Chicken ramen is the ultimate comfort food, combining a rich, savory broth with tender chicken and perfectly cooked ramen noodles. Whether you’re craving a warm, filling meal on a chilly day or seeking a satisfying dinner, this dish is the perfect balance of flavor, texture, and heartiness.
The foundation of chicken ramen lies in the broth. A rich, savory base is created by simmering chicken bones, vegetables, and seasonings, such as soy sauce, miso, garlic, and ginger. The slow-cooked broth is packed with deep, umami-rich flavors that elevate the dish. For a shortcut, you can use store-bought chicken stock, adding seasonings and a touch of soy sauce to give it an authentic ramen taste.
The chicken is usually cooked separately, either poached or grilled, and then shredded or sliced thinly before being added to the bowl of ramen. The chicken is tender and juicy, complementing the noodles and broth beautifully. For extra flavor, the chicken can be marinated briefly in soy sauce or teriyaki sauce before cooking, adding layers of depth.
Ramen noodles are essential to the dish, offering the perfect texture to soak up the flavorful broth. Fresh ramen noodles are ideal, but dried noodles work just as well for a quicker meal. Once the noodles are cooked, they’re served in a bowl with the rich broth, topped with the sliced chicken, and garnished with toppings such as boiled eggs, green onions, spinach, or nori for an extra burst of flavor.
To customize your chicken ramen, feel free to add vegetables like mushrooms, bok choy, or corn for additional texture and freshness. A drizzle of sesame oil or a sprinkle of chili flakes can also give the dish a smoky or spicy kick.
Chicken ramen is a comforting, nourishing bowl that can be as simple or elaborate as you like. It’s a perfect meal to enjoy during colder months, but it’s delicious year-round. Warm, filling, and satisfying, chicken ramen brings the flavors of Japan to your kitchen with ease.

Ingredients
- 4 chicken thighs
- salt
- Pepper
- 2 tbsp vegetable oil
- 4 cloves garlic minced
- 1 tbsp ginger grated
- 4 cups chicken broth
- 2 cups water
- 4 packs ramen noodles
- 2 cups Shiitake mushrooms sliced
- 2 cups baby spinach
- 4 eggs soft-boiled
- 4 Green onions sliced
- 2 sheets nori cut into strips
- sesame seeds for garnish
Instructions
- Season the chicken thighs with salt and pepper on both sides.
- Heat the vegetable oil in a large pot over medium heat. Add the chicken thighs and cook until browned on both sides, about 5-7 minutes per side. Remove the chicken from the pot and set aside.
- In the same pot, add the minced garlic and grated ginger. Cook for 1 minute until fragrant.
- Add the chicken broth and water to the pot and bring to a boil. Reduce heat to low and let simmer for 20 minutes.
- While the broth is simmering, cook the ramen noodles according to package instructions. Drain and set aside.
- Remove the chicken meat from the bones and shred. Discard the bones.
- Add the shredded chicken, sliced mushrooms, and baby spinach to the pot with the broth. Cook for an additional 5 minutes until the mushrooms are tender and the spinach is wilted.
- Divide the cooked ramen noodles among four bowls. Ladle the broth, chicken, and vegetables over the noodles.
- Garnish each bowl with a soft-boiled egg, sliced green onions, nori strips, and sesame seeds.
- Serve hot and enjoy!
I’m skeptical about cooking the ramen noodles separately—mine always clump when you drain. But honestly it still tasted great. Could use a bit more salt though (maybe my broth was mild).
I get the clump fear 😅 I rinse mine with cold water right after draining and that helps a lot. Also yeah—your broth probably needed a pinch more salt.
YUM! This is legit better than takeout. High five for this recipe!
This was amazing! My family loved it. So flavorful and easy to make!
I don’t eat nori usually, but I tried it anyway and it actually worked. The sesame seeds + green onions make it feel restaurant-y.
The soft-boiled eggs were a bit tricky for me but I think I did it right. Still tasty!
Soft-boiled eggs can be tricky for sure! I usually just boil them for 7 minutes, then in cold water. Glad yours turned out tasty!
You got the eggs right! That’s impressive. I always mess them up, haha. But this ramen looks delicious, will try it!
I followed the steps, but it didn’t turn out like the pictures. Maybe I did something wrong? 🤔
The ingredient list says 4 cups broth + 2 cups water = 6 cups, but 4 packs ramen seems like it would need more liquid. Mine was a bit thick—maybe I packed the noodles too tightly?
Chicken should be boiled longer! It was kinda rubbery for me. Not bad but could improve. 6 outta 10.
Meh. It was okay but way too salty for my taste. I’ll stick to my instant ramen.
Instant ramen tastes better? Nah, you gotta give this a proper chance! It’s way better than those plastic packets.
I thought it was pretty good! Just gotta watch the salt, I guess.
I’m not sure about this recipe, didn’t think it would be that easy but it was. Never made ramen before.
I was super surprised too! It’s really satisfying to make ramen at home. You did great! 😄
The timing is solid and the instructions are clear. Only thing: 4 packs of ramen noodles feels like a lot for 4 cups broth + 2 cups water (total 6 cups). Next time I’ll use 3 packs or add more broth.
Can I use beef instead of chicken? Not sure if that would work…
I don’t see why not! Beef would give it a totally different flavor, maybe even better! Just cook it well, you know?
Uh, but isn’t ramen traditionally made with chicken? I think beef might mess up the whole taste. 🤷♂️
This ramen is incredible! The flavors are spot on. A definite 5 stars!
I’ve tried this recipe and it was super good! The chicken makes it so tasty. 5 stars for sure!
Chicken ramen is easy and cheap to make… I guess? Is there anything special about this recipe?
I think the chicken and broth make it more special than just plain ramen! You gotta try it, super tasty!
Delicious! Next time I’ll skip the nori, though. Not a fan of seaweed.
This recipe is fantastic! I made it for my family, and they loved it. So rich and flavorful! 🍜
Too much garlic for my taste. Next time I’ll skip the cloves. Overall okay but won’t make again.
I mean, chicken ramen is supposed to be flavorful. You can always adjust the garlic. Don’t let one ingredient ruin a great recipe!
I love garlic so I would definitely keep it! Guess everyone has their own taste. Maybe add less next time?
My soft-boiled eggs came out like medium boiled, not soft-boiled 😅 but the rest was great. The chicken thighs shredding step is kinda satisfying. Will repeat!
Pretty good but I think it could use more seasoning. I added soy sauce which helped a bit.
I don’t get the nori strips—felt like eating seaweed chips in soup. The rest is fine, but that garnish ruined the vibe for me. Still, effort is there.
I actually like the nori vibe 😅 but I’d agree the strips are weird if they’re thick. Next time I’d toast them lightly or cut them super thin, or just use less. The rest sounds solid though!
Totally get that. Nori can be great, but in soup it can turn into that “seaweed chip” texture fast. Maybe try crumbling it instead of strips? Or add it at the very end so it doesn’t soften too much.
Absolutely delicious! Added a bit of chili oil for some heat. Yummy!
I tried this recipe too and it’s amazing! The chili oil is a nice touch. Great job!!
Yummy ramen! My kids loved it! Will make again for sure.
I’m glad to hear your kids loved it! Ramen is a great way to get them to eat their veggies. What other recipes do you think they’ll enjoy?
So simple! I can’t believe I made this at home. Cute bowl of ramen!
Nah, ramen is only for instant packs, who does all this? 🤷♂️
I liked it, but 20 minutes simmer felt a bit short for the broth to really get deep flavor. Next time I’ll simmer longer.
I followed the recipe exactly but it just didn’t taste right. Should I have used different noodles?
Not bad but kinda salty for me. I’d cut the salt on the chicken and also taste the broth before adding more. Also 4 packs ramen noodles feels like a lot… unless your bowls are huge.
Yeah 4 packs noodles is a LOT unless you’re doing monster bowls. I use 2-3 packs and it’s plenty for 4 people.
Totally agree on the salt—4 cups broth + seasoning the chicken can get outta hand fast. I always taste halfway through and adjust.
Pretty good, but I think the ramen noodles step is missing something. It says cook and drain—mine sucked up broth while I was ladling, so they got a bit gummy. Next time I’ll add noodles right before serving.
I wonder if draining well helps. I usually undercook by like 30-60 sec then assemble right away so it doesn’t turn to paste.
Yeah I’ve had that happen too—if the noodles sit while you’re ladling, they go gummy fast. Adding them right before serving is the move.
Too much work for such a simple dish. Next time, I’ll just microwave the ramen. 🙄
You gotta be kidding me! It’s worth the effort for a homemade dish. Ramen from a packet can’t compare! 😒
Chicken ramen? Thought it was supposed to be beef! 🤔
