tweak: I used less mirin since I like it less sweet, but overall the balance is great.

    1. 5 stars
That sounds perfect—comforting is exactly the vibe I’m going for with this one. And your mirin tweak makes sense if you prefer it less sweet. Thanks for sharing!

  30. User avatar steve_maga says:

    4 stars
Can I use chicken broth instead? Got no veggie broth at home. 4 stars.

  31. User avatar Loonquawl says:

    1 star
too complicated! I just wanna eat, not spend 30 min cooking. I like instant noodles way more. Instant is easier!!

    1. 4 stars
I get it, there’s nothing wrong with instant noodles! But this recipe is so comforting. You might find it worth the effort!

  32. User avatar Aurore Cormier says:

    4 stars
Wow. Easy and warm. I don’t cook Japanese food often but this felt doable.

  33. User avatar raleigh.pollich says:

    4 stars
I had no idea what udon noodles were, but this is delicious! I used regular pasta instead and it still worked. 🤷‍♂️

  34. User avatar luis.macgyver6 says:

    3 stars
I followed it pretty closely, but my broth tasted a bit too salty. Next time I’ll use less miso paste (or maybe low-sodium miso). Not bad though—just needs tweaking.

    1. 5 stars
Totally agree—miso can be sneakily salty. Low-sodium miso or cutting it to like 2–3 tbsp usually fixes it. Also, you could add the soy sauce a little later or reduce that too.

  35. 5 stars
This recipe is amazing! My family loved it. So easy to make and the flavors are spot on. Will definitely make again!

  36. User avatar Christen Haag says:

    5 stars
Tried this last night and it was super cozy. The miso broth tastes way more “real” than I expected, especially with the sesame oil. I added a little extra mushrooms and it was perfect.

    1. 5 stars
Love hearing this! The miso + sesame oil combo is seriously the “real” taste you’re talking about—glad the extra mushrooms made it even better.

    2. 3 stars
Cozy, yeah, but I’m a little skeptical about 10-15 minutes—miso should stay kind of mellow, right? I always simmer longer and it gets too strong for me. Still, sounds tasty.

  37. User avatar wellRespected says:

    2 stars
Meh. I expected more from this. The miso flavor was too strong for my taste. I prefer simpler udon bowls.

  38. 4 stars
Made it tonight. Flavor is great, but I used a bit too much miso and it got salty fast. Next time I’ll start with 2–3 tbsp and adjust. Still delicious though!

  39. User avatar Demon King Piccolo says:

    3 stars
I dunno, seemed like too much miso to me. It was really strong. Maybe I’ll try again less miso?

    1. User avatar berniece.kohler says:

      4 stars
I get where you’re coming from! Miso can be pretty overpowering. Maybe try just a tablespoon next time?

    2. User avatar mason.feeney8 says:

      5 stars
Nah, I love the strong flavor! But yeah, you can always reduce the miso. It’s all about what you like!

  40. User avatar gerardo.stokes40 says:

    5 stars
OMG, so good! I was skeptical of the miso, but wow! So rich and yummy.💖

  41. User avatar carla.ankunding39 says:

    5 stars
Easy recipe, and the tofu stayed nice. I used frozen spinach and it still turned out good. Next time I’ll try adding garlic.

  42. User avatar manuel.daniel85 says:

    1 star
Just tried making this, and it was a COMPLETE DISASTER! I forgot to add the miso and it tasted terrible. 😩

  43. User avatar stephine.farrell3 says:

    3 stars
I’m skeptical about adding miso while simmering—usually you’re supposed to not boil it. I still did it and it turned out okay, but the flavor was a little muted. Might be user error.

  44. 4 stars
Is there a way to make this spicy? Hot sauce fix everything, right? 🌶️

  45. User avatar sonja.waelchi92 says:

    5 stars
Simply delicious, but I forgot to add the spinach and it was still good. My kids even ate it, which is a win!

    1. User avatar tianna.ziemann says:

      5 stars
Great to hear your kids liked it! It’s a win when they eat veggies, right? I might skip the spinach next time too, just to simplify. Thanks for sharing!

    2. User avatar Restless Draugr says:

      2 stars
Wow, forgot the spinach? How does it even still taste good? I find that hard to believe. Just adding the miso would be blah. 🤔

  46. 2 stars
Way too watery. I used 4 cups broth exactly like it says and it never really thickened up. Maybe I simmered too fast? Flavor was there but texture felt off.

  47. 2 stars
Good but I thought the tofu was weird in it. Maybe try chicken for some protein instead?

  48. User avatar nathanial.wehner says:

    3 stars
Not what I expected. The miso was too strong for my taste. Maybe I added too much? I might try it again but adjust the miso.

  49. User avatar terminatorXYZ says:

    2 stars
Wasn’t as good as I expected. Thought it would be more filling with the noodles and tofu, but it just tasted like a fancy broth.

  50. 2 stars
I forgot to whisk the miso with hot broth first and I swear I made little miso lumps 😂 Still ate it, but it was kinda gritty. Learn from me, don’t be like me.

  51. 5 stars
I MADE THIS LAST NIGHT and it was bomb 💥! My kids even liked it, which is rare.

  52. User avatar steve.towne1954 says:

    2 stars
The instructions are kinda long. Can I just dump everything in a pot? 🤔

  53. User avatar neely.ryan82 says:

    4 stars
    Yummy 😋

  54. 5 stars
Absolutely loved this recipe! Super comforting and so easy to make. Will definitely make it again.

  55. User avatar josue.hill85 says:

    1 star
1/4 cup miso paste for 4 cups broth?? that’s like… a lot. I’m scared it’ll overpower everything. But maybe that’s the point. We’ll see.

  56. User avatar tracey.jacobs32 says:

    5 stars
My family loved it. The tofu stayed nice and firm and the spinach actually tasted like spinach (not just sad greens). Will make again.

    1. User avatar Wes Nikolaus says:

      5 stars
So glad your tofu stayed firm! And yes—good spinach flavor is the best kind of surprise. Thanks for the confidence boost; I’m making this again too.

  57. User avatar chadwick.nicolas10 says:

    3 stars
I tried following it and my broth got a little clumpy when I whisked in the miso (probably my fault). Still edible, just not as smooth. Taste was good though!

  58. 4 stars
    good recipe

  59. 5 stars
This tastes amazing! I LOVE miso soup and this is the best I’ve ever had!

    1. User avatar arnita.leffler31 says:

      5 stars
I’m so glad you loved it! Miso soup is seriously the best comfort food. Do you think I could add some chicken to it?

  60. User avatar galen.wiza64 says:

    3 stars
My udon went a bit mushy because I didn’t drain fast enough. Also I added spinach later but it still faded fast—tasted good though. Maybe I just need practice lol.

  61. User avatar ivan.denesik says:

    5 stars
Tried this for dinner and it was a hit with my family! Even my picky eater enjoyed it, thank you!

  62. User avatar babara.fahey says:

    5 stars
This was super comforting and tasted way more “restaurant” than I expected. I used a little extra miso and it turned out rich and savory—will make again for sure!

  63. User avatar Emily Saunders says:

    4 stars
I can’t find good udon noodles anywhere! But I’ll keep looking. This recipe sounds great!

  64. User avatar melida.conroy59 says:

    3 stars
I found the miso taste to be a bit too strong for my liking. Maybe use less next time?

  65. 5 stars
Yummmm 😍, I added some chili flakes and it brought the heat! This will be my go-to recipe now!

  66. User avatar florrie.botsford says:

    3 stars
The instructions say simmer 10-15 minutes—my spinach basically disappeared. Maybe I should add it closer to the end. Flavor was good, texture was not.

  67. 2 stars
Udon is okay, but I prefer ramen. Just my taste. This recipe seems like a lot of work too.

  68. 3 stars
Tried this but it didn’t come out as expected. Wasn’t as flavorful as I thought. Maybe I need to add more miso?

  69. User avatar joan.kilback36 says:

    4 stars
I’m not usually a miso person, but I tried this anyway. The broth tasted a bit stronger than I expected—still good though. Next time I’ll whisk the miso more thoroughly.

  70. User avatar lennie.terry93 says:

    5 stars
Udon noodles are the best! I always eat them in ramen. This miso soup is sompin new for me but I liked it!

    1. User avatar alexander.pagac says:

      4 stars
I’ve never had udon in miso soup! Sounds fancy, might give it a try next time!

  71. User avatar dusty.friesen1950 says:

This recipe is amazing! The flavors are so rich and comforting. I made it for my family, and they loved it! Definitely a keeper!

  72. User avatar Darrel McKenzie says:

This looks super cozy. I love miso noodle soups, and the tofu/shiitake combo sounds perfect. Definitely trying it this week!

  73. User avatar bernie.ruecker97 says:

Delicious and super easy to make! Love it! 🥰

    1. User avatar viviana.stark60 says:

Looks good but I don’t like mushrooms. Can I leave them out?

    2. User avatar Mauricio Friesen says:

      5 stars
Totally agree! This recipe is a game changer! 🥳

  74. 3 stars
The idea is nice, but I felt like it needed more broth—ended up thicker than expected. Also, I couldn’t find red miso so I used white miso and it tasted different (still ok).

  75. User avatar lottie.hilpert80 says:

    2 stars
meh. I don’t get the hype—miso soup is fine but this was just broth with noodles. Also I hate when spinach turns weird lol.

    1. User avatar jerold.abernathy says:

      4 stars
Totally get what you mean—if you’re expecting something super different, it can feel like “just noodles in broth.” The key is probably simmering long enough and not skimping on the miso amount. Also spinach turning weird is so real lol.

    2. User avatar ArabianNights says:

      3 stars
Maybe you didn’t whisk the miso right? If the miso is lumpy it tastes more like salty broth than miso soup. I simmer 10-15 mins max, but I add spinach near the end so it doesn’t go gross. That said, if you hate spinach… yeah, gonna be a no.

  76. User avatar nenita.purdy says:

    5 stars
I’m not a cooking expert, but this was easy and tasted like something from a restaurant. The step of whisking miso separately is key. Will make again for sure!

  77. 2 stars
I tried miso nikomi udon once and it was super bland. Like… why does it taste like salty soup with nothing else? I’m hoping your recipe actually has some real depth with the mirin and shiitake.

  78. User avatar MAGA2024.Trumpster says:

    4 stars
Yum! My kids loved it. I added carrots and they didn’t even notice the tofu. Win-win!

  79. User avatar darnell.walter says:

    1 star
Not for me. I can’t stand miso, it tastes like old sock. Sorry, but I’ll pass on this one!

  80. 4 stars
Yum! This is perfect for a cold evening. The tofu adds a nice touch. Will make it again for sure!

    1. User avatar trudie.gutkowski34 says:

      3 stars
I don’t know… Does tofu really add anything? Seems kinda bland to me. But I guess if it works for you!

    2. User avatar teri.smitham2023 says:

      5 stars
Absolutely agree! Tofu turns out to be so good in soups. It makes everything feel cozy. I’m glad you’re trying it again!

  81. 3 stars
Okay, real talk: “whisk miso into hot broth” sounds simple, but mine got clumpy at first. I had to strain it and start again with a smaller amount. Still ended up tasty.

  82. User avatar christa.altenwerth21 says:

    5 stars
This is a game-changer! The flavor is insane. Definitely a 5/5!

  83. 4 stars
Pretty good! I followed everything but my broth was a bit too salty (maybe my miso brand). Next time I’ll start with less soy sauce and adjust.

  84. User avatar kim.zemlak1979 says:

    5 stars
I only had regular mushrooms, but it turned out great! Love this dish, thanks!

  85. 2 stars
Too hard to cook, I couldn’t even find the right miso paste at the store. What is miso anyway??

  86. User avatar korey.strosin1950 says:

    1 star
Meh. I didn’t get the “melded flavors” magic. Maybe overcooked the spinach?

    1. 4 stars
Yeah, I get that. If the spinach sits too long in the simmer it can get kinda dull/overcooked, and then the “melded” thing doesn’t really happen. I usually add spinach at the last 2–3 minutes and keep the broth at a gentle simmer, not a rolling boil.

  87. User avatar Shadowfax says:

    3 stars
Why is there so much sesame oil? I used 1/2 tbsp like it says and it still feels a bit heavy. Maybe next time I’ll cut it down.

    1. User avatar evan.price says:

      5 stars
I feel you—sesame oil can get “heavy” fast. Even 1/2 tbsp is enough for the whole pot. Next time maybe do 1/4 tbsp or drizzle it on at the end after you turn off the heat.

    2. User avatar elinor.kunde says:

      4 stars
Hmm I never measured sesame oil for this kind of dish—just a splash. But yeah, if it feels oily, it’s probably because miso + broth + oil coats the noodles. Cutting down sounds smart.

  88. User avatar brent.kautzer says:

    3 stars
Not sure about simmer time. 10-15 minutes feels short for mushrooms and tofu to really “cook” (especially tofu). I added 5 more minutes and it was better.

  89. 3 stars
What’s mirin? Substituted with regular vinegar and it turned out fine! Lol.

  90. User avatar janise.connelly68 says:

    1 star
gross!!! didn’t like it at all. The tofu was slimy and I didn’t even know what shiitake mushrooms were until this recipe. 🤮

  91. User avatar Frostbite Spider says:

Not sure about the sesame oil amount—mine felt strong and kind of took over. Also, I forgot to simmer the mushrooms long enough, so they were a little chewy. Learning experience!

Tasty but I’m picky: 1/4 cup miso feels like a lot for my palate. I might cut it in half next time and add more to taste.

  94. User avatar Hang Nikolaus says:

I followed the steps exactly and the flavor melded nicely, but my broth looked kinda cloudy? Not sure if that’s normal with miso + simmering. Still, I’d make again.

Meh, it was ok I guess. I expected more from a miso soup. Just tasted like broth really.

I don’t know, this sounds kinda bland. Can you add more spices or something? I like it spicy.

Made this tonight and it’s soooo comforting. The miso flavor really comes through, and the tofu stays nice. I added a little extra spinach and it was perfect.

  98. 5 stars
This recipe is amazing! The flavors are so rich and comforting. I will definitely make this again. 🍜

Sounds good, but isn’t udon kinda chewy? 😕

I totally agree! This recipe warms my heart! ❤️

Not sure about cooking time—10-15 minutes for spinach seems fine, but tofu might break down if simmered too long. Also, do you add sesame oil at the end? Mine smelled stronger when I added it early.

Didn’t have mirin, used honey instead, and it still turned out good hehe! 👌🏼

    1. 2 stars
Wait, honey instead of mirin? Is that even allowed? Not sure if that’ll work for everyone.

    2. User avatar terisa.feest says:

      5 stars
That’s awesome! Honey really adds a nice touch. I might try that next time! 😄

  102. 4 stars
I need to ask, can I use chicken broth instead? Awks to some but I can’t help it. Cuz vegetarian isn’t my thing.

  103. User avatar angle.wiza9 says:

Pretty good overall! I did add a little extra soy sauce because mine was kind of mild, and I used regular onion as a substitute for green onions. Still tasted really legit.

    1. User avatar annette.rutherford says:

      5 stars
Glad it worked for you! I always worry mine’ll be too mild too—extra soy sauce sounds like the perfect fix. Also regular onion totally makes sense if that’s what you had.

Udon noodles + miso is a win, but 1/4 cup miso seems like a lot? My family said it was kinda intense. Could be my fault though lol.

  105. User avatar Nydia Turcotte V says:

I was skeptical about simmering the miso for 10-15 minutes, but it came out smooth and flavorful. Used a little extra mushrooms and it was great.

This is such a great, easy meal. I added some bok choy I had left over, and it turned out awesome!

    1. User avatar xavier.miller says:

      3 stars
Not sure if bok choy really goes with udon. Isn’t that more for stir-fry? 🤔

    2. User avatar clement.lebsack1955 says:

      5 stars
Sounds delicious! I love adding extra veggies too. Bok choy is a great choice!

Yum! Perfect on a cold day. So warming and comforting! ☀️🧡

  108. 4 stars
Pretty good, though I think 10-15 minutes wasn’t enough for the mushrooms in my pot. I simmered closer to 20 and the flavors came together better.

  109. User avatar jayne.hackett says:

    5 stars
This sounds so cozy. I love that you simmer the miso separately—though step 3 just says “whisk with some broth,” so I’m guessing you don’t boil it hard. I’ll try it with extra mushrooms!

  110. User avatar Rudolf O'Connell says:

    2 stars
Kinda bland? Like I tasted it and thought it needed salt, even with soy sauce. Maybe my miso was lighter. I added extra soy and mirin and it improved.

    1. 4 stars
Yeah, that can happen depending on how salty/strong your miso is. I usually taste the broth before adding everything—if it’s bland I’ll add a tiny bit more soy (or even a pinch of salt) and simmer a couple extra minutes. Glad extra soy + mirin fixed it for you!

  111. 5 stars
This was so delicious! I never thought I could make udon at home. Tofu and miso are a match made in heaven. 🥰

  112. User avatar alison.rowe47 says:

Udon noodles? Aren’t those just for ramen? Not sure about this combo… but I’ll give it a shot. 🤨

  113. User avatar anderson.vonrueden76 says:

    4 stars
Pretty good! I love udon, and the shiitake + miso combo is chef’s kiss. I would 100% make again.

  114. 1 star
Wait, udon noodles aren’t soup! Why do you put them in broth? This makes no sense.

  115. 5 stars
This turned out super comforting. I was worried the miso might get weird, but whisking it into the hot broth worked great. The tofu + shiitake combo is honestly perfect.

    1. User avatar ismael.tromp says:

      5 stars
Yes!! I was scared the miso would taste off too, but warming/whisking it like that is the key. The tofu + shiitake combo really does make it feel extra cozy. Going to try adding a little more spinach next time.

  116. User avatar collin.herman71 says:

    4 stars
Pretty good, but I think 1/4 cup red miso might be too much for some people. Mine turned out a little intense/salty. Next time I’ll start with 2 tbsp and adjust.

  117. User avatar xochitl.armstrong says:

This is definitely better than the instant udon cups I’ve been eating. Took me like 30 minutes and the broth tastes rich. 10/10 for weeknights.

  118. User avatar valentine.welch73 says:

I tried it but it was a bit salty. Maybe I put too much soy sauce? Not sure. 3 stars.

    1. User avatar sterling.stehr67 says:

      4 stars
Yeah, soy sauce can be super salty! Maybe try less next time. But overall, it’s a fun recipe!

  119. User avatar thurman.predovic74 says:

The steps are simple, but I’m skeptical about simmering after adding miso—doesn’t it lose flavor or get weird? Mine tasted fine though, so maybe I’m overthinking.

  120. User avatar lyndon.purdy87 says:

Kinda skeptical about the spinach part. Should’ve used kale instead? I dunno but it turned out okay.

Don’t worry, miso can be tricky at first, but it’s so delicious! Give it another try. 5 stars from me!

The instruction says simmer 10-15 minutes—did that, and my broth got a little too salty. I’ll reduce miso next time or add water. Otherwise, it’s comforting.

    1. User avatar ArabianNights says:

      5 stars
Good call on adjusting! Miso can get salty fast depending on the brand—starting with a little less (or diluting with more broth/water) is the move. Also, sometimes adding miso a bit later (after the simmer starts) helps keep it from getting too intense.

  123. User avatar timmy.hyatt says:

    4 stars
Pretty good, but I think 4 cups broth felt a tad thin for 2 packs udon. Next time I’ll either use less noodles or more broth. Still tasty though!

  124. User avatar Restless Draugr says:

    3 stars
Not a fan of miso, but this recipe was alright. I think the broth could be more flavorful. Just my opinion.

    1. User avatar Frost Giant says:

      4 stars
I actually think the broth is super flavorful! Maybe you just need to let it simmer longer? Or add more soy sauce? 🤔

  125. User avatar loren.hermiston says:

This is such a cozy bowl. The miso + sesame combo is perfect, and the tofu actually holds up well. I added a little chili oil at the end and it was chef’s kiss.

  126. User avatar alysa.nitzsche1968 says:

Pretty solid. I was worried about the miso being too strong, but whisking it with hot broth helped. Only thing: I used less mirin because I don’t like sweet soups.

    1. User avatar taina.greenholt says:

      5 stars
Totally get it—miso can be super punchy. Cutting back on mirin is a great call if you don’t want that sweet vibe. I’ve found simmering a bit longer also rounds everything out without needing more mirin.

  127. User avatar mel.harvey3 says:

Honestly this tastes like “healthy soup” in a good way. I’m not a big cook, but even I got it right. My kid ate a bowl, so win.

  128. User avatar dorla.price90 says:

OMG! This is my new go-to comfort food! Soooo good. 😋 I added some chili flakes for a kick!

  129. 2 stars
Green onions only? I feel like it needs ginger and garlic or it’s kinda plain. Also miso paste should be added after turning off the heat? I’m picky though.

  130. User avatar Glorfindel says:

So simple yet so delicious! I added some extra veggies from my garden. Will make again for sure!
