Ingredients
  

  • 2 pounds crawfish tails peeled and deveined
  • 1 cup onion chopped
  • 1/2 cup celery chopped
  • 1/2 cup bell pepper chopped
  • 1/4 cup butter unsalted
  • 3 tablespoons all-purpose flour
  • 4 cups seafood stock or water
  • 1 cup heavy cream
  • 1 teaspoon cajun seasoning or to taste
  • 2 tablespoons fresh parsley chopped
  • 2 cloves garlic minced

Instructions
 

  • In a large Dutch oven, melt butter over medium heat. Add the onions, celery, and bell pepper, and sauté until the vegetables are tender, about 5 minutes.
  • Stir in the garlic and flour, and cook for another 2 minutes, stirring constantly.
  • Gradually whisk in seafood stock, making sure to dissolve any flour lumps. Bring the mixture to a boil, then reduce heat to a simmer.
  • Add crawfish tails, cajun seasoning, salt, and pepper. Simmer for 45 minutes, stirring occasionally.
  • Stir in the heavy cream and parsley, and simmer for an additional 10 minutes.
  • Taste and adjust seasonings if necessary. Serve hot.

      Cajun seasoning varies a LOT. Some blends are basically salt + color. Next time, salt/pepper to taste first, then add cajun in small amounts. I also usually add extra garlic (like 3-4 cloves) and a splash of hot sauce at the end.

      Ah that sucks—bisque can definitely be bland if the seasoning isn’t punching. I’d try adding a pinch more cajun (or smoked paprika + a tiny bit of cayenne) and also make sure your stock has flavor. Old crawfish/stock makes a big difference too.
