Ingredients
  

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs room temperature
  • 2 cups carrots grated
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp salt
  • 1 cup chopped walnuts optional

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a Bundt pan.
  • In a large bowl, mix flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  • Add oil and eggs, and mix until well combined.
  • Fold in grated carrots and walnuts.
  • Pour the batter into the prepared Bundt pan.
  • Bake for 50 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
