      Oh no—sorry about that! I’ve found 1 tsp salt can be a lot depending on the mushrooms and how salty your vinaigrette already is. Next time, try starting with 1/2 tsp and adjust after roasting. And yeah, tossing gently really matters for keeping the salad pretty.

    This is a nice light meal, but 2 tbsp olive oil felt like a lot for 150g mushrooms. Maybe it depends on how dry they are. Still yummy.

      I totally get that—2 tbsp sounds like overkill for 150g. Mine always turn out crisp though, but I pat the mushrooms dry first. If they’re wetter, you probably need more oil; if they’re already dry, less works great.

      Flavor’s awesome, and yeah—chewy mushrooms usually means they weren’t thin enough or they didn’t roast long/at high enough heat to get crispy. Try slicing a bit thinner and roast closer to 20 minutes (or stir halfway). Also make sure they’re in a single layer, no crowding.
