Grilled Eel and Vegetable Soba Bowl

August 8, 2023

A Grilled Eel and Vegetable Soba Bowl is a celebration of rich, umami flavors paired with the earthy comfort of buckwheat noodles. This dish offers a perfect balance of taste and nutrition, bringing together tender, smoky eel with crisp, colorful vegetables, all nestled over a bed of soba. It’s the kind of meal that satisfies both the palate and the body, making it a standout for lunch or dinner.

Eel, or unagi, is a beloved ingredient in Japanese cuisine, prized for its buttery texture and naturally sweet flavor. Traditionally glazed with a savory-sweet soy-based sauce before grilling, the eel develops a caramelized exterior that pairs beautifully with the nutty undertones of soba noodles. The gentle smokiness from the grill deepens the dish’s complexity, while the sauce seeps into every bite for a luxurious finish.

Soba noodles, made from buckwheat, are light yet satisfying. They carry a subtle nuttiness that complements the richness of the eel. In this bowl, the soba serves as the perfect canvas for fresh, seasonal vegetables, think blanched spinach, julienned carrots, and crisp cucumber. The vegetables add freshness, crunch, and a rainbow of colors that make the dish as visually appealing as it is delicious.

A light dressing or dipping sauce, often made with dashi, soy sauce, and mirin, ties all the components together. This broth-like seasoning can be served warm in colder months or chilled for a refreshing summer version. A sprinkle of toasted sesame seeds or thinly sliced green onions adds a final aromatic touch.

The beauty of a Grilled Eel and Vegetable Soba Bowl lies in its versatility. It can be enjoyed hot or cold, customized with your favorite vegetables, and adapted to suit seasonal produce. It’s a meal that’s as elegant for entertaining guests as it is comforting for a quiet night in.

With its blend of smoky eel, crisp vegetables, and wholesome soba noodles, this dish offers a harmonious mix of flavors and textures that’s hard to resist. It’s a true expression of Japanese culinary balance, hearty, nourishing, and deeply satisfying.

I tried this but my soba noodles turned mushy. I think I didn’t rinse cold water well enough. The veggie stir-fry was great, and I liked the rice vinegar dressing.

  2. User avatar sandie.braun says:

The instructions are clear, but 5-6 minutes per side seems risky depending on thickness. Mine was thinner so it overcooked a bit. Still delicious though—just keep an eye on it.

Grilled eel? Really? Sounds fishy. I’m not sure about this one.

This recipe is absolutely delicious! The flavors of the eel with the soba noodles are just perfect. I didn’t think I would enjoy eel, but this changed my mind!

  5. User avatar bernard.quitzon93 says:

The veggie sauté timing is perfect. Also didn’t know you should rinse soba with cold water—makes a difference for sure. I added a little extra sesame oil and it rocked.

  6. 3 stars
Was so excited to try it but totally messed up the grilling part! The eel ended up all burnt. Shoulda read the instructions better. Gonna try it again tho!

Simple recipe! It’s friendly for a weekday dinner 🌟

Grilled eel? That sounds weird, isn’t that like a fish? 🤨

I love how easy this looks! Can’t wait to try it for dinner. 😍

  8. User avatar han.gislason says:

Grilled eel is life. The veggies add a nice crunch. I added some extra chili flakes for heat and it was fire! 🔥

    1. 5 stars
Wow, sounds delicious! I’m definitely gonna try adding chili flakes. 🔥

    2. 2 stars
Grilled eel? Really? I don’t know about that. Seems kinda weird to me.

  9. User avatar adriene.blick1997 says:

    1 star
Grilled eel??? Really? Who eats that? 😂

  10. 3 stars
Too many vegetables, I end up throwin’ half of it away. Less is more!

    1. User avatar cleora.rogahn91 says:

      4 stars
I get what you’re saying! Sometimes all the veggies can be overwhelming. But you could always just use your favorites and skip the rest! 🙂

  11. User avatar Grunthos the Flatulent says:

    4 stars
Quick question: do you cook the soba in boiling water like regular pasta? I always mess that part up, lol.

    1. User avatar marcus.fritsch says:

      5 stars
Yeah—cook soba in boiling water like pasta, just follow the package timing. Don’t overcook it, and I rinse with cold water after. Works every time for me.

  12. User avatar jamel.beatty says:

    2 stars
One thing: eel is expensive where I live, so I used smoked salmon. Not the same, obviously, but the flavors still worked with the soba and veggies. Pretty solid for a twist.

  13. User avatar toccara.hane says:

    4 stars
I tried it but my eel grill time was way off—5-6 minutes each side felt short for me. Still tasty though, veggies stayed crisp and the dressing is great.

  14. User avatar chere.balistreri90 says:

    4 stars
I didn’t have eel, so I used chicken instead. Still turned out good!

  15. 2 stars
Why grill eel and then toss everything like it’s just stir-fry? It feels kinda mismatched. I also thought 2 servings would be more—my bowls looked skimpy.

  16. 2 stars
I don’t know about mixing eel with noodles. It sounds weird. Can’t just use chicken? Eel seems too fancy or something.

  17. User avatar nakia.friesen says:

    5 stars
This sounds insanely tasty—eel + soba is such a perfect combo. I might add some chili paste for heat!

  18. User avatar Aragorn says:

    1 star
This looks complicated. Can I just microwave it? Seriously, who has the time to grill? Also, what’s mirin? Do I need that?

  19. 3 stars
Not bad, but 2 tbsp sesame seeds feels like a lot? I used less and it was still crunchy. Also my grill is temperamental, so I probably undercooked the first side.

  20. User avatar anonymous_hacker says:

    5 stars
This dish was absolutely delicious! The eel was so tender and flavorful.

    1. User avatar dennis.buckridge90 says:

      3 stars
Delicious, huh? I thought eel was kinda slimy. Maybe I had it wrong…

    2. 5 stars
I’m glad you enjoyed it! Eel can be tricky to cook, but it sounds like you nailed it!

  21. User avatar jonah.barrows80 says:

    3 stars
Saw eel at the market but I thought it was too expensive. Can it be made with chicken?

    1. User avatar Link (Goron) says:

      3 stars
Yeah, chicken works! But why not just wait for a sale on eel?

    2. User avatar shonda.dibbert91 says:

      4 stars
You can use chicken, but it won’t be the same. Eel has that unique flavor!

  22. 5 stars
This was so delicious! Never thought I’d like eel, but it was amazing!

  23. User avatar Mr. Rubin Tremblay says:

    4 stars
The vegetable mix is on point. I used zucchini instead of snow peas and it still tasted fresh. Would make again.

    1. User avatar anonymous_hacker says:

      5 stars
Love this combo! I’ve made eel before but never with soba bowls—really sounds balanced. Also good call swapping zucchini for snow peas; I’m sure it keeps that fresh bite. Making this soon.

    2. User avatar vito.ritchie92 says:

      3 stars
Hmm I’m not sure about eel—kinda expensive where I live. Could I use salmon or even tofu instead? The vegetable mix sounds good though. And 5-6 minutes per side feels a little short depending on thickness…

  24. User avatar hildred.johns says:

    5 stars
Sushi? Soba? Meal of the champions! LOL!

  25. User avatar tad.jacobson62 says:

    3 stars
Not sure about eel on a regular weeknight… it feels fancy lol. But the instructions were clear and the sauce smelled amazing. Would recommend if you can find fresh eel easily.

    1. User avatar mireya.powlowski10 says:

      5 stars
Haha totally get the “feels fancy” vibe—eel does sound like a weekend-only ingredient 😄 But yeah, if you can grab fresh eel without a big hassle, this is actually pretty straightforward. The sweet-savory sauce + grilling time sounds spot on.

  26. 3 stars
I’m skeptical about grilling eel—mine dried out a little even though I followed the time. Maybe my fillets were thicker. Flavor was good though, so I’d try again with foil or lower heat.

  27. User avatar katheleen.rolfson1966 says:

    1 star
Who even eats eel? Grouse! Prefer my noodles plain. Ta.

    1. 4 stars
Eel is actually quite tasty! You should give it a shot before writing it off. Soba noodles are also great with other toppings!

  28. 5 stars
This was such a fun combo—sweet-savory eel with the crunchy veggies. The soy/mirin/sugar glaze caramelized nicely on the grill. I’ll definitely make it again, maybe with extra green onions.

  29. 4 stars
Really enjoyed the bowl format. The sesame oil + rice vinegar dressing made the soba taste restaurant-level. Next time I’ll cut the veggies a bit thinner for faster cooking.

    1. User avatar alva.robel26 says:

      5 stars
Yes!! The bowl format is such a win. I’m glad the sesame oil + rice vinegar combo worked—mine always tastes way better after that step. Thin veggies makes sense too.

    2. User avatar shanta.mante51 says:

      4 stars
Restaurant-level?? Bold claim 😄 I tried this and it was good, but mine felt a little sweet (maybe my eel was too sugary with the mirin/sugar). I’ll definitely try thinning the veg like you said.

  30. User avatar tyree.ankunding11 says:

    5 stars
SO. MUCH. YUM. Just follow it step by step and you can’t go wrong!

    1. 5 stars
Absolutely agree! This recipe is super easy and so delicious. I made it last night and my family loved it!

  31. User avatar kathlyn.harvey99 says:

    2 stars
I dunno about grilled eel. Sounds kinda gross to me.

    1. User avatar reynaldo.goldner46 says:

      4 stars
I used to think grilled eel was weird too but it’s actually really tasty! You should give it a shot!

  32. User avatar jaleesa.mraz13 says:

    2 stars
Grill medium heat, and brush with soy mix—ok but I think I overcooked mine… eel is delicate lol. Still pretty good though, and sesame seeds made it look fancy.

    1. 4 stars
I hear you about eel being delicate 😅 I did mine and it went a bit dry too—next time I’m thinking like 3-4 minutes per side instead of 5-6.

    2. User avatar desire.morar23 says:

      5 stars
Medium heat is fine but soy + mirin + sugar caramelizes fast. If you’re not watching, it’ll go from “glossy” to “overcooked” real quick. Still, great idea with sesame seeds!

  33. User avatar dani.deckow1978 says:

    4 stars
I don’t have mirin, can I swap with rice wine vinegar + a pinch of sugar? Either way looks solid.

    1. User avatar NAFO.SUPREMACY says:

      5 stars
Yep—rice wine vinegar + a pinch of sugar should get you close. I’d start with less sugar than you think and adjust after tasting, since vinegar can get sharp fast.

  34. 5 stars
This was surprisingly flavorful—sweet-salty eel with the fresh veggies and the sesame-soy vibe is perfect. I did 6 minutes each side and it was tender, not overdone.

  35. User avatar douglas.doyle1994 says:

    3 stars
This seems too complicated to me. Can’t we just boil the noodles and throw in some veggies? What’s the point of grilling?

    1. 5 stars
Grilling adds flavor, trust me! It’s worth the extra steps. Don’t skip it!

    2. User avatar erwin.parisian1950 says:

      2 stars
I dunno, grilling sounds like a lot of work for fish. Just boiling sounds easier.

  36. 5 stars
This looks awesome—eel + soba is such a satisfying combo. I made the sauce exactly as written and it caramelized on the grill nicely. My veggies stayed a little crisp too. 10/10 bowl comfort food.

  37. 3 stars
Grilled eel… brave choice 😅 I’m skeptical I’ll like the flavor, but I’d probably try it if I could find eel without it smelling fishy.

    1. User avatar marjory.hansen20 says:

      5 stars
Honestly, grilled eel sounds awesome—sweet-savory with the soy/mirin/sugar glaze could totally win me over. I’ve only had eel at restaurants, so I’d try this at home if I can get it fresh and not “fishy.” 😅

    2. User avatar Barliman Butterbur says:

      2 stars
Soba + eel? Not sure about that combo. Also 5-6 minutes each side seems like a lot for eel—won’t it dry out? If the eel smells fishy to begin with, I’m out.

  38. 2 stars
Why sesame seeds at the end? I forgot them and it honestly tasted fine. Like, I’m sure it helps but it’s not magic. Sauce was good.

  39. User avatar charlie.kessler62 says:

    5 stars
Sesame oil + rice vinegar is such a good combo. I added a little chili paste at the end and now it’s my new go-to weekday bowl.

  40. 1 star
Lol cooked eel?? better stick to salmon, at least u can pronounce it. Also do you grill it with skin? Sounds strange.

  41. 4 stars
I didn’t have eel, so I used chicken. Still turned out great! Can’t imagine how good it is with the real thing.

  42. User avatar kristopher.hammes says:

    5 stars
wow super easy i guess. i didnt have mirin so i used honey and it turned out kinda sweet. will make again

    1. User avatar ryan.greenfelder25 says:

      5 stars
Nice! The honey swap makes sense—sounds like you just nudged the sweetness up a bit. Glad it still worked out 😄

    2. User avatar antwan.crona says:

      4 stars
Hmm honey instead of mirin? I guess if you add less sugar next time it might balance better. Mirin has that tangy sweetness so texture/flavor could be a little off, but hey—if it tasted good then do it!

  43. User avatar twila.leffler11 says:

    4 stars
I’m allergic to fish, so no eel for me. What can I substitute it with?

    1. User avatar shanell.mcclure2024 says:

      5 stars
You could try grilled chicken or tofu instead! They’ll soak up the flavors just as good.

  44. User avatar rowena.lemke says:

    3 stars
I can’t find eel anywhere where I live, is there a substitute?

  45. User avatar jarvis.mayer says:

    4 stars
This dish is so fresh and tasty, my new favorite! Also, is there a substitute for the sesame oil? I ran out. Thanks!

  46. 4 stars
Delish but I used spaghetti instead of soba. Is that okay? Still good.

  47. User avatar joel.gerlach58 says:

    5 stars
Grilled eel? Never thought I’d make that, but wow! Kids loved it too. They even asked for seconds! Highly recommend.

    1. User avatar hershel.osinski96 says:

      4 stars
Grilled eel sounds fancy! I’ve never tried making eel at home, but your kids asking for seconds is a good sign. Maybe I’ll give it a go!

  48. User avatar brant.kilback3 says:

    5 stars
Loved it! The sauce was so yummy, can I use it for other fish too?

  49. User avatar Tierra Kilback says:

    5 stars
This was incredible! The flavors were perfect and the eel was cooked just right. I never made eel before, but this recipe made it super easy. 5 stars!

  50. User avatar Mystic Gohan says:

    5 stars
So easy! I made this for dinner last night and my family loved it!!

    1. User avatar romana.kovacek78 says:

      5 stars
I’m so glad to hear that! This recipe is a real winner. Eel is so delish! 🍽️

    2. User avatar dominic.schmidt48 says:

      3 stars
Sounds good, but eel? Isn’t that kinda weird? I prefer chicken.

  51. User avatar San Shenlong says:

    2 stars
Grilled eel? My grill smoked like crazy and the house smelled for hours. The flavor was good, but I’d use a skillet next time or maybe lower the heat.

  52. 4 stars
Really enjoyed this recipe! The only thing I changed was using zucchini instead of bell pepper, it was great! Will definitely make it again.

  53. User avatar tia.ondricka29 says:

    3 stars
Grilled eel? That’s new. I prefer my fish fried, but who knows, maybe this is tasty!

    1. 5 stars
Grilled eel is actually super delicious! Way better than fried fish. You should give it a shot!

  54. 3 stars
Isn’t soba noodles made from buckwheat? Why not just use spaghetti? 🙄

  55. User avatar Blair Cormier says:

    2 stars
I dunno about this one, eel sounds kinda gross. My buddy said it’s a delicacy but I just can’t get past how it looks. Might try it someday tho.

    1. User avatar cedrick.schowalter2011 says:

      5 stars
I totally get it! Eel does look weird, but when grilled, it actually tastes amazing! Maybe give it a shot, you might surprise yourself!

  56. 3 stars
I’m skeptical about grilling eel at home. Like… 5-6 minutes per side feels either too fast or too risky depending on thickness. But the rest of the recipe is solid, I’d maybe pan-sear instead.

  57. 4 stars
Yum! I love soba noodles! The veggies add such a nice pop of color!

  58. User avatar jonathon.gottlieb14 says:

    5 stars
The vegetable mix is on point. Carrot julienne and snow peas keep it fresh. I’d toss in mushrooms too maybe.

  59. User avatar trinidad.rau74 says:

    4 stars
Pretty tasty, but my eel got a little tough on the edges. Next time I’ll start checking earlier than 5–6 min per side. Still, the soba dressing with sesame oil + rice vinegar was on point.

    1. User avatar edward.bahringer35 says:

      5 stars
Thanks for the note! Yeah eel can get chewy fast—checking a bit earlier than 5–6 min/side is probably the move. Do you think yours was thicker or maybe the grill runs hot?

  60. User avatar Paula Nancy Millstone Jennings says:

    3 stars
Used too much soy sauce. It was saltyyyyyyy. Maybe cut it down?

  61. User avatar Brandon Irons says:

    4 stars
Looks easy. “Soba noodles according to package” is the only part I can do lol.

    1. User avatar Candice Cronin says:

      4 stars
Haha same — that “according to package” step is basically my whole cooking career 😄 The eel part probably feels intimidating, but 5–6 minutes a side sounds doable.

  62. User avatar claribel.lebsack12 says:

    4 stars
Tried something similar before and it was great, but grilling eel can be tricky. 5-6 minutes a side feels maybe short depending on thickness—keep an eye on it.

  63. User avatar jeremiah.ratke10 says:

    3 stars
Not sure about using eel at home… it always sounds a little intimidating. But the instructions are clear, and the sauce measurements are straightforward.

  64. User avatar demarcus.adams12 says:

    2 stars
Meh… veggies were good but the eel tasted kinda fishy to me. Maybe I got a bad fillet. Also, the sugar + soy ratio felt too sweet.

    1. User avatar verlene.stroman says:

      4 stars
That’s a bummer about the eel. If it tasted fishy, it could’ve been a less-fresh fillet—eel can be super sensitive. And yeah, 1 tbsp sugar vs 1 tbsp soy + 1 tbsp mirin can push it sweet depending on the mirin.

  65. User avatar raymond.dubuque says:

    5 stars
This looks ridiculously good. I love how the sweet-salty eel glaze works with the sesame soba—perfect comfort-meets-fancy bowl.

  66. User avatar vinnie.grimes2018 says:

    3 stars
Eel is kinda weird to me, but this recipe was clear and easy. I might try it with something else.

  67. 5 stars
This looks amazing! I’ve never tried eel but I’m excited to give it a go!

  68. User avatar fernando.lynch43 says:

    4 stars
I swear I cooked the veggies for 10 minutes and they still weren’t tender… maybe my heat was too low. But the dressing saved it. Tasted great with a little extra vinegar.

    1. User avatar karolyn.mohr50 says:

      5 stars
Yeah 10 minutes might not be enough on medium—especially for julienned carrots. I usually go more like 7-8 mins total with a slightly higher heat so they get tender but still crisp. Glad the dressing saved it though—extra vinegar is the move.

  69. User avatar charlie.corwin95 says:

    2 stars
Not sure about the eel part. Is it really safe to eat? Kind of scared.

    1. User avatar shanae.ruecker95 says:

      4 stars
Eel is actually quite popular in many cuisines! As long as it’s sourced properly, it should be safe to eat. Give it a try!

    2. User avatar arnold.fahey says:

      2 stars
I dunno… eel sounds kinda gross to me. What if it’s not cooked right? I’d stick with chicken or something safer!

  70. User avatar Norah Lind says:

    3 stars
I messed up the sauce and used too much sugar. Oops! Still edible though!
