Hash Brown Pancakes

November 7, 2025

Hash Brown Pancakes are a delicious meeting point between crispy comfort and golden simplicity. They feel like breakfast nostalgia wrapped in a new form, familiar yet exciting, humble yet unapologetically craveable. If you’ve ever wondered what would happen if hash browns and pancakes lived happily under the same roof, this is the flavorful, slightly indulgent answer.

Unlike classic crepes, these are not sweet or fluffy in the traditional sense. They lean toward savory, mixing the crispy, shredded potato goodness of a hash brown with the structure and shape of a pancake. The result is a tender interior, golden edges that whisper when you bite into them, and a buttery aroma that fills the kitchen like a gentle wake up call.

The brilliance of this dish lies in its simplicity. Potatoes take center stage, grated finely, squeezed of excess moisture, and blended with eggs, a touch of flour or starch for binding, and a seasoning mix that wakes everything up. Salt and pepper are essential, but garlic powder, onion granules, paprika, or a subtle pinch of cayenne add personality without stealing the spotlight. Some cooks fold in grated cheese for extra richness, others keep it pure, letting the potatoes shine in their most honest form.

When spooned onto a hot pan, the batter spreads into soft circles, sizzling gently at the edges. Patience is rewarded here: flipping too soon risks losing that perfect crust, the crisp lacework sealing in the tender middle. Once flipped, the pancakes finish cooking like tiny kitchen miracles, turning an everyday potato into a meal that feels both nostalgic and new.

The best part is how versatile they are. Topped with sour cream and scallions, they channel crispy diner vibes. Served with eggs and avocado, they become trendy brunch territory. Add smoked salmon and a dollop of yogurt, and suddenly you’re in elevated breakfast heaven. Even with a drizzle of maple syrup, for those who love sweet against salty, they somehow make total sense.

Hash Brown Pancakes are proof that comfort food doesn’t need to be complicated. With humble ingredients and a few minutes on the stove, something familiar transforms into something unforgettable. Crispy, comforting, and infinitely stackable, they remind us that breakfast is not just a meal, it’s a mood.

Hash browns should be a side dish, not a pancake. Just saying.

    2 stars
I don’t get why people enjoy pancakes made from potatoes…sounds weird.

    1. 5 stars
These sound amazing! Can’t wait to hear how yours turn out. Enjoy!

  8. 2 stars
I think the egg amount is too much, it made them too moist and weird. Stick to regular pancakes instead.

  9. 4 stars
These are good but I can’t believe how much oil you use. Is that healthy?

  10. User avatar joane.greenfelder59 says:

    3 stars
Not bad, but the texture was kinda mushy for me. I like my pancakes fluffier.

  11. User avatar myong.buckridge50 says:

    5 stars
Super easy to make! Will definitely be making these again.

  12. 1 star
I don’t get the hype. They’re just pancakes made of potatoes. Whatever.

    1. User avatar camie.nolan93 says:

      5 stars
Hash browns are classic! You gotta try them, they’re way better than regular pancakes.

  13. User avatar van.stracke says:

    3 stars
Tasty but a bit bland. Maybe more spice next time?

  14. User avatar everette.boyer says:

    5 stars
These hash brown pancakes are amazing! So crispy and flavorful! I added some cheese, and wow, just wow!

  15. 2 stars
Uh, mine fell apart while cooking. Did I do something wrong? 😕

My family love it! Great way to use up leftover potatoes! Also try with some ketchup!

  17. User avatar glady.kohler says:

The oil used is way too much, I think I’ll try baking them next time.

  18. User avatar lonna.gusikowski85 says:

    3 stars
Idk, they were okay but kinda bland. Maybe add more spices next time?

  19. 4 stars
Super easy to make! I used sweet potatoes instead, and they turned out delicious!!

    2 stars
Meh, just grated potatoes in pancake form. Not sure what’s so special. 😕

  21. User avatar Deku Tree Sprout says:

Hash browns are not pancakes, youre wrong.

  22. 5 stars
Best breakfast ever! I made these for my kids, and they loved it! Definitely making again!

  23. User avatar glinda.hills92 says:

    4 stars
Easiest recipe ever! I added cheese and it was yum. Thanks!

  24. 4 stars
These were pretty good, but mine got a little soft and didn’t crisp as much as I hoped. I think I may have used too much flour? Still tasty with ketchup.

    1. User avatar Glossu "Beast" Rabban says:

      5 stars
Aw yeah, I’ve had that happen when the mix is a bit too wet—extra moisture from the potatoes can make them softer. Next time try squeezing the grated potatoes in a clean towel after rinsing, and make sure the pan oil is hot before adding. Also, press them a little thinner!

    2. User avatar Falmer Archer says:

      4 stars
“Ketchup fixes everything” lol. 😄 If yours got soft though, I’d suspect either not hot enough oil or the pancakes were too thick. I do 3 min first side, flip, then another 3–4. Maybe let them brown longer before flipping.

  25. 3 stars
Not bad but I’ve had better. I would add cheese next time. Also maybe add more pepper? Idk, just my taste.

  26. User avatar Porsha Hauck PhD says:

    1 star
Yuk! I don’t like it one bit. Gonna stick to my normal breakfast.

  27. 1 star
Why would anyone put potatoes in pancakes? Stick to regular ones!

  28. 2 stars
My potatoes were watery (didn’t rinse super well). The batter was runny and the pancakes didn’t crisp—more like flat omelet potatoes. Ugh.

  29. User avatar Hillman Hunter says:

    4 stars
I was skeptical at first, but these pancakes turned out great. My kids loved them!

    1. User avatar dusty.collier1982 says:

That’s awesome to hear! I was wondering if my kids would like them too. Now I’m excited to try! 🎉

  30. User avatar tijuana.kohler1980 says:

    2 stars
Yeah, not a fan. Could use more seasoning or something. Kind of bland.

  31. User avatar casey.swift94 says:

    5 stars
These came out super crispy on the outside and soft inside—exactly what I wanted. The onion is a great touch too!

  32. 5 stars
Yum! Perfect for breakfast! My kids loved them! Will make again!

  33. User avatar freeman.olson50 says:

    3 stars
What’s the point of putting onions in it? Made it taste weird. I prefer mine without!

  34. User avatar barrett.roob23 says:

    3 stars
Good recipe but can someone tell me what hash browns means? 🤔

  35. User avatar lucile.auer57 says:

    4 stars
Crunchy outside, soft inside—exactly what I wanted. Also easy enough to whip up on a week morning. Thumbs up.

  36. 2 stars
Mine burnt easily. Maybe my pan was too hot? I’ll try again with less heat.

  37. User avatar rich.landlord says:

    3 stars
The recipe seems easy but can you use frozen hash browns? Asking for a friend.

  38. User avatar angel.brown says:

    4 stars
Can I use sweet potatoes instead? I’m allergic to regular ones.

  39. 3 stars
I’m skeptical about using flour with grated potatoes—feels like it could get gummy. Surprisingly it didn’t, though mine were slightly dense.

  40. 4 stars
Pretty good, but mine stuck a bit even though the skillet was “non-stick.” Next time I’ll probably use slightly more oil or preheat longer.

  41. User avatar sarita.greenfelder says:

    5 stars
So easy to make! Just like my grandma used to make. Will definitely make again.

    1. User avatar wendell.dickinson17 says:

      2 stars
Hash brown pancakes? Sounds weird. Wouldn’t it just be better to make regular pancakes? 🤔

    2. User avatar Meriadoc Brandybuck says:

      5 stars
That’s awesome! I love that it reminds you of your grandma. I can’t wait to try this recipe myself!

  42. 2 stars
I tried this and they stuck to my skillet even though it says non-stick. I had to use extra oil and they broke apart. Might be user error but still.

    1. User avatar hortense.murazik says:

      4 stars
Ugh, that’s annoying. Non-stick usually still needs enough preheating and a light oil swipe—hash browns are super starchy. Did you rinse and dry the potatoes well? Moisture can make them gluey.

    2. User avatar nickole.carroll31 says:

      2 stars
Sounds like user error to me. Non-stick means don’t overcook and don’t use too high heat. Also 1/4 cup is big—maybe they’re sticking because they’re thick. Try thinner.

  43. 2 stars
I don’t know, just didn’t turn out right for me. The flavor was off. Maybe I did something wrong?

  44. User avatar bryant.kovacek says:

    4 stars
Real good! This is my new go-to for brunch. 🍽️

  45. User avatar eryn.batz1975 says:

    4 stars
Yum! I added cheese to the mix and they were a hit at breakfast!

  46. User avatar dylan.hilpert2 says:

    1 star
Hash browns are supposed to be crispy, not pancake-ified! 😡

  47. User avatar Dwarven Centurion says:

    5 stars
These are amazing! My kids loved them, and I didn’t even tell them they were potatoes! 😂

  48. User avatar ty.flatley1954 says:

    1 star
This is just a potato fritter, not pancakes!

  49. 2 stars
I tried these and they stuck a bit even though my skillet is non-stick. Maybe my heat was too high? Still edible, but I was annoyed.

  50. User avatar orville.murazik33 says:

    2 stars
Idk about the flour amount—felt like it made them more like eggy fritters than hash browns. Flavor was ok, texture was off.

  51. User avatar Paul "Muad'Dib" "Usul" Atreides says:

    4 stars
Hash browns in pancake form?? Why has no one thought of this before?!

  52. 5 stars
These turned out super crispy on the outside and soft inside. I added a tiny pinch of garlic powder too—10/10 comfort food.

    1. 5 stars
Love this—mine were exactly like you said: crunchy outside, tender inside. I also added garlic powder and a pinch of paprika… instant upgrade. Thanks for sharing!

    2. User avatar hye.wilkinson7 says:

      3 stars
I tried it but I think my oil temp was off. The outside got a little too brown way fast, and the inside was still kinda raw. Next time I’ll lower the heat and cook longer. Still tasty though.

  53. 4 stars
They taste like hash browns but in pancake form—fun idea! I only cooked 2-3 minutes per side and they were still golden, so maybe my pan runs hot.

  54. User avatar loree.stehr says:

    5 stars
Delicious!! I added cheese and it was even better. Will make again! 🧀

    1. User avatar wellRespected says:

      4 stars
Cheese sounds like a great addition! I might try that next time. How did it taste with the cheese?

    2. User avatar Ms. Dwain Johns says:

      2 stars
Hash browns and pancakes? Sounds weird to me. Why would you mix em up?

  55. User avatar Mrs. Damon Brakus says:

    3 stars
Not bad, but I think they need more seasoning. Maybe try adding garlic?

  56. 4 stars
Pretty tasty, but mine were a little soft in the middle. Next time I’ll wring the potatoes more and cook a tiny bit longer.

  57. User avatar Spriggan Earth Mother says:

    2 stars
I followed the recipe to the letter but it turned out really soggy. What did I do wrong?

  58. User avatar Falmer Warmonger says:

    5 stars
Made these for breakfast and they turned out super crispy! I squeezed the grated potatoes a bit first and that probably helped a lot.

  59. 5 stars
Tried making this for breakfast and it was a total hit with the kids! Will definitely be making again.

  60. User avatar wilson.murray57 says:

    2 stars
Eh. I’ve had better. Just stick to regular pancakes lol.

  61. User avatar Wellington Yueh says:

    5 stars
Whoa! These are the best! Crispy outside and soft inside, mmm!

  62. User avatar arnoldo.dicki2025 says:

    5 stars
Perfect for breakfast or anytime! Thanks for sharing!

    1. User avatar rich.landlord says:

      2 stars
I dunno, sounds kinda greasy to me. Do they really work out? Like, won’t they fall apart when cooking?

    2. User avatar flor.berge29 says:

      5 stars
These sound amazing! I love hash browns and pancakes, so this is a perfect combo! Can’t wait to try them!

  63. User avatar Faye Kinnitt says:

    4 stars
Yummy! But they didn’t look like the pic. Mine were brown like my dog. LOL

  64. User avatar Dr. Lurlene Torp says:

    4 stars
Not gonna lie, 1/4 cup batter per pancake made mine huge. I think smaller ones would crisp better. Flavor was good, just the size was a problem.

  65. 5 stars
Yummy! Just had them with a side of eggs, perfect breakfast!

    1. 5 stars
That sounds delicious! Eggs are the perfect match for those pancakes! I’m definitely trying this soon.

    2. 2 stars
Sounds good, but isn’t pancakes supposed to be sweet? Hash browns with eggs is a weird combo!

  66. User avatar barney.gleichner46 says:

    5 stars
These pancakes were amazing! So crispy and delicious! Will definitely make them again.

  67. User avatar oPandariaNo says:

    2 stars
I followed the recipe exactly and honestly it was meh. The texture felt kinda eggy and the potatoes didn’t hold together great. I’ll try adding less oil next time.

  68. User avatar elmira.dare says:

    4 stars
I didn’t have flour, so I used cornmeal. They were still yummy!

  69. User avatar harland.kuhn says:

    4 stars
Hash browns in pancake form? Genius! Didn’t have onions, but still turned out ok.

    1. User avatar noel.mante96 says:

      3 stars
Sound good, but can you really call it a pancake if it’s got potatoes? 🤔

    2. User avatar matthew.douglas says:

      5 stars
I tried it too, and wow, these are amazing! Who needs regular pancakes? 😂

  70. 5 stars
These were amazing! So crispy and flavorful!

    1. User avatar maybell.gislason says:

      5 stars
I’m glad you liked them! They are such a great twist on regular pancakes. 😋

  71. User avatar dwain.wilkinson says:

    5 stars
Wow these are a game changer! Perfect brunch dish. My kids loved them too.

  72. User avatar refugio.wisoky says:

    3 stars
Not gonna lie, mine stuck to the pan a little even though it’s non-stick. Next time I’ll use a little more oil and flatten thinner.

  73. 2 stars
Mine fell apart when flipping! I think my oil temp was too low. Still tasty, just not picture-perfect pancakes.

    1. User avatar octavio.ortiz50 says:

      5 stars
Maybe you made them too thick or flipped too early. Also, if the potatoes weren’t really squeezed/dried after rinsing, it can turn gummy and fall apart. Try hotter oil and a longer first side.

    2. User avatar susannah.sporer41 says:

      4 stars
Ugh, I’m sorry! That sounds exactly like oil temp or not enough crisping time before flipping. I usually wait until the edges look set and you can slide the pancake easily.

  74. User avatar inge.stehr says:

    5 stars
These taste like regular hash browns but in pancake form. Honestly, I love that idea. Would eat again!

  75. 5 stars
These hash brown pancakes are so delicious! I added some cheese and they turned out amazing.

  76. User avatar sidney.marks40 says:

    3 stars
Five stars for the idea but I used the wrong kind of potato and it got mushy. Still… i ate them all lol

  77. User avatar enrique.walter9 says:

    3 stars
The onion makes this recipe weird. I prefer plain hashbrowns.

  78. User avatar rusty.stamm62 says:

    2 stars
Too greasy for my taste. I think I’ll stick to regular pancakes.

  79. User avatar Prostetnic Vogon Kwaltz says:

    4 stars
Solid recipe, but my potatoes were really watery even after rinsing. I squeezed them in a clean towel and that fixed it—then they fried beautifully.

  80. User avatar Errol Gerhold I says:

    4 stars
I followed it, but 3-4 minutes per side felt short for my stove. I had to cook longer until truly brown. Still tasty though.

  81. User avatar christal.leuschke2006 says:

    2 stars
I don’t think these taste like real pancakes at all. Just grated potatoes, barely any flavor.

    1. User avatar ALTplusF4 says:

      4 stars
I totally get what you’re saying, but they are meant to be different! Hash browns are tasty too, just in a different way.

  82. 2 stars
hmm i dont know… i feel like flour maybe too much? mine was kinda bready instead of crispy hash. will try less flour next time

  83. 3 stars
How do I make them not fall apart? Mine broke when flipping. Help!

  84. 3 stars
Can I sub shredded sweet potato? I’m not sure if it will work the same, but the idea sounds good. Also do you really need 2 cups? feels like a lot lol

  85. User avatar leroy.hilpert1998 says:

    1 star
Didn’t really work for me… I am not good at cooking tho.

  86. User avatar chia.stanton says:

    4 stars
Not bad, but 3-4 minutes per side might be different depending on your stove. I had to cook mine longer to get a proper golden crust.

  87. User avatar clark.cruickshank says:

    3 stars
I followed it pretty much exactly, but the patties were a little wet. I think I didn’t squeeze the potatoes enough after rinsing. Still tasted good though.

  88. 3 stars
Not bad, but 1/4 cup is way too much for my pan—mine spread and got messy. Portion size matters a lot.

  89. 2 stars
Too much flour? Mine felt kinda bready. Might try with less flour or more potato next time.

  90. User avatar Eddie the Computer says:

    5 stars
So simple and delicious! I used sweet potatoes instead.

  91. User avatar jeremiah.mcdermott says:

    5 stars
Love the idea of turning hash browns into pancakes. The onion flavor really pops. I served with sour cream and it was perfect.

  92. User avatar kyung.homenick says:

    4 stars
Easy to follow, and the batter holds together pretty well. I used a cast iron skillet and they browned faster, so I had to adjust the time.

  93. User avatar juana.howe88 says:

    1 star
I think I messed up the recipe somehow. They fell apart in the pan. Maybe too much oil?

  94. User avatar ahmed.heidenreich says:

    5 stars
These are amazing! I added some cheese and they turned out so good!

  95. User avatar Maryrose Johnston says:

    5 stars
    So good 😋

  96. User avatar Gus Tofwin says:

    3 stars
Pretty good, but mine didn’t crisp as much as I expected. I think I used too much onion moisture. Still tasty and filling though.

  97. User avatar Dr. Marnie Swift says:

    4 stars
I don’t usually measure salt “to taste,” so I ended up guessing and maybe overdid the pepper. Still good though—nice and savory.

  98. User avatar Kindred says:

    2 stars
I tried these and my pancake keep falling apart… i think i mixed too wet potatos. Next time I will rinse less and wring them more. Still gonna make again though.

  99. User avatar wellRespected says:

    5 stars
Turned out super crispy on the outside and tender inside. I squeezed the grated potatoes a bit before mixing and it helped a lot. Onion flavor is perfect too!

  100. User avatar Galadriel says:

    5 stars
Crispy and golden! Can’t get enough of this. Thanks!

    1. User avatar fredric.zulauf says:

      2 stars
I tried this recipe but it turned out more mushy than crispy. What went wrong?

    2. User avatar jamal.hauck says:

      5 stars
So glad you loved it! They’re my favorite breakfast too!

  101. User avatar Frodo Baggins says:

    4 stars
I followed it pretty closely, but my pancakes stuck a little even though the pan was non-stick. Still tasted good though—next time I’ll use a bit more oil.

  102. User avatar genia.stiedemann58 says:

    4 stars
I burnt the first batch because my skillet runs hot. But once I lowered the heat, they browned evenly. Good flavor from the onion and pepper.

  103. 3 stars
I followed it mostly, but my mix was a little wet—maybe my potatoes weren’t dried enough. Still tasted good though, just more like skillet cakes than pancakes.

    1. User avatar isabelle.heidenreich says:

      5 stars
Totally makes sense—wet potatoes will throw off the whole texture. Next time try squeezing the grated potatoes in a clean towel (or even blotting really well) before mixing. Love that you still got a tasty result!

  104. User avatar augustus.hartmann says:

    2 stars
Why pancakes? I mean… hash browns should just be fried and done. I tried this and it feels like extra steps for the same thing, lol.

  105. User avatar Duncan Idaho says:

    5 stars
Made these for breakfast and they turned out perfectly crispy! I grated the potatoes a bit finer and squeezed out extra moisture—huge difference. Delicious with sour cream.

    1. User avatar barbera.von says:

      5 stars
Nice! I also find that squeezing out the moisture is the whole secret. Crispy every time when you do that.

    2. User avatar geoWizard says:

I tried mine but they got kinda soggy—maybe I didn’t squeeze enough. Still good though with sour cream 😅

These came out super crispy on the outside and tender inside. I used a little extra pepper because why not. Will make again for sure!

Good concept, but mine stayed a little soft in the middle. I think I didn’t squeeze the grated potatoes enough after rinsing—next time I’ll wring them out.

Whoa, 3-4 minutes per side was spot on for my pan. The onion flavor really comes through. Great comfort food.

Hash brown pancakes sound fancy but why not just make normal hash browns? 😅 Mine were kinda thick and didn’t crisp as much.

Made these for breakfast and they turned out super crispy! The onion really helps, and 3-4 minutes per side was spot on for my pan.

Not bad, but 3-4 minutes per side felt off for my stove. I had to cook longer to get them golden. Also, could use a little more seasoning for my taste.

These came out perfectly crispy on the outside and soft inside. I didn’t have fresh pepper but it still tasted amazing—definitely making again!

These came out so crispy on the outside and tender inside. I added a little garlic powder and it tasted like a diner breakfast!

The flavor is nice but I found them a bit salty. “Salt or to taste” is tricky—could maybe list a specific amount for beginners.

Wow, this is an easy breakfast. My kids actually ate it without complaining (rare!). I used black pepper “to taste” and didn’t regret it.

Love that your kids actually ate it—rare win! 😄 The black pepper tip is spot on too. I’m definitely trying this.

Pretty good! I squeezed the grated potatoes a bit more so they weren’t watery, and that helped a lot. Would make again with some cheddar inside.

Not gonna lie, 1/4 cup scoop is too small. They cook uneven and break apart when flipping. Also, is the 3-4 minutes really enough? Mine took longer.

    1. 5 stars
Totally agree—1/4 cup is tiny. I’ve tried bigger scoops and they hold together way better, especially for flipping.

Honestly, I didn’t rinse the potatoes well (oops), and they still turned out decent. Crispy outside, soft inside. Not bad!

These were weirdly good for something so simple. Also, 1/4 cup scoop size made nice uniform pancakes.

My partner says these taste like diner food 😄. I added a bit of garlic too and it was even better.

I’m skeptical about only 1/2 cup flour for 2 cups potatoes, but it actually held together fine. Next time I’ll season the oil with a pinch of garlic powder.

I’m surprised too—half cup sounds kinda low. But if it still held together, I believe it. Next time I’m gonna squeeze the grated potatoes a bit more so they don’t get watery.

    2. User avatar florentino.nolan says:

Totally get the skepticism! I’ve found potato moisture can vary a lot, so that extra binding from the eggs + even mixing makes a big difference. Glad it worked for you—garlic powder in the oil sounds like a great upgrade.

I followed it exactly and they were good, but not as golden as I expected. Next time I’ll turn the heat up slightly and maybe use a bit less oil.

Pretty easy recipe, I was surprised. My husband asked if we could have them again tomorrow. So yeah… win.

Right?! I didn’t expect it to come out that crispy either. Making these again tomorrow is the ultimate compliment 😄

Hash browns should be shredded and pan-fried—pancakes sounds weird to me lol. Still, the texture was decent and I ate them all.

For the record, I think rinsing the potatoes is a mistake—should squeeze them dry or you’ll never get crispy. Mine were kinda soggy at first but I fixed it by adding a little extra flour.

My kids ate them like crazy. I didn’t even measure the salt, just went by taste. Definitely a keeper.

    1. 5 stars
Love this! My family devoured them too—crispy outside, soft inside. I also just “seasoned with my heart” and they still turned out great. Definitely saving this recipe.

  128. 2 stars
Not gonna lie, mine stuck a little to the pan even though I used non-stick. Also, I forgot to rinse the potatoes and it was kinda watery. Fixable.

    1. User avatar bettyann.weber says:

Good to know it’s fixable! Next time maybe squeeze the grated potatoes in a clean towel after rinsing so they’re not watery, and let the pan fully heat before adding. Even with non-stick, oil + a short cook time can still make them stick a bit.
