Ingredients
  

  • 1 head cauliflower medium
  • 1 tbsp olive oil

Instructions
 

  • Wash and dry the cauliflower.
  • Remove the outer leaves and cut the cauliflower into florets.
  • Place the florets in a food processor and pulse until the cauliflower resembles rice grains.
  • Heat the olive oil in a large skillet over medium heat.

    Just 5-7 minutes? Mine wasn’t tender at 5, took like 12. Maybe my cauliflower was bigger/older. Would make again.

      Good point! Cauliflower size/age totally changes cook time. I usually go closer to 8-10 min when the florets are chunkier.

      Totally get what you mean—plain cauliflower rice can taste kinda flat. I usually add garlic (or garlic powder) and a squeeze of lemon or a splash of soy sauce/worcestershire near the end. Also black pepper and a pinch of chili flakes help a lot.

    Came together fast, and the texture was actually pretty rice-like. I’d recommend squeezing a little water out of the cauliflower after pulsing (mine released some moisture), but overall solid.
