  • 100 g sugar Granulated
  • 1 tbsp ginger ground
  • 2 tbsp Golden Syrup
  • 225 g flour All-purpose
  • 1 tsp baking soda

Instructions
 

  • Preheat the oven to 180°C (350°F). Grease a baking tray.
  • In a bowl, cream together the butter and sugar until light and fluffy.

      Hmm, yeah 1 tsp baking soda for 225 g flour can be a bit low depending on how much acid is in the mix. Ginger + golden syrup might not provide much. I’d try 1 1/2 tsp next time or make sure you really cream the butter/sugar well so you get lift from the air too.

      Maybe your oven runs hot? 180°C sounds right but some ovens are like, ya know… liars. Also golden syrup dries out if you overbake. Try smaller balls or cover with foil near the end.
