Easy Chicken Pozole is a comforting Mexican soup that delivers bold flavor, hearty ingredients, and warming spices in every spoonful. Traditionally served during celebrations and family gatherings in Mexico, pozole is known for its rich broth, tender meat, and hominy corn that gives the soup its signature texture. This simplified chicken version keeps all the comforting flavors of the classic dish while making it approachable enough for an easy weeknight meal.
One of the things that makes Chicken Pozole so satisfying is the depth of flavor created from simple ingredients. The broth is typically made with onions, garlic, chicken stock, and red chiles such as guajillo or ancho, which provide smoky warmth without overwhelming heat. As the soup simmers, shredded chicken absorbs the savory and slightly spicy broth, creating a dish that feels rich and nourishing.
Hominy is one of the most important ingredients in pozole. These large, tender corn kernels add a chewy texture and subtle flavor that make the soup unique. Combined with juicy chicken and aromatic spices, the hominy transforms the dish into a filling and comforting meal perfect for cooler evenings or casual gatherings.
What truly sets pozole apart is the variety of fresh toppings added just before serving. Bowls are often garnished with shredded cabbage, sliced radishes, chopped onions, avocado, cilantro, and lime wedges. These toppings provide brightness, crunch, and freshness that balance the rich broth beautifully. Some people also add tortilla strips, sour cream, or spicy salsa for even more flavor and texture.
Easy Chicken Pozole is especially popular because it can be prepared in one pot with minimal effort. Rotisserie chicken is often used to save time, while canned hominy makes preparation even simpler. Despite the shortcuts, the finished soup still tastes deeply comforting and authentic.
Another reason this dish is loved by so many is its flexibility. It can easily be adjusted to suit different spice levels or ingredient preferences. Some versions include green chiles for a brighter flavor, while others use red chile sauces for a deeper, smokier broth.
Warm, hearty, and filled with vibrant toppings, Easy Chicken Pozole is the kind of meal that brings people together around the table. Its comforting broth, tender chicken, and fresh garnishes create a delicious balance of flavor and texture that feels both traditional and wonderfully satisfying.

So what happens if you add beans? Anyone tried that?
This is so delicious! Easy to make and my family loved it!
I’m so glad you loved it! It’s one of my favorites too! 😄
Easy peasy! Will make it again! 👌
It was just ok. Nothing spectacular. I dunno, maybe it’s because I’m not a huge chicken fan.
I didn’t have hominy, used corn instead. Still turned out nice!
Corn instead of hominy? I dunno, sounds weird to me. But if u liked it, that’s cool I guess.
That’s awesome! Corn can be a great substitute! Glad it worked out for you!
I thought it was too bland. Needs more spice or something.
I totally agree! I added some jalapeños and it made a huge difference. Spicy food rocks! 🌶️
This was super easy to make! My family loved it. Will definitely make again!
So glad to hear that! It’s really a family favorite around here too. 😊
Great recipe but I forgot the lime! Oops! Still yummy.
Really? This is called pozole? Where’s the red chili broth?
I think this is more of a chicken soup than pozole. Traditional pozole definitely needs that red chili broth! But maybe it’s just a different version?
This recipe ever mislead me. I thought it had more flavors. Where’s the spice?
I totally get what you’re saying! I expected a bit more kick too. Maybe some jalapeños would help!
My kids loved the lime on it! Made the flavor pop! 👍
Made this last night—so comforting! The cumin + chili powder combo is on point, and the hominy makes it feel super authentic. I added a bit of shredded cilantro too. Would definitely make again.
Interesting… I thought pozole needs pork and like dried chiles, not just chicken broth. Still, your version sounds tasty. Did you use any salt or just rely on the broth?
Yesss cumin + chili powder is the move 🙌 Hominy makes it feel so cozy and legit. Love the cilantro addition!
Not really a fan of hominy. I used beans instead. Turned out fine.
This is not “real” pozole to me… where’s the dried chiles and the masa? Still, it’s tasty as a quick soup. Just call it chicken hominy soup and we’re good.
Made this for dinner last night. So good! Tasted just like my abuela used to make. 😍
I followed it but it feels missing something—like no depth. I’m not sure if I’d call it “pozole” without adding dried chiles or cilantro. Still ate it though, because hunger is honest.
Why do you have to use chicken broth? Can’t I just use water? Seems silly to me.
Not gonna lie, I was skeptical about only onion, garlic, and spices—like where’s the rest of the ingredients? But it actually worked. I’m keeping this recipe.
Same! I thought it would be bland with just onion/garlic/spices, but the chili powder + cumin combo really pulls it together. Added a little salt and it was perfect.
Honestly I still don’t get it 😅 pozole usually has more going on. Like, what about the heat level—should I add salsa or extra chili? Mine tasted kinda flat.
Is it really posole if it ain’t got no radishes? Just sayin’.
SImple. Fast. Good food. 10 stars if I could!
Easy and delicious recipe! Perfect for a weekday meal. 😋
Not bad, but I’m skeptical about only 30 minutes for the flavors to meld—mine tasted a little flat. Also, I didn’t have cabbage so I skipped garnish and it looked kinda sad lol.
I followed it but my broth didn’t really taste “pozole-y” until I added more chili powder. Next time I’ll probably add a chopped jalapeño. Still tasty though!
I don’t get why everyone loves pozole. This recipe was just ok. Nothing special.
Maybe you just need to try a different version? Not all pozole is the same, and it can be super flavorful with the right toppings!
Uhm… “olive oil” seems weird to me for pozole? I used a little butter instead and it was fine. Not traditional, but honestly I don’t hate it. Could be better with more spices.
Love pozole but I usually do the long version. This one is faster and honestly it scratches the itch. Would recommend for sure, especially if you’re busy.
Yes!! I’ve been doing the long simmer too, but this sounds way more realistic for weeknights. Gonna try it this weekend—cabbage + lime is the move 😋
I tried it and it was fine… I guess. My hominy was kinda weird, maybe I didn’t rinse enough. Also I forgot to mince the garlic (just chopped it chunky) and it still turned out edible lol.
Pretty good and way easier than the pozole I usually attempt. I used regular broth (didn’t have low-sodium) and it still worked, just needed less extra salt. The cook time felt right.
5 stars but also… i didnt have hominy so i used beans and it was not it lol. Still easy though!
Flavor was okay, but mine came out kind of bland until I added salt. Also I forgot the oregano at first (oops) and had to fix it later. Still ate it all 😅
Mine was bland too until I added salt, but also I think 4 cups broth might vary a lot? If your broth is not flavorful, the whole thing suffers. Still sounds tasty though—hominy is the best part.
I totally get that—pozole can taste a little flat without enough salt or if the seasoning’s not evenly blooming. Glad you saved it with a salt tweak 😄 And lol at the oregano moment, that happens!
