Chicken and Sausage Gumbo

May 13, 2026

Chicken and sausage gumbo is a rich, hearty stew rooted in Louisiana Creole and Cajun cuisine, known for its deep flavors, thick texture, and comforting warmth. It is a dish that reflects tradition, patience, and bold seasoning, bringing together simple ingredients into something deeply satisfying.

At the heart of gumbo is the roux, a slow-cooked mixture of flour and fat that develops a deep brown color and nutty, almost smoky flavor. This base is what gives gumbo its signature richness and depth. The darker the roux, the more complex the flavor, but it requires constant attention to avoid burning.

Chicken adds tenderness and substance to the dish. It becomes juicy and flavorful as it simmers in the seasoned broth, absorbing the spices and richness of the roux. Smoked sausage, often andouille, brings a bold, slightly spicy, and smoky flavor that enhances the overall profile of the gumbo.

Vegetables such as onions, bell peppers, and celery, known as the “holy trinity” in Cajun cooking, form the aromatic foundation of the dish. They soften during cooking and blend into the broth, adding sweetness and depth that balance the richness of the meat and roux.

The broth is further enriched with stock and seasoned with spices like garlic, thyme, bay leaves, paprika, and cayenne pepper. The result is a layered flavor that is both spicy and savory, with a warmth that builds gradually in each bite.

Gumbo is typically simmered slowly, allowing all the ingredients to meld together into a thick, stew-like consistency. It is often served over white rice, which absorbs the flavorful broth and completes the dish. Some versions are topped with green onions or fresh parsley for added brightness.

What makes chicken and sausage gumbo special is its balance of comfort and complexity. It is both rustic and deeply flavorful, designed to be shared and enjoyed over time with some crusty bread.

In the end, chicken and sausage gumbo is more than just a meal, it is a symbol of tradition, patience, and bold Southern flavor, offering warmth and richness in every spoonful.

I tried making a gumbo once, but it ended up tasting like soup. Do you think this is better?

Absolutely delicious! The roux took some time but it was worth it. Best gumbo I’ve ever had!

Can I use chicken breasts instead of thighs? I just don’t like dark meat.

Yea shrimp is good but not in gumbo! Stick to the recipe. That’s how it’s meant to be! 🤨

I don’t know, the recipe seems a bit complicated for just a stew. Not sure if I’ll try it.

Very tasty, but the cooking time was too long for me. Next time I’ll simmer for less.

Isn’t gumbo supposed to have shrimp? Where’s the seafood? This isn’t real gumbo, just saying.

I’m skeptical about the okra. Can I leave it out? 😬

I tried this but it didn’t turn out right. The roux was too dark, I guess? I don’t know what I did wrong.

  18. User avatar donald.klein says:

It was okay, but I thought it needed more seasoning. I added extra spices and it helped some. Maybe Cajun seasoning needs to be stronger?

Yum! Just yum! Best gumbo I’ve ever had and I’m not even from the south.

I’m not usually a gumbo person, but the steps were clear. The 10–15 min roux took longer for me, though. Still, it tasted great and the sausage flavor really came through.

  25. User avatar nereida.bogisich says:

I think I messed up the broth part, it tasted kinda plain. Anyone got suggestions for better flavor? Help plz!

    1. 5 stars
Make sure to add more Cajun seasoning! It really brings out the flavor. You might also want to try adding some bay leaves or even a splash of hot sauce for a kick.

    2. User avatar zelda.nitzsche1986 says:

      2 stars
I dunno, I never had a plain broth before. Maybe you should try adding some soy sauce? Or just salt and pepper, maybe that’ll help it.

I followed step 1 and the roux nearly burned (my fault). Once I adjusted heat, it was fine. The end result was rich and hearty. My kids actually asked for seconds… so yeah, good.

  28. User avatar norberto.pfeffer2025 says:

    5 stars
This is a winner! Perfect for my family dinner. I swapped the sausage for chicken sausage, and it still rocked!

  29. 2 stars
I tried to follow the roux thing exactly, but mine turned out bitter and I had to start over. Maybe my heat was too high? Not sure. Ingredients look right, though.

  30. User avatar agustin.kreiger says:

    5 stars
This was way easier than I expected. Also, the smell while it simmers is unreal—like you’re cooking for a party even when it’s just dinner.

  31. User avatar Falmer Nightprowler says:

    3 stars
My gumbo came out tasty but super thick? I think I might’ve used cooked rice instead of serving it, but the recipe says cooked rice for serving. Still, the sausage flavor was great.

  32. 4 stars
This recipe made me feel like a chef! I didn’t knew cooking could be so fun! Maybe I’ll cook more if i’m not too lazy next time. Lol!

    1. User avatar lauri.deckow says:

But isn’t gumbo supposed to be complicated? You made it sound so easy! 🤔

    2. User avatar jeremy.feeney says:

I totally get you! Cooking can be so rewarding. Your gumbo must’ve been delicious!

  33. User avatar ernest.cartwright says:

Tried this tonight—wow. The roux took me the full 15 minutes but it actually turned that nice dark color. Flavor was deep and the okra thickened it perfectly. Served it over rice and it disappeared fast.

    1. User avatar graham.goodwin says:

      5 stars
Yes!! Love when the roux hits that deep color—15 minutes totally sounds right. Glad the okra thickened it up and that it vanished fast 😄

  34. User avatar wellRespected says:

This is a solid base, but I’m missing the whole “gumbo” vibe some people talk about—like no file powder and no bay leaves. Also, 1 hour simmer feels a bit short for chicken thighs to get super tender. Otherwise decent.

    1. User avatar everett.herman1988 says:

      3 stars
I dont use file either and its still gumbo, lol. Bay leaves are optional. 1 hour is fine if you cut the thighs small—mine comes out tender. Also 10-15 min roux is not “dark” enough sometimes, depends. Maybe cook longer till it smells nutty.

    2. User avatar tissues_with_issues says:

      4 stars
Yeah I get what you mean on the gumbo vibe—no file powder is a bummer. Bay leaves too would’ve added another layer. I still think the roux + okra does a lot, but for chicken thighs I agree 1 hour can be short—mine usually likes 1.5–2 hours.

  35. User avatar stefany.gaylord says:

    3 stars
I made it with smoked sausage instead of andouille and… I know, I know, but it was still pretty good. Also I didn’t have okra, so I used chopped green beans. Somehow it worked? Don’t judge me 😂

  36. 5 stars
Made this for the family and it turned out rich and flavorful—my roux got nice and dark (not burnt!), and the okra thickened it perfectly. Really solid gumbo vibe. Will cook again.

    1. User avatar carisa.wolf53 says:

      5 stars
Love that you nailed the dark roux 😍 Dark but not burnt is exactly where it’s at. Okra doing its job too—nice! What kind of chicken seasoning/Cajun blend did you use?

  37. User avatar hyon.balistreri says:

    4 stars
Pretty authentic. I added a little extra garlic and it was awesome. The only thing: my rice ended up mushy because I cooked it too early. Gumbo was worth the rerun.

  38. User avatar gwenn.stokes says:

    3 stars
Not bad! Tastes like something you’d get at a Cajun spot. But I wish it had more spice—just saying, 2 tsp cajun seasoning didn’t rock my mouth much.

  39. User avatar Britany Kovacek says:

    3 stars
The flavor is good, but 2 cups okra for me was a bit too much slime lol. Next time I’ll start with 1 cup and see. Also, simmering 1.5 hours felt long—though I guess it helps.

  40. User avatar Eddie the Computer says:

    4 stars
Sausage + chicken in gumbo is good, but the okra timing maybe? I added it and it kinda cooked down too much. Still tasty, just not the texture I wanted.

    1. User avatar refugio.dibbert says:

      4 stars
Maybe your okra was already kinda old? Mine turns to mush if it’s not fresh. Also I think 30 minutes is too long unless you like it real thick.

    2. 5 stars
Totally agree—okra is so sensitive. Next time I’d add it closer to the last 15–20 minutes (or even midway through the last simmer) so it stays a bit more “springy.”
