Grilled Shrimp and Bok Choy Salad

May 8, 2026

Grilled Shrimp and Bok Choy Salad is a vibrant, satisfying dish that’s full of contrasting textures and bold, fresh flavors. It’s quick to prepare and light enough for summer lunches or warm evenings, while still packing enough protein and crunch to leave you full.

The shrimp are the highlight. Choose large, peeled, and deveined shrimp, and marinate them briefly in a mixture of soy sauce, garlic, ginger, lime juice, and a little honey. This combination adds a sweet-savory depth that enhances the natural flavor of the shrimp without overpowering it. Once marinated, grill them over high heat for just a couple of minutes on each side until they’re pink and lightly charred. The caramelization from the grill gives the shrimp a delicious smoky edge.

Bok choy is the perfect base for this salad. When grilled, baby bok choy becomes slightly charred on the outside but remains tender and juicy inside. Halve them lengthwise and brush with sesame oil before placing them on the grill. This method enhances their mild bitterness and brings out a satisfying, earthy note that balances the sweetness of the shrimp.

To build the salad, combine the grilled shrimp and bok choy with thinly sliced red chili, shredded carrots, cucumber ribbons, and chopped fresh herbs like cilantro or Thai basil. A scattering of roasted peanuts or cashews adds crunch and richness, while lime wedges on the side let you adjust the acidity to taste.

The dressing should be punchy and bright. A mix of lime juice, fish sauce, a touch of sugar, and toasted sesame oil works beautifully. You can also add a dash of chili sauce for heat.

Grilled Shrimp and Bok Choy Salad is flavorful, fast, and flexible. Serve it on its own or pair it with jasmine rice or vermicelli noodles for a more filling meal. It’s the kind of salad that feels indulgent but is refreshingly healthy at the same time.

I followed the recipe but ended up burning the shrimp. 😭 How do you keep them from drying out?

    1. User avatar milford.volkman9 says:

      4 stars
Maybe try cooking them for less time? Shrimp cook really fast! Or you could marinate them to keep them juicy. Good luck!

    2. User avatar ina.trantow says:

      5 stars
I just use a thermometer, shrimp are done at 120F! Otherwise it’s too easy to overcook. Hope that helps!

Really easy and soooo good! I added avocado because why not? 🍤🥗

  4. User avatar alphonse.bartoletti says:

Seems too complicated for a simple salad. Can I just toss everything raw? 🤔

  5. User avatar kaylee.jones55 says:

    3 stars
Why grill the vegetables? I think steaming them would taste better.

    1. User avatar Brian Rath PhD says:

      4 stars
Steaming might make them mushy! Grilling brings out a nice flavor! 🥗🔥

  6. 4 stars
Was skeptical at first. Bok choy? Really? But wow, this was surprisingly good!

  7. User avatar ArabianNights says:

Yum!!! I added some hot sauce for extra kick! This is my new favorite!

Kinda bland for my taste. I added some hot sauce, and it was better but still not my fave.

    1. User avatar Charles Darwin says:

      4 stars
I totally get that! Sometimes recipes need a little something extra. Hot sauce is always a good choice! 💪

Bland? Really? I thought it was great! Maybe you just need to season it better next time.

    3 stars
It was okay. The shrimp were nice, but the salad wasn’t my favorite. Maybe less cilantro next time?

  24. 1 star
Uh… what is bok choy? Is that a type of cabbage? Can I use lettuce instead?

  25. 5 stars
Yum! Will make this again. Can I sub the shrimp for chicken? Asking for a friend.

    1. User avatar buffy.swift71 says:

      5 stars
You can definitely substitute chicken! Just make sure to cook it longer. Chicken’s great with the same flavors!

    2. 3 stars
Idk, seems like chicken would change the whole dish. Shrimp is so light and tasty, chicken might be too heavy.

  26. User avatar tamera.cremin says:

Took too long to prep and my kids didn’t like it. Not making it again.

    1. User avatar Dr. Scotty Bradtke says:

I’m sorry your kids didn’t like it! Maybe try adjusting the flavors a bit next time? More sweet stuff might help!

Grilling shrimp is sooo easy! Thank you for this! I never knew bok choy could taste this good grilled.

  28. User avatar rufina.kunde0 says:

    5 stars
Delicious!!! 😍 The dressing is simple but full of flavor!

  29. 2 stars
I don’t know how you can eat that raw bok choy. It look so weird. I like it better boiled!

    1. 4 stars
I totally get that! Raw bok choy isn’t for everyone. But grilling it brings out such a nice flavor! Give it a try next time!

  30. User avatar karine.hyatt74 says:

    3 stars
Grilled shrimp is my favorite! But I mixed up the salad ingredients. Oops!

  31. User avatar anonymous_hacker says:

Shrimp and lettuce? No thanks. Salads should have meat like bacon!

  33. User avatar desmond.daniel says:

Looks healthy, but I dont have a grill. Can I use pan?

  35. User avatar pia.mayert28 says:

    1 star
I think this is not the best way to prepare shrimp. I prefer frying them. Also, why add garlic? Garlic is yuck!

  36. User avatar romona.larkin says:

    5 stars
This salad is a game changer! The grilled bok choy adds such a unique flavor!

  37. 2 stars
I don’t know. The shrimp came out too rubbery for me. Not sure if I did it right.

  38. User avatar raphael.okon67 says:

    3 stars
Shrimp and bok choy? What an odd combo! But I guess people like new things?

    1. User avatar dennis.ziemann2013 says:

      5 stars
It’s actually a great combo! The flavors really work together. You should give it a try!

  39. 2 stars
I wasn’t really a fan. The flavors didn’t blend well for me.

  40. User avatar onita.mayer50 says:

    5 stars
This salad is so refreshing! Perfect for summer. My family loved it!

  41. 2 stars
Confused about this salad. Where’s the lettuce? Shrimp was good tho.

  42. 1 star
I don’t know about this recipe. I feel like shrimp and bok choy are weird together.

    1. 4 stars
I get what you’re saying, but shrimp and bok choy can actually taste great together with the right seasoning! I tried it and loved it.

  43. User avatar meaghan.roberts86 says:

    5 stars
This salad is amazing! I can’t believe how good the grilled shrimp tastes with the bok choy. Will definitely make it again!

    1. User avatar damian.kemmer26 says:

      5 stars
Totally agree! The flavors mix so well, especially with the grill marks on the shrimp. Can’t wait to try it myself!

  44. User avatar florencio.schmidt69 says:

    4 stars
Super easy and quick. My kids even ate the veggies!

  45. User avatar herbert.dietrich22 says:

    2 stars
Not a fan of bok choy, it kinda tastes weird. Maybe use lettuce?

    1. User avatar Dylan Rosenbaum Jr. says:

      4 stars
I actually think the bok choy adds a unique flavor! But hey, to each their own. You could totally swap it for lettuce if you prefer.

    2. 2 stars
Lettuce instead? Hell no! Bok choy is where it’s at with its crunch and flavor. Give it another try!

  46. User avatar juan.hagenes45 says:

    2 stars
I followed the recipe but the grilled bok choy was too slimy for me. Not a fan of the texture!

  47. User avatar javier.ledner says:

    4 stars
Not bad at all! I was worried the shrimp would overcook, but 2-3 minutes per side worked for me. Next time I’ll add a little chili flake for heat.

  48. User avatar jarvis.feest says:

    2 stars
I dunno, the shrimp was just okay. Maybe I overcooked it? Not sure I’d try this again.

  49. User avatar jerrell.kuhlman says:

    5 stars
Yum! My kids loved it and we had a good time grilling together. Thanks for the recipe!

  50. User avatar ezekiel.mccullough35 says:

    4 stars
Not a fan of bok choy, but the dressing was bomb! I might just use the dressing on everything now. 😋

  51. User avatar terrell.gulgowski94 says:

    5 stars
This salad is a game changer! The flavors pop and it’s so refreshing. I added some avocado too!

  52. 2 stars
My shrimp ended up tasting bland tbh, maybe needed more garlic? Going back to my usual recipes.

    1. User avatar MrsLucyG says:

      4 stars
I totally get what you mean! Garlic really makes a difference. I always add extra too. Don’t give up on this recipe just yet!

  53. User avatar mathWizard says:

    5 stars
This was an easy weeknight meal, will definitely make again! Shrimp cooked perfectly.

  54. User avatar rachael.veum90 says:

    3 stars
Seems complicated for a simple salad. Do I really need to grill the bok choy? It’s just lettuce, right?

  55. User avatar Prostetnic Vogon Kwaltz says:

    3 stars
Grilled shrimp is the best! I am not sure if it’s really a salad tho, could use more greens.

  56. User avatar Super Saiyan Blue Goku says:

    3 stars
Not gonna lie, this tastes kinda like normal salad with shrimp. I wanted more smoky flavor—maybe marinate the shrimp first?

  57. User avatar sharee.kuhn42 says:

    3 stars
I’m skeptical about grilling bok choy for just 2–3 minutes. Mine was under-charred and tasted kinda watery, so next time I’ll sear longer.

    1. User avatar chuck.sanford14 says:

      5 stars
Totally get it—bok choy can go from crisp to soggy fast. If yours was watery, I’d try grilling a bit longer (or keeping the grill hotter) so you get real char without steaming it.

  58. 4 stars
The flavors are bright, but I think the timing could be a little clearer. My shrimp overcooked after 3 minutes each side—still tasty though.

  59. User avatar frederica.heaney46 says:

    4 stars
Simple and healthy. I added avocado because I’m me, and it made it even better. Olive oil + lemon is the right move.

  60. User avatar lester.huel75 says:

    5 stars
Wow, this salad is delicious. 10 out of 10!! Easy to follow instructions too.

  61. User avatar suspiciousCommentator says:

    4 stars
I followed it mostly, but I tossed the salad with the dressing first before grilling. Still tasted good, just a little wetter. Next time I’ll do it the way you wrote.

  62. User avatar Marshall Frami says:

    4 stars
Not a fan of shrimp, but my wife loved it! I’ll probably try it with chicken next time.

    1. User avatar mario.mohr90 says:

      3 stars
Shrimp is the best! What are you thinking with chicken? Just grill it the same way?

    2. User avatar Pasta Fasta says:

      4 stars
Trying it with chicken sounds like a great idea! I’d love to hear how it turns out for you.

  63. User avatar willette.hyatt63 says:

    4 stars
So simple and quick! I made it in under 30 min! Not very filling tho.

  64. User avatar MAGA2024.Trumpster says:

    2 stars
IDK, I think this recipe is overrated. Salad should not be grilled. Just saying.

  65. User avatar mack.orn60 says:

    5 stars
Yum! The combination of flavors is perfect. Can’t wait to make it for dinner parties!

  66. User avatar earl.ernser1979 says:

    5 stars
This was so refreshing! I loved how the shrimp and bok choy worked together. This is a keeper!

  67. 3 stars
Ok but where’s the cheese? 😅 I know it’s not that kind of salad, but I think parm would make it better.

    1. 5 stars
Totally fair 😅 I didn’t include cheese on purpose since it’s more of a bright lemony salad, but a little parm or feta would be amazing. Next time I’ll grate some on top.

    2. User avatar Snow Bear says:

      2 stars
I mean… cheese on everything, right? 😄 Bok choy already has flavor and you got garlic + lemon. If you add parm it’ll get weird and soggy on the hot shrimp.

  68. User avatar Glossu "Beast" Rabban says:

    3 stars
Didn’t have bok choy so used kale instead. It was ok, but I think I’d like it better with the original ingredients.

  69. User avatar Majikthise says:

    2 stars
I tried this recipe but it didn’t turn out right. The bok choy was too bitter for my taste. Maybe it was overcooked?

  70. User avatar cyril.hettinger92 says:

    4 stars
Pretty good! Not gonna lie I was scared the lemon/garlic would be too sharp, but it balanced out. I used lime instead once and it was still nice.

  71. User avatar rosena.kuvalis53 says:

    3 stars
I tried this and it was kinda bland until I doubled the garlic and salt. Then it became actually good.

  72. User avatar Max Quordlepleen says:

    4 stars
Pretty good, but my bok choy cooked faster than the shrimp. I’d suggest grilling bok choy separately first or keeping the heat a touch lower.

  73. User avatar porcupine says:

    5 stars
Made this tonight—super fresh and bright. The lemony garlic dressing really ties it together. I grilled the bok choy a touch longer and it came out perfectly charred.

  74. User avatar rusty.franecki says:

    2 stars
I don’t know about mixing raw salad veggies with grilled stuff. The texture was weird for me. Maybe it’s just my timing, but I won’t rush to repeat.

  75. 5 stars
This looks so fresh and light—love the combo of grilled shrimp with the crunchy cucumber. I might add a little avocado next time for extra creaminess.

  76. User avatar beryl.durgan says:

    3 stars
Not sure about grilling bok choy—mine got a bit bitter. Flavor was still okay though, just surprised by the taste after char.

  77. User avatar leanne.schumm73 says:

    5 stars
Wow this is restaurant-level. The ratio is on point: juicy tomatoes, crisp cucumber, and the char on bok choy gives it that smoky kick.

  78. User avatar Arthur Philip Deodat says:

    3 stars
This looks healthy but like… shrimp + grill + salad is a lot of steps. I kinda rushed it and my bok choy wasn’t charred enough. Still flavorful.

  79. User avatar sebastian.von says:

    5 stars
Made this last night—super fresh and the char on the bok choy is everything. I added a pinch of chili flakes to the dressing and it really popped.

    1. User avatar normand.mccullough says:

      5 stars
That char on the bok choy is honestly the best part 😍—adding chili flakes sounds amazing. Did you grill the veggies the whole 2-3 minutes per side too, or just the shrimp?

  80. 5 stars
Made this last night—super fresh and the lemon-garlic dressing really pops. Bok choy got that perfect char without getting soggy. Will definitely do again.

  81. User avatar andre.stoltenberg73 says:

    4 stars
Tried it for meal prep—great flavor, but I’d keep the grilled shrimp separate until serving because the greens soften fast. Loved the dressing!

    1. 5 stars
Yes! I do the same—keeps the bok choy crisp. Also I’m glad the dressing worked for you; I could drink it (not literally… maybe 😅).

  82. 4 stars
I’m not usually a cilantro person, but it worked here. Next time I might add a little chili flakes for heat. The shrimp cooked fast, just like the recipe said.

  83. 3 stars
I didn’t have baby bok choy so I used regular. It came out kinda crunchy and raw-ish in the middle—maybe I should’ve halved thinner.

    1. User avatar bobbie.fahey79 says:

      5 stars
That makes sense—regular bok choy is usually thicker, so it won’t char and soften in the same 2–3 minutes. Halving thinner (or slicing lengthwise) should help a lot. Next time you could also grill the bok choy a minute or two before adding the shrimp so it gets tender first.

  84. User avatar pasquale.cruickshank1955 says:

    4 stars
Pretty good for a quick grilled salad. My shrimp got slightly overdone (2-3 min per side is tight!), so I’d watch closely. Otherwise solid.

  85. User avatar Mr. Sharolyn Tromp says:

    3 stars
I followed the recipe pretty closely, but my salad felt a bit watery from the cucumber/tomatoes. I’d drain or salt the cucumber first. Still tasty though.

    1. User avatar Ra'zhinda says:

      3 stars
Watery salad is real. Next time try gril the cucumber too? Or use less tomatoes? I also think the lemon juice makes it runnier, idk. But your idea about draining/salting makes sense.

    2. User avatar beverly.smitham13 says:

      5 stars
Good call—cucumber can definitely weep. Salting it for a few minutes then blotting before mixing would help a lot. Glad it was still tasty though!

  86. User avatar Sand-Dial says:

    4 stars
I followed it pretty much exactly. Still, my shrimp curled up more than I expected—taste was great though. Next time I’ll dry them better before grilling.

  87. User avatar erika.denesik99 says:

    3 stars
I followed it pretty closely, but my bok choy didn’t char much—maybe my grill wasn’t truly medium-high. Still tasty, just less “grilled” looking.

  88. User avatar numbers.weber17 says:

    3 stars
I think 2-3 minutes per side is too short on a medium-high grill—my shrimp needed closer to 4. Might depend on thickness.

  89. User avatar maurice.oreilly says:

    5 stars
Delicious! I used a grill pan because I don’t have an outdoor grill and it still turned out great. The dressing made everything feel fancy.

  90. User avatar rich.landlord says:

    3 stars
Really easy. I didn’t even measure the garlic lol. Salad didn’t look like the picture or whatever but it tasted good.

  91. 5 stars
Wow, this is restaurant-level. I didn’t think bok choy would work with shrimp, but it totally does. Make this again for sure.

  92. User avatar Paula Nancy Millstone Jennings says:

    3 stars
Could use more dressing in my opinion. 2 tbsp olive oil and 2 tbsp lemon juice was just barely enough to coat everything, so mine was kind of dry.

Easy weeknight meal. I used lime instead of lemon because that’s what I had—still delicious. Also, cilantro is a must!

    Yum!

Yum is right—grilled shrimp + that charred bok choy sounds amazing. 😋 The lemon-garlic dressing probably makes it pop.

I followed the recipe mostly, but I think my garlic was too strong. Next time I’ll use less garlic or whisk it with the lemon juice a little longer so it mellows.

Totally get that—garlic can be punchy, especially with just minced garlic and quick whisking. Whisking longer (or mincing/steeping it in the lemon + olive oil for a few minutes) usually mellows it. Next time try 1 clove too!

Super tasty! The lemon-olive oil dressing is the star. I used baby bok choy like the recipe and it charred nicely after 2 minutes.

Honestly, cilantro and bok choy together sounds weird but I tried it anyway. It was actually really good. My kids even ate it (rare!).

5 stars for effort but shrimp cooking is finicky. Mine overcooked and turned rubbery, so keep an eye on it—2-3 min per side is not always the same.

meh… it was okay. Could’ve used more seasoning besides just salt and pepper. And the salad tasted kinda bland until I added extra lemon.

I didn’t have cherry tomatoes so I used regular diced ones. Worked, but it got a little watery. Maybe salt the cucumber a bit first?

    1. User avatar broderick.will84 says:

Good call—using diced tomatoes can definitely add more liquid. Salting the cucumber (even 10–15 min, then patting dry) should help a lot. Also, if you can, drain halved tomatoes or use less cucumber next time.

Really fresh and bright—lemon + garlic makes it pop. The bok choy char is a nice touch. I grilled the shrimp a bit less and they stayed super juicy.

    1. 5 stars
I love how bright this sounds—lemon + garlic is such a good combo. Glad to hear grilled less time kept the shrimp juicy too. Did you char the bok choy separately or grill everything together the whole time?

My cilantro was wilting so I used parsley—still decent. Also, I forgot to peel the shrimp at first (oops). Recipe survived my chaos.

This was “okay” for me. The salad veggies are crisp, but the dressing felt a little too garlicky. I might cut the garlic in half.

This was super fresh and the lemon-garlic dressing really pops. I grilled the bok choy a bit longer and it charred perfectly. Would make again!

So bright and fresh! The lemon + garlic dressing really makes the charred bok choy pop. I added a little chili flakes too—10/10.

  106. 4 stars
I’m not usually a “salad but grilled” person, but this worked. The shrimp stayed juicy and the crunch from cucumber was perfect.

Tasty but I messed up step 5—my bok choy got a little too charred. Still good though, and the shrimp cooked fast like it said.

The combo of grilled shrimp + bok choy is honestly a vibe. Even my picky eater asked for seconds (rare!).

Yes!! The char on the bok choy with juicy grilled shrimp is *chef’s kiss*. Also the lemon-garlic dressing really ties it together—my kids would never admit it, but I get it 😂

Wait, picky eaters asked for seconds? That’s wild. I tried something like this and my bok choy was too bitter—maybe I overcooked it. 2–3 minutes per side seems short… still, I’ll give it a shot.

  109. 2 stars
How is 2-3 minutes per side enough? My shrimp took more like 5 minutes to not be rubbery. Maybe my grill runs hot, but the timing needs a note.

Not bad, but the measurements felt a little off to me—2 tbsp lemon was maybe too zingy with all the cucumber. I’ll cut it down next round.

    1. User avatar otis.doyle1965 says:

      5 stars
That makes sense—lemon can get super intense with cucumber. Cutting it down is a good call. Next time you could also start with 1 tbsp and add more only if you want it brighter.

Meh. Shrimp was fine but the whole thing lacked flavor for me. Maybe my cilantro was old or something.

    1. User avatar logan.gutkowski says:

      4 stars
Ugh, sorry it didn’t hit for you. This one is pretty reliant on the garlic + lemon + fresh cilantro—if the cilantro was old or got bitter, it can totally mute the whole thing. Next time I’d add a bit more lemon or even a pinch of chili flakes, and make sure you’re salting the shrimp before grilling too.

  112. 4 stars
Can I sub lime for the lemon? I tried something similar once and it was… honestly better? Not sure though—thoughts?

  113. 4 stars
The ingredient list feels a bit… random? Like bok choy with cucumber and cherry tomatoes sounded odd at first. But it tastes way better than I expected.

  114. 4 stars
No way this is a real salad—it’s basically grilled stuff on top of vegetables. Still delicious though, lol.

  115. 5 stars
5 stars but my family says it need more salt. Next time I’ll add a pinch of chili flakes too.

  116. 3 stars
Not gonna lie, I forgot to preheat the grill and it took way longer. By the time it charred the bok choy, the shrimp was getting overcooked. I’ll try again carefully.

The flavors were great, but I wish the instructions said whether to grill the bok choy with the salad veggies or just keep the rest raw. I ended up tossing everything together before grilling and it was okay, not amazing.

I don’t trust recipes that put all the raw veggies in a bowl and then you grill some of them too. But… it worked. Crunchy + smoky = good combo.
