Cauliflower Rice

August 30, 2023

Looking for a lighter, healthier twist on your favorite rice dishes? Cauliflower rice is here to save the day. Made by grating or processing cauliflower into small, rice-like pieces, this low-carb, gluten-free alternative is perfect for those seeking a nutritious substitute for traditional grains.

The beauty of cauliflower rice lies in its versatility. It has a mild flavor that absorbs the taste of whatever you pair it with, making it an excellent side dish for stir-fries, curries, tacos, or even just a simple veggie bowl. It’s also incredibly easy to make, with minimal ingredients required. Simply pulse cauliflower florets in a food processor or grate them by hand, and you’ll have a rice-like texture in seconds.

Once prepared, cauliflower rice can be cooked in a pan with a little oil or butter. A quick sauté over medium heat will transform it into a light and fluffy base that mimics the texture of traditional rice. Add your favorite spices, herbs, or a squeeze of lemon for extra flavor. You can even make it more substantial by tossing in vegetables, such as peas, carrots, or bell peppers, for a colorful, nutrient-packed meal.

This alternative rice is not only a great way to cut back on carbs, but it’s also rich in vitamins, minerals, and fiber. Cauliflower is packed with antioxidants, vitamin C, and folate, making it a great addition to any diet. Plus, it’s perfect for those following keto, paleo, or low-carb diets, as it’s an excellent way to enjoy the texture of rice without the extra calories.

Whether you’re trying to reduce your carb intake or simply want to add more vegetables to your meals, cauliflower rice is an easy and delicious option. It’s quick to prepare, customizable, and can elevate almost any dish into a healthier, lighter version.

I’m surprised how close it feels to rice once it’s cooked. Mine was a little watery though—next time I’ll dry the cauliflower more before processing.

  2. User avatar Eccentrica Gallumbits says:

    4 stars
Love it! Quick, light, and works with basically everything. Also, it’s great for meal prep—tastes good reheated too.

    1. User avatar alec.abbott2021 says:

      5 stars
Totally agree—this is such a lifesaver. I do it with taco bowls and it reheats surprisingly well. Thanks for keeping it simple!

    2. User avatar adriane.kshlerin68 says:

      3 stars
I tried it but my cauliflower got kinda watery 😕 maybe I didn’t dry it enough? Still tasted good though, just not as “rice-y”. Any tips?

  3. User avatar Emmaline Schimmel DDS says:

    2 stars
Meh. Cauliflower is fine, but this tasted like… steamed sadness. The olive oil didn’t save it. Would rather just cook actual rice.

    1. 3 stars
I get what you mean—sometimes cauliflower rice can come out a bit bland or watery. Did you try drying it really well after pulsing (and not overcooking it)? 5–7 min can still be too long depending on how fine the grains are.

  4. User avatar Bula Wisoky says:

    3 stars
1 head cauliflower = ??? grams tho lol. I wish recipes gave measurements. Still, easy and healthy.

  5. User avatar smartestRedditor says:

    2 stars
Mine came out watery… I think my skillet wasn’t hot enough and the cauliflower was still wet. Also, the food processor makes it too fine sometimes.

  6. User avatar matt.stoltenberg1954 says:

    4 stars
Great for low-carb days. I add onion powder and cook it a bit longer to get some browning—tastes nuttier.

  7. User avatar malik.lind90 says:

    1 star
Cauliflower is kinda weird, but whatever this rice stuff is supposed to be, it isn’t rice! Just eat normal rice.

  8. User avatar kenton.schinner says:

    3 stars
Mine came out a little watery. Next time I’ll make sure the cauliflower is really dry and maybe sauté a minute longer. Still tasty though!

  9. 4 stars
Just 5-7 minutes? Mine wasn’t tender at 5, took like 12. Maybe my cauliflower was bigger/older. Would make again.

    1. User avatar mathWizard says:

      5 stars
Good point! Cauliflower size/age totally changes cook time. I usually go closer to 8-10 min when the florets are chunkier.

    2. User avatar norman.considine59 says:

      4 stars
Mine took way longer too 😅 5-7 was not it. Also I used frozen cauliflower rice and it was kinda watery—had to cook it longer to dry it out.

  10. 5 stars
Tried this tonight and it came out way better than I expected—tender but not mushy. I added a little garlic powder and it felt like a legit rice side.

    1. User avatar emery.lueilwitz61 says:

      5 stars
Nice! I’ve been nervous about cauliflower rice getting mushy, so “tender but not mushy” is exactly what I want. Garlic powder sounds perfect.

  11. User avatar faith.spencer2013 says:

    2 stars
This is fine, but calling it “rice” is kinda misleading. I wanted something that actually tastes like rice, and this just tastes like cooked cauliflower.

    1. User avatar jae.hilpert says:

      4 stars
Fair point—it’s definitely cauliflower, not real rice. “Cauliflower rice” is more of a swap name. If you want it to taste closer, try adding a pinch of garlic powder or a little rice vinegar/soy while sautéing.

  12. User avatar rhonda.sanford says:

    5 stars
Just made this—so good. I added a little garlic powder and it tasted way more “real rice” than I expected. Super quick too!

  13. User avatar eldridge.feeney says:

    2 stars
This is basically cheating. Cauliflower isn’t rice, so calling it that is misleading. But hey, if it gets you to eat more veggies…

  14. User avatar svetlana.armstrong13 says:

    4 stars
Easy and healthy! I used pre-riced cauliflower once and it turned out watery, but doing it from a whole head worked way better. Nice basic side.

    1. User avatar tajuana.osinski1951 says:

      4 stars
Thanks! I did it with whole cauliflower and it actually tasted like “real” rice. I might add a little garlic next time, but the base is great.

    2. User avatar khalilah.aufderhar30 says:

      5 stars
Totally agree—making it from a whole head is the key. I’ve had the pre-riced stuff turn into sad, watery mush too 😅 This is a solid, simple side!

  15. User avatar Death Hound says:

    3 stars
Meh. I thought it would be better. My kids wouldn’t eat it. Not impressed.

  16. User avatar hank.sanford says:

    3 stars
I’m not convinced cauliflower can replace rice, but this was alright as a side. The flavor depends a lot on seasoning.

  17. User avatar kenton.collier73 says:

    3 stars
Mine turned out a bit soggy, I think I overcrowded the skillet. Next time I’ll do it in batches. Still pretty good though.

  18. User avatar phil.brekke14 says:

    4 stars
Followed the steps pretty much exactly and it came out tender and not watery. I used a little more pepper than the recipe says. Solid side dish.

    1. User avatar Gerald Lueilwitz says:

      5 stars
Nice! Glad it wasn’t watery—mine always gets a little wet if I don’t dry it well. Did you process it super fine or leave some texture?

  19. 4 stars
I think 5-7 minutes is a bit short depending on your stove. I had to cook mine closer to 10. Still tasty though, just adjust to your cauliflower.

    1. User avatar herb.keebler72 says:

      5 stars
Totally agree—stoves vary a lot. I usually go closer to 8-10 minutes too, especially if the florets are bigger. Good call on adjusting for cauliflower.

  20. User avatar Oolon Colluphid says:

    1 star
Isn’t cauliflower just a fancy broccoli? Why would I replace rice with it???

    1. 4 stars
Actually, cauliflower rice is a great low-carb alternative! It’s not just broccoli’s sibling. Give it a try!

  21. 2 stars
Not really a fan… gave it a try but it just tasted weird to me.

  22. 3 stars
Not gonna lie, it’s kinda bland with just salt/pepper. I’d recommend adding onion, garlic, or even a splash of soy sauce.

  23. User avatar Alec Tricity says:

    4 stars
So easy. The food processor step is the only thing—if you leave it too long it turns to cauliflower snow lol. 6/10 without extra seasoning, 9/10 with pepper and garlic.

  24. User avatar daniel.padberg says:

    2 stars
I didn’t have a food processor so I grated the cauliflower. Kinda worked, but it was more like snow than rice. Still edible though.

    1. User avatar anonymous_hacker says:

      3 stars
Wait… if you grated it, wouldn’t it just turn to watery paste? I feel like your skillet step saved you. I’d add it and not over-stir so it doesn’t get soggy.

    2. User avatar Mr. Archie Hirthe says:

      4 stars
Snow texture is still better than mush, honestly 😅 Grated cauliflower can work—try pulsing in small batches (or grating a bit coarser) next time so it looks more like rice.

  25. User avatar Tyson Turcotte IV says:

    5 stars
Turned out way better than I expected. The cauliflower “rice” gets tender fast and soaks up the olive oil nicely—great with lemon and garlic.

    1. User avatar tod.turcotte81 says:

      5 stars
Nice! I love when cauliflower “rice” actually turns tender without getting watery. Lemon + garlic is such a perfect combo.

    2. User avatar irmgard.koch26 says:

      3 stars
Huh, I tried this once and mine stayed kinda crunchy… maybe I didn’t pulse fine enough. 5-7 mins sounds about right though.

  26. User avatar Spriggan says:

    2 stars
Cauliflower rice? No thanks, it sounds too complicated. 🤷‍♂️

  27. 3 stars
This is okay, but 1 tbsp olive oil felt like not enough for me. I’d probably use a bit more or add butter. Flavor is kinda plain without extras.

  28. User avatar alicia.mueller says:

    5 stars
This was so easy and quick! I love it, perfect for my low-carb diet!

  29. User avatar fallon.feeney96 says:

    4 stars
I followed the steps exactly, but my food processor made it more like snow than rice. Still tasted good though—just different texture. Would give 4 stars if it looked better.

  30. User avatar santiago.simonis says:

    5 stars
This is great. 10/10 for dieting. Cauli rice is the best i swear.

    1. 5 stars
Love this! Cauli rice is definitely the MVP for dieting—just wish it always tasted as good as regular rice 😅 but 10/10 anyway.

  31. 3 stars
I think u missed some steps. Where do I find a food processor? Also, can u use microwave?

  32. User avatar Lowell Rosenbaum says:

    4 stars
Healthy side dish win 🙌 I used frozen cauliflower rice instead of a head and just cooked a little longer. Worked surprisingly well!

  33. User avatar daisy.bernier97 says:

    3 stars
I think my food processor overdid it. Mine turned more into cauliflower snow than rice. Still tasty though—just not the texture I wanted.

    1. User avatar manie.kuhn says:

      5 stars
Haha that “cauliflower snow” feeling is real. Mine does that too if I pulse too long—next time I’d do shorter pulses and stop as soon as you see rice-y bits.

    2. 4 stars
Maybe your florets were too small before the processor? If you want actual grains, pulse in batches and don’t blend continuously. Also try a quick sauté right away so it doesn’t go mushy.

  34. 4 stars
The food processor step is key. Mine came out fluffy and the skillet method really improved the texture—will repeat.

  35. User avatar elidia.bashirian says:

    5 stars
I tried this tonight and it turned out way better than I expected. The 5–7 minutes is perfect—tender but not mushy. Super easy side!

  36. 2 stars
Why does this recipe not mention pressing it dry? Like my skillet turned into soup lol. Taste was fine but texture was off.

  37. 2 stars
1 tbsp olive oil feels way too low… my skillet was basically dry. Also 5 minutes wasn’t enough, took like 12. Still okay though.

  38. User avatar theodora.kshlerin29 says:

    3 stars
Sounds easy, but is there a way to make it without a food processor? I don’t have one!

  39. User avatar wilton.huel68 says:

    3 stars
Good, but why does it smell so bad when cooking? Is that normal?

  40. User avatar theodore.padberg says:

    5 stars
So yummy! I added garlic and onions and it was bomb!

    1. User avatar randolph.dibbert2014 says:

      5 stars
Garlic and onions? That’s a great idea! I always thought it needed more flavor. Gotta try it your way next time! 🍽️

  41. User avatar Manuel Koch says:

    4 stars
Good base recipe, but I added garlic and a squeeze of lemon at the end. Made it taste way more “real rice.” Would recommend.

  42. User avatar Bree Ullrich says:

    5 stars
Yumm! Just add garlic and it’s delicious. Much better than rice! 😊

  43. User avatar pearlie.brown2008 says:

    3 stars
I followed the recipe but my cauliflower rice got watery. Next time I’ll dry it better and cook a bit longer to evaporate. Still edible though!

  44. User avatar jeffrey.hartmann says:

    3 stars
Tried this, but my food processor made it too fine—more like mash than rice. Still edible, just not the texture I wanted.

  45. 1 star
Cauliflower rice is just not the same as real rice. I’ll stick to the original. X(

  46. User avatar aleta.ritchie2026 says:

    2 stars
Mine burned a little even on medium, so watch your heat. Also, I used too much oil maybe—still tasty but heavier than I expected.

  47. 3 stars
Not gonna lie, mine turned mushy. I might’ve over-pulsed in the food processor. Flavor was fine, but the texture was sad. Next time I’ll be gentler.

  48. 2 stars
Not a fan—feels kinda bland unless you add more seasoning. Also 5–7 minutes wasn’t enough for my cauliflower, it stayed crunchy-ish.

  49. User avatar lea.ratke82 says:

    5 stars
Tastes great! Can’t believe I can eat ‘rice’ again! Thank you for this recipe. 😊

    1. 5 stars
I’m glad you liked it! Cauliflower rice is a game-changer for low-carb diets. 👍

  50. User avatar gertie.ledner91 says:

    3 stars
Okay but why does mine turn watery if I cook too long? I followed it, but after 7 minutes I felt like it got soggy. Still edible though.

  51. User avatar frederic.jones73 says:

    2 stars
I tried this, but it turned out mushy. Did I cook it too long? 🤔

  52. 5 stars
Super simple and actually tastes good! I added a pinch of garlic powder and it was way more flavorful than I expected. Great side for meal prep.

  53. User avatar Falmer Gloomlurker says:

    4 stars
Honestly super easy. I don’t even bother washing the leaves twice, just cut and pulse. It’s a solid low-carb side that doesn’t taste like punishment.

  54. User avatar marchelle.sipes says:

    5 stars
This is a game changer! I never knew cauliflower could taste so good! 😍

  55. User avatar Ilene North says:

    2 stars
Honestly, cauliflower “rice” never satisfies me. It’s fine, but I always end up hungry again. Flavor is pretty basic without more seasoning.

  56. 4 stars
Super quick weeknight thing. Next time I’ll toast it longer in the skillet to get more ‘fried rice’ vibes. Love that it’s low effort.

    1. User avatar matilda.rolfson says:

      5 stars
Totally agree—this is such a lifesaver on busy nights. I’ve been doing it with garlic too and it comes out way more savory. Toasting longer sounds like the perfect tweak for that fried-rice feel!

    2. User avatar carey.monahan31 says:

      3 stars
I tried something similar but mine just got kinda soggy 😕 Maybe I didn’t dry the cauliflower enough? Still tasted fine though. Any tips for getting it to brown without burning?

  57. User avatar royal.harvey93 says:

    4 stars
My skillet must be too hot because mine browned a bit too fast. Flavor was good, just watch the heat.

    1. User avatar rachael.batz3 says:

      4 stars
I thought “medium” meant like… medium-high lol. Next time I’ll watch it closer. Still tasted good though, just a little crispy.

    2. 5 stars
Totally agree—mine browned fast too until I lowered it to medium-low. The flavor was still great, but yeah, heat control matters.

  58. 4 stars
Super easy and healthy side! I added some spices and it was fab! ✨

    1. User avatar candelaria.wilkinson says:

      2 stars
Not sure how healthy it is, but cauliflower always tastes weird to me. 🤷‍♂️

    2. 5 stars
I never thought of using spices! What did you add? Sounds delicious!

  59. User avatar Majikthise says:

    5 stars
This was surprisingly good. The 5–7 minutes was perfect—tender but not mushy. I added a little garlic powder and it tasted like takeout-style cauliflower “fried rice.”

  60. User avatar pinkie.kshlerin says:

    2 stars
Five to seven minutes is not enough for me—mine stayed crunchy. I ended up cooking it longer and adding more salt. Don’t be afraid to adjust.

  61. User avatar larry.bradtke1962 says:

    3 stars
Not gonna lie, cauliflower rice always feels a little bland to me. Salt helps, but it still needs more seasoning or sauce.

    1. 5 stars
Totally get what you mean—plain cauliflower rice can taste kinda flat. I usually add garlic (or garlic powder) and a squeeze of lemon or a splash of soy sauce/worcestershire near the end. Also black pepper and a pinch of chili flakes help a lot.

  62. User avatar Ms. Chaya Pagac says:

    4 stars
Tastes surprisingly close to rice with the olive oil. I added garlic and it was even better. 5-7 minutes is about right.

    1. 5 stars
Nice! I always forget how much olive oil helps. Garlic is such a good call—I’ll add it next time. 5–7 minutes feels right for sure.

  63. User avatar Trin Tragula says:

    3 stars
Could’ve been thicker? Like it needed sauce. I followed it exactly and it was kind of bland. But with soy sauce it’s great.

  64. User avatar delmar.ondricka says:

    5 stars
The texture was spot on after pulsing in the processor. Mine needed the full 7 minutes to get tender, but then it was perfect. Will make again.

  65. User avatar Gail Andrews says:

    4 stars
5 minutes? Mine was still crunchy at 5. I like a softer bite, so I kept stirring. Once cooked, it was actually really good with chicken.

  66. User avatar coleman.kilback1953 says:

    3 stars
I used a little more salt than the recipe says and it still felt bland to me. Maybe I didn’t cook it long enough—next time I’ll go closer to 7 minutes.

    1. User avatar judson.wiza says:

      4 stars
Maybe your pepper/salt combo was the issue? I do a generous crack of black pepper plus a pinch of garlic powder (or onion powder) and it tastes way less bland even with only light salt.

    2. 4 stars
I’ve had that happen too—salt helps, but cauliflower rice also needs enough time to cook off the watery edge. I usually aim for the full 7–8 minutes and stir more often toward the end.

  67. User avatar lamont.renner says:

    5 stars
Made this tonight and it turned out great—tender but not mushy. Love how fast it is, especially as a rice swap.

  68. User avatar Shadowfax says:

    2 stars
So bland 😅 Need more seasoning. Salt/pepper alone didn’t do it for me. I’m trying again with soy sauce or something next time.

  69. 5 stars
This is such a simple swap for regular rice. The texture is actually pretty convincing once you pulse it right. I added garlic too and it turned out great—definitely making again.

    1. User avatar sook.predovic says:

      5 stars
Totally agree—once you pulse it right it really does look like rice. Garlic is a great add too!

  70. User avatar reginald.borer says:

    5 stars
Super quick weeknight option. I served it with chili and it held up. Will definitely make again!

    1. User avatar jazmine.becker74 says:

      5 stars
Nice! I love when it actually holds up with chili—usually cauliflower gets soggy for me. Did you cook it the full 7 minutes?

  71. User avatar andrew.tremblay says:

    4 stars
Honestly, I’m surprised how much it tastes like rice. I used pre-riced cauliflower and it still worked—just cooked a couple minutes longer. Salt/pepper is the move.

    1. 5 stars
That’s so good to hear! I’ve found salt/pepper makes a huge difference—also a little extra oil helps it brown instead of getting watery.

    2. User avatar Ned Lesch Sr. says:

      4 stars
I tried it once and it was kinda bland but I didn’t salt enough… so maybe that’s on me. Pre-riced cauliflower usually works, just don’t overcook it or it gets mushy, right?

  72. User avatar Claire Annette Reed says:

    4 stars
I was skeptical at first, but cauliflower rice is actually pretty good. Needs more seasoning tho!

  73. 4 stars
Really good! I used it in a stir-fry and my kids didn’t even notice! Win!

  74. User avatar catalina.veum says:

    2 stars
I followed the instructions exactly, but mine came out too soggy. What did I do wrong?

  75. User avatar Siona Atreides says:

    3 stars
I cooked it in a nonstick pan and it started sticking a little toward the end. Maybe I didn’t stir enough. Still tasted fine.

  76. 5 stars
Tried this tonight—super easy and way faster than regular rice. Mine needed a tiny splash of water at the start so it didn’t get dry, but flavor was great. Will make again.

  77. User avatar scottie.mclaughlin says:

    3 stars
I hate cauliflower rice BUT I might hate it less now. The steps are easy and the flavor is pretty decent. Still not real rice though, obviously.

  78. User avatar toshiko.reichert says:

    3 stars
Not gonna lie, mine turned out watery. I think I pulsed too long and also overcrowded the skillet. Next time I’ll do smaller batches and cook a couple minutes longer.

  79. 3 stars
My food processor over-pulsed and I got more of a crumble than rice. That said, it tasted fine—just a different texture. Next time, pulse less.

    1. User avatar kittie.schuppe60 says:

      5 stars
Yeah that happens—food processors can turn it from “rice” to “curry crumble” real fast 😅 But honestly if it tastes good, texture is just a preference. Pulse in short bursts!

  80. User avatar Arden Hegmann says:

    5 stars
Love it! I sautéed with garlic and a pinch of cumin and it became my go-to base for meal prep bowls.
