A refreshing yogurt dip with cucumber and garlic

Ingredients
  

  • 1 cucumber grated
  • 2 cups plain Greek yogurt
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp dill chopped fresh
  • Salt and pepper to taste

Instructions
 

  • Place grated cucumber in a sieve over a bowl and sprinkle with salt. Let sit for 10 minutes to drain excess moisture.
  • In a mixing bowl, combine Greek yogurt, minced garlic, olive oil, lemon juice, chopped dill, salt, and pepper.
  • Squeeze out any remaining liquid from the grated cucumber and add it to the yogurt mixture. Stir well to combine.
  • Taste and adjust seasoning as needed.
  • Refrigerate for at least 1 hour before serving to allow flavors to meld.
  • Serve chilled with pita bread or as a sauce for gyros or grilled meats.

    Not bad, but the garlic was a little intense for me. Maybe I should’ve minced smaller or used less. Next time I’ll start with 1 clove.

      Idk, I always use more garlic and it tastes more “authentic” 😅 But if your garlic is intense, try grating it super fine or even letting the minced garlic sit in the olive oil for a minute. Might help.
