Ingredients

      I get why you’d think it’s a lot, but flour is what keeps fritters from falling apart. If yours were bready, maybe you packed too much corn or scooped flour a little heavy. Try leveling the flour next time and keep the batter a bit looser.

    Made these tonight and they were crispy on the outside and sweet inside. The 2–3 minutes per side seems spot on—mine browned a little faster but still worked. Will absolutely make again with a dollop of sour cream.

    Not bad, but mine stuck to the pan a little even with oil. Also 4 ears of corn sounds like a lot—4 ears is like… how many cups again? I guess I measured wrong.

      Ugh, that pan-stick is so annoying. Did you let the oil heat fully before dropping the batter? Also, try a slightly higher heat for the first minute so they set faster—mine do better that way.
