Coconut Milk Cake

February 2, 2026

Coconut milk cake is a soft, moist dessert that brings gentle tropical flavor into a classic homemade bake. Light yet rich, this cake is known for its tender crumb and subtle sweetness, making it perfect for everyday enjoyment as well as special occasions. It is especially loved for its simple ingredients and comforting texture that feels familiar while still a little indulgent.

The star of this cake is coconut milk, which replaces or complements regular dairy to create a delicate richness. Coconut milk adds moisture without heaviness and gives the cake a smooth, velvety structure. The flavor is mild and fragrant rather than overpowering, allowing the cake to appeal even to those who prefer desserts that are not overly sweet.

Coconut milk cake is often prepared as a single layer or sheet cake, making it easy to bake and serve. The batter usually comes together quickly with pantry staples like flour, sugar, eggs, and oil or butter. Once baked, the cake stays soft for days, which makes it ideal for preparing ahead of time. Some versions are finished with a simple glaze made from powdered sugar and coconut milk, while others are topped with whipped cream, toasted coconut, or a light dusting of sugar.

What makes this cake especially versatile is how well it pairs with other flavors. Fresh fruit like pineapple, mango, or berries complements the coconut beautifully. It also works well alongside citrus, vanilla, or a touch of lime zest for brightness. Served plain, it is comforting and understated. Dressed up with toppings, it becomes elegant and celebration ready.

Coconut milk cake is perfect with a cup of coffee or cinnamon tea, especially in the afternoon when you want something sweet but not too heavy. It also fits beautifully into spring and summer menus, though its cozy texture makes it just as enjoyable during colder months.

This cake is a wonderful example of how simple ingredients can create something truly satisfying. It feels homemade, warm, and inviting, the kind of dessert that brings people back for a second slice. Whether served at a family gathering, shared with friends, or enjoyed quietly on your own, coconut milk cake always delivers comfort, softness, and a gentle hint of tropical charm.

Easy to follow instructions but I think it could use more coconut flavor.

I think the baking powder amount might be too much? 3 teaspoons sounds like it would make it rise a lot and maybe get a weird texture. Anyone else notice that?

I don’t really like coconut, so I don’t know why I tried this. It was too sweet for me.

    1. 3 stars
Too sweet? I thought it was perfect! But I guess everyone has their taste.

    2. 4 stars
Maybe try a different recipe next time? Coconut’s not for everyone!

I made this cake last week, and my family loved it! It’s super easy to follow the instructions, too. Definitely a keeper.

    2. 2 stars
Coconut milk? Sounds weird. Is it really that good? I might stick to regular milk.

  16. User avatar debbi.lemke96 says:

I replaced the butter with oil and it turned out too oily. Stick with butter! Also a bit dry.

  17. User avatar leroy.zboncak1968 says:

Five stars—my family ate it before it cooled completely. Sweet, moist, and smells amazing. I’ll definitely bake it again for gatherings.

Hmm I’m not sure about 2 cups flour for only 1 cup coconut milk. Mine might turn out dry. I’d probably add a bit more coconut milk next time or reduce flour slightly.

    1. User avatar dino.price46 says:

      4 stars
I get what you mean. With 2 cups flour to 1 cup coconut milk, it can definitely come out on the dry/tight side if the flour is packed. I usually weigh the flour or start with a little less if my coconut milk is thicker.

  19. User avatar Lumberjack says:

    4 stars
It was ok, but I think too much sugar. Maybe cut it by half next time?

I tried making this but my cake came out super dense. Did I do something wrong?

    1. User avatar perry.streich27 says:

      4 stars
Maybe you mixed it too much? Cakes can get dense if overmixed. Don’t give up!

  22. 4 stars
    i like cake.

  23. User avatar derek.ondricka50 says:

The instructions are pretty straightforward. I like that you preheat and grease/flour properly—too many recipes skip that part. 40 minutes at 350°F seems about right.

    1. User avatar Flame Atronach says:

      4 stars
I think 350F is fine but 40 min feels a lil short for a 9×13… mine took like 50. Maybe my oven runs hot or i did somethin wrong lol. Still, the steps are clear.

    2. User avatar ivette.nienow35 says:

      5 stars
Totally agree! Preheating + greasing/flouring is where a lot of cakes fall apart. 40 minutes at 350°F also sounds spot on—my toothpick usually comes out clean around then too.

  24. 4 stars
I’m usually skeptical of cakes with coconut milk (tastes weird sometimes), but this one surprised me. The texture is great. I added a pinch of nutmeg too—highly recommend.

    1. User avatar slyvia.cartwright says:

      4 stars
Same—I’m usually not a fan of coconut milk either, but the texture part makes me want to try it. Did you notice it tasting like coconut strongly, or more subtle?

  25. User avatar Draugr Scourge says:

    1 star
Too much flour if you ask me. I don’t think I would make this again.

  26. User avatar evelyne.lind1966 says:

Coconut milk in a cake? Sounds weird. I don’t think I will try it.

    1. User avatar Li Shenlong says:

      4 stars
I thought the same thing at first! But coconut milk can really add a unique richness and flavor to the cake. You should give it a chance!

    2. User avatar isa.ziemann99 says:

      2 stars
Coconut in cake? Nah, it should be chocolate! Stick to the classics, I say.

  27. 4 stars
Easiest cake recipe! My grandma used to make cakes like this, but we used regular milk…

  28. 3 stars
Coconut milk can be thick, do I need to water it down? I’m wondering if I did something wrong!

    1. User avatar ross.roberts80 says:

      3 stars
I thought coconut milk was always watery, but I guess not. Maybe you can thin it down a bit if you want, but it should be fine. Good luck!

    2. User avatar cyrus.russel1974 says:

      5 stars
No, you don’t need to water it down. Just use it as is! That thickness is what will make your cake moist and delicious. Don’t worry, you’re doing great!

  29. 3 stars
Too sweet for my taste. But my kids loved it! So I’ll give it 3 stars.

    1. User avatar linnea.gleichner95 says:

      4 stars
I thought the sweetness was just right! Everyone has different tastes, but I guess if the kids liked it, that’s what matters!

  30. User avatar debrah.terry2000 says:

    5 stars
This cake was soooo delicious! Everyone loved it at the party. I’m definitely making it again!
