Kale soup is a nourishing and comforting dish that brings together simple ingredients with deep, wholesome flavor. Known for its hearty texture and rich nutritional value, it has become a popular choice for those seeking both warmth and wellness in a single bowl. Whether enjoyed as a light meal or a satisfying starter, kale soup offers a balance of taste and health.
At the center of the dish is kale, a leafy green prized for its slightly earthy flavor and impressive nutrient profile. Packed with vitamins, minerals, and antioxidants, kale adds both substance and color to the soup. It is often paired with ingredients like potatoes, beans, garlic, onions, and broth, creating a filling and well-rounded dish that can be adapted to many preferences.
One of the defining qualities of kale soup is its versatility. It can be made vegetarian with vegetable broth or enriched with meats such as sausage or bacon for added depth. Some versions lean toward a rustic, chunky style, while others are blended into a smooth, creamy consistency. Herbs and spices can be adjusted to create anything from a mild, soothing flavor to something more robust and savory.
Kale soup is especially popular during cooler months, when its warmth and heartiness provide comfort. It is also appreciated for being easy to prepare in large batches, making it ideal for meal planning and leftovers. Over time, it has become a staple in many kitchens, valued for its simplicity, adaptability, and nourishing qualities. Kale soup is perfect with crusty bread.
Another appealing aspect of kale soup is its ability to support a balanced lifestyle. It is often included in healthy eating plans due to its nutrient density and low calorie content, making it a practical and delicious option for those focusing on wellness and mindful nutrition.
With its combination of flavor, texture, and health benefits, kale soup remains a timeless and satisfying dish.

Meh. I prefer chicken soup. No flavor here. I’m sticking to my recipe.
Chicken soup is the best, no doubt! But have you tried adding some spice to this kale soup? Might make it better?
I gotta disagree! This soup is super flavorful, especially with that garlic! 😋
This soup is fantastic! So hearty and healthy! I love the thyme flavor. Definitely a keeper!
Good health tip, eat your greens! 👌 But honestly, I prefer a creamier soup. Just my taste!
Quick and easy to make! I used chicken broth instead of veggie broth, still yummy! 🍲
Kale is gross! Why would anyone put that in soup? As if potatoes and carrots not enough. Smh.
I don’t know what went wrong, but mine turned out super bland. Maybe I shoulda added more spices?
Too bland for my taste. I used low-sodium broth so maybe that’s why, but even after salting it didn’t pop. Pepper helped a bit though.
Why is everyone raving about this? It was bland and tasteless. Even added more salt and it didn’t help. Sorry but nah.
This tasted bland to me. I used low-sodium broth like it says, but I ended up needing way more salt and maybe a pinch of chili flakes. Otherwise, good texture though.
So easy to make! I added some chili flakes for a kick. Will make again!
Glad you liked it! The chili flakes sounds like a great idea for some extra flavor!
This is the first kale soup I didn’t find bitter. The sautéed onion/garlic probably helped a lot. I’ll make it again for sure.
I followed it exactly and it was fine, but I felt like it needed more flavor—maybe a pinch of chili flakes or some garlic powder. Otherwise kinda bland for me.
I made this for my kids and they actually liked it! Surprised me!
That’s awesome! Kids can be so picky, but it sounds like a hit! 😊
Kale? Really? I cant imagine kids liking this. U must be lucky or something!
This soup is absolutely divine! So hearty and packed with flavor. I added some croutons on top, yum!
Kale? Yuck! Tried it and it tasted like grass. Not for me.
Not gonna lie, I thought kale would be rough, but simmering it 10 minutes helped. The potatoes made it feel more filling than I expected.
Wasn’t sure about the kale, but it really worked out. The taste is pleasantly surprising. “A keeper!”
I’m not usually a soup person but this one worked. Onion + garlic step smelled amazing. I used fresh thyme and it was way better than dried.
I tried it and it tasted like vegetables (no offense). Would’ve liked something creamy or with a little lemon. Could be better with chili flakes.
Kale soup feels like rabbit food. I know it’s healthy, but it’s not “wow” for me. Needs more seasoning or something creamy.
Made this tonight and it’s seriously cozy. The kale stayed nice and tender without turning bitter. I used fresh thyme and it tasted super fresh.
Soup good! Easy make. Kale nice and strong taste. I eat all! Yummy.
I love this soup! So healthy and filling! 🌱
Made this tonight and it’s genuinely comforting. The thyme with the kale is such a nice combo—my soup tasted like it came from a cozy little café.
Made this for the fam and they thought it was gross. Maybe they just don’t know good food? 😂
Not a fan of kale, but I gave this a shot. It was okay, but I think I prefer my soups creamy. Maybe I should just stick to chicken noodle.
Not gonna lie, it looks like something my grandma would make, and I mean that as a compliment. Simple, filling, and actually tastes like a real meal.
That’s exactly the vibe I’m going for—simple, cozy, and not just “healthy” for the sake of it. Glad it tastes like a real meal to you!
Absolutely love this soup! Perfect for cold days!
love it! gonna share it on my blog 🌱
I didn’t realize kale could taste so good. But are potatoes really necessary? Less carbs next time!
This soup is fantastic! I added some lemon juice at the end and it really brightened up the flavors. Definitely a keeper! 😉
Lemon juice? That sounds different! I gotta try that next time. 😄
This was too watery for my taste. Maybe less broth next time?
I had the same issue! A bit less broth would def help with the consistency. Thanks for the tip!
Pretty good, but I think 10–15 minutes wasn’t enough for my potatoes—mine were a little firm. Next time I’ll simmer longer or dice smaller.
It was okay, but I found it a bit bland. Maybe more spices would help.
I totally agree! A bit more seasoning could really liven it up. I added some chili flakes and it was much better!
Made this tonight—so comforting. The kale stays nice and tender, and the thyme really rounds it out. I added a squeeze of lemon at the end and it was perfect.
1 pinch salt to taste is too vague lol. I ended up guessing and it was either perfect or slightly salty—hard to tell. Still, it came together fast and my whole kitchen smelled good while it simmered.
Made this tonight—so cozy. The thyme + kale combo is legit, and the potatoes make it feel hearty instead of “just greens.” I added a squeeze of lemon at the end and it really brightened things up.
Five stars for the instructions—they’re clear and the timing worked. I rinsed and chopped the kale carefully and it turned out tender without getting mushy.
Thanks! I’m glad the timing worked out for you—kale can go mushy fast if it’s over-simmered. Tender but not sad = perfect 👍
Kale soup? More like kale sludge. 😒 No thanks.
I followed it exactly… except my garlic burned a little 😬 Still tasted okay, but next time I’ll keep an eye on it. Onion step was perfect though.
Two tablespoons olive oil? Seems like a lot. I used less and it still worked. Maybe 1 tbsp would be enough unless you really like that olive oil taste.
I followed the recipe but used collard greens instead. Is that even the same? 😅 It still turned out fine! Gonna try it again with kale next time.
I made it exactly as written and it’s kinda… bland? Like, good base but needs something. Next time I’m adding lemon juice or a dash of chili flakes.
Yeah I agree—this one’s a solid base but kinda under-seasoned. I usually add a squeeze of lemon at the end and it wakes everything up.
I’m surprised it’s bland if you follow the salt/pepper “to taste.” Did you use low-sodium broth? Maybe add more salt or even a bay leaf while it simmers.
Tastes like healthy peoples food, lol. Very… veggie. Not my cup of tea.
This was super comforting and way healthier than I expected. The kale stayed nice and tender, not chewy. I added an extra pinch of pepper and it really woke up the flavor.
Yes!! I’m always surprised when kale soups don’t turn out chewy—yours sounds like the perfect fix. The extra pepper tip is spot on too.
I tried it and mine was good, but my kale got a bit chewy after like 20 minutes. Maybe I cut it too thick? Still, flavor was nice—pepper helps a lot.
Kale soup sounds healthy but I was worried it’d taste like grass 😅. Surprisingly it doesn’t. I simmered a little longer so the kale softened more.
Huh, good to know! Mine usually tastes a little… earthy/like lawn clippings, even when I chop fine. Maybe I’ll try simmering longer like you said. Also do you cover the pot or leave it open?
I had the same fear with kale 😅 but longer simmer really does the trick. I love that it doesn’t come out bitter when the kale softens.
Made this tonight and it’s actually really comforting. The kale stays nice and tender, and the thyme gives it a cozy flavor. I added a squeeze of lemon at the end and it popped.
Love hearing this! The lemon at the end sounds like a perfect little brightness—glad the kale stayed tender too.
I think 10 minutes for the potatoes might be short depending on how diced they are. Mine were a little firm, so I simmered longer and it got better.
I added a can of white beans because I wanted it more filling. Now it’s basically a meal—thicker, heartier, and still tastes clean.
Pretty good base soup. I added a splash of lemon at the end and it made the flavor pop. Would recommend if you like brighter taste.
Love this idea—lemon at the end is such a game changer. Brightens up kale soup a lot. I’ll definitely try it!
I followed it exactly and it was great—no complaints. I used fresh thyme and it smelled amazing while simmering. Will cook again!
Pretty good and simple. I used curly kale and it held up well, but next time I’ll chop it a bit smaller so it softens faster. Also, I needed more pepper than the recipe called for.
Curly kale is cool, but I think the recipe is kinda off on timing. 10 minutes for kale alone seems short. I usually simmer longer and add pepper at the end so it doesn’t get bitter.
Nice! I’ve found kale can be a little tough if the pieces are big—chopping smaller totally helps. And yeah, pepper is never “just a pinch” in my house 😄
I’m not gonna lie, I forgot the thyme at first. Soup turned out fine anyway, just… less fancy. Added it later and it improved a lot.
Kale soup sounds healthy but bland… mine needed more seasoning. Like, I added salt and pepper and still meh. Anyone got a cheat?
Made this tonight—super comforting. The kale stays nice and tender, and the thyme gives it a cozy flavor. I added a squeeze of lemon at the end and it really brightened everything!
I never thought kale soup could be this easy. The garlic + thyme combo is legit. Family asked for seconds.
Wow, same here—didn’t expect kale to turn out that good with such a simple routine. The garlic + thyme tip is spot on!
Not bad at all, but mine came out kind of bland until I salted more than “a pinch.” Could use a little more pepper or maybe chili flakes for kick.
5 cups is way too much kale for my pot, I guess. I ended up using more broth because it got thick. Tasty, but portion math is confusing.
Soooo healthy. My kids even ate it, which is basically a miracle. I told them it was “green spaghetti soup” lol.
Haha “green spaghetti soup” is the move 😄 Love that your kids actually ate it—kale can be such a tough sell. I’m definitely trying this one!
Pretty good, but I think 10 minutes for the kale might be a bit short depending on how thick you chop it. Next time I’ll simmer a little longer and maybe add more pepper.
Healthy, yes, but honestly kind of bland until I salted more. Maybe my kale was too bitter? Still ate it all though.
Tastes good, but I think 10 minutes for the kale might be too short depending on how chopped it is. I simmered longer and it came out perfect.
Pretty good! I used chicken broth instead of veg (oops) and it still tasted great. Kale stayed a little chewy after 10 minutes, so next time I’ll simmer 15.
Chewy kale after 10 min makes sense… kale’s kinda tough. I think you should just chop it way smaller or cook the kale longer like you said. Also, did you slice the carrots thin? Mine get tender quickest that way.
Glad it still worked with chicken broth! Kale can be stubborn—15 minutes sounds like a solid tweak. I usually cover the pot when I simmer the kale so it softens faster.
I’m not gonna lie, I was skeptical because kale can get kinda bitter in soups. But it turned out balanced—potatoes really help. Would make again.
Kale in soup sounds healthy, but I tried it once and it tasted like “grass” 😂 I guess the key is the potatoes. Do you chop the kale pretty small or keep bigger pieces?
Same! I always worry kale gets bitter too, but the potatoes really do mellow it out. I love that you stuck with it—this is one of those soups that’s better the next day too.
This tastes healthy, but I’m not sure it has enough flavor without something else. Maybe I under-salted? I followed the amounts exactly. Could use a splash of vinegar or chili flakes, I think.
Kale soup is kinda boring… like I love kale but this was meh. The broth tasted a little bland even though it was low sodium. I think next time I’ll use homemade stock or add a bay leaf.
Honestly, kale soup sounds kinda sad, but I tried it anyway. Wow—actually really tasty. I did use chicken broth because that’s what I had and it still worked.
Perfect. Easy.
This turned out really comforting. The potatoes make it hearty, and the kale stays nice and tender. I added a squeeze of lemon at the end—so good.
Pretty solid base soup. I might cut the onion to 1 medium next time since I like it less sweet. Still, it tastes fresh and not too salty (used low-sodium broth).
I thought kale would turn gross and mushy, but it stayed nice. Just don’t overcook it. Also, extra virgin olive oil smells amazing in there.
Not bad, but I’m skeptical about “low sodium” broth—mine was still salty. Also I chopped the onion too chunky and it took longer than 5 minutes.
Totally get that—“low sodium” still varies a lot by brand. I’ve had it stay salty too. Also yeah, chunky onion definitely extends cook time; 5 minutes only works if they’re pretty small. Next time I’ll cut them finer.
This came out super comforting. I love that it’s simple but still feels hearty—those potatoes make it. I added extra pepper and it was perfect.
Pretty solid, easy weeknight recipe. I used baby potatoes and it still worked great. Would recommend adding a squeeze of lemon at the end for brightness.
Kale is expensive where I live 😭 but this recipe uses a decent amount and stretches well. Would make again for meal prep.
Pretty solid soup. I followed the steps but needed a bit more broth since my potatoes sucked up liquid. Still tasted great and not too salty.
Not gonna lie, kale soup sounds kinda sad… but this was actually tasty. My kids went back for seconds. Thumbs up.
Not gonna lie, I was skeptical about kale + potatoes, but it actually works. Next time I might add beans or a little chili flake for more kick.
Okay I’m convinced 😄 I didn’t think kale would play nice with potatoes, but soup is forgiving. Beans + chili flake sounds amazing!
Kale and potatoes… I’m still kinda side-eyeing it, but I’ve learned to trust soups lol. Would’ve added beans too for sure.
5/5! easy dinner.
5/5 is generous… but the steps are super straightforward. I did add a little more garlic though, maybe next time use more kale? Mine stayed a bit chewy.
Right? This is exactly the kind of dinner I can actually pull off on a weeknight 😄
The recipe is easy, but I found it a bit bland. Salt/pepper helped, though I wish it had a bit more flavor like a bay leaf or smoked paprika.
Totally get that—kale soup can be kind of “healthy but meh” without a deeper seasoning. Smoked paprika and a bay leaf sound like exactly what it needs!
I cooked it like the recipe says and it was fine… idk maybe my kale was just more flavorful. I did add a pinch more salt and a squeeze of lemon at the end and that helped a lot.
2 tablespoons oil feels like a lot to me for soup. Also, kale takes foreverrr to get tender—maybe I cut it too big.
2 tbsp does sound like a lot at first, but in a soup it usually helps sauté the onion/garlic and adds body. If you want, you could drop it to 1 tbsp and it’ll still work.
