Chimichurri Roasted Potatoes are a bold and flavorful twist on a classic side dish. Crispy on the outside, fluffy on the inside, and coated in vibrant chimichurri sauce, these potatoes bring fresh, herbaceous notes to any meal. Inspired by the famous Argentine sauce, this recipe turns simple roasted potatoes into something truly special.
The key to perfect roasted potatoes is starting with the right variety. Yukon Gold or baby potatoes work especially well, as they hold their shape while developing a creamy interior. After cutting them into even pieces, the potatoes are tossed with olive oil, salt, and pepper, then roasted until golden and crisp. The high heat creates irresistible edges while keeping the centers tender.
What sets this dish apart is the chimichurri. Made with fresh parsley, garlic, olive oil, vinegar, and a hint of chili, chimichurri adds brightness and depth that pairs beautifully with roasted potatoes. The sauce is fresh and zesty, cutting through the richness of the potatoes and adding a pop of color and aroma. Spoon it over the hot potatoes just before serving, allowing the flavors to soak in slightly while still staying vibrant.
Chimichurri roasted potatoes are incredibly versatile. They make an excellent side for grilled meats, roasted chicken, or fish, but they are just as satisfying on their own. You can also serve them as part of a larger spread with salads and vegetables for a casual, shareable meal. For extra texture, a sprinkle of flaky salt or a handful of chopped fresh herbs on top works beautifully.
Another advantage of this dish is how easy it is to customize. Add roasted garlic to the potatoes for extra depth, or mix cilantro into the chimichurri for a slightly different flavor profile. If you enjoy a bit of heat, increase the chili or add a pinch of smoked paprika for warmth.
Crispy, fresh, and full of character, chimichurri roasted potatoes are proof that simple ingredients can create exciting results. They are a reliable crowd pleaser that feels both comforting and fresh, making them a perfect addition to everyday dinners or special gatherings alike.

5 stars, no doubt! Super easy to make and tasty. What do you even serve with these though?
I dunno, I just made them and thought they were a bit plain. Needs a side maybe? Like salad or somethin’.
Glad you loved it! These potatoes are great with grilled chicken or steak. Perfect combo! 🍗🥩
🤤 Yum! I could eat these every day!
Fantastic recipe! The chimichurri sauce gave the potatoes such a great flavor. Will definitely make again!
I don’t really get the fuss over chimichurri, but these potatoes turned out pretty good. My kids even liked ’em, so that’s a win!
These potatoes were crispy and delish! But are y’all really using 500 grams? That seems like a lot.
Not bad, but I didn’t have chimichurri sauce. Just used what I had and it was … okay.
You should really try the chimichurri! It makes a huge difference. Maybe next time!
Chimichurri? Sounds fancy but I just used ketchup. Still pretty good, I guess.
Yum! 🥔❤️
These sound amazing! Can’t wait to try this recipe. Chimichurri is the best! 😍
I tried this but messed up the cooking time. They burnt a bit. Anyone has tips for not burning?
Was easy to make but the sauce is too much for me. Potatoes were alright. 🤷♂️
These potatoes were a hit at dinner! So flavorful with the chimichurri!
Just simple potatoes. I thought it would be more exciting with the sauce but kinda meh. Gave it a 3.
Why so much chimichurri? I only tossed with a few spoonfuls and it tasted good but not super ‘chimichurri-y.’ Maybe add more? Not sure.
Totally fair question! With 1/2 cup chimichurri for 500g potatoes, it should coat pretty well, but “chimichurri-y” really depends on how juicy/thin your sauce is and how aggressively you toss. If yours tasted good but not punchy enough, I’d absolutely try adding a bit more (start with 2–3 more tablespoons) and toss again right after roasting while they’re still hot.
Pretty easy to make, but my potatoes were mushy instead of crispy. I’ll try cooking them longer next time.
Wow, so tasty! The sauce is everything! My kids loved them too! 5 stars!!
These chimichurri roasted potatoes are the bomb! So much flavor! 😍
I tried this recipe last night! It was amazing! My family couldn’t get enough of those potatoes! 🍽️
Are you sure these are that good? I’ve made potatoes plenty of times and they ain’t all that special. 🤨
So good, I could eat these for every meal! <3
Glad to hear you loved them! They really are amazing with that chimichurri. I could eat them every day too! 😊
Super unhealthy, too much oil. Why not just boil the potatoes? :/
I think the oil makes them really crispy and tasty! Boiling doesn’t give that texture. Just enjoy in moderation! 🙂
I tried this recipe but my potatoes ended up soggy. Maybe my oven isn’t hot enough? Not sure, but I expected better. 2/5.
Sounds like you might need to check your oven temp with a thermometer! Soggy potatoes can happen if they’re not cooked at the right heat. I’ve made these before and they turned out crispy when I followed the timing closely. Hope it works better next time!
2/5? That’s harsh! Maybe you added too much oil or didn’t let them roast long enough? I usually bake mine for a bit longer for extra crispiness. Keep trying, you’ll get it right!
Potatoes and chimichurri? Seems weird but it actually works! 4/5!
